A Study on the Food Habits and the Evaluation of Nutrient Intakes of High School Students in Chuncheon (춘천지역 고등학생의 식습관과 영양소 섭취평가에 관한 연구)

  • To assess the food habits, the nutrient intakes and diet quality of high school students living in Chuncheon area. a dietary survey using a questionnaire and 24hr recall method was conducted with 318 subjects. $30.8\%$ of the subjects often skipped breakfast and $28.0\%$ had snacks over once per day. Mean daily energy intake was $1740\pm712kca1\;with\;61.1\%$ of energy supplied by carbohydrate, $16.0\%$ by protein and $23.1\%$ by fat. As well as insufficiencies in calcium and iron intakes, the bioavailability of calcium and iron consumed is considered to be low because most of them came from plant origins. For calcium, iron and riboflavin, the proportions of subjects with intake levels less than $75\%$ of RDA were all over $68\%$. The mean adequacy ratio(MAR), an index of overall dietary quality was 0.79 for males and 0.78 for females. The indexes of nutritional quality(INQ) were over 1 for most nutrients except 3 nutrients: 0.67 of calcium, 0.82 of iron, 0.90 of riboflavin. Nutrient intake levels less than $75\%$ of RDA may be appropriate as a criteria for insufficiency of nutrient intakes. Based on these results, it is evident that some of high school students in Chuncheon area did not consume enough nutrients, especially calcium, iron and riboflavin.

A Study on the Evaluation of Nutrient Intake of Middle School Students in Kangneung (강릉지역 중학생의 영양소 섭취평가에 관한 연구)

  • To assess the nutrient intakes and diet quality of middle school students living in Kangneung area a dietary survey using th 3-day food record was conducted with 226 subjects. Mean daily energy intake was 2114$\pm$502 kcal with 61.6% of energy supplied by carbohydrate 16.4% by protein and 22.0% by fat. As well as insufficiencies in calcium and iron intakes the bioavailability of calcium and iron consumed is considered to low because most of them came from plant origins. For calcium iron vitamin A and vitamin B$_2$the proportions of subjects with intake levels less than 75% of RDA were all over 46%. The mean adequacy ratio(MAR) an index of overall dietary quality was 0.70 for males and 0.73 for females. The indexes of nutritional quality (INQ) were over 1 for most nutrients except 4 nutrients; 0.48 of calcium 0.64 of iron 0.73 of vitamin A and 0.79 of vitamin B$_2$. Nutrient intake levels less than 75% of RDA may be appropriate as a criteria for insufficiency of nutrient intakes. Based on these results it is evident that some of middle school students in Kangneung area did not consume enough nutrients especially calcium iron and vitamin A.

The Effect of Nutrition Education on Weight Control and Diet Quality in Middle-Aged Women (영양교육에 의한 식행동 향상이 중년여성의 체중조절 및 식사의 질에 미치는 영향)

  • We examined the effect of dietary behavior improvement on diet quality, body composition and blood lipid profiles in 68 middle-aged women. Dietary behavior intervention was consisted of counselling in the problem areas of portion control, food selection for low carbohydrate and high fiber food items, and education on the improvement of micronutrient intakes and diet quality. The subjects were divided into two groups; Improved or Not-Improved Group according to the level of changes in dietary behavior scores. After 6 months, body weight, BMI, waist-hip ratio, and visceral fat area were significantly decreased in the Improved Group compared to the Not-Improved Group. Calorie-adjusted protein, fiber, calcium, iron and vitamin C intakes were significantly increased in the Improved Group. The index of nutritional quality (INQ) and mean adequacy ratio (MAR) were increased only in the Improved Group. We observed a significantly increase in HDL-cholesterol and a decrease in total cholesterol, triglyceride and LDL-cholesterol, and an improvement of atherogenic index in the Improved Group. These results showed that dietary behavior intervention improved dietary behavior scores, and those whose dietary behavior score improved showed more improvement in diet quality, body composition, and serum profiles than those whose dietary behavior score did not improve.

