  • The nutritive value and utilization of whole crop rice silage (WCRS), Hamasari, at yellow mature stage was determined by three studies. In first study, chemical composition, in vivo digestibility and metabolizable energy (ME) content of WCRS was determined by Holstein steers. WCRS contains 6.23% CP, its digestibility is 48.4% and estimated TDN is 56.4%. Its ME content was 1.91 Mcal/kg DM. Gross energy (GE) retention (% of GE intake) in steers is only 22.7% most of which was lost through feces (44.7% of GE intake). It takes 81 minutes to chew a kg of WCRS by steers. In another study, the effect of Hamasari at yellow mature stage at three stages of lactation (early, mid and late lactation) and two levels of concentrate (40 or 60%) on voluntary intake, ME content and ME intake, milk yield and composition using lactating Holstein dairy cows were investigated. Total intake increased with the concentrate level in early and mid lactation, but was similar irrespective of concentrate level in late lactation. WCRS intake was higher with 40% concentrate level than with 60% concentrate. ME intake by cows increased with the concentrate level and WCRS in early lactating cows with 40% concentrate can support only 90% of the ME requirement. Milk production in accordance with ME intake increased with the increase in concentrate level in early and mid lactating cows but was similar in late lactating cows irrespective of concentrate level. Fat and protein percent of milk in mid and late lactating cows were higher with for 60% concentrate than 40%, but reverse was in early lactating cows. Solids-not-fat was higher with for 60% concentrate than 40% concentrate. Finally in situ degradability of botanical fractions such as leaf, stem, head and whole WCRS, Hamasari at yellow mature stage was incubated from 0 to 96 h in Holstein steers to determine DM and N degradability characteristics of botanical fractions and whole WCRS. Both DM and N solubility, rate of degradation and effective degradability of leaf of silage was lower, but slowly degradable fraction was higher compared to stem and head. Solubility of DM and N of stem was higher than other fractions. The 48 h degradability, effective degradability and rate of degradation of leaf were always lower than stem or head. In conclusion, voluntary intake of silage ranged from 5 to 12 kg/d and was higher with low levels of concentrate, but milk yield was higher with high levels of concentrate. Fat corrected milk yield ranged from 19 to 37 kg per day. For consistency of milk, early lactating cows should not be allowed more than 40% whole crop rice silage in the diet, but late lactating cows may be allowed 60% whole crop rice silage.

  • A benchmark dose (BMD) approach has been evaluated us a replacement for the traditional NOAEL methodology currently being wed to assess the noncancer effects of toxicants. The endocrine disrupt-ing effect of endosulfan which showed decrement of sperm count and testicular testosterone level in animals, was currently reported. The amount of endosulfan used as pesticide in the country has been continuously increased. The aim of this study was to suggest the permissible intake level (PIL), corresponding to Accept-able Daily Intake (ADI), based on endocrine disrupting effect wing BMD. Various animal data were collected by consideration of critical effect showing endocrine disruption and an animal data for reproductive toxicity was selected. The Power model from BMD software for induction of $BMD_10$ having meaning which is the dose at the 95% lower confidence limit on a 10% response was used due to that the form of selected dose-response animal data was continuous data. The $BMD_10$ was estimated to be 0.393 mg/kg/day based on reproductive toxicity showing decrement of sperm count. The permissible intake level (PIL) was calculated by dividing the $BMD_10$ by the uncertainty factors of 100 with consideration of from animal to human and human variability. The PIL as 0.004 mg/kg/day was compared with traditional ADI as 0.006 mg/kg/day based on the incidence of marked progressive glomerulonephrosis and blood vessel aneurysm in males.

