Influence of Ice Recrystallization on Rheological Characteristics of Ice Slurries and Physicochemical Properties of Concentrated Milk

  • Freeze concentration of milk was carried out through the controlled recrystallization of ice in a multi-stage freeze concentrator. Rheological characteristics of ice slurries were analyzed to determine efficient concentration levels for the freeze concentration process. It was determined that efficient concentration level was 17% of total solids in the first and 27% in the second stage. Physicochemical properties were compared between freeze concentrated and evaporated milk. Freeze concentrated milk was more similar in color appearance to control milk than was evaporated milk. pH significantly decreased in evaporated milk than in freeze concentrated milk. pH of freeze concentrated milk resulted in similar value to control. These results indicated the advantages of freeze concentration as a non-thermal milk processing technology in terms of physicochemical properties. Consequently, we investigated the influence of ice recrystallization on the rheological characteristics of ice slurries and physicochemical properties of freeze concentrated milk.

Microwave Radiation Characteristics of Glacial Ice in the AMSR-E NASA Team2 Algorithm (AMSR-E NASA Team2 알고리즘에서 빙하빙의 마이크로파 복사특성)

  • Sea ice concentration calculated from the AMSR-E onboard Aqua satellite by using NASA Team2 sea ice algorithm has proven to be very accurate over sea ice in Antarctic Ocean. When glacial ice such as icebergs and ice shelves are dominant in an AMSR-E footprint, the accuracy of the ice concentration calculated from NASA Team2 algorithm is not well maintained due to the different microwave characteristics of the glacial ice from sea ice. We extracted the concentrations of sea ice and glacial ice from two ENVISAT ASAR images of George V coast in southern Antarctica, and compared them with NASA Team2 sea ice concentration. The result showed that the NASA Team2 algorithm underestimates the concentration of glacial ice. To interpret the large deviation of estimation over glacial ice, we analyzed the characteristics of microwave radiation of the glacial ice in PR(polarization ratio), GR(spectral gradient ratio), $PR_R$(rotated PR), and ${\Delta}GR$ domain. We found that glacial ice occupies a unique region in the PR, GR, $PR_R$, and ${\Delta}GR$ domain different from other types of ice such as ice type A, B, and C, and open water. This implies that glacial ice can be added as a new category of ice to the AMSR-E NASA Team2 sea ice algorithm.

Study on the procedure to obtain an attainable speed in pack ice

  • The cost evaluation for voyage route planning in an ice-covered sea is one of the major topics among ship owners. Information of the ice properties, such as ice type, concentration of ice, ice thickness, strength of ice, and speed-power relation under ice conditions are important for determining the optimal route in ice and low operational cost perspective. To determine achievable speed at any designated pack ice condition, a model test of resistance, self-propulsion, and overload test in ice and ice-free water were carried out in a KRISO ice tank and towing tank. The available net thrust for ice and an estimation of the ice resistance under any pack ice condition were also performed by I-RES. The in-house code called 'I-RES', which is an ice resistance estimation tool that applies an empirical formula, was modified for the pack ice module in this study. Careful observations of underwater videos of the ice model test made it possible to understand the physical phenomena of underneath of the hull bottom surface and determine the coverage of buoyancy. The clearing resistance of ice can be calculated by subtracting the buoyance and open water resistance form the pre-sawn ice resistance. The model test results in pack ice were compared with the calculation results to obtain a correlation factor among the pack ice resistance, ice concentration, and ship speed. The resulting correlation factors were applied to the calculation results to determine the pack ice resistance under any pack ice condition. The pack ice resistance under the arbitrary pack ice condition could be estimated because software I-RES could control all the ice properties. The available net thrust in ice, which is the over thrust that overcomes the pack ice resistance, will change the speed of a ship according to the bollard pull test results and thruster characteristics (engine & propulsion combination). The attainable speed at a certain ice concentration of pack ice was determined using the interpolation method. This paper reports a procedure to determine the attainable speed in pack ice and the sample calculation using the Araon vessel was performed to confirm the entire process. A more detailed description of the determination of the attainable speed is described. The attainable speed in 1.0 m, 90% pack ice and 540 kPa strength was 13.3 knots.

Comparative Study of KOMPSAT-1 EOC Images and SSM/I NASA Team Sea Ice Concentration of the Arctic (북극의 KOMPSAT-1 EOC 영상과 SSM/I NASA Team 해빙 면적비의 비교 연구)

  • Satellite passive microwave(PM) sensors have been observing polar sea ice concentration(SIC), ice temperature, and snow depth since 1970s. Among them SIC is playing an important role in the various studies as it is considered the first factor for the monitoring of global climate and environment changes. Verification and correction of PM SIC is essential for this purpose. In this study, we calculated SIC from KOMPSAT-1 EOC images obtained from Arctic sea ice edges from July to August 2005 and compared with SSM/I SIC calculated from NASA Team(NT) algorithm. When we have no consideration of sea ice types, EOC and SSM/I NT SIC showed low correlation coefficient of 0.574. This is because there are differences in spatial resolution and observing time between two sensors, and the temporal and spatial variation of sea ice was high in summer Arctic ice edge. For the verification of SSM/I NT SIC according to sea ice types, we divided sea ice into land-fast ice, pack ice, and drift ice from EOC images, and compared them with SSM/I NT SIC corresponding to each ice type. The concentration of land-fast ice between EOC and SSM/I SIC were calculated very similarly to each other with the mean difference of 0.38%. This is because the temporal and spatial variation of land-fast ice is small, and the snow condition on the ice surface is relatively dry. In case of pack ice, there were lots of ice ridge and new ice that are known to be underestimated by NT algorithm. SSM/I NT SIC were lower than EOC SIC by 19.63% in average. In drift ice, SSM/I NT SIC showed 20.17% higher than EOC SIC in average. The sea ice with high concentration could be included inside the wide IFOV of SSM/I because the drift ice was located near the edge of pack ice. It is also suggested that SSM/I NT SIC overestimated the drift ice covered by wet snow.

