급식환경 개선이 환자식 만족도에 미치는 영향 -사례 연구 중심으로 - (The Effects of the Improvement of the Food Service Environment on Patients′ Satisfaction with the Hospital Food Service - Focused on Case Studies -)

  • The purpose of this study was to assess how the changes in the food services environment on patients satisfaction with the hospital food service. Statistical data analyses were completed using the SPSS 11.0 program. The results can be summarized as follows: The flow line and environment of the food services in the hospital were improved through remodeling, which included the replacement of all cooking utensils, ventilation facilities and material storages, the purchase of a combi steamer, and the change of meal carts and trays. After the remodeling, the hospital food service was improved so that it provided spoons at each meal, diversified the menu utilizing the combi steamer, served event meals three times a week as well as water boiled with burned rice in the morning twice a week. In addition, various types of tableware were used in the table settings to produce attractive visual effects. Among the 10 items included on the patient satisfaction questionnaire, ″satisfaction with offered menus″ (p < 0.01) showed significantly higher scores before the remodeling. ″cooking/seasoning of food″, ″amount of meals″ and ″taste of meals″ were not statistically significant, but showed increased satisfaction after the remodeling. However ″temperature of food″, ″cleanliness of clothes and features″ and ″satisfaction with meal times″ were not statistically significant, but showed decreased satisfaction after the remodeling.   • This paper is concerned with the problem of setting controller's parameters when applying the intelligent PID (i-PID), which has recently been proposed and had many successful results, to the two-degree-of-freedom (2DoF) PID controller structure. Generally, the parameter settings of conventional PID controllers are known to be quite difficult and be dependent on the characteristics of the plants. In addition, it is less known how the two 2DoF parameters are set up for the improvement of transient characteristics. Here, we are going to present one of the criteria for parameter setting in the case of using a 2DoF i-PID, by evaluating the error signals to the set-point and disturbance. That is, we first, obtain parameters of i-PID by optimizing the disturbance responses, and then determine two parameters of 2DoF component through optimizing set-point response. The standard values of all parameters are calculated for the 7 types of test batches and rounded up as a table.

중등학교 남녀학생의 공수를 위한 생활관 실습 교육의 고찰 (Exploratory Study of Resident Practice for Male & Female Students in the Secondary School)

  • The goal of this study was to explore the existing program of resident practice structured for female students in order to propose its restructuring for male and female students in the secondary school. A sample of 30 teachers charged a program of resident practice and 55 home economics teachers completed self report measures of resident practice program. Interviews were conducted with 20 teachers to do in-depth research. The results indicated that, consistent with some previous research, there were some problems on facilities and program contents of resident practice. However, there were almost consistent with the required contents of program for male and female students. Significant differences were found only for the program contents such as table settings, wearing a traditional clothing and arranging flowers. A qualitative research showed that resident practice was equally important for the well-being of male and female students and preparing the 21st century. Respondents proposed that the program contents should be focused on traditional propriety and etiquette for daily life. More especially, the data illustrated how importance of the resident practice program should be a mechanism to be a human-centered education. The problems of resident practice for male and female students also was considered. Qualitative answers were suggested for the question : How the hall. Implications for resident practitioners, home economics educators, educational policy maker, as well as suggestions for future research were discussed.

  • IRMA법의 실험결과 측정 시 각 축의 설정과 곡선 유형에 따라서 값이 다르게 계산되어 나온다. 시약의 안내서에 있는 대로 설정을 하되 안내가 되어 있지 않은 경우에는 안내서의 도표를 참고하여 설정을 하거나. 어려가지 실험을 통해서 가장 최적화된 설정 값을 찾아내야 한다. 본 실험에서 Immunotech사의 TSH에서는 Linear-Logit 값이 가장 좋은값을 나타낸다고 사료된다. 작은 규모의 실험실에서 감마카운터가 고장 시 SR-300을 이용하여 CPM만 측정 후 EXCEL을 이용하여 결과값을 계산 후 보고해도 좋을 것같다.

