이태리 식당, 뷔페 식당과 전통음식점 이용 고객의 입지 요인 선호 경향 분석 (An Analysis on the Preference Tendency of Customer of Italian Restaurants, Buffet Restaurants and Traditional Restaurants for Locational Factors)

  • This examination was conducted as follows; 189 copies were coated in total, and demonstratively analyzed by SPSS WIN 15.0 program. The methods used in data for this analysis are as follows; Sensitivity, Reliability, Frequency, Internal consistency, One way ANOVA(Scheffe's examination) Analysis, T-test, etc. The findings of this study are as follows; firstly, it was revealed that respondents who were regular customers of Italian restaurants regarded convenient transportation, property of space, property of pastoral, visibility, and accessibility as importance. This means that Italian restaurant marketers should consider some of factors of location for business with a good view, good parking lot, location at main street, smooth flow of traffic, luxury, atmosphere of freedom, clean area around restaurants, elegant interior of the building, comfortable, luxurious, and deluxe atmosphere, and so on. Secondly, it was revealed that respondents who were regular customers of buffet restaurant either considered the same factors as the Italian restaurants above or regarded those factors less important. This suggests that restaurants should be located on main streets, on trunk roads, and in large-scale residential districts of apartment complex. Thirdly, it was revealed that respondents who were regular customers of traditional restaurants did not consider the locational factors above. This shows that traditional restaurants should be located in nearby customers' houses or their working places, and that marketers should consider focusing on their restaurants' homelike atmosphere, cleanliness, food flavors, and so on.

이태리 메뉴와 요리품질이 고객가치 및 고객만족에 관한 연구 (A Study on Italian Menu and Its Quality Affecting Customer Value and Customer Satisfaction)

  • This study explored the quality of menu and customer value and satisfaction in Italian restaurants. From the result of the research, the menu and the quality of hotel restaurants had an important effect on the customer satisfaction, and the menu and its quality were closely related to each other. Specially, the price of the menu had an effect on the customer satisfaction directly. The customer value has a more direct effect than Italian menu and the importance of the menu perceived by the customers in Italian restaurants had a relatively less effect than the importance of menu information. In the result of the factor analysis, the more the menu was perceived appropriately, the better the customer value was. It was approved that Italian menu had positive (+) influence on the customer satisfaction. The more the quality of Italian cooking was perceived, the higher the customer value was. And the higher the customer value was, the better customer satisfaction was.

호텔 이태리 레스토랑의 메뉴 품질 만족도가 재방문 의사에 미치는 영향 (The Effect of the Menu Quality of Hotel Italian Restaurants on Satisfaction and Revisit Intention)

  • 본 연구의 목적은 서울 시내에 소재한 대표적인 특1급 호텔 이태리 레스토랑의 메뉴 품질이 고객 만족과 재방문에 미치는 영향 관계를 분석하는데 있다. 조사 기간은 2009년 6월 20일부터 6월 26일까지 7일 동안 이태리 레스토랑을 방문한 고객을 대상으로 설문조사를 하였으며, 분석방법은 빈도분석, 신뢰도분석, 요인분석, 상관관계분석, 다중회귀분석을 실시하였다. 연구 결과는 첫째, 이태리 레스토랑의 선택 기준은 음식의 맛이며, 이태리 레스토랑의 메뉴 품질에 대한 총 45개의 변수를 가지고 요인분석을 실시한 결과, 메뉴 구성 요인, 음식 품질 요인, 메뉴 서비스 요인으로 도출되었다. 둘째, 이태리 레스토랑의 메뉴 품질 중에서 메뉴 구성과 메뉴 서비스가 고객 만족에 유의한 영향을 미치는 것으로 나타났다. 셋째, 고객 만족은 재방문에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 넷째, 이태리 레스토랑의 메뉴 품질 중에서 메뉴 구성은 재방문에 유의한 정(+)의 영향을 미치는 것으로 나타났는데, 음식 품질과 메뉴 서비스는 재방문에 유의한 정(+)의 영향을 미치지 않는 것으로 나타났다. 연구의 한계점으로는 서울 시내에 소재한 특1급 호텔 이태리 레스토랑으로 지역을 제한하여 조사를 하였기 때문에 전체적인 이태리 레스토랑의 메뉴 품질을 대표할 수 없다고 생각된다. 향후 연구에서는 외식업체의 이태리 메뉴 품질에 관한 다양한 연구가 진행이 되어야 하겠다.

  • 고객들이 지각하는 메뉴선택 속성에 대한 고객만족과 재방문의도 간의 영향 관계 분석을 통하여 현재 소비자층의 특성에 맞는 메뉴의 구성 및 마케팅 전략을 수립하는데 필요한 IMC 활동정보를 제공하고자 하는 연구 결과는 다음과 같다. 이태리 레스토랑의 메뉴선택 속성이 고객만족에서는 제품 품질, 메뉴구성, 물리적 제공은 고객만족에 유의한 영향을 미치는 것으로 나타났다. 이태리 레스토랑의 메뉴선택 속성이 재방문의도에서는 제품 품질과 메뉴구성은 영향을 미치는 것으로 나타났으며, 물리적 제공은 영향을 미치지 않는 것으로 나타났다. 이태리 레스토랑의 IMC 활동은 고객만족에서는 광고, 홍보는 유의적인 영향을 미치고 있는 것으로 나타났고, 인적 판매는 영향을 미치지 않은 것으로 나타났다. 이태리 레스토랑의 IMC 활동은 재방문의도에서는 광고, 홍보는 유의한 영향을 미치는 것으로 나타났고, 인적 판매에는 영향을 미치지 않은 것으로 나타났다. 이태리 레스토랑의 고객만족은 재방문의도에 영향을 미치는 것으로 나타났다.