  • The purpose of this study was to investigate the nutritional status of antioxidant vitamins in relation to serum malondialdehye(MDA) level in postmenopausal women with common occurance of cardiovascular disease(CVD). Data about general characteristics including smoking, drinking and exercise status, dietary intake and serum level of antioxidant vitamins, and serum MDA level were collected from eighty-five postmenopausal women. Mean serum MDA level was 1.62$\pm$0.03nmol/ml, and general characteristics and serum lipid profiles were not significantly different among the three group: low MDA(<1.45nmol/ml), midium MDA(1.45-1.74nmol/ml) and high MDA($\geq$1.74nmol/ml). Total mean vitamin A intake was 472.8$\pm$37.7RE, 68% of RDA, vitamin C intake was 134.3$\pm$8.7mg, 192% of RDA and vitamin E intake was 8.6$\pm$0.5mg, 86% of RDA for Korean. In takes of antioxidant vitamins from the diet were not significantly different among the three groups. However significant negative correlation(r=-0.242, p<0.05) was observed between vitamin E intake and serum MDA level in total subjects. Total mean serum vitamin A, $\beta$-carotene and vitamin C level were 0.59$\pm$0.01$\mu\textrm{g}$/ml, 0.25$\pm$0.01$\mu\textrm{g}$/ml and 9.02$\pm$0.28$\mu\textrm{g}$/ml, respectively. Total mean serum vitamin E and vitamin E/total cholesterol level were 9.15$\pm$0.42$\mu\textrm{g}$/ml and 4.09$\pm$0.17$\mu\textrm{g}$/mg, respectively. Serum antioxidant vitamins levels were not significantly different among the three groups. However serum vitamin C and E level were negatively correlated to serum MDA level. We can conclude that it will be helpful for postmenopausal women with common occurance of CVD to improve nutritional status of antioxidant vitamins by increasing intakes of antioxidant vitamins, especially vitamin C and E. • This study was designed to investigate the effects of dietary calcium. serum estrogen level and physical activity on the bone status of 116 healthy elderly women living in urban area. Current calcium intake was assessed by convenient method(refered to as Ca intake) and calcium containing food frequency method(refered to as Ca index) Daily activity record was used for the estimation of physical activity level, and serum estrogen level was measured from fasting blood of subjects. The rate of bone resorption was evaluated by the determination of hydroxyproline(Hpr) in fasting urine with correction for creatinine excretion. The results of this study are summarized as follows : 1) Average daily Ca intake of subjects was 621.4$\pm$155.8mg, which is above the Korean recommended dietary allowances. However 44.8% of the subjects consumed Ca below RDA level. Ca index score was significantly correlated with the bone status(P<0.05), Ca intake did not show significant correlation with the bone status although a positive trend of influence was evident. 2) Average serum estrogen level of subjects was 18.7$\pm$9.8pg Contrary to our anticipation. estrogen level did not show any significant relation to age and bone status. 3) Daily physical activity was classified into four categories by activity intensity : sedentary. moderate, active and severe. The average physical activity of subjects belong to moderate level. and the bone status was significantly related to the physical activity(P<0.01) 4) Among other influential factors such as age, pocket-money. family type. drinking, smoking and BMI, there was a significant difference between bone status and BMI(P<0.05). 5) Multiple regression analysis of variables showed that physical activity has greater effect than other variables when the entire subjects were taken into account. However. eliminating the subjects whose bone status rated as excellent(Hpr/cr<0.009), Ca index showed higher correlation than physical activity. These results have demonstrated that dietary calcium intake is the primary important factor for keeping good bone health and that bone status of subjects with a sufficient calcium intake is affected by various factors such as physical activity, age, smoking. BMI and others.

  • This study was performed to investigate the effect of dietary protein level throughout gestation and lactation on milk composition and on postnatal growth in infants, using rats as an animal model. Female Sprague-Dawley rats were provided with either high(25% ISP(Isolated Soy Protein)diet) or low protein diet(10% ISP diet) throughout gestation and lactation. Milk samples were taken for analysis from the lactating rats at days of 7, 14, 21, of lactation. Dams and some pups were killed after 4 weeks from parturtion (Experiment 1). Pups from dams of each diet groups were randomly selected and reared with 25% or 10% ISP diet for 4 more weeks (Experiment 2). In experiment 1, maternal protein intake and body weight gain throughout gestation and lactation was higher in 25% ISP group. Serum protein, Ca, Fe, Zn, K concentrations were significantly higher in 25% ISP group. There was no difference in birth weight between two groups, however the mean body weight at 4 weeks postpartum were significantly higher in 25% ISP group. Serum profiles of pups at weaning were similar to that of dams. Milk compositions were changed during lactation processes and were affected by dietary protein level. Lactose and Ca, Cu, Fe concentrations in milk were higher in 25% ISP group, whereas, lipid, triglyceride were higher in 10% ISP group. In experiment 2, food intake was higher in milk were higher in 25% ISP group but was unaffected by pup's dietary protein level after weaning. The weights of liver and kidney were affected by maternal protein intake. The weight of intestine was affected by pup's dietary protein level after weaning. The weight of femur and scapula were affected by maternal protein intake. There were no differences between four groups in serum profiles. Therefore, as mentioned above, it seemed that the effect of maternal protein malnutrition to fetus was able to be overcome to some extent by high protein diet intake after weaning. In conclusion, 1) Dietary protein level throughout gestation and lactation affected both nutritional status of dams and pups and milk composition: 25% ISP groups supported better nutritional status than 10% ISP group 2) It seemed that effect of dietary protein level after weaning on pups was able to be overcome the influence of maternal diet in fetus to some extent.

  • The purpose of this study was to investigate the nutrition knowledge, perception, and intake frequency of milk and milk products among middle school students as well as provide the basic data needed for increasing milk and milk product consumption. To achieve the purpose of this study, a survey with 385 students of four middle schools located in Chuncheon was conducted. The level of nutrition knowledge of milk and milk products in females was slightly higher than that in males (p<0.01). Flavored milk and ice cream were preferred the most in each category, and 'taste' influenced the selection of milk and milk products the most. The intake frequency of whole milk was the highest, and that of flavored milk was lowest among various milks. Ice cream showed the highest intake frequency while cheese showed the lowest among milk products. Male students showed higher intake frequency of milk and milk products. Groups having high level of nutrition knowledge showed the highest intake of whole milk, whereas groups having a low level of nutrition knowledge preferred processed milk, low fat or non-fat milk, and cheese the lowest.