  • The main purpose of ice model basin is to assess and evaluate the performance of the Arctic ships and offshore structures because the full-scale tests in ice covered sea are usually very expensive and difficult. There are various ice conditions, such as level ice, brash ice, pack ice and ice ridge, in the real sea. To estimate their capacities in ice tank accurately, an appropriate model ice sheet and prepared ice conditions copied from actual sea ice conditions are needed. Pack ice is a floating ice that has been driven together into a single mass and a mixture of ice fragments of varying size and age that are squeezed together and cover the sea surface with little or no open water. So Ice-class vessels and Icebreaker are usually operated in pack ice conditions for the long time of her voyage. The most ice model tests include the pack ice test with the change of pack ice concentration. In this paper, the effect of pack ice size and channel breadth in pack ice model test is conducted and analyzed. Also we presented some techniques for the calculation of pack ice concentration in the model test. Finally, we developed a new model test methodology of pack ice condition in square type ice tank.

Climatic Characteristics Related with Sedimentary Process in Bransfield Strait, Antarctica (남극 브랜스필드 해협에서의 퇴적과정과 관련된 기후특성)

  • This study examines the relationships among sea ice concentration, surface air temperature, surface wind, and SST (Sea Surface Temperature) in Bransfield Strait to understand the climatic characteristics and its related sedimentary process there. In analyses of the monthly data, during the austral autumn (Mar., Apr., and May), the frequency of southeasterlies is correlated positively with the sea ice concentration and negatively with the surface air temperature, whereas that of northwesterlies is reverse. These relationships are explained by the process that the southeasterlies of the cold air from the Antarctic Continent affect the ocean current around Bransfield Strait. And then the ocean current makes the sea ice generated in the Weddell Sea drift into the strait. During the spring (Sep., Oct., and Nov.), sea ice concentration and surface air perature are closely correlated with the frequency of northwesterlies with warm air mass. In the some parts of the northern boundary region, the sea ice concentration in Bransfield Strait is positively correlated with the SST during the autumn and spring. Such relationship may rather propel the sea ice melting in proportion to the sea ice concentration during the autumn.

  • In the present study, the possibility of continuous slurry ice making using flowing water solution in a cooled tube has been investigated. The experiments were carried out at various concentration and velocity of water solution, temperature of cooled tube wall, and control pressure in a tube. As a result, four types of operating conditions, that is super-cooling, continuous ice making, intermittent ice making and ice blockage, were classified. And it was found that the critical condition for the continuous ice making was acquired as a function of these experimental parameters.

  • Hypochlorous acid(HOCl) is a chemical that is a safe sanitizer and disinfectant approved by the Food and Drug Administration as a food additive, exhibiting strong sterilizing power with low effective chlorine concentration of pH 5.0-6.5 and effective chlorine concentration 10-80 ppm. To apply to fishery industries, we develope the HOCl ice for store or delivery of fishery products. However when HOCl is being frozen, the contained HOCl are expelled out from the ice due to the molecular structures of ice; there is no space to contain HOCl inside. To increase chlorine containing amount in ice, we develop the alginate particles containing HOCl which is bio comparable since alginate is a natural polymer extracted from the brown algae and it is widely used for drug delivery and containing substances, etc. We produce HOCl with water as base solution suppressing osmotic flow from fishery products, and mix it with the developed alginate particles and made HOCl-alginate ice and checked the remaining amount of HOCl. We measure the change of pH and chlorine concentration optimizing the best concentration of alginate particles. Finally, we produce the alginate particle HOCl ices with respect to the alginate's optimal concentration.

A Real Time Measurement of Ice Concentration of Ice Slurry in Pipe (배관내 흐르는 아이스슬러리의 실시간 얼음분율 측정)

  • An experimental study was performed to measure a ice concentration of ice slurry flowing in a pipe in a real time. In the present paper, we suggested a measuring method by a refractive index and compared it to other methods by a freezing point and a density. To measure the refractive index of the solution, ice particles in the ice slurry should be completely removed and a hydro-cyclone was introduced instead of a mesh. The measuring method through the refractive index coincided with the density method using the real-time solution density within ${\pm}5%$ error range, having the error range less than the other two methods. In the other hand, the measuring method through the density has a good resolution, but the result using the initial density of the solution was different more than 10% error from that using the real-time density. And it has an error range 1.5 times greater than the method through the refractive index.

Effect of Ice Recrystallization on Freeze Concentration of Milk Solutes in a Lab-Scale Unit

  • Freeze concentration of milk was carried out thorough the controlled recrystallization of ice in a multi-stage freeze concentrator. Artificial temperature control was used to induce ice recrystallization via a heat and cold shock process. In each stage of freeze concentration, the recrystallization time was fixed at 1, 2, 4, and 8 hr to compare the solute concentrate, yield, Brix, ice crystal size, and freezing point at each experimental condition. Higher concentrations of milk solids were seen with increased durations of recrystallization time, and a maximum total solids in the final product of 32.7% was obtained with a ripening time of 8 hr in a second stage process. Milk solid yield decreased according to the solute concentration and recrystallization time. The results of Brix and ice crystal size showed a positive correlation with recrystallizaiton time. These results suggest the possibility of freeze concentration being of practical use in the dairy industry.
