  • e-Health/u-Health has generally been considered as an expansion of current medical and medical relevant segments. However. as e-Health/u-Health has been known to have typical attributes and characteristics of services supporting a physically and mentally well-balanced life of its users, we can rationally assume that e-Health/u-Health can be not only an expansion of the existing medical field but also a result of the complex and sophisticated convergence among diverse industries such as the ICT industry. traditional care-relevant segments, etc. Thus, in this study, we carefully and cautiously consider e-Health/u-Health in accordance with both possible scenarios: 1) an expansion of a typical industry, and 2) a result of a convergence among various industries. The advent of new technologies, rapid development of current technologies, and convergence trends in various fields are creating dramatic innovations in the next generation health services market. Consumerism as a characteristic of c-Health/u-Health can be expected to find a solution of the existing healthcare service problems. In the initial phase. mainly due to the absence of a vanguard, as well as to various legalistic and regulative limitations, the role of the government would be immensely critical for the successful early settlement of the e-Health/u-Health industry. Both the government and private sector need to practice continuous and effective public education and publicity mainly to increase the overall recognition and usability of e-Health/u-Health services. Nursing as a unique professional discipline should be well aware of the new paradigm shift of the healthcare market, and make maximum use of the possibility of this trend to the advent of the professional nursing's new role.

  • Carotenoids, which have biologically beneficial effects and occur naturally in microorganisms and plants, are pigments widely applied in the food, cosmetics and pharmaceutical industries. The compound 4,4'-diaponeurosporene is a C30 carotenoid produced by some Lactobacillus species, and Lactobacillus plantarum is the main species producing it. In this study, the antioxidant activity of 4,4'-diaponeurosporene extracted from L. plantarum subsp. plantarum KCCP11226 was examined. Maximum carotenoid content (0.74 ± 0.2 at A470) was obtained at a relatively low temperature (20℃). The DPPH radical scavenging ability of 4,4'-diaponeurosporene (1 mM) was approximately 1.7-fold higher than that of butylated hydroxytoluene (BHT), a well-known antioxidant food additive. In addition, the ABTS radical scavenging ability was shown to be 2.3- to 7.5-fold higher than that of BHT at the range of concentration from 0.25 mM to 1 mM. The FRAP analysis confirmed that 4,4'-diaponeurosporene (0.25 mM) was able to reduce Fe3+ by 8.0-fold higher than that of BHT. Meanwhile, 4,4'-diaponeurosporene has been confirmed to be highly resistant to various external stresses (acid/bile, high temperature, and lysozyme conditions). In conclusion, L. plantarum subsp. plantarum KCCP11226, which produces 4,4'-diaponeurosporene as a functional antioxidant, may be a potentially useful strain for the development of functional probiotic industries.

  • The objective of this study was to investigate antioxidant activities of Panax ginseng extracted with various solvents including n-hexane, chloroform, EtOAC, n-butanol and water. Among the various ginseng extracts, ethyl acetate (EtOAC) extracts showed the most powerful scavenging activities against DPPH radicals. Among the other solvent extracts, the butanol extract seemed relatively more effective in scavenging activity, followed by chloroform, water and hexane extracts. Moreover, the highest reducing power and ferrous ion chelating activity were found in the EtOAC extract followed by other extracts of ginseng. EtOAC extracts, which exhibited the best antioxidant activities of all solvent extracts of ginseng, possessed higher concentrations of total phenolics (777.61 mg/100 g) than other extracts. These results suggest that EtOAC extracts of ginseng (P. ginseng C.A. Meyer) have the most effective antioxidant capacity compared to n-hexane, chloroform, n-butanol and water tested in this study, and has important applications for the pharmaceutical and food industries.

  • The objective of this paper is to understand the history, current status, and future of Korea meat processing industry. The numbers of businesses, employees and distribution in the domestic meat processing industry have steadily increased year by year. The trends of the Korea meat processing market are being launched with customized products due to rapid changes in consumer's lifestyle. Futhermore, the misconceptions against meat products have been still going on these days. Thus, meat products are perceived as a representative food for fast food and junk food to consumers, and growth of meat processing industry was slow-down due to concerns that some additives contained in meat products, such as phosphate and nitrite may not be good for human health, as World Health Organization (WHO) reported a couple of years ago. Therefore, future meat processing industries should be developed safe, and high quality consumer-oriented products. Finally, it will be able to achieve the unlimited development of the Korea meat processing industry by monitoring rapidly changing consumer needs, improving awareness and producing high quality meat products.

  • Methane is known to be one of the major greenhouse gases. On a global scale, livestock farming may contribute 18% of total greenhouse gas emissions. Though methane contribution is less than 2% of all the factors leading to global warming, it plays an important role because it is 21 times more effective than carbon dioxide. Methane emission is a direct result of the fermentation process performed by ruminal microorganisms and, in particular, the archael methanogens. Reducing methane emission would benefit both ruminant production and the environment. Methane generation can be reduced by electron-sink metabolic pathways to dispose of the reducing moieties. An alternative way for methane control in the rumen is to apply inhibitors against methanogens. Generating methane from manure has considerable merit because it appears to offer at least a partial solution to two pressing problems-environmental crisis and energy shortage. An obvious benefit from methane production is the energy value of the gas itself. Control of methane emission by rumen microbes in Korea has mainly been focused on application of various chemicals, such as BES and PMDI, that inhibit the growth and activity of methanogens in the rumen. Alternatives were to apply long-chain polyunsaturated fatty acids and oils with or without organic acids (malate and fumarate). The results for trials with methane reducing agents and the situation of biogas production industries and a typical biogas plant in Korea will be introduced here.