A Comparison between Postmenopausal Osteoporotic Women and Normal Women of Their Nutrient Intakes and the Evaluation of Diet Quality (폐경 후 골다공증 여성과 정상 여성의 영양소 섭취상태와 식사의 질 평가에 관한 비교 연구)

  • The purpose of this study was to compare the nutrient intake and diet quality of postmenopausal osteoporotic women to those of control subjects, and to investigate the relationship among diet quality and bone mineral density in postmenopausal women. In this study, we classified the subjects into the postmenopausal osteoporotic women (n =38) and control (n = 43) according to their lumbar spine bone mineral density and age. Dietary intakes, anthropometric measurements and dietary quality indices were measured and evaluated. The average age of osteoporotic and control group were 60.4 yrs and 58.3 yrs, respectively and there was no significant difference. Body weight, body mass index of osteoporotic group were significantly lower than those of control group. The average energy intake of osteoporotic and control group were 1243.3 kcal and 1475.8 kcal, respectively and there was a significant difference. The osteoporotic group consumed significantly lower quantities of protein, plant protein, vitamin A, vitamin $B_1,\;vitamin\;B_2$, folate, vitamin C, calcium, animal calcium, plant calcium, iron and zinc compared to the control group. The osteoporotic group consumed significantly lower of food, vegetables, mushrooms, fruits intakes compared to the control group. In the diet quality, protein, vitamin A, vitamin $B_1,\;vitamin\;B_2$, folate, vitamin C, calcium, iron, Zinc nutrient adequacy ratio (NAR) of osteoporotic group were significantly lower than that of control group. Mean adequacy ratio (MAR) of osteoporotic and control group were 0.63 and 0.78, respectively and there was significant difference. To evaluate nutrient density, Index of nutritional quality (INQ) was calculated by dividing nutrient content per 1,000 kcal of diet with RDA per 1,000 kcal. The average dietary variety score (DVS) of osteoporotic and control group were 22.4 and 33.2, respectively and there was significant difference. DVSs of pulses (p<0.01), seeds (p<0.01) and vegetables (p<0.05) in osteoporotic group were significantly lower than those of the control. In conclusion, postmenopausal osteoporotic women had lower protein, vitamin A, folate, vitamin C, calcium, iron zinc intake quality and vegetables, mushrooms, fruits DVSs than those of the control. Therefore, to promote skeletal health enough energy and food should be consumed, and the maintenance of vitamin and mineral balance by increasing of vitamin A, folate, vitamin C, calcium, iron of intakes are very important.

  • Purpose: This study was conducted in order to investigate the nutrient and food intake status, and dietary quality in Korean adults according to abdominal obesity based on waist circumference. Methods: We analyzed data from the combined 2010~2012 KNHANES (Korean National Health and Nutrition Examination Survey). The analysis included 6,974 adults aged 40 to 64 years. In this study, according to abdominal obesity based on waist circumference (male ${\geq}$ 90 cm, female ${\geq}$ 85 cm), we classified the subjects into the obesity group (male, n = 775, female, n = 1,113) and control group (male, n = 2,038, female, n = 3,048). The nutrient and food group intake, ND (nutrient density), NAR (nutrient adequacy ratio), MAR (mean adequacy ratio), INQ (index of nutritional quality), DDS (dietary diversity score), and DVS (dietary variety score) were analyzed using data from the 24-recall method. Results: For male, no significant difference in quality index of the diet was observed between the obesity group and the normal group. In female, in diet quality (ND, NAR, and INQ), vitamin $B_2$ (ND, NAR, and INQ) calcium (NAR), phosphorous (ND, INQ) and potassium (ND) of the obesity group was significantly lower than those of the control group. DDS and DVS in the obesity group (3.57, 30.95) were significantly lower than those of the control group (3.68, 32.84) (p = 0.0043, 0.0002). DVS (DVS ${\geq}$ 39.9) showed association with lower risk of waist obesity in a logistic regression model after adjustments for multiple confounding factors including age, education, income, alcohol intake frequency, smoking, physical activity, energy intake, and body mass index (OR: 0.616, 95% CI: 0.420-0.903). Conclusion: In conclusion, females with abdominal obesity had lower micronutrient intake quality, DVS than those of the control group. In Korean females, food intake variety can adversely affect waist circumference.

