The methanol extract of perilla leaves contained compounds to reduce the mutagenicity of aflatoxin B$_1$(AFB$_1$) in Salmonella typhimurium TA98 and 100. They were separated by solvent extractions and identified by GC and GC-MS as 2-ethoxy acetate, 1, 2, 3, 4-tetramethyl-cis-cyclobutene, two isomers of methyl 11, 14, 17-eicosatrienoate, 12-acetyl-9-octadecanoic acid, and phytol. The antimutagenicities of phytol and methyl 11, 14, 17-eicosatrienoate were dependent on the mutagens tested. Phytol reduced the mutagenicity of Trp-p-2 but not of AFB$_1$and methyl 11, 14, 17-eicosatrienoate reduced the activities both of the mutagens.
Morphological variation between cultivated and weedy types of Perilla frutescens var. frutescens and P. frutescens var. crispa were studied in 327 germplasm by examining 17 morphological characters. The germplasm between the two varieties were varied for their qualitative and quantitative characters. The seed coat color of cultivated P. frutescens var. frutescens is commonly light brown and brown while deep brown color was observed in the weedy type P. frutescens var. frutescens and P. frutescens var. crispa. The leaf size, cluster length, plant height, flower number per cluster and seed weight in cultivated P. frutescens var. frutescens were significantly (P<0.05) different from weedy type P. frutescens var. frutescens and P. frutescens var. crispa. The cultivated P. frutescens var. frutescens exhibited significantly higher plant height (158.6 cm) compared to the weedy P. frutescens var. crispa (133.8 cm). Likewise, seed weight was significantly higher in cultivated (1.9 g) than in the weedy type of P. frutescens var. frutescens (1.6 g) and P. frutescens var. crispa (1.4 g). Principal component analysis (PCA) result showed that the first and second principal component cumulatively explained 86.6% of the total variation. The cultivated type P. frutescens var. frutescens and its weedy accessions were not clearly separated with P. frutescens var. crispa by PCA. Hence it requires the use of molecular markers for better understanding of their genetic diversity.
The objectives of this present study were to compare the contents and determine optimum extraction conditions for the rosmarinic acid (RA) and caffeic acid (CA) from leaves of Korean Perilla frutescens varieties. RA and CA from leaves of cv. Bora, a breeding line of P. frutescens were isolated and elucidated using various spectroscopic data. On the basis of 2 phenolic acids, optimum extraction conditions were obtained by employing 50% EtOH for 60 min at $25^{\circ}C$. We reported for the first time on the contents of RA and CA from leaves of 32 Korean varieties. Among them, leaves of P. frutescens Brit. var. acuta Kudo I exhibited the highest RA content ($8.53{\pm}0.57$ mg/g) and CA content ($2.33{\pm}0.11$ mg/g) showed the highest in the P. frutescens Brit. var. viridis Makino. Interestingly, average RA content ($2.66{\pm}0.17$ mg/g) showed a markedly higher than that of CA ($1.98{\pm}0.16$ mg/g) in Korean varieties. These results suggest that concentrations of the RA and CA in P. frutescens leaves could be a key factor in the selection process of a high quality species.
Perilla is an excellent oil crop for linolenic acid production but still needs more research to improve grain yield and chemical properties. We tried to estimate the possibility for improving grain yield and its quality by applying nitrogen top dressing(4kg per 10a) at 5 days after flowering stage of perilla, using a cultivar Yujin. This study investigated the growth characteristics and seed quality. Nitrogen top dressing on the flowering stage has little affected on such traits as length, node number and diameter of main stem, and branch, cluster and capsules numbers per plant. But compared with standard cultivation as a control, top dressing showed more leaf chlorophyll content by 85%, higher 1000-grain-weight by 31%, and one day extension of maturing period; consequently, grain outyielded by 60% with 123kg per 10a. Seed chemical components also showed 33.3% protein and 48% oil contents that were 11.5% and 6.2% higher than those of control, respectively. Also by top dressing, saturated fatty acid (palmitic and stearic acid) decreased and linoleic acid among unsaturated fatty acids increased. It is concluded that nitrogen topdressing at late flowering stage promotes grain yield and quality of perilla.

The objective of this study was to investigate the distribution of functional compounds in perilla leaves of various genetic resources and their antioxidant activities. A comprehensive analysis of functional compounds was conducted for 90 genetic resources, focusing on total polyphenol content (TPC), total flavonoid content (TFC), individual phenolic content (IPC), and lutein. Their antioxidant activities were then analyzed based on their radical scavenging capacity using ABTS (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) and DPPH (2,2-diphenyl-1-picrylhydrazyl). The TPC content exhibited a range of 13.19 to 35.85 mg gallic acid equivalent/g, whereas the TFC content varied from 11.74 to 46.51 mg catechin equivalent/g. Total IPC was detected in a range of 6,310.98 to 40,491.82 ㎍/g. Lutein was detected at levels between 70.97 and 597.97 ㎍/g. ABTS and DPPH radical scavenging activities of perilla leaves ranged from 30.39 to 58.58 mg trolox equivalent (TE)/g and from 7.74 to 46.56 mg TE/g, respectively. Furthermore, correlation analysis demonstrated that rosmarinic acid, a phenolic acid, exhibited a significantly positive correlation with antioxidant activity. These findings suggest that various genetic resource of perilla leaves could effectively mediate antioxidant capacity. Results of this study provide valuable information for use of perilla leaves in Korea as functional food materials.
