This study was carried out to evaluate changes in the characteristics of the fermented pork using a Korean traditional seasonings. Biceps femoris were cut to cube(7 ${\times}$ 12 ${\times}$ 2 em) and three Korean traditional seasonings such as soybean paste(Tl), garlic paste(T2), red pepper paste(T3), were seasoned by the proportions of meat to each seasonings(l: 1), respectively. The seasoned samples were fermented at 0 $\pm$ 1 $^{\circ}C$ for 10 days. Sensory evaluation did not significantly differ between all treatments. The highest pH among treatments were shown in T2, wheres T3 showed the lowest value. The highest saccarinity was shown in T2, followed by T3. Salinity was shown to be higher in all treatments. Shear force value was the highest in T2 and T3. VBN and TBARS increased during storage. The total bacterial counts was highest of storage 21 days. E. coli. was higher in the order of T2 > T3 > TI. Lactobacilli spp. was higher in the order of T2 > T1 > T3.

Objectives: This study was to examine the influences of community characteristics on the mortality rates. Community characteristics included socioeconomic environmental characteristics, health care resources, and health lifestyle practice. Methods: This study used secondary data whose units of analyses were 249 administrative districts. Mortality rates were estimated with hierarchical regression models entered in the order of (1) socioeconomic environmental characteristics, (2) health care resources, and (3) health lifestyle practice. Results: About 70% of mortality rate was explained by socioeconomic environmental characteristics, health care resources, and health lifestyle practice. In particular, socioeconomic environmental characteristics showed the strongest impact on mortality rate. Among socioeconomic characteristics, community with lower rate of households headed with college or more, lower number of inhabitants per on-premise license, higher rate of population in poverty, and rural region showed higher mortality rate. Among health care resources, community with higher number of inhabitants per doctor and lower number of inhabitants per hospital bed showed higher mortality rate. Among health lifestyle practice, community with higher current smoking rate and lower moderate physical activity practice rate showed higher mortality rate. Conclusions: The results suggest that policy makers should take into account socioeconomic environmental characteristics of community in developing community-based health promotion rather than focusing on lifestyle changes of residents.

This study was conducted to determine the effect of pH adjustment on physico-chemical characteristics of chicken breast surimi. The chicken breast meat was ground with distilled water, of which pH was then adjusted to 2.5 (T1), 3.0 (T2), 10.5 (T3) and 11.0 (T4) for surimi manufacture, respectively. Water content was higher in order of T4>T1>T3>T2 (p<0.05). Crude protein and crude fat were higher in T3 and T4 compared with T1 and T2 (p<0.05). $L^*$ values, myofibrillar protein and water holding capacity of T2 and T4 were higher than those of T1 and T3 (p<0.05). T4 had the lowest yield among the treatments (p<0.05). T1 was higher in yield and pH, whereas breaking force and deformation were higher in T1 (p<0.05). $a^*$ was higher in order of T3>T2>T4>T1 and $b^*$ was lower in T1 compared with other treatments (p<0.05). In textural properties, the chewiness values of T2 and T3 were higher than those of T1 and T4, the hardness was higher in order of T2>T3>T4>T1 (p<0.05). Cohesiveness and gumminess of T1 showed higher values than those of other treatments (p<0.05). In sensory evaluation, the note for appearance was higher in T2 than other treatments (p<0.05), however other traits were not significantly different (p>0.05). Therefore, the alkaline processing (T4, pH 11.0) would be recommended.
Soil samples were collected from new-developed wetland soil ecosystem of Tamarix chinesis plantation in Chinese Yellow River Delta in different months of 2003. Soil characteristics, temporal change and spatial distribution of microbial community composition and their relationship with nitrogen turnover and circling were investigated in order to analyze and characterize the role of microbial diversity and functioning in the specific soil ecosystem. The result showed that the total population of microbial community in the studied soil was considerably low, compared with common natural ecosystem. The amount of microorganism followed as the order: bacteria> actinomycetes>fungi. Amount of actinomycetes were higher by far than that of fungi. Microbial population remarkably varied in different months. Microbial population of three species in top horizon was corrected to that in deep horizon. Obvious rhizosphere effect was observed and microbial population was significantly higher in rhizosphere than other soils due to vegetation growth, root exudation, and cumulative dead fine roots. Our results demonstrate that microbial diversity is low, while is dominated by specific community in the wetland ecosystem of Tamarix chinesi.
The aim of this study was to identify the factors contributing to the auction price and total price of carcasses by using squared semi-partial correlation of carcass traits. The data used in this study were the carcass grades assigned to 7,145 head of Hanwoo slaughtered from 2013 to 2018 in Gyeonggi province and 106,779 head of Hanwoo slaughtered from 2013 to 2018 outside of Gyeonggi province. The rankings of the carcass traits contributing to the auction price were in the order of marbling score (86.70%), backfat thickness (10.42%), eye muscle area (1.40%), and carcass weight (0.92%) in Gyeonggi province. In Hanwoo slaughtered outside of Gyeonggi province, the rankings were in the order of marbling score (88.53%), backfat thickness (9.06%), eye muscle area (1.24%), and carcass weight (0.99%). The rankings of carcass traits contributing to the total price were in the order of marbling score (45.95%), carcass weight (45.60%), backfat thickness (6.49%) and eye muscle area (0.77%) in Gyeonggi province. In Hanwoo slaughtered outside Gyeonggi province, the rankings were in the order of marbling score (49.64%), carcass weight (43%), backfat thickness (5.86%), and eye muscle area (0.66%). Gyeonggi province Hanwoo had thinner backfat thickness than Hanwoo outside Gyeonggi, and it had a higher contribution to auction price and total price. Collectively, Hanwoo in Gyeonggi province showed higher contribution scores for backfat thickness. This study aimed to provide basic information to guide Hanwoo breeding and increase profits for Hanwoo farms through the analysis of each traits according to environmental factors.

