Chemical, Textural and Sensorial Attributes of Biltong Produced through Different Manufacturing Processes

  • Six different types of biltong samples were manufactured from beef which was slowly frozen, quickly frozen or unfrozen. After marinating the samples according to the formulation used, meats were dried at two different temperatures ($28{\pm}1^{\circ}C$ or $42{\pm}1^{\circ}C$) until they lost half of their weights. Chemical, instrumental textural and sensorial analyses were done for determination of the most preferred sample and to compare the attributes of the samples with each other. It was found that, aw values of the samples were among 0.81 and 0.83, whereas water contents were changing among the values 39.64% and 45.37%. There were no significant differences determined among the protein contents of the biltong samples (p>0.05). Fat, ash and salt contents of the samples were among the values 1.32% and 2.07%, 5.30% and 6.06%, 2.68% and 3.30% respectively. Hardness of the samples were found between 34.81 N and 44.13 N and there was no significant difference observed among the hardness values of the biltong samples (p>0.05). As results of the analyses, it can be concluded that the highest flavor, color, tenderness and overall acceptability scores were obtained for the sample QF-LT which was made from quickly frozen beef and was dried at low temperature ($28{\pm}1^{\circ}C$) (p<0.05).

Analysis of Studies on Samul-tang for Fundamental Establishment of Evidence Based Medicine (EBM 기반구축을 위한 사물탕 연구 문헌 분석)

  • To establish the fundament for EBM of Traditional Korean Medicine, the papers on Samul-tang which was frequently used in medical institutions of Traditional Korean Medicine were analyzed through researching domestic and international literatures. The papers were classified by the registration of domestic or international journals, by the year of publishment, by experimental methods, by laboratory animals used in biological experiment and by the kinds of studies on biological efficacy. Of total 67 papers on Samul-tang, 58 volumes were registered in domestic journals and 9 volumes were in international journals of which 8 volumes were in SCI journals. Since 1978, publishments of papers have continuously increased. The papers on instrumental analyses were 6, biological studies were 58 volumes, clinical studies were 3. Instrumental analyses were preceeded with standard compounds(gallic acid, albiflorin, paeoniflorin, benzoic acid, ferulic acid, 5-HMF). And biological studies showed improvement of cardiovascular function and circulation, antianemia, brain protection, immunoregulation, antistress, radioprotection, antifatigue, antiinflammation and antiallergy, antioxidative effect. Through clinical studies, antifatigue, improvement of insomnia and osteoporosis were reported. Samul-tang could be used to tonify and activate blood. And further study on clinical field need to be conducted in accordance with biological study.

New Approaches to Production of Turkish-type Dry-cured Meat Product "Pastirma": Salt Reduction and Different Drying Techniques

  • In this study, the possible changes in the quality characteristics of pastirma, Turkish-type dry-cured meat product, produced by using two different salts (NaCl-KCl) in a curing mixture and two different production techniques (natural and controlled condition) were examined. Moisture, pH, salt, sodium, potassium, TBA, fat, water activity, instrumental colour, texture, and sensory analyses were implemented in order to determine the possible effects of these applications. Fat, aw, pH, colour, tiobarbituric acid (TBA), texture, salt, Na and K values may allow these desired modifications in pastirma production to be limited. The substitution of 15% KCl instead of NaCl was acceptable in terms of the sensorial properties of the pastirma. However, the sensory analyses did not allow for using a higher KCl instead of NaCl because both the hardness and chewiness in the texture of the pastirma samples salted with 30% of KCl were not scored positively. Besides this, negative effects, which may occur during the pastirma production under natural conditions, can be eliminated by the production being under controlled conditions.

  • The need of heavy and unconventional crude oil as an energy source is increasing day by day, so does the importance of petroleomics: the pursuit of detailed knowledge of heavy crude oil. Crude oil needs techniques with ultra-high resolving capabilities to resolve its complex characteristics. Therefore, ultra-high resolution mass spectrometry represented by Fourier transform ion cyclotron resonance mass spectrometry (FT-ICR MS) has been successfully applied to the study of heavy and unconventional crude oils. The analysis of crude oil with high resolution mass spectrometry (FT-ICR MS) has pushed analysis to the limits of instrumental and methodological capabilities. Each high-resolution mass spectrum of crude oil may routinely contain over 50,000 peaks. To visualize and effectively study the large amount of data sets is not trivial. Therefore, data processing and visualization methods such as Kendrick mass defect and van Krevelen analyses and statistical analyses have played an important role. In this regard, it will not be an overstatement to say that the success of FT-ICR MS to the study of crude oil has been critically dependent on data processing methods. Therefore, this review offers introduction to peotroleomic data interpretation methods.

Synthesis and Properties of Poly[2-ethynyl-N-(p-hydroxyphenylethyl) pyridinium bromide] and Poly [2-ethynyl-N-(p-hydroxyphenylethyl) pyridinium tetraphenylborate]

  • A new hydroxyl group-containing conjugated ionic polymer, poly[2-ethynyl-N-(p-hydroxyphenylethyl)pyridinium bromide], was synthesized by the activated polymerization of 2-ethynylpyridine with p-(2-bromoethyl) phenol without any additional initiator or catalyst. The polymerization proceeded well to give a moderate yield (65%) of polymer at a reaction temparature of 90$^{\circ}C$. Another polymer, poly[2-ethynyl-N-(p-hydroxyphenylethyl)pyridinium tetraphenylborate], was readily prepared by the ion-exchange reaction of poly[2-ethynyl-N-(p-hydroxyphenylethyl)pyridinium bromide] with sodium tetraphenylborate. These polymers were completely soluble in organic solvents such as DMF, DMSO, and acetone, but insoluble in water and ether. Instrumental analyses, such as NMR, IR, and UV-Vis spectroscopies, indicated that the new materials have conjugated polymer backbone systems with the designed substituents and counter anions. X-Ray diffraction analyses of the polymers indicated that they were mostly amorphous.

