홍삼첨가 방법에 따른 홍삼청국장의 품질특성 (Quality Characteristics of Red Ginseng Cheonggukjang According to Addition Methods of Red Ginseng)

  • 본 연구에서는 홍삼과 청국장을 융합하여 기호도 및 기능적 특성이 강화된 홍삼청국장 개발을 위하여 홍삼엑기스와 홍삼분말 첨가량 및 첨가 방법에 따른 품질특성을 조사하였다. 홍삼엑기스를 첨가하여 청국장을 제조한 결과, 설정된 조건에서는 엑기스의 첨가량이 많을수록 점질물을 생성이 많아지고 환원당 함량과 혈전용해능도 높게 나타났다. 홍삼 제품 규격 사포닌 함량은 홍삼엑기스 4%에서 적합하게 나타났다. 또한 홍삼분말 첨가 청국장은 점질물 생성, 환원당 함량 및 혈전용해능이 엑기스 첨가 청국장과 비슷한 경향으로 나타났고 아미노태질소와 암모니아태질소 함량은 분말 첨가량이 높을수록 점점 감소하는 경향으로 나타났으며 조사포닌 함량은 분말 14% 첨가구가 홍삼성분함유 제품 제조 기준에 적합한 것으로 나타났다. 홍삼첨가 시기를 달리하여 청국장을 제조한 결과, 점질물, 아미노태질소, 암모니아태질소, 환원당 함량 및 혈전용해능은 첨가시기에 따른 차이가 크지 않았으며, 조사포닌 함량은 발효전에 첨가한 구간이 발효후에 첨가한 것보다 더 높은 함량을 나타내었다. 진세노사이드 함량은 첨가시기에 따른 차이는 크지 않았으며 $Rg_{1}$, Re, Rf, $Rh_{1}$, $Rg_{2}$, $Rb_{1}$, Rc, $Rb_{2}$, Rd 및 $Rg_{3}$가 확인되었다. 이상의 결과로 홍삼엑기스 4%를 발효전에 첨가하는 방법이 홍삼융합청국장의 품질특성이 우수하여 최적 조건으로 설정할 수 있었다.

홍삼과 녹차 첨가 약과에 대한 소비자의 인지도 및 기호도 - 한.중.일 신세대 여성 소비자를 대상으로 - (The Perception and Preference of Red-ginseng and Green Tea Yackwa Among Korean.Chinese.Japanese Female Consumer)

  • A type of Korean traditional cookies, yackwa is composed of ingredients which serve as good medicine to people. Further, it has a priceless value and possibility to be a healthy functional dessert. For this study, we developed variable yackwa, containing red-ginseng powder and green tea powder, in order to target the foreign market as well as to investigate the perception and preference of yackwa. The test sample for the control group, yackwa is made of flour, sugar, baking powder, sesame oil and alcohol. For the experimental group, yackwa contains red-ginseng and green tea powder (3, 6, 9, 12%). The investigation period was May 14th, 2013 and the total number of participants was 100. The investigation applied a consumer survey method by filling out a questionnaire while tasting 9 kinds of yackwa samples. They were used for frequency, one-way ANOVA and Pearson's correlation analysis with SPSS 19.0. In the yackwa perception survey, the result indicated that 52.0% of the customers replied 'Do not know well' and 'Do not know at all' which conveys that the perception of yackwa is very low. In contrast, the perception of the red-ginseng and green tea which are functional ingredients is high and the customers tend to prefer the taste and flavor of green tea than red-ginseng. And they prefer the yackwa containing 3% of red-ginseng and green tea powder compared to other ratio contents in the overall preference, color, taste, flavor, odor, degree of greasiness and texture. When people who have a higher perception of yackwa, they tended to prefer the color of red-ginseng yackwa and dislike the color of green tea yackwa. And the more people prefer the taste of green tea, the higher in overall preference, color, taste, flavor, and odor preference.

Jinan red ginseng extract inhibits triglyceride synthesis via the regulation of LXR-SCD expression in hepatoma cells

  • Hypertriglyceridemia is one of the metabolic syndrome that is often observed as a result of lipid abnormalities. It is associated with other lipids, metabolic disorders, cardiovascular disease and liver disease. Korean red ginseng is known to affect obesity, dyslipidemia, liver disease and liver function, but the mechanism of its effect is not clear. This study examined the beneficial effects of hypertriglyceridemia and the mechanism of action of Jinan red ginseng extract (JRG) in hepatoma cells. To measure the levels of triglyceride accumulation, we studied the expression of proteins and mRNAs related to lipidogenesis in hepatoma cells (Huh7 and HepG2). JRG decreases the lipidogenic markers, peroxisome proliferator-activated receptor γ (PPARγ), CCAAT-enhancer-binding proteins α (C/EBPα) and C/EBPβ which are major regulators of triglyceride synthesis in hepatoma cells. We also found that JRG reduced sterol regulatory element binding proteins 1c (SREBP-1c), C/EBPα and C/EBPβ by regulating liver X receptor (LXR) and stearoyl CoA desaturase (SCD) expressions. In addition, the first-limited step of synthesis triglyceride (TG), glycerol-3-phosphate (G3P) is decreased by JRG. These results suggest that the anti-hypertriglyceride effect of JRG in hepatoma cells could be accompanied with the inhibition of lipidogenic transcription factors by regulating LXR and SCD expression.

