Phytate Reduction and Quality Characteristics of Brown Rice Inoculated with Phytate-degrading Lactic Acid Bacteria (Phytate 분해능을 지닌 유산균을 이용한 현미의 Phytate 감소효과 및 품질특성)

  • Brown rice contains both excellent nutritional value and functional advantages. However, its utilization is limited due to its rough texture and higher concentrations of phytic acid compared to white rice. We made brown rice inoculated with Lactobacillus sakei Wikim001 having phytate activity for 12 h (BRWK-12) and 24 h(BRWK-24) at $30^{\circ}C$ and evaluated the quality characteristics in an attempt to solve these problems. The pH of brown rice inoculated with L. sakei Wikim001 was reduced time dependently. A concentration of phytic acid in brown rice inoculated with L. sakei Wikim001 was decreased as compared normal brown rice (BR). BRWK-24 showed significantly high values in the brightness, redness and yellowness (p<0.05). BRWK-24 received higher scores in texture and overall acceptability than those of BR on the sensory evaluation test. Taken together, it is expected that a treatment of L. sakei Wikim001 in brown rice is useful for the development of new fermented brown rice with reduced phytic acid.

The Research Trend of World Geography in Korean Geographers' Academic Society (한국 지리학계의 세계지리 연구 동향에 관하여)

  • This paper deals with the research trend of world geography (excluding geography of Korea) in Korean geographers' academic society through the analysis of the articles published during the last 21 years in three Korean geographical journals(Journal of the Korean Geographical Society, Journal of Korean Association of Regional Geographers, and Journal of Cultural and Historical Geography). The portion of articles concerned with world geography is relatively the lowest during the years 1990-1994, relatively the highest during the years 1995-1999, and rather decreasing during the years 2000-2010. The research areas of the articles concerned with world geography are mostly limited to USA, Japan, China, and Europe. It is not only expected that the more research on world geography should be done by Korean geographers but also that the research areas should be expanded in worldwide areas at this time when Korea is entering an international, global, and multi-cultural society.

Effect of Starter Cultures on the Antioxidant Activities of Allium hookeri Root-Hot Water Extract (발효 균주에 따른 삼채뿌리 열수추출물의 항산화능 비교연구)

  • Allium hookeri, a member of the onion family, has long been mainly cultivated for food and medicinal use in Southeast Asian countries, owing to its various biological properties. However, no studies of the anti-oxidative effects of fermented A. hookeri root extracts have been conducted to date. Therefore, this study investigated the effect of different starter cultures on the antioxidant activities of hot water extract of A. hookeri root by using the following five strains: Lactobacillus acidophilus, Bifidobacterum longum, Enterococcus faecium, Streptococcus thermophilus, and Saccharomyces cerevisiae. DPPH and ABTS radical scavenging activity, total phenolic acid contents, and total antioxidant capacity were higher in the hot water extract of A. hookeri root fermented with starter cultures than those of A. hookeri root. Among hot water extract of A. hookeri root fermented with starter cultures, fementing with S. cerevisiae showed the highest antioxidant activities. The results of this study provide new evidence of the anti-oxidative properties of A. hookeri root with starter cultures, indicating that it may be highly valuable as a natural product owing to its high-quality functional components.

Storytelling of Korean Virtual Reality Game Fiction (한국 가상현실 게임소설의 스토리텔링)

  • This study aims to analyze remediation of games and fictions in Korean virtual reality game fictions and to derive the storytelling of virtual reality game fictions through them. The purpose of this study is to explore the possibilities that Korean game fiction based on the web can be expanded as popular literature. The main character of the fiction is a male in his twenties. In the neoliberal society, he is set as a member of the neglected class and lacking privilege. He enters the virtual world because of the deficiency experienced in the real world. It minimizes the mediation process between the real world and the interface. On the other hand, the repetitive actions performed by the protagonist belong to the category of self - destructive labor. As a result, he shows signs of narcissism. In the Korean virtual reality game fiction, the magic circle appears blurred, and the real world and the virtual world are linked. In this process, the virtual world functions as a substitute space to solve the problem of reality. The establishment of such a space, and the resolution of conflicts are merely narrative characteristics of Korean game fictions that are different from North America and Europe.

  • The paper argues for the necessicity of revising many fundamental concepts that we use in everyday situations and in communication such as reality, thought, language, the world and finally the truth. The paper develops the argument that what the word ′truth′ actually signifies cannot be addressed just by explicating what philosophy, science or even religion denote but that it can only be answered fully by the study of language and therefore in a larger context linguistics. Language is the very tool that enriches the communication between one another due to its diverse significations that one may use when expressing one′s views, thereby making life more enjoyable. The paper develops why the above corresponding argument should be justified by developing three outstanding views as follows. The world or reality is indistinguishable from the common worldview that we associate with without the means of language. That the worldview is in essence inseparable from the mental and intellectual representation of it and the only means of expression lies with language. And finally, that the language is a complex signification in itself in every aspect. Language in short is the very essence of what we define as being ′poetic.′ With these arguments in mind, we may once again ponder the signification of Nietzsche′s words when he states that "to see science through the lens of art, and art through the lens of life."

