Antioxidant Activities and Quality Characteristics of Pudding Added with Olbyeossal (올벼쌀 첨가 푸딩의 항산화 활성 및 품질 특성)

  • The quality characteristics of pudding products comprising of Korean Olbyossal (traditional steamed rice), added at different percentages, were examined to explore the application of Olbyossal to develop different types of processed food products. Five groups of pudding were produced containing 0%, 25%, 50%, 75%, and 100% of Olbyossal. Evaluation of their quality characteristics and antioxidant activities revealed that the control group (with no added Olbyossal) had the highest moisture content and pH (p<0.001). The sugar content and turbidity was highest in the 100% Olbyossal group and lowest in the control group (p<0.001). The salinity was lowest in the 100% Olbyossal group (p<0.001). In terms of color values, the L-value (p<0.001) and a-value were highest in the control group, while the b-value was highest in the 100% group (p<0.001). Texture properties revealed that hardness (p<0.001), springiness (p<0.01), and chewiness (p<0.001) decreased as the percentage of Olbyossal increased. Increase in adhesiveness was noted with an increase in the percentage of Olbyossal (p<0.01). Based on the sensory evaluation of Olbyossal pudding in terms of appearance (p<0.05), flavor (p<0.05), taste (p<0.01), texture (p<0.001), and overall quality (p<0.001), the 100% group showed the best results. Examination of Olbyossal pudding revealed that antioxidant activities, radical scavenging activities for DPPH and superoxide anion, and reducing power increased as the percentage of Olbyossal increased (p<0.001). Therefore, pudding containing 100% Olbyossal is considered as the ideal product with reference to the high level of preference and product quality.

The Study of Relation Among Serum Copper, Zic, Leptin and Lipids of Middl-school Girls (일부 사춘기 여중생의 혈청 구리, 아연함량과 혈청 렙틴 및 지질과의 관계)

  • The purpose of this study was to investigate the relationship among nutritional status of copper and zinc, serum leptin, and lipids of 99 middle school girls residing in kyunggi-do, Korea. Subjects were divided assigned to one of two groups such as normal (BMI<85 percentile, n=58) and obese (85$\leq$BMI, n=41) groups. Subjects were evaluated based on anthropometric measurements, 24-hr dietary recalls and blood analysis. The mean age was 13.93 years. The mean weight (p<0.001), BMI (p<0.001), body fat (p<0.001) of obese were significantly higher then those of normal group. The mean daily energy intake was 94.2% of RDA for Korean. The ratio of energy coming from carbohydrate, fat and protein was 63:24:13. The mean daily intakes of Cu and Zn were 1.4 mg and 7.4 mg (73.7% of RDA), and there were no significant difference between two groups. The mean serum levels of leptin (p<0.001), LDL-cholesterol (p<0.05), triglyceride (p<0.01), TPH (total cholesterol/HDL; p<0.001), LPH (LDL/HDL; p<0.001) and AI (atherogenic index; p<0.001) of obese were significantly higher than those of normal group. The mean serum Cu level of obese was significantly higher than normal group but, the mean serum Zn level of obese was significantly lower than normal group. Serum Cu showed a significantly positive correlations with body weight (p<0.001), BMI (p<0.001), body fat (p<0.001), serum leptin, and LPH. However, serum Zn showed a significantly negative correlations with body weight (p<0.001), BMI (p<0.001), serum leptin (p<0.001), TPH (p<0.05), and AI (Atherogenic index; p<0.05). To summarize the results, the Zn intakes of middle school girls did not reach to RDA for Koreans. Also, increase of BMI may lead to decrease of serum zinc level and increase of serum copper level, and this change of serum zinc related to the change of serum leptin and serum lipids level in middle school girls during rapid growth.

