  • The effect of meal service for home-staying, urban elderly with low income on their mineral status and prevalence of clinical symptoms was evaluated. One hundred. One hundred and eighty three subjects were assigned to meal-served(served) and non-served(non-served)groups. A meal containing approximately one half of the RDA for energy, protein, calcium and iron was served as lunch every day to served group at a welfare center. Dietary, biochemical and clinical data were collected before and after 6 months of meal service and the changes of parameters were analyzed with paired t-test. served female showed significantly increased intake of calcium. The mean hemoglobin, serum iron, TIBC and serum copper of female were significantly increase with meal service. The proportion of anemic female compared to reference data on hemoglobin, hematocrit and serum iron were 45.5$\%$, 29.1$\%$ and 16.4$\%$ respectively, but were lowered to 18.2$\%$, 7.3$\%$, and 5.5$\%$ after 6 months of meal service. served male showed significant increase in MCHC, serum copper, and urinary Na. The urinary Ca/Creatinine, which is often used as an index of bone resorption, was decreased significantly in served group. The decrease in the proportion of served women suffering from edema of ankle and diarrhea was most apparent and less women reported feeling clinical symptoms of dizziness, constipation, difficulty in hearing, and coughing after meal service. The symptoms of benumbness of hands and feet and coughing was lowered most among men after meal service. Clinical symptoms of non-served elderly did not show improvement in feeling clinical symptoms except slightly decreased frequency in coughing of female and buzzing sound in the ears and diarrhea of male.

  • This study was performed to assess the effect of one year's of meal service for home-staying urban elderly with low incole on their nutritional status. One hundred and eighty three subjects, who had already completed the first nutritional survey, were assigned to two group : meal served(served) and non-meal served(non-served). A meal containing approximately on half of the RDA for energy, protein, calcium and iron was served as lunch everyday to served group. After on year of meal service, follow-up-nutritional survey was done and changes of parameters were analyzed with paired t-test. Served female showed signficantly increased intake of riboflavin and calcium, while non-served female showed significantly decreased intake of calcium. Serum total protein, serum albumin and serum cholesterol were significantly increased in female regardless of meal service. Served remale was observed with significantly elevated LDL-cholesterol, whereas non-served female showed singnificantly lowered HDL-cholesterol. Significantly decreased serum iron, serum transferrin saturaion and significantly increased TIBC were observed for female regardless of meal service. But the proportion of anemic elderly according to Hb or serum iron was decreased more in served group. Female showed significantly increased serum zinc and copper regardless of meal service, whereas only served male showed significantly increased serum copper.

A Study on the Anthropometric Measurement, Health Condition and Nutritional Status of Female College Students in Kyunggido Area (경기지역, 일부 여대생의 신체계측치와 건강 및 영양섭취상태에 관한 연구)

  • This study was conducted to assess anthropemrtric, health status, nutritional status, and their correlations in 120 female college students in Kyunggido area. The questionnaires on general living habits, food habits and energy expenditure were used, and nutrient intakes were estimated by Convenience Method. Anthropometric measurement, blood pressure, hemoglobin(Hb), hematocrit(Hct) were also determined. The mean values for BMI, RBW, and blood pressure of the subjects were 20.4$\pm$2.4, 92.9$\pm$16.0% and 108.9/69.6mmHg, respectively. Estimation of body fat from two sites of skinfolds thickness(20.6$\pm$6.0%) and four sites of skinfolds thickness(20.1 $\pm$8.6%) was similar, but different from BIA method(23.9$\pm$3.9%). The subjects of 36.9% considered themselves healthy, and 15.4% of them considered themselves not healthy. The mean values for Hb and Hct were 13.4$\pm$ 1.6g/dl, and 41.5$\pm$0.4%, respectively. The prevalence rates of iron deficiency assessed by Hb and Hct were found to be 19.8% and 6.3%, accordingly. The mean energy intake of subjects was 1,841 kcal. The proportion of energy derived from carbohydrates, protein and fat was 64.9%, 14.7%, and 20.4%, respectively As nutrient intake was compared to RDA for Koreans, intakes of energy, calcium, iron, and vitamin A fell short of recommendations. Intakes of energy, fat, iron, vitamin B$_2$, and niacin were positively correlated with total energy expenditure. These results suggest that appropriate reference data are important to maintain the health of female college students.

  • Iron deficiency is still a common nutritional disorder in the world. In developing countries, the bioavailability of dietary iron is often very low, mainly due to a low content of factors facilitating nonheme iron absorption. The iron content of the diet, iron status of subjects, and the actual composition of the diet are the major factors that influence the absorption of food iron. Inadequate dietary intake of iron often results from low-calorie diets, food restrictions, or single food diets. Ascorbic acid and MFP (meat, fish and poultry) are the quantitatively most important enhancers of nonheme iron absorption found in the diet. Ascorbic acid and meat have consistently been shown to enhance iron bioavailability. Major inhibitors of nonheme iron absorption are dietary fiber, phytate, and polyphenols. The availability of nonheme iron can be highly influenced by components of foods ingested concomitantly, Therefore, consumption of food in combinations can either enhance or inhibit nonheme iron absorption.