Pork Production in China, Japan and South Korea

  • Global pork markets are becoming more competitive, riding the wind of the bilateral free trade agreement. China is the world's largest pork producer with nearly 50% of the world's total production. China's fast growing economy has provided its people with higher purchasing power, resulting in a rapid expansion of the Chinese swine industry over the past decades. Worldwide, China consumes the greatest amount of pork and it is believed that this trend will continue. Japan is the world's largest pork importing country, even though it also produces a lot of pork. The Japanese swine industry encounters weighty obstacles in production costs and environmental limitations which result in reduced domestic supply and creates the situation in which Japan has to import a significant amount of pork for their consumption. South Korea is also a large buyer of pork, with a status greatly influenced by the struggle that the country has faced with Foot and Mouth Disease (FMD) which occurred in 2000, 2002 and 2010. High production costs, low production efficiency, and forced culling following the FMD outbreak resulted in the loss of many hog farming households in the country, reducing supply of domestic pork in the face of continued demand. Overall, pork production in these economically important countries can greatly impact the industry globally. The goal of this review paper is to describe pork production in China, Japan, and South Korea and discuss these countries' role in global pork export markets.

  • The world has become one united world so that it is worthless to divide it into two; the East and West. In the 20th century, eastern perspectives proliferated in western science involving theology, philosophy and psychotherapy. In this time of various trends of ideas emerged minimalism, artistic and cultural current seeking simplicity and conciseness. This current of idea appeared about the time of World War II in visual art, and then expanded to other fields like music, architecture, fashion and philosophy in diverse forms. Minimalism is also presented in interior space with extreme form of simplicity and detail, revealing parts of the space as delicate and pure style with emphasis on purity of the space itself. In this research, demonstrate clear features of eastern view of space appeared in minimalism of interior design mainly in America. The reason the scope of study is limited to America is that America is the origin of minimal art and has been hub of modern design since the 1930s. The research, first, finds out the origin and conceptual idea of minimalism and features of eastern view of space. Based on this understanding, further study has been carried to discover relation of minimalistic interior space to eastern view of space and to analyze eastern characteristic expressed in minimalistic space by examination of cases pertaining to commercial space.

ChoSeokJin coach has continued the lifeline of the Korean wood furniture Jeonbuk region. It is already famous coach to award-winning Olympic coach and tournament of the world. Through a harsh process until the Republic of Korea master craftsman, it was an opportunity to reaffirm once again the importance of effort and commitment. Review for the Current Status of Cancer Complementary and Alternative Medicine in the World (세계 암 보완대체의학의 현황에 대한 연구)

  • Objectives: Many countries have been using Complementary and alternative medicine (CAM) for treating cancer and it has been given more weight than before. This study aimed to look into its current status and perspective way to suggest the way which Korean oriental medicine goes to. Methods: We searched internet web sites that are relative with CAM in oncology parts and made lists for this study. We downloaded the essays in the form of electronic files in that web sites and copied the originals consulting to each libraries and relative institution. Results: North America was processing the standardization of CAM based evidences and China was making their traditional medicine representative medicine of CAM. India was developing their traditional medicine because of their domestic need and its results were recognized by National Cancer Institute (NCI). CAM was regulated and studied legally in Europe. Japan was using mushroom for immune therapy clinically. Mexico had a large scale of medical valley in Tijuana area and made it international. Conclusions: The efforts to develop and study CAM for treating cancer are increasing in the world. We need to know the current status of CAM in the world, and make our way that Korean oriental medicine goes to.

  • The core idea of the critical regionalism could be summarized as a self-conscious synthesis between universal civilization and world culture. After World War II, it has been applied to architecture for overcoming the problem of Industrial Capitalism and uniformity of 20th century Modern Architecture. Naturally, religious architecture cannot also be an exception in this cultural trend, thus we can also apply the critical regionalism to the Korean Catholic Church Architecture with the basic premise that the Traditional Western and Modern Style Church Architecture should be regarded as universal civilization, and the Traditional Korean Architecture and endemicity as one of world culture. In the context, this article attempts to analyze the regionality of Korean Modern Catholic Church Architecture constructed between the 19th century and 1980's, and how it has been differently transformed with the view of the critical regionalism. Its analysis will be carried out within three types; transformation of the Traditional Korean Architecture and the influence of Japanese Modern Architecture, representation of the Traditional Korean Architecture, and abstraction of the Traditional Korean Architecture with each advantages and disadvantages.