  • 이 연구의 목적은 이태리 레스토랑의 실내 공간과 음식 서비스 품질 평가를 개발하고, 개발된 도구로 이태리 레스토랑의 실내 공간과 음식 서비스 품질을 평가하는데 있다. 개발된 품질 평가 도구는 30개 문항으로 되어 있어서 리커르트 5점 척도 방법으로 평가되었다. 평가 결과, 이태리 레스토랑의 실내 공간과 음식 서비스 항목 중 '음식의 맛'과 '식재료의 신선함'이 가장 중요한 것으로 나타났다. IPA 기법에 의해 9개 항목이 잘 되고 있고 앞으로도 계속 성장할 사항으로 나타났고, 5개 항목이 기대도가 높고 인식도가 낮아 품질 경영 전략에서 중점 관리해야 할 항목으로 나타났다.

이태리 레스토랑 종사자들의 리더십 유형에 관한 연구 (Research on the Leadership Types in Italian Restaurants)

  • Purpose - This study analyzes the effects of types of leadership on the employees of Italian restaurants, its efficacy, and organizational citizenship behavior, utilizing a causal assessment model. In this study, independent variables such as the type of leadership perceived in the manager or chef by an Italian restaurant's employees, and its efficacy were parameters, and the organizational citizenship behavior and organizational effectiveness were the variables representing the results in the hypothesis. The study aimed to draw implications by verifying the leadership via efficacy and the impact on organizational citizenship behavior of Italian restaurants. Research design, data, methodology - For the purpose of this analysis, specific questionnaire items were configured according to the theory and efficacy of the study. From a questionnaire used in organizational citizenship behavior comprising 22 questions, six were modified to suit the research purpose of this study. The configured questionnaire comprised 5 parts and 40 items. A Likert (Likert) 5-point scale was utilized to measure responses to the questionnaire items from the employees of an Italian restaurant in Seoul who participated in the survey. For data collection, 400 questionnaires were distributed, and 344 collected. Factor analysis and reliability verification were conducted using SPSS18.0 and AMOS18.0. A covariance structure analysis was conducted to test the research hypotheses. Results - Based on the results of the analyses, the summary and suggested implications of the research are as follows: The covariance structure analysis used to analyze the kind of effect transformational and transactional leadership styles in Italian restaurant employees had on self-efficacy, group-efficacy, and organizational citizenship behavior, indicated that among the characteristics of transformational leadership (such as, idealized influence, inspirational motivation, individual consideration, and intellectual stimulation), idealized influence and individual consideration had a positive influence on self-efficacy. Idealized influence, individual consideration, conditional reward, and management by exception also positively influenced self-efficacy and altruistic and conscientious behavior (organizational citizenship behavior). Conclusions - Results suggest that with regard to self-efficacy and group efficacy, managers in different departments and chefs should provide team members with a vision for the future, increase their confidence in their abilities, and build their trust in the organization. By evaluating employee performance and experiences, management can demonstrate leadership and encourage organizational citizenship behavior through enjoyable, voluntary participation. Transformational and transactional leadership is effective in group processes that include social-exchange relationships, self-efficacy and group efficacy, and organizational citizenship behavior. However, as this research study utilizes only self-reported data, it has several limitations, such as a vulnerability of errors caused by the various experiment types. A significant limitation of this study is the lack of potential for the duplication of results. The covariance structure analysis, however, provides complementation to limit the impact of errors from self-reporting studies. A future study can extend this research by utilizing different data collection methods.

이태리 레스토랑의 메뉴선택 속성요인이 만족도에 미치는 영향 연구 (A Study on the Menu Selection Factors of an Italian Restaurant on Satisfaction)