  • Essential metals have been known to interact with non-essential toxic metals in the aspects of absorption, transport and deposition in the body. Iron deficiency has been reported to increase lead and/or cadmium absorption. The relation between iron and lead has been understood well in children but not in adults. Two hundred seventy adults (118 males and 152 females) were recruited from 3 different residental areas (rural, coastal and urban) to investigate the effects of environmental lead exposure on body iron status. The subjects were interviewed for life-style and diet of the last 24 hours, and measured for blood lead and body iron. The lead concentration in the whole blood was determined by a flameless method using an atomic absorption spectrophotometry. The body iron was evaluated with values of hemoglobin, hematocrit, RBCs, serum total iron, unsaturated iron binding capacity, total iron binding capacity and ferritin. The mean concentration of blood lead in adult was $3.31{\mu}g/dL$. The concentration was higher in male ($3.97{\mu}g/dL$) than in female ($2.86{\mu}g/dL$). The blood lead was influenced by residental area, life-style, smoking and drinking, occupation and diet habit of subjects, but not by age. A positive correlation was observed between the blood lead level and the serum iron or ferritin. These results suggest that environmental lead exposure in Korean adult may not be higher than other developed and developing countries. It is further indicated that blood lead in adult could be influenced by life-style, and environmental and genetic factors but no inverse relation with body iron as shown in children.

Serum Folate and Iron Levels of Pregnant, Lactating, and Non-Pregnant, Non-Lactating Women (임신부, 수유부의 혈청 엽산과 철 수준에 관한 연구)

  • Folate and iron nutrition was studied in a total of 122 pregnant, lactaging, and non-pregant, non-lactating Korean women, Serum folate levels were determined microbiologically using Lactobacillus casei(ATCC 7469), and serum iron levels was analyzed colormetrically. The average folate values of pregnant and lactating women were 5.42ng/ml and 4.14ng/ml, which were significantly lower than that of the non-pregnant, non-lactating women(7.06ng/ml). More than 1/3 of the total subjects were found to have serum folate levels lower than 3ng/ml, at which folate nutrition status can be considered inadequate. Serum iron values of pregnant(96.9ug/dl)and lactating women(93.9ug/dl) were not significantly different from that of the non-pregnant, non-lactating women (97.1ug/dl). There were however, more iron-deficient subjects in the pregnant gorup(17%) and the lactating group(19%) than in the non-pregnant, non-lactating group (8%). A statistically significant positive correlation was shown between the levels of serum folate and iron in lactating women(r=.9694, p<0.05). The results of our study document that folate deficiency is a nutritional problem as prevalent as iron deficiency in Korean women, especially during pregnancy and lactation. For these women a routine folate and iron supplementation might be necessary.

Effects of Iron from an Amino Acid Complex on the Iron Status of Neonatal and Suckling Piglets

  • This experiment was conducted to investigate the effects of iron from an amino acid complex (Availa-$Fe^{\circledR}$) on the iron status of neonatal and suckling piglets. A total of 24 gestating sows (Landrace${\times}$Large White) were randomly allocated to three dietary treatments. The control diet contained 80 mg $kg^{-1}$ Fe from ferrous sulfate heptahydrate ($FeSO_4$.$7H_2O$), while the two experimental diets were supplemented with an additional 120 mg $kg^{-1}$ Fe from Availa-$Fe^{(R)}$ or $FeSO_4$.$7H_2O$, respectively. The lactating sows remained the same iron treatments as gestating sows, while neonatal piglets of 24 litters born from the above sows were allotted to another three treatments. Piglets from the sows of the control treatment were fed basal diet with no supplemental Fe as control treatment, but were injected with 100 mg Fe as Fe dextran at birth. Piglets from the sows of Availa-$Fe^{(R)}$ or $FeSO_4$.$7H_2O$ treatments were supplemented with 120 mg $kg^{-1}$ iron from Availa-$Fe^{(R)}$ or $FeSO_4$.$7H_2O$, respectively. The total born alive and weaned, and the average piglets weight at birth and at weaning were not significantly affected by the sow' dietary treatments (p>0.05). Iron from Availa-$Fe^{(R)}$ did not demonstrate a statistically significant improvement in hemoglobin concentration, hematocrit and plasma iron of sows on day 90 and 105 of pregnancy and the milk iron of sows during lactation (p>0.05). Neonatal piglets in the Availa-$Fe^{(R)}$ treatment had a significantly higher hemoglobin concentration (p<0.05) and higher hematocrit and plasma iron (p>0.05) than those in the other two treatments, respectively. The hemoglobin of suckling piglets in the Availa-$Fe^{(R)}$ treatment was higher than that of piglets in $FeSO_4$.$7H_2O$ treatment on day 28 (p<0.05). The total iron binding capacity of piglets in Availa-$Fe^{(R)}$ treatment was lower than that of piglets in the control and $FeSO_4$.$7H_2O$ treatment on day 14 (p<0.05), but there was not a statistically significant difference among three treatments on day 28 (p>0.05). However, the hemoglobin and hematocrit of suckling piglets injected with Fe were higher than those of piglets in the other two treatments (p<0.05). This study indicated that the addition of 120 mg $kg^{-1}$ iron from amino acid complex into the diets improved iron status of neonatal and nursing piglets more effectively than the addition of 120 mg $kg^{-1}$ iron from $FeSO_4$.$7H_2O$, however, this improvement of the organic Fe was not sufficient to replace the Fe injection for prevention of iron-deficiency anemia.

