Quality Characteristics of Sausage Prepared with Black Garlic Extract and Dried Powder of Specialized Crops Cultivated in Namhae (흑마늘과 남해특용작물을 혼합 첨가하여 제조한 소시지의 품질특성)

  • In this paper, we made sausages which included 1% black garlic extracts at $15^{\circ}Bx$ mixed with 0.3% dried powders of Curcuma longa L. (ST1), Opuntia ficus-indica var. saboten (ST2), Asparagus ocinals L. (ST3) and Aloe vera (ST4), respectively, and evaluated the quality of the sausage by instrumental analysis and sensory evaluation. The sausages were stored at $8^{\circ}C$ for 4 weeks. In terms of color intensity, ST2 provided the highest lightness (L) and redness (a), while the yellowness (b) was the highest in ST3. In the initial duration, the control group of sausage showed the highest texture measurement. ST4 had the lowest pH level (highest acidity). These outcomes decreased as the storage time became longer. In the initial storage duration, the ST4 had the highest total sugar content ($17.64{\pm}0.92mg/100g$), and this increased with longer storage duration. Since the contents of TBARS for the proposed sausages had been incremented, the initial contents were generally lower than those of the control sausages. The ABTS radical scavenging activity was performed as $89.11{\pm}0.66{\sim}99.22{\pm}0.09%$ at the $1000{\mu}g/mL$ level during the initial day of storage. To conclude, the sausages supplemented the black garlic with the proposed dried powders have a high chance of being a suitable commercial product for both customs and marketing eld.

  • Given the dynamics of the changing economic or financial conditions in Chungcheong province in the domestic capital market, foreign and domestic investments are expected to continually increase their investments in volume and size in this particular province. Considering the unprecedented business climate, it may be essential to examine the primary financial aspects, such as corporate profitability, growth rate, and capital structure, which may work as effective catalysts to enhance corporate value. Concerning the outcomes, five proposed variables, such as market-value based leverage ratio, growth rate, Tobin's Q, business risk, and R&D intensity, highlighted the significant effects to determine the current level of profitability. Moreover, two variables, such as profitability and firm size, shared commonalities to discriminate between firms in the Chungcheong province (96 firms) and their counterparts (746 firms) in the other domestic provinces in terms of the growth rate and financial leverage. In contrast, three variables, including the interaction effect and firm size, had pronounced effects on profitability. The results of the study are expected to help enhance the corporate value in Chungcheong province by controlling the level of each significant factor.

Effect of Light on the Growth Responses of Quercus serrata and Q. aliena to Elevated $CO_2$ and Temperature (지구온난화 조건에서 광 처리에 따른 졸참나무와 갈참나무의 생육반응)

  • This study was conducted in order to determine changes in the growth responses of Quercus serrata and Q. aliena which are potential natural vegetation of riverine in Korea under four light gradients within ambient and elevated $CO_2$ concentration and temperature levels. As a result, growth responses of two species were affected by light factor. Aboveground, belowground, plant biomass and root:shoot ratio of two species grown under the control and treatment were increased in the highest light level. Plant biomass and root:shoot ratio of two oak species were not significantly affected by elevated $CO_2$ and temperature, while aboveground biomass of them was lower in the treatment than control. Belowground biomass of Q. serrata was lower in the treatment than control under the gradients that are more than 70% of light level. As light intensity increases, elevated $CO_2$ and temperature promoted root growth of two oak species but had a negative effect on aboveground growth. According to the principal component analysis(PCA), two oak species were discriminatively arranged based on factor 1 and 2. Also, the reactions towards the ambient and elevated $CO_2$ and temperature were slightly different. It is clearly visible that all features relied on axis 1 and axis II are highly correlated with most variables except for stem and shoot length.