The association of Vitamin D and Pulse pressure in Korean Adults: Korea National Health and Nutrition Survey, 2010 (한국 성인에서 Vitamin D와 맥압의 관련성-2010 국민건강영양조사에 근거하여)

  • The purpose of this study is to assess the association of vitamin D and pulse pressure in Korean adults. The data for analysis were obtained from Korea National Health and Nutrition Examination Survey 2010. PP showed a significant positive correlation with Age(p<0.01), TG(p<0.01), TC(p<0.01), FBS (p<0.01), BMI(p<0.01) and Waist measurement(p<0.01). PP showed a significant negative correlation with HDL-C(p<0.01), Height(p<0.01), Weight(p<0.01) and 25(OH)D(p<0.01). When a multiple linear regression analysis was performed, PP was considered as the dependent variable, Age, Height, Weight, Waist measurement, BMI, TC, TG, HDL-C, FBS and 25(OH)D as independent parameters, PP maintained a significant association only with Age(p<0.001), Waist measurement(p<0.001), FBS(p<0.001), 25(OH)D(p<0.001), TC(p<0.001), Weight(p<0.001), HDL-C(p<0.001). In conclusion, Our results suggest that vitamin D decrease may contribute to higher PP. To maintain standard level of vitamin D may be expected that decrease in incidence of coronary arterial disease.

Quality Characteristics of White Pan Bread with Chinese Artichoke (Stachys sieboldii MIQ) Powder (초석잠 분말 첨가 식빵의 품질 특성)

  • For the consumption extension of Chinese artichoke(Stachys sieboldii MIQ), the quality characteristics and sensory evaluation of white pan bread prepared with different levels of added Chinese artichoke powder(0, 3, 6, 9, and 12%) were investigated. Volume changes of dough, moisture contents(p<0.001), and baking loss rate(p<0.001) decreased with increasing levels of Chinese artichoke powder. In addition, with an increase in the level of Chinese artichoke powder, the volume and specific volume of white pan breads significantly decreased(p<0.001 and p<0.001, respectively) whereas the weight of white pan breads significantly increased (p<0.001). In terms of color, the lightness(L) decreased, but the redness(a) and yellowness(b) increased with increasing Chinese artichoke powder levels(p<0.001). From the texture profile analysis(TPA) of white pan breads, hardness, chewiness(p<0.05), gumminess(p<0.001), and adhesiveness(p<0.001) increased whereas springiness and cohesiveness(p<0.01) decreased according to the levels of added Chinese artichoke powder. In the attribute difference test, crumb color(p<0.001), grain size(p<0.05) decreased whereas grain uniformity, yeast flavor, acridity flavor(p<0.001), plainer taste(p<0.05), sweet taste(p<0.01), acridity taste(p<0.001), firmness, springiness, moistness, softness, and chewiness increased in accordance with levels of added Chinese artichoke powder. Overall acceptability showed that the sample containing 9% Chinese artichoke powder had the highest score (p<0.001). As a result, the optimal ratio of Chinese artichoke powder for white pan bread was determined to be 9%.

A Factor Analysis on Job Stress Level in Dental Hygienists (치과위생사의 직무스트레스에 관한 분석요인)

  • This study was carried out in order to offer medical service in good quality by enhancing dental hygienists' job satisfaction and to arrange basic data necessary for individual development and health promotion in dental hygienists through grasping the job stress level and job satisfaction of being experienced by dental hygienists, and the correlation. The self-administered questionnaire was surveyed and collected from August 1-12 of 2011 targeting 210 dental hygienists of general hospitals, dental hospitals, and dental clinics nationwide(Seoul, Gyeonggi, Daegu, Pohang).The analysis was made on 205 people. The collected data was analyzed by using SPSS WIN 15.0 program. As a result, out of job stress, the average was indicated to be the highest with 2.71 in 'job demand.' As a result of examining about sphere-based relationship between health perception level and job stress related to building in dental hygienists, the central nervous system manifestation showed statistically significant positive correlation with physical environment(r=.281, p<.001), job demand(r=.281, p<.001), relational conflict(r=.163, p<.05), organizational system(r=.166, p<.05), compensation inappropriateness(r=.267, p<.001), and job stress(r=.311, p<.001). Overall, the building-related health perception level showed statistically significant correlation with physical environment(r=.259, p<.001), job demand(r=.311, p<.001), relational conflict(r=.172, p<.05), organizational system(r=.158, p<.05), compensation inappropriateness(r=.197, p<.01), and job stress(r=.275, p<.001). They need to improve their quality of life and life and mental health by developing proper air conditioning system and using one in their work place. if so, they could contribute to better quality of oral cavity service for everyone.

