A Study on Quality Characteristics and Establishment of Fermentation Process for Traditional Kyungsando Squid sikhe (경상도 전통 마른 오징어 식해의 제법조사 및 품질특성)

  • The method of the squid safe made in Kyungsando was examined, and fermentation precess was established. The chemical composition and functional effects of the squid sikhe were examined. In the sensory evaluation, the squid sikhe made from Gampo accepted to be best for traditional Kyungsangdo squid sikhe and it is called standard sikhe. The Gampo sguid sikhe showed higher values in total sugar, free reducing sugar and nitrogen compound analysis compared to the orthers. The sugar of standard sikhe consisted of four kinds including glucose. The contents of free amino acid was increased in the order of glutamic acid, alanine, and methionine. The composition of amino acid in water or salt soluble protein of squid sikhe contained 17 kinds, and the contents was increased in order of glut amine acid, aspartic acid, and proline.

Physicochemical Properties of Extruded Rice Flour and Gelatinization Popped Rice Flour (제조 방법이 다른 팽화미 분말의 이화학적 특성)

  • This study is carried out in order to develop food materials for the promotion of rice consumption. In this study, we researched the physicochemical properties of extruded rice flour (ER) and gelatinization popped rice flour (GPR) by the extrusion process and by the popped method with milled rice and brown rice. The extrusion process used a couple of screw extruders. The extrusion parameter was kept constant at a feed moisture content of 25%, barrel temperature of $120^{\circ}C$ and screw speed of 400 rpm. GPR was prepared by batch popping machine after gelatinization of rice. In order to evaluate the physicochemical properties of ER and GPR, as well as the gelatinization rate, water soluble index (WSI), water adsorption index (WAI), DPPH radical scavenging activity and total dietary fiber content, the color value was carried out. The gelatinization rate was similar to 71.1~73.8%. Further, the results of WSI and WAI were increased at ER and GPR compared to the raw materials; ER was also higher than GPR. DPPH radical scavenging activity and total dietary fiber content showed a tendency to reduce after extrution and popping. As a result of the color value, the L value of ER decreased more than the raw materials, whereas GPR increased at a and b values.

Comparison of Bioleaching Kinetics of Spent Catalyst by Adapted and Unadapted Iron & Sulfur Oxidizing Bacteria - Effect of Pulp Density; Particle Size; Temperature

  • Bioleaching studies of metals from a spent catalyst were conducted using both adapted and unadapted bacterial cultures. The bacterium used in this experiment was Acidithiobacillus ferrooxidans. A comparison of the kinetics of leaching was made between the two cultures by varying the leaching parameters, including the pulp density, particle size and temperature. Both cultures showed similar effects with respect to the above parameters, but the leaching rates of all metals were higher with the adapted compared to the unadapted bacterial cultures. The leaching reactions were continued for 240 h in the case of the unadapted bacterial culture, but only for 40 h in the case of the adapted bacterial culture. The leaching reactions followed first order kinetics. In addition, the kinetics of leaching was concluded to be a diffusion control model; therefore, the product layers were impervious.

Agronomic Characters and Their Correlation Coefficient on Black Seeded Soybeans Collected in Chonnam Province

  • In order to obtain the genetic information on the quantitative characters of black seeded soybeans, which would be needed to improve selection efficiency for breeding high yielding genotype, 45 varieties of black seeded soybeans collected in Chonnam, Korea were grown and variations of several important characters were observed. Heritability of each observed character, phenotypic and genotypic correlations among the characters and contribution of each yield component on grain yield through path coefficient analysis were estimated. Both number of pods per plant and 100-seed weight showed not only high heritability but also highly significant phenotypic and genotypic correlation with seed yield, and hence it was desirable to select plants with more number of pods per plant and higher 100-seed weight than raise seed yield of black seeded soybeans collected in Chonnam. In addition, number of pods per and 100-seed weight were proved to be the most influential variables on the viability of seed yield by path coefficient analysis. Since these showed the high heritability of number of pods per plant, selection of plants with higher 100-seed weight would be more efficient for breeding high yielding genotype.

Measurement of ecological niche of Quercus aliena and Q. serrata under environmental factors treatments and its meaning to ecological distribution

  • Quercus aliena and Q. serrata are both occur as natural vegetation alongside natural freshwater bodies of the southern Korea Peninsula. Q. serrata dominates over Q. aliena as secondary forest vegetation in the present day. In order to explain these natural distributional traits of the oak species, we conducted some experiments with oak seedlings which treated with major important environmental resources, including light, moisture and nutrients, under controlled conditions. We then measured the ecological niche breadths and overlap from 15 eco-morphological characteristics. The ecological niche breadth of Q. aliena and Q. serrata were higher in terms of the nutrient factor applied, but was lower terms of light. The niche breadth of Q. serrata was wider than that of Q. aliena in light and moisture exposure. On the other hand, the niche breadth of Q. aliena was similar with that of Q. serrata in terms of the nutrient factor applied. These results imply that Q. serrata has a broader ecological distribution in over a wider variety of light and moisture environments than that of Q. alien. Ecological niche overlap between two oak species was the widest in terms of the light treatment factor applied, and narrowest in terms of moisture. This response pattern was also verified by cluster and principle component analysis. These results suggest competitive interactions between Q. serrata and Q. aliena seedlings may be higher for light resources than moisture or nutrient resources, and that Q. serrata is more shade tolerant than Q. aliena.