Application of Gamma Ray Densitometry in Powder Metallurgy

  • The most important industrial application of gamma radiation in characterizing green compacts is the determination of the density. Examples are given where this method is applied in manufacturing technical components in powder metallurgy. The requirements imposed by modern quality management systems and operation by the workforce in industrial production are described. The accuracy of measurement achieved with this method is demonstrated and a comparison is given with other test methods to measure the density. The advantages and limitations of gamma ray densitometry are outlined. The gamma ray densitometer measures the attenuation of gamma radiation penetrating the test parts (Fig. 1). As the capability of compacts to absorb this type of radiation depends on their density, the attenuation of gamma radiation can serve as a measure of the density. The volume of the part being tested is defined by the size of the aperture screeniing out the radiation. It is a channel with the cross section of the aperture whose length is the height of the test part. The intensity of the radiation identified by the detector is the quantity used to determine the material density. Gamma ray densitometry can equally be performed on green compacts as well as on sintered components. Neither special preparation of test parts nor skilled personnel is required to perform the measurement; neither liquids nor other harmful substances are involved. When parts are exhibiting local density variations, which is normally the case in powder compaction, sectional densities can be determined in different parts of the sample without cutting it into pieces. The test is non-destructive, i.e. the parts can still be used after the measurement and do not have to be scrapped. The measurement is controlled by a special PC based software. All results are available for further processing by in-house quality documentation and supervision of measurements. Tool setting for multi-level components can be much improved by using this test method. When a densitometer is installed on the press shop floor, it can be operated by the tool setter himself. Then he can return to the press and immediately implement the corrections. Transfer of sample parts to the lab for density testing can be eliminated and results for the correction of tool settings are more readily available. This helps to reduce the time required for tool setting and clearly improves the productivity of powder presses. The range of materials where this method can be successfully applied covers almost the entire periodic system of the elements. It reaches from the light elements such as graphite via light metals (AI, Mg, Li, Ti) and their alloys, ceramics ($AI_20_3$, SiC, Si_3N_4, $Zr0_2$, ...), magnetic materials (hard and soft ferrites, AlNiCo, Nd-Fe-B, ...), metals including iron and alloy steels, Cu, Ni and Co based alloys to refractory and heavy metals (W, Mo, ...) as well as hardmetals. The gamma radiation required for the measurement is generated by radioactive sources which are produced by nuclear technology. These nuclear materials are safely encapsulated in stainless steel capsules so that no radioactive material can escape from the protective shielding container. The gamma ray densitometer is subject to the strict regulations for the use of radioactive materials. The radiation shield is so effective that there is no elevation of the natural radiation level outside the instrument. Personal dosimetry by the operating personnel is not required. Even in case of malfunction, loss of power and incorrect operation, the escape of gamma radiation from the instrument is positively prevented.

A Study on the Field Application of Nays2D Model for Evaluation of Riverfront Facility Flood Risk (친수시설 홍수위험도 평가를 위한 Nays2D 모형의 현장 적용에 관한 연구)

  • Recent climage changes have resulted in increases in rainfall intensity and flood frequency as well as the risk of flood damage due to typhoons during the summer season. Water-friendly facilities such as ecological parks and sports facilities have been established on floodplains of rivers since the river improvement project was implemented and increases in the flood levels of rivers due to typhoons can lead to direct flood damage to such facilities. To analyze the hydraulic influence of these water-friendly facilities on floodplains or to evaluate their stability, numerical analysis should be performed in advance. In addition, it is crucial to address the drying and wetting processes generated by water level fluctuations. This study uses a Nays2D model, which analyzes drying and wetting, to examine its applicability to simple terrain in which such fluctuations occur and to natural rivers in which drying occurs. The results of applying this model to sites of actual typhoon events are compared with values measured at water level observatories. Through this comparison, it is determined that values of coefficient of determination ($R^2$), mean absolute error (MAE), and root-mean-square error (RMSE) are 0.988, 0.208, and 0.239, respectively, thus showing a statistically high correlation. In addition, the results are used to calculate flood risk indices for evaluation of such risk for water-friendly facilities constructed on floodplains.