소설 "혼불" 속 전통음식의 문화적 이해 - 통과의례음식을 중심으로 - (Cultural Characteristics of Korean Food in the Novel "Hon-bool" - Focused on 'rites of passage' Foods -)

  • In this study, we attempted to elucidate the cultural characteristics of Korean food based on a traditional understanding on the Korean novel. To achieve this, food characteristics related to 'rites of passage' were analyzed in the representative Korean literary work "Hon-bool", which describes the life of a first-son's wife every three generations in the going to ruin but historic 'Lee's family of Maean district' family and the life of the common 'Geomeong-gul' people who lived with farming on the Lee's land at Namwon of Junbook province in the 1930~1940s, during the Japanese Colonial rule. Every nation possesses rites of passage at important points in life, such as at birth, age of majority, wedding and death. Korean culture, in particular, has several memorial rites relating to birth, death and passage into the afterlife in which special foods are prepared. In this manner, ceremonial foods represent the Korean peoples' traditional vision of the universe and life. The book "Hon-bool" describes these traditions. Especially, the book describes the table-settings related to the main character's childbirth, first birthday, wedding and death. Therefore "Hon-bool" represents a living history of Korean traditional food and the work of storytelling through the traditional understanding is expected that perform an important role in making of cultural contents of Korean foods.

외국인의 한국음식에 대한 이미지, 기호도, 중요도 및 만족도 -대구 지역 방문자를 대상으로- (Study on Image, Preference, Importance and Satisfaction to Korean Traditional Food of Foreign Visitors in Korea, Daegu)

  • To investigate the image, preference, importance and satisfaction of foreign visitors to Korean foods, 220 visitors (male 104, female 115) were surveyed with questionnaires in English and Japanese. To achieve this research purpose, frequency analysis, exploratory factor analysis, t-test, and one way ANOVA was performed using the SPSS 15.0 program. Subjects had various nationality such as Europe/Oceania (24.7%/), Asia (23.3%), Africa (12.8), and North America (39.3). The representative food was kimchi > bibimbop > bulgogi but the most favorite food was bibimbop > kalbi > bulgogi in order. Like this, there are some discrepancies among the food choice, especially in kimchi, so the taste of kimchi should be improved according to the foreigners' taste. The results of the preference about the image get the high grade from those factors; the resonable price of Korean food, the spicy taste, various kinds of food according to the settings of the table, good for the health with excellent taste. Foreigners consider that the cleanliness of food and tableware, the sanitation of the restaurants, the taste of the food and freshness of ingredients are the important factors in Korean food and Korean restaurants. According to these factors, the satisfaction is affected by the attitude of servers > the taste of the food > the freshness of the ingredients > the amount of the food > the atmosphere of the restaurants > the cleanliness of the tableware in order. From the relationship between the importance and the satisfaction, the low grade food should improve the color and styling of the food and be served the appropriate amount of the food. Moreover, it is needed to improve the combining the spices and the ingredients to maintain a balance between strong and delicate flavors and with this, Korean food should be more globalized to promote the development of Korea tourism.

국민학교(國民學校) 과학실험실(料學實驗室) 모형(模型)의 연구개발(硏究開發) (A Study on a Science Laboratory Model for Elementary School)

  • The purpose of this study is to develop a practical and ideal model of science laboratory enrolled 48-60 students by studying optimal facilities such as laboratory tables and chairs proper to elementary school settings. The science laboratory model was figured out in terms of the following six procedures; (1) Current status as well as problems of science laboratory and its facilities was identified by means of the questionnaires conducted to 201 elementary schools, using stratified cluster sampling tehnique, under the consideration of the school size and the regional characteristics across the country. (2) Collected were the anthropometric data with respect to sitting height, popliteal height, buttock popliteal length, elbow rest height, and back width from the 747 students, 4th-6th grade, in Seoul area. (3) It was measured the work apace necessary for individual student to perform his experiment. (4) Using the data of the process (2), we determined the optimal sizes of laboratory tables and chairs fitted for Korean elementary school students. (5) The optimal area of science laboratory for 48-60 students is determined in terms of the data obtained in (3) for individual work space in addition to the appropriate table size figured out by (4). (6) A practical and ideal model for a science laboratory in elementary school was designed according to the above procedures. For the optimal model of science laboratory, the results of this study can be summarized as follows: The sizes of chair and table are categorized into three groups such as small, medium, and large depending on students' physical outfit. The small size base on the 12.5th percentile point of students' sitting height is used for students of the 0-25th percentile ranks. The medium size base on the 50th percentile point of students' sitting height is used for students of the 26-75th percentile ranks. The large size base on the 87.5th percentile point of students' sitting height is used for students of the 76-100th percentile ranks. (1) Sizes of chairs: The small size is 28cm in width and 33cm in height. The medium size is 31cm in width and 36cm in height. The large size is 35cm in width and 38cm in height. (2) Sizes of laboratory tables: The small size is 120cm in length, 86cm in width, and 60cm in height. The large size is 120cm in length, 86cm in width, and 60cm in height. The large size is 120cm in length, 86cm in width, and 65cm in height. (3) Size of science laboratory: The optimal science laboratory for 48-60 elementary school students, which can install the 12 laboratory tables, is 12m in length and 10m in width.