함초 에탄올 추출물의 멜라닌 합성 억제를 통한 미백 효과 (Whitening Effect of Salicornia herbacea Ethanol Extract by Inhibition of Melanin Synthesis)

  • This study was carried out to investigate the effect of ethanolic extract Salicornia herbacea (SHEE) on melanogenesis and mechanism. The SHEE on ${\alpha}$-melanocyte stimulating hormone (${\alpha}$-MSH) induces melanogenesis in B16F10 melanoma cells. The effect of SHEE remarkably decreased protein expression of tyrosinase and tyrosinase relate protein (TRP)-2 increased extracellular signal related kinase (ERK) on ${\alpha}$-MSH 100 nM induced melanogenesis on B16F10 melanoma cells at dose-dependent manner. It has been reported that the activation of ERK reduce melanin synthesis by down-regulating micro-phthalmia-associated transcription fator (MITF). These results sugggest that possibility of extracted korean medicinal herbs as a functional ingredient for whitening cosmetic formula.

처치온도에 따른 초미분화 산양삼의 홍삼화 연구

  • Objectives : The aim of this study was to find optimal conditions for producing red ginseng from cultivated wild ginseng using the Turbo Mill. Methods : Characteristics of powdered cultivated wild ginseng based on various temperature settings of the Turbo Mill were observed, and changes in the content was measured by HPLC for various ginsenosides. Results : 1. The diameter of cultivated wild ginseng powder ground by the Turbo Mill was around 10${\mu}m$. 2. As the temperature rose, pressure, Specific Mechanical Energy(SME), and density decreased, whileas Water Solubility Index(WSI) increased. 3. As the temperature rose, super fine powder showed tendency to turn into dark brown. 4. Measuring content changes by HPLC, there was no detection of ginsenoside Rg3 and ginsenosideRg1, Rb1, and Rh2 concentrations decreased with increase in temperature. Conclusions : Super fine powder of cultivated wild ginseng produced by the Turbo Mill promotes easy absorption of effective ingredients by breaking the cell walls. Using this mechanism to produce red ginseng from cultivated wild ginseng, it yielded less than satisfactory results under the current experiment setup. Further researches are needed to verify more suitable condition for the production of red ginseng.

  • A genuine dammarane-glycoside, named as ginsenoside $ Rs_3$, was isolated from the MeOH extracts of Korean red ginseng (Panax ginseng C.A. Meyer) through repeated silica gel column chromatographies and its chemical structure was determined as (20S)-protopanaxadiol $3-O-[6^{11}-O-acetyl-{\beta}-D-glucopyranosyl (1{\rightarrow2)-{\beta}-D-$glucopyranoside on the basis of several spectral and physical evidences including HMBC and FAB-MS.

MRI을 이용한 홍삼 내부조직 판별 (Distinction of Internal Tissue of Red Ginseng Using Magnetic Resonance Image)

  • 홍삼은 외부형태 및 내부조직품질에 의하여 등급이 분류되고, 3등급이하의 홍삼은 본삼으로 판매하지 않는다. 또한 등급에 따라 가격차이가 매우 큼으로 저급홍삼에 고급홍삼이 혼입되면 경제적 손실이 발생하고, 고급 등급의 홍삼에 하위등급의 홍삼이 혼입되면 클레임이 발생된다. 현재 슬${\hat{e}}{\ddot{u}}$을 이용한 육안검사는 검사자에 따라 기준이 통일되기 어렵고, 오차를 일으킬 가능성이 있어 홍삼의 비 파괴내부조직검사의 가능성을 조사하기 위하여 본 연구를 수행하였다. 홍삼시료의 수분함량은 $10{\sim}13%$에서 MR image를 획득 후 절단하여 MR image가 실제 절단면과 일치하는지 비교 관찰하였다. 홍삼 내부조직의 단면을 보기 위하여 동일한 조건의 Spin echo pulse sequence에서 시간, slice thickness, 온도별로 MR image를 얻었다. 홍삼은 수분함량이 낮기 때문에 MR 신호가 매우 미약하여 single point image(SPI) 측정방법으로는 약 30분 이상 시간이 소요되었다. 그러나 spin echo pulse sequence에서 내부조직을 구분할 수 있는 적당한 시간은 TE(Echo Time) 2.23 ms, TR(Repetition Time) 150 ms에서 약 9초 동안 측정으로 내부조직판별이 가능하였다. Slice thickness를 3, 5, 10 mm로 변화를 주어 측정한 결과 10 mm로 하였을 때 9초 이내에 내부조직 판별이 충분히 가능한 image를 얻을 수 있었다. 55로 약 30분간 시료를 가온 후 얻은 image가 상온에서 얻은 것보다 더 선명하였다. 이러한 원인은 온도를 가함으로서 수분의 활성이 높아져 MR 신호가 더 강해지는 것으로 생각된다. 이로서 짧은 시간에 홍삼의 MR Image를 획득하여 내부조직 특성을 비교 관찰할 수 있었다. 이러한 방법은 홍삼의 내부조직 평가에 활용가능성이 있을 것으로 판단된다.

