식육 부산물을 활용한 순대의 미생물학적 위해 분석 (Microbiological Hazard Analysis of Sundae (Korean Sausage) Made of Meat By-Products)

  • 최근 식육부산물 가공식품의 소비량 증가에도 불구하고 식육부산물의 생산, 유통 그리고 소비과정에서 위생안전문제가 지속적으로 제기되고 있다. 본 연구에서는 순대의 위해요소를 분석, 평가하여 Hazard Analysis Critical Control Point에 근거한 식육부산물 생산업체의 미생물학적 안전성 확보와 소규모 제조업체의 품질관리 기준 설정 및 위생관리체계를 확립하고자 하였다. 이를 위해 순대 생산에 적용되는 원료(24건), 제조공정(7단계), 제조설비 및 도구(40건), 작업장 환경(17구역), 작업자(12명)에 대한 미생물학적 위해요소를 분석하였다. 원·부재료 돈혈의 일반세균과 대장균군 각각 6.28±0.48, 4.07±0.42 log CFU/g 검출되었고, 돈소창의 대장균군 3.23±0.16 log CFU/g 검출되어 초기단계의 위해요소가 지적되었다. 혼합과 충진공정에서의 일반세균은 각각 5.23±0.17, 5.45±0.37 log CFU/g, 대장균군은 각각 3.25±0.23, 3.31±0.24 log CFU/g로 높게 나타나 미국 육군 Natick의 위생가이드라인에서 제시한 기준을 초과하여 검출되었다. 작업장 충진실과 돈소창 세척실의 일반세균과 대장균군은 기준치를 초과하였으나 세척·소독 후 일반세균은 약 98% 미생물 오염도가 급격히 감소하였고, 대장균군은 모든 구역에서 불검출 되었다. 순대 제조공정의 안전성 확보를 위해서는 세척·소독 및 구역별 분리와 작업자의 위생관리가 선행되어야 하며, 제품의 보관 및 유통단계의 철저한 관리가 필요할 것을 제안한다. 향후 식육부산물의 활용한 가공식품의 안전성평가를 위한 추가적인 연구와 한계기준 유효성평가를 위한 연구가 지속되어야 할 것으로 사료된다.

Quantitative Microbial Risk Assessment for Clostridium perfringens in Natural and Processed Cheeses

  • This study evaluated the risk of Clostridium perfringens (C. perfringens) foodborne illness from natural and processed cheeses. Microbial risk assessment in this study was conducted according to four steps: hazard identification, hazard characterization, exposure assessment, and risk characterization. The hazard identification of C. perfringens on cheese was identified through literature, and dose response models were utilized for hazard characterization of the pathogen. For exposure assessment, the prevalence of C. perfringens, storage temperatures, storage time, and annual amounts of cheese consumption were surveyed. Eventually, a simulation model was developed using the collected data and the simulation result was used to estimate the probability of C. perfringens foodborne illness by cheese consumption with @RISK. C. perfringens was determined to be low risk on cheese based on hazard identification, and the exponential model ($r=1.82{\times}10^{-11}$) was deemed appropriate for hazard characterization. Annual amounts of natural and processed cheese consumption were $12.40{\pm}19.43g$ and $19.46{\pm}14.39g$, respectively. Since the contamination levels of C. perfringens on natural (0.30 Log CFU/g) and processed cheeses (0.45 Log CFU/g) were below the detection limit, the initial contamination levels of natural and processed cheeses were estimated by beta distribution (${\alpha}1=1$, ${\alpha}2=91$; ${\alpha}1=1$, ${\alpha}2=309$)${\times}$uniform distribution (a = 0, b = 2; a = 0, b = 2.8) to be -2.35 and -2.73 Log CFU/g, respectively. Moreover, no growth of C. perfringens was observed for exposure assessment to simulated conditions of distribution and storage. These data were used for risk characterization by a simulation model, and the mean values of the probability of C. perfringens foodborne illness by cheese consumption per person per day for natural and processed cheeses were $9.57{\times}10^{-14}$ and $3.58{\times}10^{-14}$, respectively. These results indicate that probability of C. perfringens foodborne illness by consumption cheese is low, and it can be used to establish microbial criteria for C. perfringens on natural and processed cheeses.