Effects of Obesity Stress and Health Belief on Weight Control Behavior among Nursing Students (간호대학생의 비만스트레스와 건강신념이 체중조절행위에 미치는 영향)

  • This study investigated the factors influencing how obesity stress and health belief impact weight control behavior among nursing students. Data were collected from nursing students in U city between September 1 and October 10, 2016 and analyzed using descriptive statistics, t-test, ANOVA, Pearson's correlation coefficient, and hierarchical multiple regression. Among the general characteristics of the subjects, gender (t=2.30, p=0.044) and health status (F=8.03, p<0.001) significantly influenced weight control behavior. There were negative correlations between diet therapy of weight control behavior (r=-0.26, p<0.001), exercise therapy (r=-0.25, p<0.001), behavior modification therapy (r=-0.29, p<0.001), and perceived barriers in health belief. In addition, acquiring special knowledge for weight control behavior showed positive correlations in obesity stress (r=0.42, p<0.001), perceived susceptibility (r=0.25, p<0.001) and perceived benefits (r=0.19, p<0.001). Furthermore, the significant factors influencing weight control behavior were perceived barriers (${\beta}=-0.30$, p<0.001) and obesity stress (${\beta}=0.20$, p<0.05) in health belief, and these factors explained 17.2% of the variance. Based on the study results, it is necessary to develop and apply effective educational programs that can influence weight control behavior through gender, health status, obesity stress and health beliefs, which determine weight control behavior of nursing students.

The Effects of Learning Flow, Academic Stress and Resilience on Self-efficacy of University Students (대학생의 학습몰입, 학업스트레스, 회복탄력성이 자기효능감에 미치는 영향)

  • This study was attempted to confirm the effects of learning flow, academic stress, and resilience on self-efficacy in college students. This study targeted 304 university students in B and G cities. Data analysis was analyzed by descriptive statistics, t-test, ANOVA, Pearson's correlation coefficient, and multiple regression analysis using the SPSS 22.0 program. The average self-efficacy of the subjects was 3.14±0.62 points, and the difference in self-efficacy according to general characteristics was significant in gender(t=-2.533, p=.012) and satisfaction with major(F=5.687, p=.004). Self-efficacy of the subjects was positive correlation with learning flow(r=.574, p<.001), resilience(r=.525, p<.001), and negative correlation with academic stress(r=-.262, p<.001). Resilience of the subjects showed positive correlation with learning flow(r=.325, p<.001) and negative correlation with academic stress(r=-.291, p<.001). Learning flow showed negative correlation with academic stress(r=-.211, p<.001). Factors influencing the self-efficacy of the subjects were identified as academic commitment (β=.442, p<.001) and resilience (β=.363, p<.001) and the explanatory power was 45.6%. Therefore, in order to improve college students' self-efficacy, it is necessary to develop and apply education and programs that can improve learning flow and resilience.

Factors Affecting on Suicidal Ideation in Community Dwelling Elders (지역사회 노인의 자살생각에 영향을 미치는 요인)

