Development of Control System for Kimchi Fermentation and Storage Using Refrigerator (냉장고를 이용한 김치발효 및 저장 제어시스템의 개발)

  • Software for refrigerator capable of both rapid fermentation and suitable storage of Kimchi was developed and its performance was investigated. Refrigerator system consists of an insulated fermentation room, heater, damper for the control of outer cold air and two sensors for recognizing temperature of heater and fermentation room, which control temperature and time period of affecting Kimchi fermentation. Effects of fermentation at different NaCl concentration and three fermentation function keys were studied; At key I, time which was elapsed to edible ripening state, pH 4.5 and total acid 0.6%, was about $3{\sim}4$, $4{\sim}5$ and $11{\sim}12$ days, respectively. At key II, time was about $2{\sim}3$, $3{\sim}4$, and $10{\sim}11$ days, and at key III, about 2, 3 and $9{\sim}10$ days, respectively. Effect of storage at three fermentation function keys was all maintained to the level of a palatable pH range until 14 days. Sensory evaluation of Kimchi showed also significant difference in a taste.

Studies On Whole Chinese Cabbage Kimchi -An Investigation on the Method of Making Kimchi and a Taste in the Taegu Area- (통배추김치에 관한 연구 -대구지역을 중심으로 담그는 방법과 기호에 관한 실태조사-)

  • The purpose of this study was to investigate the method of making whole Chinese cabbage Kimchi, the family's taste in Kimchi and the reason for disliking the taste of Kimchi in the Taegu area. The results were as follows; 1) Most housewives learned the method of making the Kimchi from their mothers. Method was as follows; First, scatter salt on the whole Chinese cabbage and soak that for 3∼6 hours. After, wash the whole Chinese cabbage 3 times. Then, add red pepper powder, garlic, ginger and salted fermented anchovy as basic seasoning. Be sure to, mix the red pepper powder and salted fermented anchovy until they taste hot and salty. Store the whole Chinese cabbage until they ferment. Afterwards store the whole Chinese cabbage in the refrigerator. 2) It was the whole Chinese cabbage Kimchi that most family members preferred. 3) Among the family members, the old age group preferred newly made Kimchi because of the cool and fresh taste. The adult group preferred fresh taste, also smell and peculiar taste of the seasoning were important. The adolescent group preferred fresh taste and sour taste. 4) It shows that most of the family likes Kimchi, and among the family members, about 25% of the sons and daughters dislike Kimchi. And it shows that all family members dislike salty taste. 5) The older housewives’ Kimchi was preferred over the younger housewives’ Kimchi.

A Study on the Differences of Kimchi Consumption according to Household Characteristics (가구 특성에 따른 김치 소비량 차이에 관한 연구)

  • The purpose of this study is to provide basic information to improve understanding of contemporary kimchi culture in Korea. Many Koreans are now purchasing kimchi at markets, while the proportion of self-preparation is gradually decreasing. This commodification tendency of kimchi is considered to be associated with changes in consumer's behavior and attitude. In this study, a linear regression and a logistic regression model were used to identify relationships between kimchi consumption behavior and household characteristics. The results showed that the probability of kimjang activity was positively related with family size, possession of a kimchi refrigerator, self-preparation practice, and the intensity of sharing behavior. I also found that kimchi consumption volume per capita of 'purchasing' household was greater than that of 'self-preparing ' or 'sharing-dependent' households, and that the number of family members was inversely related with kimchi consumption volume per capita. The inverse relationship between family size and kimchi consumption volume per capita is considered to be contrary to the widespread thoughts in Korea, which have been developed while experiencing kimchi preparation and consumption in traditional extended families. I think that the relationship comes from differences in menu varieties, which appear to vary with family size. This issue will be investigated in subsequent studies.

An Experimental Study on the Performance Characteristics of a Multi Type Refrigerator Using R600a (R600a를 이용한 소형 멀티형 냉장고 시스템의 성능특성에 대한 실험적 연구)

  • Various types of refrigerators become popular in the market such as a common refrigerator, kimchi refrigerator and wine cellar. It is required to develop a multi type refrigerator combining these refrigerators to save space and energy consumption. In this study, the performance of a multi type refrigerator, which consists of one machine room and three evaporators, was measured in a bench type multi refrigerator. The multi type refrigerator was tested by varying the number of refrigerator cabinet, refrigerant charge, and temperature conditions. In addition, the multi type refrigerator with a suction line heat exchanger(SLHX) was tested to improve system performance. Based on the experimental data, the multi type refrigerator showed better performance than the conventional refrigerator(single type system). Besides, the COP of the single system increased from 1.0 to 1.37, and those of the dual and triple system increased from 1.29 to 1.39, and 1.22 to 1.51, respectively, by applying the SLHX.

