전통즙장 - 전통 즙장에 대한 연구 - (Traditional Jeupjang - A Study on Traditional Jeupjang (Succulent Jang) -)

  • 즙장은 중국의 조리서에 수록되지 않은 순수 우리나라 속성장으로 많은 종류가 있었으나, 보존성 문제로 대부분 맥이 끊겨서 전해지지 않기 때문에 조선시대 및 1950년 이전 조리서의 즙장을 조사하여 밝혔다. 그 중 가지와 오이 등의 채소를 넣는 즙장은 34 가지, 넣지 않는 즙장은 9가지였다. 즙장의 주재료는 콩과 밀기울이며, 보리, 메밀도 쓰였다. 즙장메주는 빨리 뜨게 하기 위하여 일반메주보다 작게 만들었는데, 작은 알 형태가 가장 많고, 납작하거나 둥근 칼자루 형태도 있다. 즙장은 메주가루를 소금과 물로 이겨서 담그는 것이 가장 많다. 함께 쓰는 것으로는 누룩가루, 밀기울, 밀가루, 술, 말장, 간장, 엿기름, 탁주 등이 있다. 즙장메주는 용기에 넣어서 띄우는 것도 있고, 넣지 않고 띄우는 것도 있는데, 용기는 섬과 둥구미가 가장 많고, 버드나무그릇, 치룽, 독도 사용하며, 즙장메주의 깔개 및 덮개는 닥나무 잎을 가장 많이 사용하고, 그 외에 짚, 북나무잎, 뽕잎, 가랑잎, 솔잎, 콩잎도 사용한다. 즙장은 다른 장과 달리 말똥, 두엄, 풀더미에 묻혀서 이들이 썩으면서 내는 $60{\sim}65^{\circ}C$의 열로 가열하여 숙성시킨다. 즙장은 맥이 끊기거나 쩜장, 지례장, 무장, 빠금장, 막장, 집장, 토장 등의 형태로도 변하였다. 이들 장은 즙장에서 사용하지 않는 쌀, 엿기름, 고춧가루 등을 사용하고 있는 점에서 다르다.

울산지역 산업체에 근무하는 남성 근로자의 기호도 조사 (Food preferences of Men Working at Industry in Ulsan area)

  • This study was carried out to obtain the information concerning food preferences of 588 men working at industry in Ulsan area. The subjects of this study were composed of 245 clerical workers and 343 physical workers. The results of this study can be summarized as follows: 1. Average age of this subjects was 36.1 years(ranging from 21 to 57), in the educational background, most of subjects were high school graduates. The mean height and weight were l71.6cm and 67.5kg. 2. In the preference of food 1) The preference for staple foods, well-milled cooked rice was preferred the most by the subjects. Kalkooksoo(hot noodle), cooked rice covered with raw fish pieces, bread with red bean were preferred the most by the workers. 2) The acceptance for side-dishes were high in sirak(woogyogi) soup, bach tang, soybean paste soup, broiled fish, wild plant namul, small radish kimchi and crab steaming products by clerial and physical workers all together. 3) The preferences for fruits and beverages were high in water-melon, pear, fruit juice and Korean traditional beverage.

산삼 배양액의 급여가 산란계의 생산 능력 및 계란의 품질에 미치는 영향 (Effect of Feeding Wild Ginseng Culture By-products on Performance and Egg Quality of Laying Hens)

  • 본 연구는 식물 조직 배양 기술을 이용하여 산삼 부정근을 배양하고 폐기되는 배양액을 이용하여 산란계의 생산성, 계란의 품질 및 난황의 지방산과 콜레스테롤 함량을 조사하였다. 19주령 로만 브라운 산란계 420수를 공시하여 산란율 $5\%$ 시기부터 8주 동안 사양시험을 시행하였다. 산삼 배양액은 음수로 급여하였으며, 0, 0.4, 0.8, 1.6, $3.2\%$ 수준으로 5개 처리구를 두었고, 처리구당 7반복, 반복당 12수씩 체중을 비슷하게 배치하였다 시험에 이용된 사료는 옥수수-대두박 위주로 모든 처리구의 영양소 함량은 CP $16\%$, ME 2,800kcal/kg 수준으로 동일하게 하였다. 산란율과 산란량은 산삼배양액을 $1.6\%$ 수준까지 급여한 처리구에서는 대조구와 차이가 없었으나 $3.2\%$ 급여구에서는 유의적으로 감소하였다 (p<0.05). 그리고 사료요구율에 있어서도 $3.2\%$ 급여구가 증가하였고(p<0.05), 난중과 사료섭취량은 차이가 없었다. 계란의 난각 강도, 난백고, 하우유닛 및 난황 색도는 처리구 상호간 통계적인 차이는 발견되지 않았으나, 난각 두께는 산삼 배양액 급여구가 유의하게 증가하였다(p<0.05). 한편, 산삼 배양액의 급여는 난황의 지방산과 콜레스테롤 함량의 변화에 영향을 미치지 않았다. 본 시험의 결과, 산삼배양액의 급여는 산란계의 생산성과 난황내 지방산과 콜레스테롤 함량에는 영향을 미치지 않았으나 난각 두께는 증가됨을 알 수 있었다.