Consumption of health functional food and dietary habits, nutrient intake and dietary quality of college students in Incheon (인천지역 대학생의 건강기능식품 섭취 실태와 건강기능식품 섭취 유무에 따른 식습관, 식이 섭취 및 식사의 질 조사)

  • The purpose of this study was to investigate consumption of health functional food (HFF) and dietary habits, nutrient intake, and dietary quality by HFF consumption in college students. The subjects of this study included 283 college students (179 males and 104 females) in Incheon metropolitan city. The cross-sectional study was conducted using self-reported questionnaires, including kinds of HFF consumed, motivation for purchase, reason for consumption, effect after consumption, reason for no consumption, and dietary habits. A three-day recall method was used for dietary assessment. Dietary qualities were assessed using nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and nutrient density (ND) values. The percentage of HFF consumption was 40.2% in males and 50.0% in females. The main kinds of HFF consumed by males were vitamins and minerals, red ginseng, protein, and omega-3 fatty acid, in that order. HFF consumed by females were vitamins and minerals, red ginseng, omega-3 fatty acid, and individually approved functional ingredients, in that order. The main motivation for purchase of HFF was recommendation of family and relatives (males 76.4% and females 78.8%). The main reason for consumption of HFF was health promotion (males 67.7% and females 63.5%) and the main reason for no consumption of HFF was not having a health problem (males 49.5% and females 46.2%). The dietary habit score for 'eat the milk or dairy product everyday' (p < 0.05) in females was significantly higher in HFF consumers, compared to HFF non-consumers. In males, the ND of vitamin B1 (p < 0.05) in HFF consumers was significantly higher compared to HFF non-consumers. In females, HFF consumers showed a significantly higher ND of vitamin B2 (p < 0.05) and Ca (p < 0.01), compared to HFF non-consumers. Regardless of HFF consumption, the NAR of vitamin C, folic acid, and Ca was less than 0.7. These results suggest the need for nutrition education for college students in order to improve dietary habits and for balanced nutritional status, and to provide correct information on HFF.

Comparison of blood biochemical characteristics and dietary intake by sex in gastric cancer patients over 40 years in Korea based on 7th (2016-2018) Korea National Health and Nutrition Examination Survey: a cross-sectional study (국내 40세 이상 위암 환자의 성별에 따른 혈액생화학적 특성, 영양섭취비교: 제7기(2016-2018) 국민건강영양조사 자료를 이용한 횡단연구)

  • Objectives: The purpose of this study was to compare the sex-associated differences in the dietary intake of gastric cancer patients in Korea. Methods: Data from the Korea National Health and Nutrition Examination Survey (KNHANES) the 7th (2016-2018) were analyzed in the present study. The subjects included 122 gastric cancer patients aged over 40 years (75 male, 47 female). General characteristics (age, marital status, household income, education, food security, comorbidities, alcohol drinking, and smoking), anthropometric characteristics (height, weight, body mass index, and blood pressure), blood biochemical characteristics [fasting plasma glucose (FPG), blood urea nitrogen (BUN), creatinine, triglyceride, total cholesterol, and HDL-cholesterol)], and quantity and quality of dietary intake were compared between male and female participants. Results: Males had higher rates of having a spouse, prevalence of hypertension, alcohol drinking, and smoking than females. The proportion of males with a normal range of FPG, BUN, and HDL-cholesterol was lower than that in females. The total cholesterol levels above the normal range were higher in females than in males. We also found that females had a higher percentage of intakes below the estimated energy requirement (EER) and intakes below the estimated average requirement (EAR) for carbohydrates, niacin, phosphorus, and iron than males. The index of nutritional quality (INQ) for phosphorus and folate, nutrient adequacy ratio (NAR) for vitamin C, thiamine, niacin, folate, calcium, and phosphorus, and the mean adequacy ratio (MAR) were lower in females than males. Conclusions: In Korean gastric cancer patients, management of comorbidities such as diabetes and hypertriglyceridemia, lowering FPG, and raising HDL-cholesterol level management is required for males, whereas management of lowering total cholesterol and raising hematocrit is required for females. The quantitative and qualitative nutritional intakes were poor in gastric cancer patients, especially in females, who had a lower nutritional intake than males. We suggest that nutritional interventions are needed to improve the overall nutritional intake in both male and female gastric cancer patients. In particular, we propose that support is urgently needed for females whose nutritional intake is lower than that of males. In addition, family, social, and national support for nutritional management of female gastric cancer patients is highly necessary.

