  • The volatile flavor compounds of wild and cultivated chamnamul (Pimpinella brachycarpa), an aromatic medicinal plant, were isolated via the simultaneous distillation extraction method and analyzed by GC and GC-MSD. From the oils of the wild chamnamul, 56 volatile flavor compounds were identified, and the major constituents were found to be sabinene (58.37 ppm) and germacrene-D (45.73 ppm). From the oils of cultivated chamnamul, 36 volatile flavor compounds were identified--the major constituents were identified as $\beta$-selinene (38.41 ppm) and myrcene (12.76 ppm).

  • The purpose of this study was to investigate the volatile flavor compounds of Ligularia stenocephala and Ligularia fischeri, edible wild plants. The volatile flavor compounds were isolated by the simultaneous distillation extraction method and analyzed by GC-MSD (gas chromatography-mass selective detector). Forty-eight volatile flavor compounds were identified in the extracts from L. stenocephala and the major compounds were sabinene, cis-ocimene, trans-caryophyllene, and β-elemene. Fifty-one volatile flavor compounds were identified in the extracts from L. fischeri and the major compounds were α-pinene, germacrene-D, transcaryophyllene, endo-1-bourbonanol and 1-limonene. The common volatile flavor compounds between two plants were transcaryophyllene, sabinene, β-elemene and β-cubebene etc. However, α-phellendrene and myrcene were identified in L. stenocephala, but were not identified in L. fischeri. However α-pinene, germacrene-D and limonene were identified in L. fischeri but were not identified in L. stenocephala.

  • The present review records the known structures of more than 80 organic compounds containing halogens, which may be considered naturally occurring. The format of the review is based on the viewpoint of biochemists. Compounds containing one type of halogen atom have been placed in one of four major division, i.e., structures possessing fluorine, chlorine, bromine or iodine covalently bonded to carbon. Within each major division molecular structures are given along with the species from which the compounds have been isolated, The biological significance, if any, is also mentioned.

The essential oil composition of ssuk was characterized by higher contents of mono- and sesqui- terpene compounds. Ninety-nine volatile flavor compounds were identified in the essential oil from ssuk harvested in 2010, with camphor (11.9%), ${\beta}-caryophyllene$ (9.11%), dehydrocarveol (8.51%), and borneol (7.72%) being the most abundant compounds. Eighty-three compounds were identified in the essential oil from the plant harvested in 2011, with borneol (12.36%), caryophyllene oxide (12.29%), ${\beta}-caryophyllene$ (10.24%), camphor (9.13%), and thujone (8.4%) being the most abundant compounds. Eighty-four compounds were identified in the essential oil from the plant harvested in 2012, with ${\beta}-caryophyllene$ (20.25%), caryophyllene oxide (14.63%), and thujone (11.55%) being the major compounds. Eighty-nine compounds were identified in the essential oil from the plant harvested in 2013, with thujone (23.11%), alloaromadendrene oxide (12.3%), and ${\beta}-caryophyllene$ (11.48%) being the most abundant compounds. Thujone and aromadendrene oxide contents increased significantly from 2010 to 2013, while camphor and dehydrocarveol contents decreased significantly during those 4 years. The quantitative changes in these 4 compounds according to the time of harvest can served as a quality index for ssuk essential oil. The ecological responses to recent climate changes may be reflected in the chemical components of natural plant essential oils.

  • This study was conducted to investigate the effects of gamma irradiation on the change of volatile flavor compounds of raw oyster and its cooking drips using headspace methods. Major volatile flavor compounds of the raw oyster were identified as methylthiomethane and 1,5-hexadiene. When the raw oyster was irradiated at the dose of 5 kGy, 1-pentane was newly detected. On the other hand, 9 compounds including N-methoxyformaldehyde were identified as the major volatile compounds of cooking drips from oyster. Among them, N-methoxyformaldehyde contents in cooking drip was decreased by the gamma irradiation. By the gamma irradiation above 30 kGy, new heterocyclic compounds was found in oyster cooking drips. Therefore, the amount of volatile flavor compounds in the raw oyster and cooking drips were changed by gamma irradiation, and these results could be potentially used in the seasoning industry.

  • Oxidative stress and inflammation are common to many pathological conditions. Defense mechanisms protect cells from oxidative stress, but can become over-activated following injury and inflammation. NF-${\kappa}B$ and Nrf2 transcription factors regulate proinflammatory and antioxidant gene expression, respectively. Studies have shown that many natural dietary compounds regulate NF-${\kappa}B$ and Nrf2, preventing inflammation and oxidative stress. Here, we report major compounds of Prunella vulgaris var. lilacina such as rosmarinic acid, oleanolic acid, ursolic acid and caffeic acid as a potential therapeutic for oxidative stress and inflammation. The major compounds exhibited high anti-inflammatory activity, inhibiting NO, PGE2 production, NF-${\kappa}B$ expression and activating Nrf2 expression. In addition, we examined the effect of major compounds on MafK expression. Among the compounds, oleanolic acid significantly decreased MafK expression and MafK-mediated p65 acetylation. These findings suggest that oleanolic acid as NF-${\kappa}B$ inhibitors can potentially be used in therapeutic applications for the treatment of oxidative stress-induced diseases.