체질분석 방법에 따른 BMI 특성 및 태음인과 소음인의 음식선호도 (BMI Characteristics and Food Preference of Taeeumin and Soeumin According to Sasang Constitution Analysis Method)

  • n this study, the BMI characteristics and food preference were examined according to the Sasang constitution typology. The constitution type of the subjects was judged by SCAT2 (SC) and Sasang specialists (SP), and the data were compared with the group (SS) in which the two results coincided. The results of SC and SP were consistent with 55 (38.2%) out of 144 subjects. Among the 55 subjects, there were 36 (65.5%), 15 (27.2%), and 4 (7.3%) Soeumin, Taeeumin, and Soyangin, respectively. The BMI of Taeeumin was significantly higher than that of Soeumin (p< .001) in all analytical methods. On the other hand, there was a difference in determining the body shape of Soyangin between the SCAT2 and specialists. The Taeeum-Soeum Food Preference Index was applied to compare the food preference to 41 types of food. In SS analysis, 13 kinds of foods preferred by Taeeumin or Soeumin were found, of which 8 (19.5%) were consistent with the existing food data. Taeeumin preferred 6 kinds of food, such as cold soybean-soup noodles, wild sesame seaweed soup, pan-fried tofu, Yeongun-jorim, Doraji-namul, and soy milk. In contrast, the favorite foods of Soeumin were black rice and Dak-galbi.

충주 지역농산물을 활용한 메뉴 개발을 위한 관능적 특성 및 소비자 기호도 조사 (A Study on the Sensory Characteristics and Consumer Preferences for the Development of Food Menus Using Agricultural Products in Chungju)

  • This study was conducted to select representative agricultural products (4 types of fruits and 4 types of wild vegetables) in Chungju, define their sensual characteristics, derive suitable flavour-pairing and recipes for each ingredient, and use them as a cornerstone in the development of menus. For the experiment, 10 experts were selected to choose 8 representative agricultural products in Chungju, and 18 menus were selected through a flavour-pairing survey. A consumer panel (a total of 413 people, 105 in their 20s, 103 in their 30s, 103 in their 40s, and 102 in their 50s) for evaluating the characteristics of consumer preferences was selected. After the flavour-pairing survey 'sweet taste', 'light flavour', 'soft flavour', 'savoury flavour', 'familiar flavour', 'harmonious flavour', 'softness', and 'harmoniousness with food ingredients' were determined as drivers of liking, on the other hand, 'disturbance with food ingredients' and 'soybean fishy smell' were determined as drivers of disliking. The degree of consumer preference and overall acceptance were found to be related to the consumers' familiarity, suggesting that if a menu should be developed using unfamiliar local agricultural products, it should be configured with familiar recipes and seasoning methods.

애꽃노린재류(Orius spp.)의 종류와 몇가지 식물에서 발생소장 (Species Composition of Orius spp. (Hemiptera: Anthocoridae) and Their Seasonal Occurrence on Several Plants in Korea)

  • 총채벌레의 천적으로서 농생태계에서 서식하는 애꽃노린재류(Orius spp.)는 노지에서는 O. sauteri(애꽃노린재), O. minutus(멋애꽃노린재), O. strigicollis, O. nagaii 4종이, 시설에서는 O. sauteri, O. minutus 2종만이 조사되었다. 종별 점유율은 O. sauteri가 83.0~92.5%로 전지역에서 가장 우점하였고, O. sauteri는 콩, 고추, 수박과 같은 노지작물 및 고추, 국화, 거베라와 같은 시설작물에서 압도적으로 우점한 반면, O. strigicollis는 하반기 남부지방의 국화, 장미 등 화훼작물에서, O. nagaii는 벼에서만 우점하였다. 애꽃노린재류의 최초 발생시기 및 발생양상은 식물의 개화시기 및 생육상태에 따라 달랐다. 발생시기는 조사된 식물 가운데 토끼풀에서 5월 하순으로 가장 빨랐으며, 콩, 메밀, 고추에서는 모두 6월 상순이었다. 발생 최성기는 모든 작물에서 두 번 관찰되었는데, 토끼풀과 메밀에서는 7월 상순과 8월 중순, 콩과 고추에서는 7월 중순과 8월 하순 또는 9월 초순이었다. 따라서 토끼풀과 같은 야생식물은 애꽃노린재류의 월동 후 서식처로서 중요한 기능을 하는 것으로 생각된다.