The Development of the Refrigerator using a Pottery Vessel (토기 용기를 이용한 저온 저장고 개발)

  • It is necessary to keep Kimchi at 0~5$^{\circ}C$ all around the year to maintain its taste, which is very sensitive to temperature changes. In addition to temperature for maintenance of taste, property of container is also important to control the activity of bacteria involved in Kimchi. As a pottery container is the best one for the bacterial activity, it was used to store Kimchi. Pottery is shielded by cooling pipe directly, and temperature of Kimchi is controlled by the independent temperature controller.

  • Closely connecting Well-Being culture with our traditional eating culture. we can predict next generation Kimchi refrigerator trend with this research. In the highly developing industrial society, design has been playing the central role in the managerial strategy of a company and has been one of the central agendas in determining the economical competence of a country, and has also been regarded as a means to acquire sustainable superior competence. Thus, these trends suggest that the aesthetic value of product has become more important than its technological function. In this study we reviewed theoretically esthetic factors influencing the preference and the evaluation of a product and made a list of eight esthetic factors based on various referential studies which include simplicity, balance, unity, rhythm, style, novelty, typicality, and proportion. Also on the point of view of design, it is necessary to find out definitely the consumer preference frame the relationship among design preference design image design attribute. Will give you guidelines on which designers can select and design some more objective and reliable design factors, finding out the relation of cause and effect by which they can know what kind of product designs their consumers like and how the popular image which that product offer is composed of. We investigated the esthetic factors affecting consumers preferences and the basis for evaluating a product. Aimed at providing materials for developing product design by presenting an ,esthetic guideline product design by presenting an esthetic guideline and to put these materials to practical use. Investigated other considered elements classified by manufactures and importance of esthetic factors and its influence on consumer tastes . All of these result, It could not conclude all of the adjective design image and design factors of every consumer, but through consumer reaction framework consumer are response and prefer the products which design image have. and then understand prefered design image are influenced to design factor's and could be apply to new design development.

Development of Auto-aging System for the Kimchi Refrigerator for Optimal Fermentation and Storage of Dongchimi (동치미 최적발효 및 저장을 위한 김치냉장고의 자동숙성 시스템 개발)

  • This study was investigated to determine the conditions for an auto-aging system placed within a kimchi refrigerator for optimal fermentation, as well as the optimal conditions for the prolongation of dongchimi storage time. Various fermentation characteristics of dongchimi stored at different temperatures ($5-23^{\circ}C$) were compared. The pH and acidity of dongchimi associated with the highest levels of overall acceptability were $3.9{\pm}0.1$ and $0.25{\pm}0.05%$, respectively. In order to establish the time point for the conversion of fermentation to storage, dongchimi was fermented at $10^{\circ}C$ or $15^{\circ}C$ until the acidity reached the designated points (0.1, 0.2, and 0.3%), and was then stored at $-1^{\circ}C$ for 1 week. According to the sensory evaluation, the dongchimi acidity of 0.2% fermented at $10^{\circ}C$ evidenced the highest levels of overall acceptability after 1 week of storage among the samples. In conclusion, we suggest conditions of $10^{\circ}C$ and $-2.5{\pm}0.5^{\circ}C$ for the fermentation and storage temperature, respectively, and a dongchimi acidity of 0.2% as an index for the time point for the conversion of fermentation to storage in the kimchi refrigerator.

A Survey on the Dietary Life toy Kimchi of Housewives in Wonju Area (김치에 관한 원주지역 주부들의 식생활 실태조사)

  • The purpose of this study was to investigate the dietary life about Kimchi of the housewives. Self-administrated questionnaires were completed by 322 housewives in Wonju area. The results were as follows: In the point of housewives' domestic duties, over 50% of housewives took care of their domestic duties alone, and the rate who learned how to manage domestic duties from their mothers before marriage decreased as the age got younger. 77.6% of housewives responded that both man and woman could manage a dietary life at home in the future, and the rate of such response was higher as their educational careers were higher and they were younger. In the point of housewives' basic situation about Kimchi, the rate of housewives who knew how to prepare kimchi was high as they were older, and the holding rate of a refrigerator for Kimchi was high as much as 72.4%. In the point of preparation for Kimchi, the rate who made Kimchi by themselves was high, but the rate of preparing Kimchi by their parents for them was higher in the twenties. Frequency of making Kimchi, an amount or a kind of Kimchi were notably different according to housewives' age, a type of their family, the number of their family, and their having a job or not. Housewives' opinion of a market kimchi was that it was expensive, and not sanitary, and rate of purchasing Kimchi was also low. In the point of the prepartion method of Kimchi for the winter, the rate who gained Kimchi from their parents was higher as they lived in an apartment, and had a nuclear family, and had the lesser family members. In an amount of Kimchi prepared for the winter, 11∼22 heads were 23.9% and 21∼30 heads were 21.9%. In the point of the method preparing Kimchi in the future, 53.8% of housewives responded that they would make by themselves, and 28.0% answered they would prepare or purchase. 77.4% of housewives answered that they would teach how to make Kimchi to their children. In conclusion, in housewives of Wonju area, wanted to make Kimchi by themselves and wanted their children to learn how to make Kimchi.
