Oxidative Stability of Seasoned-Dried Pacific Saury (Imported Product) Treated with Liquid Smoke

  • As a series of studies on improving the processing suitability of imported Pacific saury, oxidative stability of seasoned-dried Pacific saury treated with liquid smoke (T2 product) was examined during storage, comparing with control (C, seasoning only) and T1 (treatment of 0.05% BHT instead of liquid smoke). The pH of T2 treated with liquid smoke was relatively lower than those of C and T1 during storage. The contents of volatile basic nitrogen in all products increased continuously during storage. In the changes of TBA and POV of products during storage, the POV of T2 was lower than that of T1, and the TBA values of T1 and T2 were lower than that of C product. The major fatty acids were 22 : 1n-11, 20 : 1n-11, 16 : 0, 14 : 0, 22 : 6n-3, 20 : 5n-3, 18 : 4n-3, 16 : 1n-7, 14 : 1n-7 and 18 : 1n-9 in the both C and T2 products. The contents of polyunsaturated fatty acids in hath C and T2 somewhat decreased with increasing storage period, while those of saturated and monounsaturated fatty acids increased.

장애경보 방지를 위한 연소 연기입자와 비연소 연기입자의 광 특성 분석 (Analysis of Optical Properties of Fire Smoke and Non-fire Smoke for Reduction of Nuisance Alarm)

  • This paper is basic study for development of an advanced photoelectric type smoke detector that has high reliability by reducing the occurrence of nuisance alarms. This paper was attempted to distinguish optical characteristics of the typical fire smoke particle and non-fire smoke particle. According to UL 268 standards, three types of test fires (the paper, the wood and the flammable liquid) were used in this paper for measurement of the fire smoke particles, and the water vapor and the cigarette smoke that were known as the main cause of the nuisance alarms were also used for the non-fire smoke particles. A smoke detection chamber was created, which was equipped with one light source and several light sensors for enabling simultaneous detection of light extinction and scattering, respectively. This paper analyzes the optical characteristics of each smoke particle using this chamber.

  • Liquid smoke is made by concentration of smoke generated from charcoal of broad-leaved trees, or by refinement of smoke originated from incomplete combustion of wood condensate (Park et al., 1994). Generally, it is well known that phenol and its derivatives have antioxidative effect, while acids and formaldehyde have antimicrobial effect (Park et al., 1994). Meanwhile, some studies (Alonge, 1988; Dungel, 1961) reported that the high incidence of stomach cancer has been associated with the consumption of smoked fishes, and these were investigated to direct intake of fishes treated with smoke, containing polycyclic aromatic hydrocarbons(PAHs)(Moret et al., 1999).   • The smoke from a burning cigarette is classified as mainstream, which is the smoke inhaled by the smoker during a puff, and sidestream, which is defined by ISO 10185 as all smoke which leaves a cigarette during the smoking process other than from the butt end. Most of the sidestream smoke is generated during static burn, that is, in between puffs. The amount of sidestream smoke generated by a cigarette depends on the cigarette construction, tobacco blend, and properties of the cigarette paper, The main paper properties affecting sidestream smoke generation are: porosity, basis weight, type and amount of filler, type and amount of burn additive.Sidestream smoke is composed of a visible phase (small liquid droplets) and an invisible phase (gaseous molecules). This paper focuses on the visible portion of the sidestream smoke. Optical methods, which are based on the relationship between light scattering and density of the rising plume of smoke, have been used successfully by the industry. However, the present trend is to use gravimetric methods where the particulate matter is captured on a Cambridge(R) filter pad and weighed. The gaseous portion of the sidestream smoke, which does not contribute to the visible sidestream smoke, passes through the Cambridge filter pad.Sidestream smoke reduction is achieved by modifying certain mass transport processes occurring in a smoldering cigarette. There are four main pathways for reducing sidestream smoke: A) less tobacco burned, B) slower rate of tobacco combustion, C) more efficient trapping of smoke by the cigarette paper, and D) more complete combustion of tobacco. This paper discusses how the physical properties of paper and cigarette construction affect sidestream smoke reduction via the above four mechanisms.

  • As a series of studies on improving quality of seasoned-dried Pacific saury, storage stability of seasoned-dried saury treated with liquid smoke (T2 product) was examined during storage at ambient temperature $(19\pm5^{\circ}C)$, comparing with control (C, seasoning only) and T1 (treatment of $0.05\%$ Rosemary as a antioxidant). The histamine contents (15.33-32.21mg/100g) of 3 seasoned-dried products were much lower than tolerance limit of intake during 80 days of storage. The water activity of 3 seasoned-dried products was in range of 0.692­0.735. The pH of T2 showed relatively lower than the others during storage. The POV of T2 was slightly higher until 30 days, but was lower after 45 days compared with Tl. The TBA value and viable cell count of T2 were the lowest among the samples during storage. The color values of 3 seasoned-dried products were not significantly different during storage. The sensory scores of T2 was the highest than those of T1 and C during storage. Therefore, liquid smoking method was a useful technique to extend shelf-life and retain good sensory quality of seasoned-dried Pacific saury.

