The study was attempted to scrutinize the normal osmotic fragility of erythrocytes in domestic poultry such as chicken, quail and duck making a comparison with that in domestic mammalia such as dog and pig. Osmotic fragility of erythrocytes was determined on blood samples from 10 healthy adult animal in each species. Optical initial hemolysis of erytyrocytes occurred at $0.395{\pm}0.03%$ Nacl for chicken, $0.410{\pm}0.03%$ for duck, $0.440{\pm}0.02%$ for quail, $0.470{\pm}0.05%$ for dog and $0.560{\pm}0.03%$ for pig. Optical complete hemolysis of erytyrocytes occurred at $0.270{\pm}0.02%$ Nacl for chicken, $305{\pm0}.03%$ for duck, $0.360{\pm}0.02%$ for quail, $0.370{\pm}0.03%$ for dog and $0.455{\pm}0.03%$ for p. In other words, erythrocytes of poultry have stronger resistance to osmotic Iysis than that of mammalia, showing the strongest resistance In chicken among the tested poultry.

Poultry is one of the three major meats in Korea and is a representative source of protein. The annual per capita consumption of chicken has been showing steady growth trends, with an increase of approximately 89% in 2018 compared to that of 2005. In this study, we investigated the domestic chicken production and consumption, and conducted an overall study on the domestic chicken industry. By using consumer panel data, we analyzed the characteristics of consumers buying chicken. Specifically, poultry was categorized into two types: traditional raw chicken and processed chicken, which emphasizes convenience. The purchase of raw chickens has generally been on the decline. From these, however, the proportion of native Korean chicken and chicken cuts is on the rise. Processed chicken, on the other hand, continues to grow, especially online. After examining the consumption characteristics of consumers who buy chicken, it was found that the purchase share increased with increasing age of native Korean chickens, whereas the purchase share increased with decreasing age of processed chicken. Based on these results, we confirmed that it is necessary to establish differentiated marketing and promotion strategies for each consumer target for the growth of chicken market.

대학교 급식 식당은 대학생들의 닭고기 소비의 주요 장소임에도 불구하고 이에 대한 연구가 적었다. 본 연구에서는 대학교 급식 식당에서의 닭고기 사용 실태를 분석하고 소비확대 방안을 모색하기 위해, 주 소비자인 대학생들을 대상으로 설문 조사를 실시하고 결과를 분석하였다. 분석 결과 응답자의 79%가 닭고기를 좋아하는 것으로 나타났고, 수입산 닭고기 대신 국산 닭고기를 사용한 메뉴에 대해 4,426원을 지불할 의향이 있는 것으로 측정되어 기준 값인 3,000원에 비해 1,426원을 더 지불할 것으로 분석되었다. 이상의 결과를 통해 대학교 급식 식당에서의 국산 닭고기 소비 확대를 위해서는 일부 원가 상승으로 인한 가격 인상을 감수하더라도 맛 등의 품질을 높이고, 대학생들이 선호하는 메뉴를 개발할 필요가 있는 것으로 판단된다.

The poultry industry in Korean has expanded considerably during the last 15 years. While the number of chicken farms of commercial scale has decreased steadily during the period average farm size increased rapidly. Though the gross national product per capita increased 4.5 folds during ten years period, consumption of chicken meat, like other meats, recorded only 2 folds increase during the period. When domestic market for chicken meat had been open for two years on the basis of minimum market access quotas, importation remained at levels below the quota during the first one and half years. Nevertheless, during the last six months and thereafter, chicken meat importation recorded a steep increase, threatening the domestic industry. Poor productivities of the commercial chicken farms might be the main cause for the inferior competitiveness. For the sustainability of the industry some suggestions were made.