Ectopic expression of soybean KS-type dehydrin, SLTI66 and SLTI629 conferred tolerance against osmotic and metal stresses of Escherichia coli and Arabidopsis

  • Two low temperature induced genes designated as SLTI66 and SLTI629 encoding KS-type dehydrin were heterologously expressed in E coli and A. thaliana. E coli cells expressing SLTI66 and SLTI629 protein grew better with iron stress compared to the control cells. Ectopic expression of SLTI629 conferred tolerance to iron stress in Arabidopsis but SLTI66 did not. Arabidopsis plants expressing SLTI66 showed enhanced tolerance to freezing and drought stress compared to those of wild type and SLTI629 lines. We propose that SLTI66 and SLTI629 play a different role as a protector against osmotic and metal stresses.

Gamma Radiation Induced Mutagenesis of Lysobacter enzymogenes for Enhanced Chitinolytic Activity

  • Two chitinase producing strains CHI2 and CHI4 were isolated from soybean rhizosphere soil. Both the strains belonged to Lysobacter enzymogenes as indicated by 16S rDNA sequence analysis. Though strain CHI2 and CHI4 produced extracellular chitinase, they differ in their chitinolytic activity. CHI4 produced approximately three times the higher amounts of enzyme than that of CHI2 under specified conditions. CHI2 produced $535.67U\;l^{-1}$ of chitinase after 48 h incubation with a specific activity of $3.91U\;mg^{-1}$ of protein while strain CHI4 produced $1584.13U\;l^{-1}$ of chitinase with a specific activity of $10.88U\;mg^{-1}$ protein. SDS-PAGE analysis indicated that the molecular weight of chitinase enzyme was approximately 45 kDa. A faint band with a molecular weight of 55 kDa reveals the possibility for the presence of another kind of chitin binding protein. Mutant library was developed by exposing the isolates to gamma rays at their $LD_{99}$ value (0.23 kGy). Totally, 11 mutants of CHI2 and CHI4 are reported to have enhanced chitinase activity. Several leaky mutant clones with decreased enzyme activity and a defective mutant (CHI2-M16) with complete loss of chitinase activity were also identified. CHI4-M18, CHI4-M8 and CHI4-M29 showed 78.8, 41.5, and 31.9% increased chitinase activity over wild type CHI4.

Detection Method for Bean Cotyledon Locations under Vinyl Mulch Using Multiple Infrared Sensors

  • Purpose: Pulse crop damage due to wild birds is a serious problem, to the extent that the rate of damage during the period of time between seeding and the stage of cotyledon reaches 45.4% on average. This study investigated a method of fundamentally blocking birds from eating crops by conducting vinyl mulching after seeding and identifying the growing locations for beans to perform punching. Methods: Infrared (IR) sensors that could measure the temperature without contact were used to recognize the locations of soybean cotyledons below vinyl mulch. To expand the measurable range, 10 IR sensors were arranged in a linear array. A sliding mechanical device was used to reconstruct the two-dimensional spatial variance information of targets. Spatial interpolation was applied to the two-dimensional temperature distribution information measured in real time to improve the resolution of the bean coleoptile locations. The temperature distributions above the vinyl mulch for five species of soybeans over a period of six days from the appearance of the cotyledon stage were analyzed. Results: During the experimental period, cases where bean cotyledons did and did not come into contact with the bottom of the vinyl mulch were both observed, and depended on the degree of growth of the bean cotyledons. Although the locations of bean cotyledons could be estimated through temperature distribution analyses in cases where they came into contact with the bottom of the vinyl mulch, this estimation showed somewhat large errors according to the time that had passed after the cotyledon stage. The detection results were similar for similar types of crops. Thus, this method could be applied to crops with similar growth patterns. According to the results of 360 experiments that were conducted (five species of bean ${\times}$ six days ${\times}$ four speed levels ${\times}$ three repetitions), the location detection performance had an accuracy of 36.9%, and the range of location errors was 0-4.9 cm (RMSE = 3.1 cm). During a period of 3-5 days after the cotyledon stage, the location detection performance had an accuracy of 59% (RMSE = 3.9 cm). Conclusions: In the present study, to fundamentally solve the problem of damage to beans from birds in the early stage after seeding, a working method was proposed in which punching is carried out after seeding, thereby breaking away from the existing method in which seeding is carried out after punching. Methods for the accurate detection of soybean growing locations were studied to allow punching to promote the continuous growth of soybeans that had reached the cotyledon stage. Through experiments using multiple IR sensors and a sliding mechanical device, it was found that the locations of the crop could be partially identified 3-5 days after reaching the cotyledon stage regardless of the kind of pulse crop. It can be concluded that additional studies of robust detection methods considering environmental factors and factors for crop growth are necessary.