냉동 냉면류의 제조공정별 미생물학적 위해요소 평가 (Microbial Hazard Analysis of the Manufacturing Processes for Frozen Korean Cold Noodle, Naengmyeon)

  • This study investigated the microbiological hazards in the manufacturing processes of Naengmyeon. Sanitary indicative bacteria, such as aerobic plate counts and coliforms as well as pathogenic bacteria, were examined from raw materials, manufacturing processes, working area, 17 utensils and equipment. The aerobic plate counts for raw materials and arrowroot starch estimated as 0.77±0.68~5.02±0.28 and 5.02±0.28 log CFU/g, respectively. Coliforms were detected from wheat flour, buckwheat flour, and potato starch. Staphylococcus aureus was detected to be 0.61±1.06 log CFU/g in wheat flour and 0.20±0.35 log CFU/g in buckwheat flour. During the manufacturing process, aerobic plate counts for kneading process were 4.54±0.34 log CFU/g. But after the press out and heat process, contamination of aerobic plate counts and coliforms decreased and remained at a low level until the release process. Aerobic plate counts before washing disinfection of screw were 3.28±0.62 log CFU/100 cm2, the level of which was high in utensils and equipment that had contact with employees or water. These results represent not only an important indicator for the hygienic level but also a scientific basis for analyzing biological hazards, which lead to the introduction of HACCP for the production of safe and hygienic cold noodles processed by manufacturers.

경쟁위험 하에서의 누적발생함수 추정량 성능 비교 (Performance Comparison of Cumulative Incidence Estimators in the Presence of Competing Risks)

  • 경쟁위험(competing risk) 하에서의 누적 발생함수(cumulative incidence function)는 일반적으로 비모수적 방법으로 추정된다. 그러나 관심 있는 원인에 의한 사건이 다른 원인에 의한 사건보다 상대적으로 적게 발생하는 경우에 비모수적 방법으로 추정된 누적발생함수는 이산성으로 인해 다소 정확하지 않게 된다. 이와 같은 경우에 Bryant와 Diagnam(2004)는 관심 있는 원인에 대한 원인특정적 위험함수(cause-specific hazard function)를 모수적으로 모형화하고 다른 원인에 의한 사건은 비모수적으로 추정하는 준모수적 방법을 제안했다. 본 연구에서는 준모수적 누적발생함수 추정량을 재표현하고 와이블분포모형과 대수 정규분포모형으로 확장하였다. 또한 대수 정규분포 원인특정적 위험모형일 경우 누적 발생함수에 대한 비모수적 추정량, 와이블분포 준모수적 추정량과 대수 정규분포 준모수적 추정량의 효율성을 비교하며 준모수적 추정량의 성능과 모형 오설정이 미치는 영향을 살펴보았다.

대수 선형 위험함수 학습효과에 근거한 NHPP 신뢰성장 소프트웨어 모형에 관한 비교 연구 (The Comparative Study for NHPP Software Reliability Model based on the Property of Learning Effect of Log Linear Shaped Hazard Function)

  • 본 연구에서는 소프트웨어 제품을 개발하여 테스팅을 하는 과정에서 소프트웨어 관리자들이 소프트웨어 및 검사 도구에 효율적인 학습기법을 이용한 NHPP 소프트웨어 모형에 대하여 연구 하였다. 적용모형은 로그 형 위험함수 모형을 적용한 유한고장 NHPP에 기초하였다. 소프트웨어 오류 탐색 기법은 사전에 알지 못하지만 자동적으로 발견되는 에러를 고려한 자동에러탐색요인과 사전 경험에 의하여 세밀하게 에러를 발견하기 위하여 테스팅 관리자가 설정해놓은 요인인 학습효과의 특성에 대한 문제를 비교 제시 하였다. 그 결과 학습요인이 자동 에러 탐색요인보다 큰 경우가 대체적으로 효율적인 모형임을 확인 할 수 있었다. 본 논문의 소프트웨어 고장 자료 분석에서는 고장 간격 시간 자료를 적용하고 모수추정 방법은 최우추정 법을 이용하고 추세분석을 통하여 자료의 효율성을 입증한 후 평균제곱오차와 $R^2$(결정계수)를 이용하여 효율적인 모형을 선택 비교하였다.

  • In this paper we present a safety plan to be applied to the development of the TCS(Train Control System). The safety plan that can be applied to the life cycle of a system, from the conceptual design to the dismantlement, shows the whole process of the paper work in detail through the establishment of a goal, analysis and assessment, the verification. In this paper we study about the making a plan, the preliminary hazard analysis, the hazard identification and analysis to guarantee the safety of the TCS. The process far the verification of the system safety is divided into several steps based on the target system and the approaching method. The guarantee of the system safety and the improvement of the system reliability is fellowed by the recommendation of the international standards.