  • Objectives: This study was conducted to analyze the hwa-byung, self-perceived health, life-stress, social support, depression, and factors affecting on suicidal ideation in community dwelling elders. Methods: This study was a cross-sectional descriptive study. The subjects were 165 elderly in I city. The data was collected from November $21^{st}$ to December $5^{th}$ of 2014 by using structured questionnaire. T-test, Pearson's correlation coefficients, and stepwise multiple regression were performed by SPSS/PC 17.0. Results: There were more females than males in hwa-byung (t=.-3.068, p=.003). In the visit parent, more than once a month was a significantly higher in social support (t=.3.333, p=.001). Hwa-byung (t=.-2.577, p=.011), life-stress (t=.-3.800, p=.001), depression (t=.-2.776, p=.006), and suicidal ideation (t=.-4.316, p<.001) were shown to be high in the elders with lower level of living. Subjects with health insurance had high self-perceived health (t=-3.800, p=.001) and low hwa-byung (t=-4.102, p<.001), life-stress (t=-4.482, p<.001), depression (t=-5.296, p<.001), and suicidal ideation (t=.-2.152, p=.036), according to the type of insurance. In the correlation, sleeping hours (r=-.180, p=.020), self-perceived health (r=-.364, p,.001), and suicidal ideation had negative correlation; hwa-byung (r=.404, p<.001), life-stress (r=.300, p<.001), social support (r=-.310, p<.001), depression (r=.423, p<.001) and suicidal ideation had positive correlation. Factors affecting the suicidal ideation in community dwelling elders were depression (${\beta}$=.42, p<.001), hwa-byung (${\beta}$=.23, p=.004), social support (${\beta}$=-.18, p=.012), and level of living (${\beta}$=.24, p=.001). Discussion: For the prevention of elderly suicide, it is necessary to care for psychosocial status and solve economic difficulties through social support.

Effects of Exposure to Violence During Clinical Practicum, Self-esteem and Resilience on Depression among Nursing students (간호대학생의 임상실습 폭력피해경험, 자아존중감 및 회복탄력성이 우울에 미치는 영향)

  • Purpose: This study is to investigate factors affecting depression in nursing students. Methods: A survey was conducted with 216 nursing students in college at P city, D city, and K province. Data was collected from April 15 to May 21, 2018, and analyzed by descriptive statistics, t-test, one-way ANOVA and hierarchical regression with IBM SPSS Statistics 24.0. Results: There was a significant positive correlation between verbal violence and depression(r=.261, p<.001), between physical threat and depression(r=.291, p<.001). Also, Self-esteem had a significant positive correlation with resilience(r=.685, p<.001) and negative correlation with depression(r=-.590, p<.001). Moreover, resilience had a significant negative correlation with depression(r=-.612, p<.001). In the hierarchical analysis, factors affecting the nursing students' depression were resilience(${\beta}=-.337$, p<.001), self-esteem(${\beta}=-.279$, p<.001), physical threat(${\beta}=.177$, p=.001). The variable that had the highest impact on depression was resilience and the explanatory power of the regression model was 51.5%(F=17.965, p<.001). Conclusion: The findings of this study indicate that the major factors influencing nursing students depression are physical threat, self-esteem and resilience. Therefore, it suggests that an intervention program will be required to prevent violence during the clinical practice, enhances self-esteem and improves resilience in order to reduce depression of nursing students.

Factors Affecting on Turnover Intentions among Operating Room Nurses (수술실 간호사의 이직의도에 영향을 미치는 요인)

  • The purpose of this study was to examine the level of stress, healthcare accreditation related job stress, adaptation, and turnover intentions, as well as to identify influencing factors of turnover intentions for operating room nurses. This study employed a descriptive correlational design. The data were collected from 163 operating room nurses using a structural questionnaire. Stress was different by age (F=5.629, p=.004), marital status (t=-2.907, p=.004), and children (t=-2.623, p=.010). Healthcare accreditation related job stress was different by age (F=11.924, p<.001), marital status (t=-4.747, p<.001), children (t=-4.434, p<.001), work experience in the OR (F=6.000, p=.003), and work reasons in the OR (t=-2.543, p=.012). Turnover intention was different by age (F=21.472, p<.001), education level (F=4.997, p<.008), religion (t=3.235, p=.001), work experience in the OR (F=13.599, p<.001), position (t=3.222, p=.002), work reasons in the OR (t=-3.001, p=.003), and a shift pattern of duties (t=-2.797, p=.006). Turnover intention was significantly correlated with stress, healthcare accreditation related job stress, and adaptation. Factors affecting turnover intention were healthcare accreditation related job stress, adaptation, and age. These factors accounted for 36.2% of turnover intention. These results suggest that relief of stress and healthcare accreditation related job stress and interventions for improving stress management.