Prelithiation of Alpha Phase Nanosheet-Type VOPO4·2H2O Anode for Lithium-Ion Batteries

  • Owing to the rising concern of global warming, lithium-ion batteries have gained immense attention over the past few years for the development of highly efficient electrochemical energy conversion and storage systems. In this study, alpha-phase VOPO4·2H2O with nanosheet morphology was prepared via a facile hydrothermal method for application in high-performance lithium-ion batteries. The X-ray diffraction and scanning electron microscopy (SEM) analyses indicated that the obtained sample had an alpha-2 (αII) phase, and the nanosheet morphology of the sample was confirmed using SEM. The lithium-ion battery with VOPO4·2H2O as the anode exhibited excellent long-term cycle life and a high capacity of 256.7 mAh g-1 at room temperature. Prelithiation effectively improved the specific capacity of pristine VOPO4·2H2O. The underlying electrochemical mechanisms were investigated by carrying out AC impedance, rate capability, and other instrumental analyses.

Glycosylation of Semi-Synthetic Isoflavene Phenoxodiol with a Recombinant Glycosyltransferase from Micromonospora echinospora ATCC 27932

  • Glycosyltransferase (GT)-specific degenerate PCR screening followed by in silico sequence analyses of the target clone was used to isolate a member of family1 GT-encoding genes from the established fosmid libraries of soil actinomycetes Micromonospora echinospora ATCC 27932. A recombinant MeUGT1 was heterologously expressed as a His-tagged protein in E. coli, and its enzymatic reaction with semi-synthetic phenoxodiol isoflavene (as a glycosyl acceptor) and uridine diphosphate-glucose (as a glycosyl donor) created two different glycol-attached products, thus revealing that MeUGT1 functions as an isoflavonoid glycosyltransferase with regional flexibility. Chromatographic separation of product glycosides followed by the instrumental analyses, clearly confirmed these previously unprecedented glycosides as phenoxodiol-4'-α-O-glucoside and phenoxodiol-7-α-O-glucoside, respectively. The antioxidant activities of the above glycosides are almost the same as that of parental phenoxodiol, whereas their anti-proliferative activities are all superior to that of cisplatin (the most common platinum chemotherapy drug) against two human carcinoma cells, ovarian SKOV-3 and prostate DU-145. In addition, they are more water-soluble than their parental aglycone, as well as remaining intractable to the simulated in vitro digestion test, hence demonstrating the pharmacological potential for the enhanced bio-accessibility of phenoxodiol glycosides. This is the first report on the microbial enzymatic biosynthesis of phenoxodiol glucosides.

(-)-β-Narcotine: A Facile Synthesis and the Degradation with Ethyl Choroformate

  • $(-)-\beta-Narcotine$ (6), a phthalideisoquinoline alkaloid, was synthesized conveniently by the direct condensation of cotarnine (1) and iodomeconine (2) prepared by aromatic iodination using thallium trifluoroacetate/KI and by the successive reduction of resulting $iodo-{\beta}-narcotine$ (5) with aluminum amalgam. Its structure including a stereochemistry was confirmed by instrumental analyses. This synthetic alkaloid was degraded with ethyl chloroformate at room temperature to afford the chloro-carbamate 6b as a crystalline intermediate, which was unexpectedly converted into the carbinol 8 by exchange of Cl with OH of water contained in the solvents and the ethoxy-carbamate 9, probably because of ethanol added to chloroform as a solvent stabilizer during the purification by column chromatography.

The Effects of Wheat Flour Addition on Retarding Retrogradation in Korean Rice Cakes(Karedduk) (떡의 노화 억제에 대한 밀가루 첨가의 효과)

  • This study investigated the effects of adding hard and soft wheat flour to Korean rice cakes(Karedduk) to retard retrogradation, by examining texture properties and descriptive sensory qualities after 2 and 24 hrs of storage at $5^{\circ}C$. The hard and soft wheat flour were combined with dry rice flour at levels of 0, 5, 10, and 20%. The texture properties, as analyzed by a Texture Analyzer, revealed that the springiness, cohesiveness, and adhesiveness of the rice cakes containing wheat flour were similar to those of the control, while chewiness, gumminess, and hardness were lower compared to the control. Also, in sensory analyses, hardness was significantly different in the rice cakes containing wheat flour compared to the control after 24 hrs of storage at $5^{\circ}C$. Overall, the instrumental texture properties were highly correlated with the sensory characteristics. These results suggest that adding hard and soft wheat flour to Korean rice cakes(Karedduk) is effective at retarding retrogradation.

Characterization of Nanocomposite Ti-Si-N Films Prepared by a Hybrid Deposition System of A If and Sputtering Techniques (하이브리드 증착 시스템을 이용한 나노복합체 Ti-Si-N 박막의 특성 연구)

  • Ti - Si - N hard films were deposited on SKD11 steel substrates by a hybrid deposition system, where TiN was deposited by AIP method while Si was incorporated by sputtering one. The microstructure of Ti-Si-N films was revealed to be a composite of TiN crystallites and amorphous Si3N4 by instrumental analyses. The highest hardness value of about 45 Gpa was obtained at the Si content of around 7.7 at.%. With increase of Si content, the size of TiN crystallites was reduced and their distribution was changed from aligned to randomly orientated states. Surface roughness of Ti-Si-N film also decreased with increase of Si content.