샐러드의 미생물학적 위해 감소를 위한 세척 조건 확립 (Establishment of Washing Conditions for Salad to Reduce the Microbial Hazard)

  • The purposes of this study were to establish washing conditions for vegetable salad to reduce the microbial hazard by using sodium hypochlorite solution and eventually to implement HACCP for salad processing. By using the salad production line of Shinkeum Co. located in Gwacheon, Gyunggi-do, salad samples were washed under several washing conditions (chlorine dip period, chlorine concentration, rinse time, etc.) to determine the most effective conditions. The original washing line consisted of 3 baths (100 ppm chlorine water dip, water rinse, and water rinse), each with a capacity of 100 L of tap water and 5 kg of salad. First, the salad samples were washed with 100 ppm of sodium hypochlorite solution for various dip times (3, 6, 9, 12 min); however, only a 1 log- or less-reduction in total microbial counts was achieved in all groups and the time of chlorine water dip was not a significant factor in reducing the microbial hazard. When another water bath was added before the chlorine water dip (4-bath washing), a 2 log-reduction in total microbial counts was achieved. This result suggested the importance of pre-dipping salad materials in water before chlorine treatment to reduce the organic load on the surface of the vegetables. Coliforms were not detected at all after washing. As the concentration of chlorine $(50{\sim}150\;ppm)$ and rinse time $(0.5{\sim}2\;min)$ increased, greater microbial reduction was achieved; however, physical damage of the salad was observed. Finally, the optimum washing conditions for salad were determined as 3 min-water dip, 3 min-chlorine (100 ppm) dip, 2 min-rinse, and 2 min-rinse.

상수관로의 잔존수명 평가를 위한 통계적 방법론 (A Statistical Methodology for Evaluating the Residual Life of Water Mains)

  • This paper provides a method for evaluating a residual life of water mains using a proportional hazard model(PHM). The survival time of individual pipe is defined as the elapsed time since installation until a break rate of individual pipe exceeds the Threshold Break Rate. A break rate of an individual pipe is estimated by using the General Pipe Break Model(GPBM). In order to use the GPBM effectively, improvement of the GPBM is presented in this paper by utilizing additional break data that is the cumulative number of pipe break of 0 for the time of installation and adjusting a value of weighting factor(WF). The residual lives and hazard ratios of the case study pipes of which the cumulative number of pipe breaks is more than one is estimated by using the estimated survival function. It is found that the average residual lives of the steel and cast iron pipes are about 25.1 and 21 years, respectively. The hazard rate of the cast iron pipes is found to be higher than the steel pipes until 20 years since installation. However, the hazard rate of the cast iron pipes become lower than the hazard rates of the steel pipes after 20 years since installation.

Earthquake risk assessment of seismically isolated extradosed bridges with lead rubber bearings

  • This study presents a method to evaluate the seismic risk of an extradosed bridge with seismic isolators of lead rubber bearings (LRBs), and also to show the effectiveness of the LRB isolators on the extradosed bridge, which is one of the relatively flexible and lightly damped structures in terms of seismic risk. Initially, the seismic vulnerability of a structure is evaluated, and then the seismic hazard of a specific site is rated using an earthquake data set and seismic hazard maps in Korea. Then, the seismic risk of the structure is assessed. The nonlinear seismic analyses are carried out to consider plastic deformation of bridge columns and the nonlinear characteristics of soil foundation. To describe the nonlinear behaviour of a column, the ductility demand is adopted, and the moment-curvature relation of a column is assumed to be bilinear hysteretic. The fragility curves are represented as a log-normal distribution function for column damage, movement of superstructure, and cable yielding. And the seismic hazard at a specific site is estimated using the available seismic hazard maps. The results show that in seismically-isolated extradosed bridges under earthquakes, the effectiveness of the isolators is much more noticeable in the columns than the cables and girders.

  • The objective of this study is to devise an accident scenario analysis method adept at creating accident scenarios at the Preliminary Hazard Analysis(PHA) step of a hazard analysis for railway system. This approach was inspired by the Quality Function Deployment(QFD) method, which is conventionally used in quality management and was used at the systematic accident scenario analysis(SASA) for the design of safer products. In this study, the QFD provides a formal and systematic schema to devise accident scenarios while maintaining objective. The accident scenario analysis method first identifies the hazard factors that cause railway accidents and explains the situation characteristics surrounding the accident. This method includes a feasibility test, a clustering process and a pattering process for a clearer understanding of the accident situation. Since this method enables an accident scenario analysis method to be performed systematically as well as objectively, this method is useful in building better accident prevention strategies. Therefore, this study can serve to reduce railway accident and be an effective tool for a hazard analysis.