  • This study was conducted to assess biochemical nutritional status and health status of 53 men and 130 women aged over 65 years and residing in low-income areas in Seoul. Nutritional status and health status were determined by hematological analysis, incidence of disease, and clinical symptoms. Mean serum cholesterol levels were 159.7mg/dl in men and 182.4mg/dl in women and triglyceride levels were 124.6mg/dl in men and 130.6mg/dl in women. The serum lipid levels were higher in women than in men, and 88% of the subjects belonged to normal range and 12% belonged to hyper lipid. The mean hematological indices.; Hb, Hct, RBC, MCH, serum iron belonged to normal ranges. The proportion of anemic state were 16~18% in men and 20~25% in women. Mean serum Ca, Cu and Zn levels were 9.4mg/dl, $84.2\mu\textrm{g}/dl$ and $75.8\mu\textrm{g}/dl$ for male and $9.5\mu\textrm{g}/dl$, $88.3\mu\textrm{g}/dl$ and $75.6\mu\textrm{g}/dl$ for female, respectively. However, proportion of low Ca, Cu and Zn status were 8~20%, 77~84% and 12~34%, respectively. The biochemical indices were not significantly different according to age, BMI, obesity rate. Cholesterol, RBC, MCH and serum iron levels were significantly different between men and women. (Korean J Community Nutrition 1(2) : 215-227, 1996)

The Eating Behaviors, Nutrient Intakes and Hematological Status of the Lower Grade Primary School Children in Gwangiu (광주지역 일부 초등학교 저학년 아동의 식습관과 영양소 섭취량 및 혈액성상에 관한 연구)

  • The purpose of this study was to examine height, weight. chest circumference, sitting height, hematological status. eating behaviors and nutrient intakes for the lower grade primary school children in Gwangju. The subjects consisted of 76 boys and 60 girls aged 9 years old. Height, Weight, Chest circumference, Sitting height, Hct, WBC, RBC, Hb, serum GOT, GPT and cholesterol were measured. With regard to regularity of meal time, 66.7% of the subjects has been 'regular'. With regaled to amount of eaten food, 100.0% of the subjects has been 'moderate'. With regard to nutritional balance, 66.6% of the subjects has been 'think,but do not practice'. The study also found that 100.0% of the subjects skipped breakfast, liked korean food. Their dietary intake vase assesed for 1 day by means of 24 hours dietary recall method. The mean energy intake of the subjects was 1,306 kcal. The subjects consumed 47.9g protein, 28.8g lipid, 3.9g fiber, 446.9mg calcium, 835.0mg phosphorous, 7.9mg iron, 3,721mg sodium, 1.863mg potassium, 362.3RE retinol, 0.8mg thiamin, 1.1mg riboflavin, 10.8NE niacin, 93.9mg ascorbic acrid and 173.5mg cholesterol respectively. Energy, protein, calcium, iron, retinol, thiamin, riboflavin and niacin intake was lower than the Korean RDA. There were positive correlations between meal time and protein intake or fat intake or fiber intake or iron intake or retinol intake : negative correlations between meal time and sodium intake negative correlations between saltiness and cholesterol intake positive correlations between use of perilla seeds and riboflavin intake or niacin intake : negative correlations between energy intake or carbohydrate intake or phosphorous intake : negative correlations between frequency of eating-out and protein intake or fat intake or fiber intake or iron intake or retinol intake or thiamin intake or riboflavin intake or niacin intake.

A Study of Manufacturing Techniques Extracting from the Analysis of Corrosion Status and Microstructure for the Cast-Iron Pot in Bubjusa (법주사 철확의 부식상태 및 미세조직 분석을 통한 제작기법 연구)

  • This study aims to extract manufacturing techniques by analysing metallurgical characteristics of the cast-iron pot from Bubjusa, examining corrosion status and microstructure with a optical microscope, SEM-EDS, micro vickers hardness tester and XRD. The microstructure analysis has presented that ferrite and partial portion of pearlite exist within the corroded outer layer. The analysis of the inner layer revealed that there is pearlite and graphite of feather shape. The one of the middle layer, which is placed between outer and inner layer, showed that corrosion has been heavily developed. Micro vickers hardness values range from 217Hv to 698Hv in constituent layers and such values lie within the ranges of the ancient iron relics. The result of EDS analysis for each microstructure presented that the outer layer has been more decarbonized than the inner layer. XRD analysis of iron corrosion compound revealed that Goethite and Hematite had been produced from the corrosive process of iron. The study concludes that the large iron pot was made by casting technique, and microstructure of inner layer had a gray cast iron. Outer layer has been decarbonized through repetitive process of heating and cooling. This results can be used as fundamental data for comparative study to reveal manufacturing techniques of large cast-iron pot.