The perillas were cultivated to investigate for the small metal ion effect on the harvest of perilla loaves in aquicul-ture system in the constant flow rate. The perillas were und-ergrown at the condition of low concentration of KNO$_3$and NH$_4$ H$_2$ PO$_4$as below 270ppm and 152ppm respectively. The high concentration of the metal and non-metal ca-tions of $Ca^{2+}$, $K^+,NH^{4+},Mn^{2+},Zn^{2+},Cu^{2+},Na^+,Mo^{+6}$ are influenced to the growth of plant length of perillas at the earlier time. The low concentration of the metal cations of $Ca^{2+}, K^+, NH^{4+}, NO_3^-, H_2PO_4^-$ are influenced to lower growth of perillas. The concentration of the cations of $Ca^{2+}, K^+$and $NH_4^+$ and the anions of $NO_3^-$and $H_2PO_4^-$ are affected the growth of leaf length and width of leaf of perillas. The spectoscopic analytical results showed that the perillas were growing rapidly in the period of 6 days from June 7 to June 12 by high amount of $Mg^{2+}$ ion with accumulation inside perillas. The crude protein, the crude fat and the hydrocarbon are accumulated in the leaves of perillas by binding the inorganic with amino acids to provide the nutritions needed for growth of perillas.
This study was carried out to clarify the effects of the application of pesticide by different spray nozzle types on pesticide residues. The average droplet size and discharge rate were investigated when the manual compressed sprayer with two head disk type nozzle and the knapsack engine powered sprayer with two head fan shape nozzles were used. The fan type nozzles were classified into three types by the number of orifice in the nozzle. Three type nozzles tested were fan with one orifice, fan with two orifices and fan with three orifices. Fan (trade name : D-3) with 2.4 L/min. of the discharge rate and $76{\mu}m$ of the average droplet size while maintaining constant pressure $1.1{\pm}0.2$ MPa, and fan D-35 with 2.6 L/min. and $90{\mu}m$ while maintaining constant pressure $1.0{\pm}0.2$ MPa were appropriate. The orifice size of D-3 was 0.65 mm length ${\times}$ 0.45 mm width and the orifice size of D-35 was 0.62 mm length ${\times}$ 0.46 mm width. The residue levels of imidacloprid on perilla leaves among four applications by four different nozzles show significantly difference with 5% significance level. The residue levels $3.76{\sim}3.92mg\;kg^{-1}$ by fan or disk type is smaller than $4.52{\sim}4.92mg\;kg^{-1}$ by fan II or fan III. The residue levels of imidacloprid on perilla leaf were different depend on the spray nozzles type.
Perilla frutescens usually dieted in East Asian country such as Korea and Japan. Antioxidant, antiinflammatory and anticancer activities of perilla leaves have been founded. In previous study, we confirmed that caffeic acid, major compound of perilla, was accumulation by sucrose aqueous solution and thus antioxidant effect of perilla was enhanced. In this study, we investigated the protective effect of functional perilla leaves extract (PLE) against tert-butyl hydroperoxide(t-BHP) induced-oxidative hepatotoxicity. The pretreatment with PLE (250, 500 and 1000 mg/kg b.w.) for 5 days before a single dose of t-BHP (i.p.; 0.5 mmol/kg) significantly lowered the serum levels of aspartate aminotransferase, alanine aminotransferase and lactate dehydrogenase dose-dependently. And we confirmed that the indicators of oxidative stress were remarkably reduced in the liver, such as the glutathione contents and malondialdehyde, marker of lipid peroxidation. Pathological histology of the rat livers tissues showed that PLE reduced the hepatocyte degeneration and neutrophilic infiltration of liver induced by t-BHP. These results suggest that functional perilla frutescens has the protective effect of liver against t-BHP-induced oxidative hepatic stress in rats.
A nation-wide monitoring survey was performed to look into pesticide use pattern and amount on farmers' field after the national registration of pesticides from 2003 to 2004. Tow hundred ninety two leading farmers involved in the survey were chosen from main cultivating regions of targeted crops in consideration with area. Most farmers involved in the survey follow the safe use guideline of pesticides, while their information to select and making-decision for purchasing pesticides were done according to the recommendation of mainly pesticide market dealers or agricultural cooperative dealers. Used amount of pesticide per unit cropping area was surveyed as 5.51 on paddy, 3.91 on field cabbage, 2.93 on greenhouse cabbage, 0.76 on lettuce, 0.55 on spinach, 1.34 on perilla leaf, 4.89 on leek and 0.42 kg $ha^{-1}$ on young radish. As compound with those surveyed from 1999 to 2000, the pesticide amounts used for rice, lettuce and perilla leaf were reduced while that for cabbage was increased.

The antimutagenic effects of green-yellow vegetables toward aflatoxin B$_1$(AFB$_1$) and 4-nitroquinoline-1-ox-ide (4-NQO) using the Ames assay system with Salmonella typhimurium TA98 and TA100 were studied. Forty six to fifty percent of the methanol extracts of the vegetable samples inhibited the mutagenicity induced by AFB$_1$in TA98 and TA100. Perilla leaf, lettuce, broccoli, crown daisy, water dropwort, small water dropwort, red pepper, red pepper leaves, amaranth, spinach and radish root were significantly reduced the mutagenicity of AFB$_1$(p< 0.01). Whereas 25 out of 27 samples (93%) exhibited antimutagenicity toward a direct mutagen of 4-NQO (p< 0.01. 0.05). The samples which showed the strong antimutagenicity (>60%) were cabbage, kale, lettuce, broccoli, mustard leaf, green red pepper, green sweet pepper, spinach, amaranth, soybean sprout and immature pumpkin. The juices from the several samples also showed antimu-tagenic activity toward AFB$_1$. Cabbage, perilla leaf, small water dropwort and spinach reduced TAT100 revertants dose dependently in the range of 50-500$m\ell$/plate, however, cucumber and carrot showed little effect.