대두생장중(大豆生長中) Ureide와 Amide의 소장양상(消長樣相)과 그의 생리적(生理的) 의의(意義)에 관한 연구(硏究) (Variation in Ureide and Amide Content during the Growth period of some Soybean Cultivars and its Physiological Significance)

  • 대두(大豆)에서 유리질소(遊離窒素)의 고정(固定)과 밀접(密接)한 관련(關聯)을 갖고 있는 것으로 알려진 ureide 화합물(化合物)의 소장양상(消長樣相)을 품종간(品種間) 비교(比較)하기 위하여 세 가지 대두(大豆) 품종(品種)(황금(黃金)콩, williams79, 야생(野生)콩)을 공시(供試)하여 pot 재배(栽培)로 생육시간별(生育時間別) 식물체(植物體) 및 목질부(木質部) 분비액(分泌液) 중(中)의 ureide태(態)와 amide태(態) 질소화합물(窒素化合物)의 함량(含量) 변화(變化)를 조사(調査)하였으며 품종별(品種別) 이들 질소화합물(窒素化合物)의 함량(含量) 차이(差異)가 대두(大豆) 근류(根瘤)의 질소고정(窒素固定)에 대한 지표(指標)가 될 수 있는지를 일부(一部) 검토(檢討)하였다. 생장과정중(生長過程中) ureide 화합물(化合物)의 소장양상(消長樣相)은 공시품종간(供試品種間)에 비슷한 경향(傾向)으로 나타났으며 식물체(植物體)와 목질부(木質部) 분비액중(分泌液中)의 ureide 화합물(化合物)의 함량(含量)과 총가용성(總可溶性) 질소(窒素)에 대한 ureide태(態) 질소(窒素)의 함량비(含量比)는 전체적(全體的)으로 황금(黃金)콩에서 가장 높았고 다음이 williams79, 야생(野生)콩의 순서(順序)로 나타나 품종간(品種間)에 차이(差異)를 보였다. amide태(態) 질소(窒素)의 함량(含量)은 ureide태(態) 질소(窒素)와는 반대(反對)로 ureide태(態) 질소(窒素)의 함량(含量)이 가장 높았던 황금(黃金)콩에서 가장 낮았고 야생(野生)콩에서 가장 높았다. 이러한 차이(差異)는 식물체중(植物體中) 줄기 부분(部分)과 목질부분비액중(木質部分泌液中)에서 뚜렷이 나타났으며 이들 중(中)의 ureide태(態) 질소(窒素) 함량(含量)과 amide태(態) 질소(窒素) 함량(含量) 간(間)에는 높은 유의성(有意性) 있는 부(負)(일(一))의 상관관계(相關關係) ($r=-0.5193^{**}$, $-0.5053^*$)를 보였다. 질소(窒素)를 비료(肥料)로 따로 공급(供給)할 때 식물체중(植物體中) ureide태(態) 질소함량(窒素含量)이 감소(減少)하며 근류(根瘤)가 ureide 화합물(化合物)의 생성장소(生成場所)임을 감안(勘案)할 때 이상(以上)의 결과(結果)는 질소고정효과(窒素固定效果)의 차이(差異)를 나타내는 품종적(品種的) 특성(特性)으로 해석(解析)되며 줄기와 목질부(木質部) 분비액중(分泌液中)에서의 ureide태(態) 질소(窒素)의 함량(含量)을 두과작물(豆科作物)의 질소고정효과(窒素固定效果)에 대한 지표(指標)로 이용(利用)할 수 있을 것이며 또한 정량적(定量的)으로 질소고정력(窒素固定力)을 측정(測定)하는 수단(手段)으로도 응용(應用)할 수 있는 가능성(可能性)을 추구(追究)할 의의(意義)가 있을 듯하다.