  • 본 논문은 화재감지는 물론 화원까지 구별할 수 있는 광전식 연기감지기 개발을 위한 기초 연구이다. 이를 위해, 현재 광전식 연기감지기에 많이 사용되고 있는 광원과 센서를 사용하여 광학챔버를 제작하였으며, UL 268에서 연기감지기를 시험할 때 사용되는 세 가지 화원(종이화원, 목재화원, 인화성 액체화원)을 대상으로 각 화원별 광학적 특징을 구하였다. 그 결과 종이화원과 목재화원은 산란에 큰 차이를 보였으며, 인화성 액체화원은 소광의 원인이 다름을 알 수 있었다.

  • Dimethoxy methane$(CH_3-O-CH_2-O-CH_3)$, also known as methylal or DMM, is an oxygenated additive that contains 42.5% oxygen by weight and is soluble in diesel fuel. It is a colorless liquid and a gas-to-liquid chemical 방tat has been evaluated for use as a diesel fuel component. Experiments were conducted by using the five blends with different volumetric percentage of DMM(2.5, 5, 7.5, 10, and 12.5%) in baseline diesel fuel. The test engine was single cylinder, four stroke, DI diesel engine unmodified. Also, data was collected for steady state operation at 24 engine speed-load conditions. The focus of this study was to investigate the effects of the addition of oxygenated fuel to diesel fuel on the engine-out emissions and the performance. Smoke emissions of all DMM blends were reduced substantially in comparison with conventional diesel fuel. These results indicate that DMM may be an effective blendstock for diesel fuel as an environment-friendly alternative fuel. Besides, this study showed that simultaneous reduction of smoke and NOx emissions could be achieved by oxygenated fuel and EGR method that was applied to decrease NOx emissions increasing with smoke emissions reduction.

  • The effects of liquid sugar and sucrose on several characteristic of tobacco leaves, there combustibility and harmful compound in smoke were examined. results obtained were as follows. 1) Nicotine and total nitrogen content of tobacco leaves were reduced by sugars added to tobacco. 2) Nicotine and tar transfered to smoke were reduced by 4% sugars added to burley tobacco but not reduced by sugars added to hicks. 3) pH of smoke was reduced by sugars added but pH of tobacco shreds not reduced by sugars added. 4) The filling capacity and combustibility (S. B. R.) of tobacco shreds were increased by sugars treated. 5) Nitrogen oxides transfered to smoke was reduce by sugars treated but phenols transfered was not reduce by sugar treated. 6) The capacities of moisture absorption and retention was increased by sugars treated.

무부하 급가속 측정 사이클로 운전되는 검사 대상 디젤 차량으로부터 배출되는 매연값 적분에 의한 차량 매연 대표값 특성 연구 (A Study on Evaluating a Representative Smoke Value from an Inspection Vehicle Using Integration Method over a Cycle of Free-Acceleration Test Mode)

  • Smoke emissions from light duty diesel vehicles were measured using light extinction method with the free acceleration test mode. The smoke emissions for each measurement cycle of the free acceleration method showed large variations according to driver's pedal pushing pattern. The smoke values for each measurement cycle initially increased and reach a peak value. Integration of the smoke emissions with time for each measurement cycle was performed to get a representative smoke value which was obtained by averaging the integrated results. Two kinds of integration time range were used. One is range over the whole measurement cycle of the free acceleration method. The other is only the acceleration range in the measurement cycle. Overall, variation of the representative smoke values obtained by the integration method was reduced comparing to the traditional representative smoke value which was obtained from a peak smoke value over the measurement cycle. Ten vehicles of the same model with 2.5 liter diesel engines, and seven vehicles of the same model with 2.7 liter diesel engines, were tested using the free acceleration test method.

저연기성 이액형 방염우레탄락카 백색도료 연구 (Study for Binary Liquid Type Fire Retardant White Paint of Polyurethane Lacquer)

  • 방염도료로 일액형 염화고무(Chlorinated Rubber) 백색도료가 많이 사용되고 있는데 이는 탄화시 검은 연기가 많이 발생되고 목재에 대한 표면강도와 접착력 등의 미흡한 단점이 있어 이러한 점 등을 고려한 Polyurethane Resin계(Alkyd Resin) 이액형 방염우레탄라카 백색도료를 개발하였다. 본 실험에서 개발한 목재용 Polyurethane Resin계 방염도료 조성의 물성은 기존의 방염백색도료보다 목재와의 친화력이 향상되고 다량의 연기발생은 억제하는 결과를 얻었다.