Effect of Blanching Time on Changes in Vitamin and Mineral Contents in Leafy Vegetables Treated by Pesticides (데치는 시간에 따른 침투성 및 비침투성 농약 처리 엽채류의 비타민 및 무기질의 함량 변화)

  • The present study was conducted to investigate effect of blanching time on changes in vitamin and mineral contents in leafy vegetables treated by different pesticides. Vitamin A content of fresh leafy vegetables was high whorled mallow > chard > spinach in order and vitamin C content of those was high spinach > whorled mallow > chard in order. Vitamin A and C contents of leafy vegetables treated by non-systemic pesticide were higher than those of leafy vegetables treated by systemic pesticide. Changes in vitamin A and C contents of leafy vegetables treated by systemic pesticide and non-systemic pesticide showed a similar trend. Vitamin A content significantly increased, while vitamin C content significantly decreased by conventional blanching. Changes in mineral contents in leafy vegetables treated by systemic pesticide and non-systemic pesticide showed a similar trend. Upon conventional blanching, Mg in spinach, Mg and Ca in chard and whorled mallow slightly increased, while K in all leafy vegetables remarkably decreased, and Se in spinach slightly decreased and Se in other vegetables remarkably decreased. On the other hand, Na, P, Fe, Cu and Zn in all leafy vegetables slightly decreased or did not show any change.

Silage preparation and fermentation quality of natural grasses treated with lactic acid bacteria and cellulase in meadow steppe and typical steppe

  • Objective: In order to improve fermentation quality of natural grasses, their silage preparation and fermentation quality in meadow steppe (MS) and typical steppe (TS) were studied. Methods: The small-scale silages and round bale silages of mixed natural grasses in both steppes were prepared using the commercial lactic acid bacteria (LAB) inoculants Chikuso-1 (CH, Lactobacillus plantarum) and cellulase enzyme (AC, Acremonium cellulase) as additives. Results: MS and TS contained 33 and 9 species of natural grasses, respectively. Stipa baicalensis in MS and Stipa grandi in TS were the dominant grasses with the highest dry matter (DM) yield. The crude protein (CP), neutral detergent fiber and water-soluble carbohydrate of the mixed natural grasses in both steppes were 8.02% to 9.03%, 66.75% to 69.47%, and 2.02% to 2.20% on a DM basis, respectively. All silages treated with LAB and cellulase were well preserved with lower pH, butyric acid and ammonia-N content, and higher lactic acid and CP content than those of control in four kinds of silages. Compared with CH- or AC-treated silages, the CH+ AC-treated silages had higher lactic acid content. Conclusion: The results confirmed that combination with LAB and cellulase may result in beneficial effects by improving the natural grass silage fermentation in both grasslands.

Change of Soil Chemical Properties according to Cultivation Area and Cultural Year for Platycodon grandiflorum (도라지 재배지역 및 재배년수에 따른 토양의 화학적 특성변화)

  • The study result survey platycodon cultivation regions of Jinju(2), Sacheon(4), Hapcheon(3), Haman(3), and Sancheong(3) of Gyongnam regarding chemical properties of soil, inorganic nitrogen phosphorus by type of composition is as follows: pH and EC value were highest where platycodon cultivated for under 3 years in soils. Content of O.M equal to or less than 25 mg $kg^{-1}$, the average value for platycodoncultivation in korea. Content of exchangeable calcium in soils were 12, 14 $cmol^+kg^{-1}$ in Hapcheon and Haman regions where platycodon was cultivated for two years which is 2~3 time higher level compared with the average upland soil of korea. Water solution boron confirmed approximated level of 3.0 mg $kg^{-1}$ in all survey regions, and the finding is about five times higher than average upland soil of korea which is 0.5 mg $kg^{-1}$. In the case of nitrogen, a significant difference was found depending on cultivation regions and continuous culture. Content of nitrogen in soils were difference according to cultivation area and continuous culture. The composition ratio according to the type of inorganic phosphorus showed the highest in order of Al-P > Ca-P > Fe-P > Saloid-P in all survey regions except for Hapcheon (five, seven years cultivated soils). The correlation showed high significance between available phosphate and inorganic phosphorus.

  • The improved Green integral equation of overdetermined type applied to the radiation problem for an oscillating cylinder in the presence of weak current is presented. A two-dimensional Green function for the weak current is also presented. The present numerical solution of the Improved Green integral equation by the B-spline higher order Kelvin panel method is shown to be free of irregular frequencies which are present in the usual Green integral equation.

Effect of Fertilizer Level and Seeding Rate on Yield and Yield Components of Rapeseed in Upland Field

  • In order to select suitable fertilizer level and sowing rate of Dangyo $^{#8}$(hybrid) rapeseed at the southern area of Korea, two varieties of Naehanyuchae (Normal) and Dangyo $^{#8}$(hybrid) rapeseed currently grown for oil production by two fertilizer level with 10-8-8 kg/10a and 15-8-8 kg/10a and three sowing rate with 500 g/10a, 1,000g/10a and 1,500g/10a with relatively high yield was grown at the same condition yield and yield components were observed. Dangyo $^{#8}$(hybrid) rapeseed was superior to oil-eed rapeseed for yield at the 15-8-8 kg/10a of fertilizer and 1,500 g/10a of sowing rate. Fertilizer level, $N-P_{2}O_5-K_{2}O$ = 15-8-8 kg/10a and sowing rate, 1,500 g/10a showed somewhat higher value in two varieties of Naehanyuchae(Normal) and Dangyo $^{#8}$(hybrid).