추출조건이 홍삼엑기스의 당과 유리당의 조성에 미치는 영향 (Effect of Extracting Conditions on Some Factors Affecting the Sugar Composition of Red Ginseng Extract)

  • The quality of concentrated red ginseng extract, which was prepared from Korean red ginseng tails, was studied with respect to the changes in the ethanol concentration in the range of 0-90% and temperature of 70-10$0^{\circ}C$ during 1-5 times of extraction. Each extraction time was taken 8 hours at given temperature. The ratio of free sugars to total sugar changed significantly with the number of extraction and ethanol concentrations. An increase in reducing sugar and free sugars and a decrease in extracted soluble starch were fond as ethanol concentration increased. Extraction temperature was found little effect on extractability of sugars and their ratios. Analysis of free sugars in red ginseng extract identified 6 frdd sugars such as rhamnose, xylose, fructose, glucose, sucrose and maltose, including sucrose to be major.

Identification of Anticoagulant Components in Korean Red Ginseng

  • In this study, the anticoagulant compounds in Korean red ginseng (KRG) were investigated. KRG powder was extracted using hot methanol, and the methanol extract was fractionated into n-hexane, ethylacetate, n-butanol, and aqueous fractions by solvent partitioning. The remains from the methanol extraction were further extracted with water and then dialyzed to obtain low and high molecular weight fractions. The anticoagulant activities of the seven fractions were evaluated in terms of thrombin time, prothrombin time, and activated partial thromboplastin time. Among these fractions, the ethylacetate fraction showed the most potent anticoagulant activity. The active components in the ethylacetate fraction were identified as the phenolic compounds vanillic, caffeic, ferulic, and p-coumaric acid via TLC and HPLC. These findings suggest that the anticoagulant activities of phenolic compounds contribute to the cardiovascular effects of KRG.

사료 내 홍삼박과 겨우살이 분말 첨가 급여가 육계의 생산성 및 계육의 품질에 미치는 영향 (Effects of Dietary Supplementation of Red Ginseng Mare and Korean Mistletoe Powder on Performance and Meat Quality of Broiler Chicken)

  • 본 시험은 육계에 홍삼박과 겨우살이를 급여하여 5주간 사육한 육계의 생산성과 계육의 일반 성분, 혈액 성상, pH, TBARS, 보수성, 전단력 및 육색을 조사하였다. 실험구는 홍삼박과 겨우살이를 급여하지 않은 처리구를 대조구, 홍삼박 0.5% 급여구는 T1, 홍삼박 1% 급여구는 T2, 겨우살이 0.5% 급여구는 T3, 그리고 겨우살이 1% 급여구를 T4 등 4개 처리구로 나누어 사양하였다. 육계의 생산성은 처리구간 유의적인 변화는 없었고, 폐사율은 대조구보다 홍삼박과 겨우살이 급여구에서 낮아졌다(P<0.05). 계육의 수분, 조단백질 및 조회분 등의 일반 성분은 유의성이 없었으며, 조지방은 홍삼박과 겨우살이 급여구에서 낮았다. 육계의 혈액 성상 중 총 콜레스테롤과 LDL-cholesterol 함량은 대조구보다 홍삼박과 겨우살이 급여구에서 감소하였고, HDL-cholesterol은 증가하였으며, triglyceride와 glucose 함량은 유의한 변화가 없었다. TBARS는 대조구보다 홍삼박과 겨우살이 급여구에서 유의하게 낮아, 육계의 저장성 개선에 도움이되리라 생각된다. 육색은 CIE $L^*$값과 CIE $b^*$값은 홍삼박과 겨우살이 급여에 의한 변화는 없었지만, CIE $a^*$값은 T4에서 증가하였다. 결론적으로 홍삼박과 겨우살이를 급여하면 육계의 폐사율이 낮아지고, 총콜레스테롤과 LDL-cholesterol 함량이 감소하며, HDL-cholesterol이 증가함으로 혈액성상을 개선할 가능성이 있는 것으로 판단된다.