Protective Activities of Lactobacillus casei YIT 9018 against Salmonella enteritidis KU101 and Characteristics of 16S-23S rRNA Intergenic Spacer Region Sequence (Lactobacillus spp의 Salmonella enteritidis KU 101에 대한 보호 효과와 L. casei YIT 9018의 16S-23S rRNA Intergenic Spacer Region 염기배열 특성)

  • In vivo protective and in vitro inhibitory activities of Lactobacillus casei YIT 9018. against typical enteritis causing Salmonella enteritidis KU101 and IgA level after challenge have been determined. In order to identify the strains of lactobacilli the sequences of 16S-23S rRNA intergenic spacer region were determined. All the test strains of Lactobacillus spp. inhibited Salmonella enteritidis, the intensity varied depending upon the species of lactobacilli. Effects on the survival rate of the mouse after challenge with Salmonella enteritidis KU101 on feeding Lactobacillus spp. have shown the highest survival rate in L. helveticus CU 631 followed by L. casei YIT 9018 and L. johnsonii C-4 and the lowest in control mice. The higher level of total Ig A concentration in the intestinal fluid of lactobacilli fed mice than control mice was observed. The sequences of 16S-23S rRNA intergenic spacer region of seven strains of Lactobacillus casei could be utilized as a strain identification, those sequences showed some degree of difference in homology.

Assessment of Earthquake Induced Landslide Susceptibility with Variation of Groundwater Level (지하수위 변화에 따른 지진 유발 산사태의 취약섬 분석)

  • Since the frequency of the earthquake occurrence in Korean peninsular is continuously increasing, the possibility that massive landslides are triggered by earthquake is also growing in Korea. Previously, the landslide is known to be induced by large magnitude earthquake, whose magnitude is larger than 6.0. However, the landslide can be induced by only small magnitude earthquake, especially in the fully saturated soil. Therefore, the susceptibility of landslide caused by small magnitude earthquake in fully saturated soil is analyzed in this study. For that, the topographical and geological characteristics of the site were obtained and managed by GIS software. In the procedure of the study, slope angle, cohesion, friction angle, unit weight of soil were obtained and constructed as a spatial database layer. Combining these data sets in a dynamic model based on Newmark's displacement analysis, the landslide displacements were estimated in each grid cell. In order to check out the possibility of the earthquake induced landslides, the level of the groundwater table is varied from dry to 80% saturated soil. In addition, in order to analyze the effect of the magnitude of earthquake and distance to epicenter, four different earthquakes epicenters were considered in the study area.

Quality Characteristics of Yukwa Prepared with Rubus coreanus Miquel Extract Using Different Puffing Process Methods (팽화방법을 달리한 복분자 추출물 첨가 유과의 품질 특성)

  • Yukwa samples, made with additions of 0, 10, 20, and 30% Rubus coreanus Miquel extract, were puffed by different puffing methods(convection oven, microwave oven, and fryer) and were then examined for quality characteristics such as moisture content, expansion rate, color, hardness, and sensory qualities, in order to determine the optimal ratio of Rubus coreanus Miquel extract in the formulation and the optimal expansion of Yukwa. The moisture contents of Yukwa base increased as the level of Rubus coreanus Miquel extract increased. And the Yukwa puffed by convection had higher moisture than the samples puffed by microwave oven or frying, with the exception of the sample containing 20% Rubus coreanus Miquel extract. When comparing the expansion rates of samples, no significant differences were found between the control and extract-containing samples puffed by convection, microwave, and frying methods, respectively. However, the sample puffed by frying had the highest expansion rate, whereas the convection-, microwave-puffed samples showed no significant differences. In the convection-, microwave-, and fryer-puffed samples, lightness and yellowness decreased, but redness increased, as the level of Rubus coreanus Miquel extract increased. And the sample puffed by microwave oven had greater lightness as compared to the samples puffed by convection and frying. In terms of hardness, no significant differences were found the control and extract-containing samples puffed by convection and microwave methods. However, hardness was maximal in the sample puffed by convection and lowest in the sample puffed by frying, in which it increased according to the addition of Rubus coreanus Miquel extract. In the consumer acceptance evaluations and characteristics intensity rating tests, the samples puffed using convection and microwave methods showed higher scores for the majority of evaluated characteristics as compared to the samples puffed by frying. And the samples containing Rubus coreanus Miquel extract obtained fairly good scores. In conclusion, the results indicate that additions of 10$\sim$20% Rubus coreanus Miquel extract are optimal for Yukwa that is puffed by convection and microwave methods, as this range provides good physiological properties and reasonably high overall consumer acceptability.