  • 본 연구의 목적은 전주지역 이태리 레스토랑을 대상으로 메뉴 주문시 선택 속성에 관한 중요 내용을 알아보고, 이태리 레스토랑의 이용 형태와 각 메뉴 구성별 좋아하는 음식이 무엇인지 분석을 하는데 있다. 연구 결과의 내용을 요약하면 다음과 같다. 첫째, 이태리 레스토랑 메뉴 주문시 선택 속성에 관한 중요도에서는 요인분석에서 건강관리 요인, 서비스관리 요인, 음식관리 요인, 메뉴관리 요인으로 명명하였는데, 만족도 검증 결과 건강관리 요인에서 유의한 차이가 있는 것으로 나타났다. 둘째, 이태리 레스토랑 이용형태에서는 이태리 음식의 인지도에서 긍정적으로 나타났으며, 방문 횟수는 한 달에 1회- 2회, 주 동반인은 가족, 이용 목적은 식사를 하기 위해서, 음식에 대한 정보는 구전을 통해서 정보를 얻은 것으로 나타났다. 셋째, 이태리 메뉴 중에서 각 메뉴별 좋아하는 음식으로는 안티파스토에서 모짜렐라 치즈요리, 수프에서는 아스파라거스 크림 수프, 파스타에서는 크림소스의 스파게티 까르보나라, 피자에서는 모짜렐라 치즈와 살라미, 검정 올리브, 토마토 소스를 얹어 구운 피자, 샐러드는 모짜렐라 치즈 토마토 샐러드, 주요리 중에서 육류는 쇠고기 안심 스테이크, 생선요리는 광어요리, 후식에서는 신선한 과일과 티라미슈를 좋아하는 음식으로 나타났다. 향후 연구에서는 고객들이 이태리 레스토랑을 방문했을때 메뉴 선택시 중요하게 이루어지는 내용을 조사대상자 표본 집단별로 분석하는 다양한 연구가 진행이 되어야 하겠다.

  • Today we are inclined to dine out more frequently according as the national income is increased and Women enter into the Social life, 'This tendency results in the universality of foodculture and the food made of fresh food stuff as well as the Pollution-free food is preferable as everyone warits to eat natural food or health food and escapes from the pollution. Moreover we have socail problems like fatress and adult disease which result from the small amount of activity or the food with high calory and high gat. under this circumstance. the most adeguate food seems to be Italian good. It stand in the spottight of food world and is most preferable for everyone today. The sphere of food and beverage has a low value-added-rate compartry to the high increasing rate of customers and profit, so, the efficient managing method for the cost of food and beverage and the operating skill in the kitchen are the principal factors leading to success or failure. Therefore, this research is to show some remedies as follows, pointing out the operating problems of an selected Italian restaurant at the top class hotel. First, most Italian restaurant at the hotel are located in the best place and investing the big capital, But they are open for only 8 hours through a day. This should be improved not to bring a enormous loss to the hotel The brealefast menus such as vegetables or fish food, pizza and pasta which modern man can easily enjoy should be developed open the restaurants for morning gours. Second, the business hours are not made continously. As a result, all the emplyees should stay in the company all day long without taking any advantage of the losed time, This will be the loss for both the company and the employees, By veloping the morning menus, employees shald be classified into morning and afternoon staffs and the opening and closing hour at 3 and 6 O'clock should be used so that minimum number of employees may operate the company. Third, the characteristic of Italian food is in the use of fresh food stuff, The proper purchase of food stuff and the simple distributing system will help Italian restaurant show its character istcc as a hzgh-grade restaurant. Fourth, the most popular Italian food such as pizza or pasta should be market with Priority.

이탈리안 레스토랑의 적절한 Meal Duration 선정에 관한 연구 (Study of Appropriate Meal Duration at an Italian Restaurant)

  • This study examined the different meal duration expectations and dining characteristics of customers each stage of service (order, cook, check), and investigated the impact of perceived meal duration on customers' satisfaction. The procedures consisted of four phases. During the first phase, the different meal duration expectations and dining characteristics of customers of an Italian restaurant in Seoul were examined by survey at each stage of service. The second phase investigated the impact of perceived meal duration on customer' satisfaction. The third phase compared perceived meal duration and actual meal duration. The last phase suggested appropriate meal duration for maximization of customer' satisfaction. We also examined the effects of meal time (lunch or dinner) on meal duration preferences. Customer satisfaction was decreased with longer perceived meal duration for the order and check stages and too short perceived meal duration for the cook stage. To determine appropriate meal duration for each service stage, the relationship between perceived and actual meal durations was examined. This study confirms that customers dining at restaurants preferred a longer cook time and that a shorter meal duration at dinner decreased satisfaction ratings more when compared to lunch.

외국음식에 대한 대학생들의 태도 및 관심도 분석 (University students' attitudes and interests for ethnic food)

  • The purpose of this study was to investigate university students' attitudes and interests for ethnic food. The questionnaire developed was distributed to 60 students majoring in food & nutrition and 260 students taking a liberal course related with food culture in world. A total of 271 questionnaires were usable ; resulting in 84.7% response rate. Among 12 kinds of ethnic food, a large number of students had an experience in Japanese, Chinese, American and Italian food. Also Chinese, American, Japanese and Italian food were familiar with them, but the hope to eat for French, Spanish, Mexican and German food was too strong. Students knew kinds, characteristics, table manners and etc. for Japanese, Chinese, and American food very well and wanted to know the information about French food. as result of positioning for ethnic food by correspondence analysis, Spanish, English, French, Germany and Mexican food had a strong image in want to eat, wanted to know information about food and got a good feeling. Students perceived Vietnamese, Thai and Indian food as having an experience, Japanese, American and Italian food as well-know about food or restaurants, and Chinese food as being familiar. The findings would indicate trends for ethnic foods and their cultures in Korea and forecast the possibility of change in foodservice market.