  • This paper examines the process and evidence used to create the Dietary Reference Intake (DRI) of alpha-linolenic acid (ALA) and eicosapentaenoic acid (EPA) + docosahexaenoic acid (DHA) for Koreans. ALA (18:3n3) is an essential fatty acid, and EPA and DHA are known to have beneficial effects on cardiovascular disease risk and reduction of triglyceride levels. Various international organizations have suggested dietary recommendations for n-3 polyunsaturated fatty acids (PUFAs), including ALA, EPA, and DHA. A DRI for Koreans was established for the first time in 2020, specifically for the adequate intake (AI) of ALA and EPA + DHA. This recommendation was based on the average intake of ALA and EPA + DHA from the Korea National Health and Nutrition Examination Survey 2013-2017. For Korean infants, the AI of ALA and DHA was based on the fatty acid composition of maternal milk. Estimated average requirement and a tolerable upper intake level have not been set for n-3 PUFA due to insufficient evidence. In addition, the intake level of n-3 PUFA for prevention of chronic disease has also not been determined. Future studies and randomized controlled trials are required to establish the UL and to define the level for disease prevention.

  • Almost all Korean women in rural area breast feed their children for average 18 to 24 months. Since they breastfeed their children for long period the need for the lactating mothers to be nutritionally refurnished becomes evidently great. However the studies on the nutrient intake level of these mothers has been very scarce. We have studied the food and nutrient intake level of 93 lactating women randomly selected from rural areas of South Korea. Thirty one well trained and experienced surveyors conducted the dietary survey by the. combination method of precise weighing and interview for two 'consecutive days. Briefly stating the findings 1) The dietary pattern of the lactating women in rural Korea was not different from the ordinary Korean diet-i.e no conscientious effort to improve the quality of the diet was apparent. 2) Consequently over 90% of the total food intake was made up with the typical ricekimchi diet. 3) The quantity of the total food intake was greater than the national average sufficient intake of calorie was observed. 4) No milk or the milk products were consumed by the lactating women in rural Korea. 5) Average intake of protein was 88 grams. Only 5% of these was provided by the animal foods. 6) Mean daily intakes of niacin, thiamin and ascorbic acid exceeded the recommended allowances. But vitamin A intake was 1171 IU-about 33% of the RDA-and the riboflavin intake was 0.92 mg. which is about 54% of the recommended level for the lactators. 7) Average calcium intake was 490 mg.-41% of the RDA. The iron intake was adequate.

  • To delineate the relationship between the nutrient intake from diet and the serum biochemical markers of bone metabolism, 56 postmenopausal women of 50 to 77 years of age were recruited. The biochemical markers including osteocalcin, calcium, phosphorus, estradiol and free testosterone were measured in fasting blood. Bone mineral density(BMD) was measured also by dual energy X-ray absorptiometry, and the nutrient intake of earth individual subject was estimated by 24-hour recall of 3 days. The age of the subjects was 64.8 $\pm$ 7.7 years, and the BMDs of the subject were 0.86 $\pm$ 0.26g/$cm^2$(Lumbar spine), 0.60 $\pm$ 0.10g/$cm^2$ (Femoral neck), 0.49 $\pm$ 0.10g/$cm^2$(Trochanter), and 0.41 $\pm$ 0.14g/$cm^2$(Ward's triangle). There were no significant differences among age and nutrient intake level groups due to the small sample size. The biochemical markers showed certain degree of relationship with nutrient intake levels. The results were compared among 3 groups with different nutrient intake level classified by the percentage of Recommended Daily Allowances(RDA) for Koreans as follows low < 75% RDA, 75% RDA $\leq$ adequate < 125% RDA, high $\geq$ 125% RDA. The low energy and low riboflavin groups showed significantly higher serum osteocalcin levels than those of the high intake groups(p < 0.05). On the other hand, there was a trend for serum Ca level to be higher with high nutrient intake. In this case, protein and thiamin were the only nutrients that reached a statistical significance(p < 0.05). And the groups with low intake for protein and Ca showed significantly lower serum free testosterone levels than that of other intake groups(p < 0.05). This study suggests an important role of nutrient intake levels on blood biochemical markers of bone metabolism.

  • The intake noise, a major source of vehicle noises, has rapidly become a noticeable, and has been studied to reduce the level. Traditionally, the intake system has been developed through a experiment, namely, the trial and error process. This approach requires very high cost and long time consuming to develop the systm. Recently, FEM and BEM are becoming useful in analysis of the intake system, and the results of analysis are very valid. But because this techniques also require high cost and long analysis time, this technique is generally not practical tool at the early stage of the development. In this study, the software was developed to predict and analyze the acoustic characteristics of the intake system. It was based on the Transfer Matrix Method and operated to analyze a simplified intake system in a personal computer. It can be used early in the design stage of development of the intake system. This study presented a improvement to reduce the level of the intake noise, which modified the specification of the intake system. And the improvement were verified by NIT/SYSNOISE, FE analysis commercial software, and testing a prototype.