Effects of Combined Exercise and Green Tea Intake on Body Weight and Adiponectin Obese High School Female (복합운동과 녹차섭취가 비만 여고생의 체중과 아디포넥틴에 미치는 영향)

  • The purpose of this study was to investigate the effects of combined exercise and green tea intake on body weight and adiponectin in obese female high school students. The thirty six(36) subjects were U women's high school students in U city and they were classified into four groups; exercise group), green tea group, exercise & green tea group and control group. All the subjects being obese with more than $27\;kg/m^2$. The exercise program was conducted with combined exercise of walking and the use of dumbbells. While walking having a $55{\sim}75%$HRmax intensity and uging $1{\sim}2\;kg$ dumbbell for $60{\sim}70$ minutes four times a week during 12 weeks. Subjects had one stick (0.8g green tea powder) four times a day during 12 weeks. The conclusions of this study are as follows. 1) For the level of body weight, in comparison within each group, EG, GG and EGG significantly decreased in body weight and in the comparison between groups, EG and EGG significantly decreased more in body weight than GG and CG after 12 weeks intervention. 2) For the level of adiponectin, in the comparison within each group, EG, GG, EGG didn't show any difference in adiponectin after 12 weeks intervention. However, CG significantly decreased in adiponectin and in the comparison between groups, EG and EGG significantly increased in adiponectin than CG after 12 weeks intervention.

Effects of Joint Mobilization and Group Back Pain Exercise Program on The Hearing Impairment Patient with Low Back Pain (관절가동기법과 집단 요통 운동 프로그램이 청각장애 요통환자의 통증에 미치는 영향)

  • Purpose : The purpose of this study was to compare the effects of Joing Mobilization and Group back Pain Exercise Program on the disability level and the pain of flexibility and the back muscle strength in the hearing impairment patients with Low back pain. Methods : The subjects of this study were 12 patients, 8 males and females. They visited clinic for physical treatment within 6 months after onset of low back pain. One group was applied with Joing Mobilization and other group was with Group back Pain Exercise Program. The patient were treated special program 3 times session weekly. And treatment 2 times session was 15min with physiotherapy weekly. The muscle strength was measured by Cybex 660, the level of disability by Oswestry low back pain disability scale, the intensity of pain by visual analogue scale (VAS). The data was analysed by paired T-test and independent T-test. Results : The results of this study were summarized as follow : 1. The Oswestry disability score of experimental and control group were significantly decreased and there was no difference in the Oswestry disability score change between joint mobilization group and back pain exercise group. 2. The pains in anterior, postrior, lift lateral and right lateral bending and in rotation of back pain exercise group were significantly increased compared with those of joint mobilization group. 3. The flexors and extensors peak torque of back pain exercise group were significantly increased at test velocities $30^{\circ}$/sec, $60^{\circ}$/sec compared with those of the joint mobilization group. There was no significant difference in extensors and flexors peak torque at $30^{\circ}$/sec, $60^{\circ}$/sec between two group. The results showed that the back pain exercise group were effective in decreasing disability score and pain of trunk activity, increasing trunk extension and flexion peak torque. Conclusion : It is suggested theat the back pain exercise program could be an essential factor for the effective intervension to the hearing impairment patients suffere from low back pain.