안동 권씨 충재 권벌 종가음식의 상품화 연구 (Study on Ritual Food Bulcheonwi's Commercialization of Andong Kwon Clans of Choongjae Kwonbeol's Head Family)

  • This study was conducted on the head family house of Panseogong coterie of Andong Kwon clans in Daksil village, Bongwha gun, Kyungbuk: historical sources survey and field visit over four rounds were conducted from March to June 2014. In-depth interview, storytelling, and nutrition facts were used as methods of research using 49 participants, and the potentials of trend goods were the main purpose of this research. The specialties of bongwha prefecture in the Chosun Dynasty were pine nut, manna lichen, ginseng, sweetfish, and wild honey. Ritual food bulcheonwi's offerings a feature in Choongjae Kwonbeol's head family - were sacred wine, me, gang, otang, myun, myunjeok, pyunjeok, pyunchung, pyun, po, chungpomook, dojeok, sookchae, ssam, chimchai, sikhye, chogwa, silgwa, soojunggwa, etc. The ritual foods of bulcheonwi's head family house Choongjae Kwonbeol were commercialized through storytelling. Choongjae Kwonbeol's ritual ceremonies, recognized for their national royalty, were reorganized as the traditional Korean table settings, so that the Korean people could easily access them. The special meal called "Geumgyeporansang" represented the head family house foods' essence to share and serve others through the Dacshil village's natural beauty, Bonghwa's local ingredients, and festivities after the "Chungjae Gwunbal Bulchun" rituals. The ritual foods called "Cheongamjungsang", utilizing "Chungjae Gwunbal Bulchun" rituals, were represented in the form of a lunch box: such foods illustrate the classical scholar's mindset that enjoys the nature and arts through education and virtue.

Effect of plate size on meal energy intake in normal weight women

  • BACKGROUND/OBJECTIVES: Use of smaller plates to control food intake is a commonly recommended strategy for restricting energy intake, despite conflicting results. Therefore, the aim of this study was to examine whether or not three different sizes of plates influence energy intake during a multi-itemed buffet meal in normal weight women. SUBJECTS/METHODS: This was a cross-over study conducted on 37 female participants aged 19-25 years with normal BMI levels. Participants were recruited from Hacettepe University and the surrounding community. On experimental days, participants ate a standard breakfast and were then randomly assigned to eat lunch using a small (19 cm), medium (23 cm), or large (28 cm) diameter plate. Visual analogue scale (VAS) scores on sensory and satiety outcomes were measured for all meals. Energy and macronutrient intakes during lunch were recorded. RESULTS: There was no evidence that use of a smaller plate size reduced energy or specific macronutrient intake during the free choice lunch meal. Multiple visits to the serving table were not associated with energy or macronutrient intake. Plate size did not affect VAS scores during the test days. CONCLUSIONS: Plate size did not influence energy intake, meal composition, or palatability in normal weight women during a multi-itemed open buffet lunch. Studies in natural settings at the population level are needed to clarify current outcomes.

  • 이 논문은 다음 관점들로부터 건강 증진의 가능성들을 고찰해 본다. (1) IUHPE, (2) 사회문화적 유사성들 (3) 행동 연구, 그리고 (4) 과거로부터의 학습 1, IUHPE는 여러 지역에 걸쳐서 분산된 활약들을 평가하며, 일본, 한국, 홍콩, 대만과 중국은 NPWP 지역에 속한다.