The purpose of this study is to propose measures for social work practice to enhance the happiness of middle-aged married men and women by identifying the effects of family stress and social support resources (formal and informal support resources) on marital satisfaction among mid-life married couples. Subjects were selected through purposive sampling among married men and women aged between 40 and 59 and living in Seoul City and Gyeonggi province. The study results are follows. First, the average score of family stress was 3.06 points (SD=.56), slightly higher than the median value of 3 points. Of all subscales of family stress, the subjects experienced the most stress from family relationships, followed by financial problems, health and loss of families, and work-family compatibility. In regard to social support resources, the mean value of all social support resources categories was greater than the median. Among the subscales, informal support (family support and support from other people) was found to be higher than formal support. The level of marital satisfaction was higher than the median, and the score was 3.21 points (SD=.78). Second, in order to explore differences in marital satisfaction according to family stress and social support, differences in marital satisfaction were analyzed by grouping subjects who scored high, middle, and low levels of marital satisfaction. According to the results, marital satisfaction was statistically significantly higher in the group that experienced less family stress (F=6.25, p<.01). With respect to social support, marital satisfaction was statistically significantly higher in the group that received high social support (F=29.68, p<.001). Third, according to the analysis of factors affecting marital satisfaction in middle-aged married men and women, subjective economic status, family relationship stress, economic stress, and family support showed statistical significance. The higher the subjective economic status and the lower the family relationship stress and economic stress levels, the higher the marital satisfaction among middle-aged married men and women. In addition, the greater the family support, the higher the marital satisfaction. The results of this study underscore the need to improve family relationships in middle-aged married couples and to distribute family life education programs that can strengthen family support resources. For example, family relationship enhancement programs are currently performed, including "Family School for Middle-Aged Baby Boomers" and others as part of the Healthy Family Support Work regarding the promotion of marital satisfaction of middle-aged couples. In addition, continuing effort is warranted to include content on strengthening family support resources, maximizing the effectiveness of programs, and promoting service accessibility.
In order to study the effects of the maturing temperature of kanjang(Korean traditional soy sauce) mash on the distributions of chemical compositions and sensory characteristics of kanjang, test kanjang mash prepared by mixing one part of meju and three parts of 20% salt solutions was matured at 15, 30 and $45^{\circ}C$ for 60 days respectively. It was found that although the higher the maturing temperature upto $45^{\circ}C$ for 60 days of maturing the higher total nitrogen, total free amino acids and pigment content in kanjang could be obtained, better quality kanjang containing the lower acetic acid, butyric acid and pyroglutamic acid with the higher ratio of the glutamic acid to the total free amino acids and the higher sensory evaluation scores could be prepared by maturing kanjang mash at $15^{\circ}C$.

The charcoal has been used not only as fuel but also as human health care material since it was used. Charcoal's performances were generally investigated in aspects of energy efficiency and caloric values. This study was conducted in order to increase charcoal's application area and to develop functional paper. Five types of charcoal were used on a basis of gas absorption properties from previous study. Handsheets were made by two methods by internal loading and surface spray on interlayer. Strength properties of internal loading and interlayer spray handsheets were decreased as the charcoal loading increased. Ethylene gas absorption property was higher in both of oak's black charcoal and white charcoal than others. In terms of strength, 5-10% charcoal loading was efficient. Above 10% loading, a rate of strength decrease was higher than that of ethylene gas absorption rate. Formaldehyde absorption property was higher at both of oak's black charcoal and mixed charcoal than others. However, to guarantee enough charcoal loading should be higher than 95 $g/m^2$ for sufficient formaldehyde absorption.
This research described the magnetic method for the rapid removal of green algae in water. We modified the pH, cation concentration, and magnetic powder concentration to discover the best removal performance. In order to rapidly remove green algae from water, we added magnetic powder and chitosan into algae water to make a magnetic substance and this was extracted by a strong neodymium magnet. The optimized conditions were pH of 6.5-7.5, chitosan concentration of 10 mg/L, and magnetite powder concentration of less than 0.05%. A higher removing rate was observed when a higher amount of magnetite or chitosan was used, but the total amounts of phosphorus or nitrogen were not decreased.
This study was conducted to find out the effect of slow-release nitrogen fertilizer, such as latex coated urea(LCU) and Meister10(MS10) on direct seeded rice in dry soil(DS). Junghwabyeo, and early maturity rice cultivar was grown on the plots which were treated with None-nitrogen. urea. LCU and MS10 plot. Growth characteristic, yield and yield components were investigated. Nitrogen uptake-efficiency and physico-chemical properties of soil before-after experiment were analyzed. Plant height and number of tillers $m^{-2}$ in LCU and MS10 plot at early grow stages were higher than those in urea plot. Plant height and number of tillers $m^{-2}$ grown on the plot of Ms10 plot were higher than those of LCU plot. The number of seedling $m^{-2}$ were no significant differences among None-N, urea, and MS10 plot in DS. Heading date and leaf color were higher with Urea than LCU and MS10 plot. Culm length in LCU and MS10 plot were longer compared with urea plot, but panicle length was similar among with Urea, LCU and MS10 plot. Number of panicles $m^{-2}$ was greater in order of MS10 > LCU > Urea plot. Yield were greater in order of MS10 > LCU > Urea plot. Nitrogen uptake and nitrogen efficiency were greater in order of MS10 > LCU > urea plot. After the experiment, total content of nitrogen in soil was not changed at all treatments, but pH, P and Si of soil were lower than those of before experiment at all treatments.