  • Purpose: This study was conducted to evaluate nutrition intake and diet quality according to carbonated drink consumption in male adolescents (middle-school students = 480, high-school students = 417). Methods: We analyzed data from the combined 2007~2009 KNHANES (Korean National Health and Nutrition Examination Survey). Subjects were divided into two groups, the LCDI (low carbonated drink intake (< 1 time/week), n = 362) group and the HCDI (high carbonated drink intake (${\geq}1$ time/week), n = 535) group, according to carbonated beverage consumption. Nutrient and food group intake, NAR (nutrient adequacy ratio), and MAR (mean adequacy ratio) were analyzed using data from the 24-recall method. Results: Intake of plant protein, vitamin C, plant calcium, phosphorous, and potassium was significantly lower in the HCDI group, compared with the LCDI group. Percent of RNI (recommended nutrient intake) of vitamin C and phosphorous was significantly lower in the HCDI group, compared with the LCDI group. Percentage of subjects who consumed under EAR (estimated average requirement) of protein and vitamin C was significantly higher in the HCDI group, compared with the LCDI group. The NAR of phosphorous was significantly lower in the HCDI group, compared with the LCDI group. Food intakes from potato and starches, pulses and vegetables were significantly lower in the HCDI group, compared with the LCDI group. Conclusion: Consumption of carbonated drinks decreased the diet quality, including calcium, potassium, protein, and vitamin C. Therefore, nutrition education relating to consumption of carbonated drinks is required for male adolescents in order to maintain healthy dietary habits.

Comparison of Nutrient Intake and Meal Service Satisfaction of Elderly at the Local Community Centers : Free and Reduced Meal Service Charge (지역 급식소 성격에 따른 이용 노인의 영양소 섭취수준 및 급식 만족도 비교 : 유료 및 무료 급식)

  • The purpose of this study was to compare the nutrient intake and foodservice satisfaction of homebound elderly had lunch at the local community centers by the difference of meal service charge. Two local community center with cons-regate meal service program located in Daegu and Gyongsan were selected; one with free of meal service charge (F), and the other with 500-1,000 won for meal service charge (K), According to the dietary assessment, energy and nutrient intakes of the 156 elderly subjects were as a whole under the Korean Recommended Dietary Allowance (RDA). Elderly or F service conte. showed higher $\%$ RDA for the selected nutrients and MAR (mean adequacy ratio) than those of K service center (p<0.001). Participants were satisfied with most of the congregation meal service from community conte. with different reasons such as 'tasty (K service center)' and 'free of charge (F service center)'. In conclusion, elderly had the lunch at the community center with free of meal service charge was poor nutrition status and lower socioeconomic level than the other type of community center in this area. Therefore, healthy menu for elderly should be developed and managed by professional dietitian, as well as its impact on health status of this group, and congregate meal service system might be extended to the homebound elderly of whole community with free of charge.

The Nutrient Intakes of Rural High-Schoolers with Depressire Tendencies (농촌 거주 고교생의 우울성향에 따른 영양섭취 상태)

  • This study was carried out to evaluate high-school students' nutrient intakes according to the status of depressive trends, and to analyse the in physical and mental health status. The volunteers were 560 high school students selected from 8 provinces, but 511 students were analyzed. A was used for evaluation, The questions were composed in consideration of socio-demographic characteristics, physical health condition by CMI, mental condition assessed by a modified Zung's self-rating depression scale (SDS), and the evaluation of food consumption by a 24 hours recall method. The family situations of the subjects were mostly nuclear family(73%), agricultural work(53%), and having religion(53%). Only 3% of the students suffered depression where as 19% showed depression trendencies. The individual factors that affected their mental condition were family farming and consciousness of academic accomplishment. The health status counted with CMI was 6.2/20 scores. The non-depressed trend group of students had a lower score of CMI than others. The overall nutrient intakes of students were low compared with the Korean RDA for adolescents. The Mean Adequacy Ratio(MAR) of nutrient intakes was only $0.45{\pm}0.23$. Iron, vitamin A, and riboflavin intakes were significantly low and correlated with depressive trend score. The result from the regression analysis showed that CMI, study accomplishment, and vitamin A were the most significant factors influencing mental condition. We concluded that Korean rural high-school students were healthy in mental condition and showed lower rates of depression academic. For there more we could say that the intakes of iron and vitamin A also influenced mental health. Findings confirmed the need of becoming hopeful job of farming and better nutritional status. These situations would be necessary for students to ameliorate the quality of rural living.
