Effect of Marbling Score on Carcass Grade Factors, Physico-chemical and Sensory Traits of M. Longissimus Dorsi in Hanwoo (근내지방도가 한우 도체등급 요인, 이화학적 특성 및 관능적 특성에 미치는 영향)

  • The objective of this research was to investigate the effect of marbling scores on carcass grade factors, physico-chemical and sensory traits of Hanwoo. Data used in this study were collected from 73,316 carcasses obtained at the Nonghyup Seoul slaughterhouse in 2009 and 271 cuts of M. longissimusdorsi were analyzed to estimate beef qualities. As the marbling scores increased, backfat thickness was linearly increased (p<0.05) in cows (9.51 mm-14.69 mm) and steers (8.71 mm-14.23 mm). As the marbling scores increased, maturity of cows was increased and meat color, texture and quality grade improved for all genders. With increase of the marbling scores, crude fat contents (3.07%-26.70%), water holding capacity (52.09%-58.66%), $L^*$ value (34.08-41.97) were significantly increased (p<0.05) and Warner-Bratzler shear force was linearly decreased (p<0.05) from 8.58 kg to 2.60 kg. The increase of crude fat contents had the similar interval with the increase of marbling scores from 1 to 6 but it is sharply increased from marbling score 7. There was no difference observed on $pH_{24}$ (5.50-5.66), protein contents (19.57%-21.15%) among the marbling scores. Marbling score was significantly correlated with live weight (r=0.29) in cows, loineye area (r=0.35) in steer, and overall acceptability of panel scores (r=0.67) (p<0.01).

Phenotypic Correlation between Carcass Traits and Serum Profiles taken Before and After Slaughter of Hanwoo Bulls and Steers (가축에서 시기별 혈액 성분과 도체 형질에 대한 표현형 상관에 관한 연구)

  • Serum concentrations of Hanwoo steers and bulls as possible indicators of beef quality were analyzed to estimate their correlations with carcass traits. Blood samples were taken 2 months and right before shipping to abattoir and at the time of slaughter. And phenotypic correlation coefficients between serum concentrations and carcass traits were estimated. Beef yield index of steers was positively correlated with serum concentrations of total Protein (0.23), albumin (0.26), and calcium (0.31). But it was negatively co..elated with BUN (-0.30). Loin eye area was positively correlated with BUN (0.17) or with globulin (0.16). Back fat thickness was positively correlated with BUN (0.42) and inorganic phosphorus (0.20) being negatively correlated with total protein (-0.23), albumin (-0.33) and calcium (-0.33). Marbling score in the scale of 1 (scarcely marbled) through 9 (extremely marbled) was positively correlated with BUN (0.28) and negatively with IGF-I and calcium concentrations. Phenotype correlation coefficient of loin eye area with total protein concentration in the serum taken from steers right before shipment was estimated to be -0.16 and that with BUN was estimated to be -0.15. Serum concentrations of IGF, glucose, creatinine and on organic phosphorus from steers measured right before shipment were negatively correlated with respective correlation coefficient estimates as -0.21, -0.21, -0.19 and -0.18. Marbling score was negatively co..elated with serum creatinine (-0.16) measured at that time. Beef yield index of steers was positively correlated (0.31) with age adjusted calcium concentration in the serum taken at the time of slaughter. Correlation between body weight and BUN at slaughter was 0.17 At slaughter, loin eye area was negatively correlated with albumin (-0.19) and back fat thickness was also negatively correlated with age adjusted calcium concentration (-0.38). Marbling was negatively correlated with age adjusted calcium concentration(-0.17). Serum concentrations of testosterone, calcium and inorganic phosphorus taken in 2 months before slaughter were negatively but highly correlated with yield index(0.71, 0.67 and -0.71), respectively. Body weight at slaughter was positively was negatively correlated (0.67) with calcium level while dressing percentage was negatively (-0.69) correlated with serum glucose concentration, 2 months prior to slaughter. Correlation coefficients between back fat thickness and cortisol, between back fat thickness and inorganic phosphate were both positive (0.29 and 0.69). Marbling score was negatively correlated with creatinine (-0.81) and positively with BUN (0.87). Body weight loss during shipping was positively correlated with albumin and inorganic phosphate (0.77, 0.83). Yield index of bulls was positively correlated with serum testosterone concentration (0.66). Dressing percentage was positively and highly correlated with globulin (0.73). Back fat thickness of bulls, however, was negatively correlated with testosterone (-0.60). Loin eye area of bull carcasses was positively correlated with testosterone (0.40). Mar-blaine was negatively co..elated with creatinine (-0.55). Yield index of bulls and age adjusted HDLC concentration at slaughter was negatively correlated (-0.71). Dressing percentage of bulls was positively and highly correlated with globulin concentration (0.70). Back fat thickness was also positively correlated with HDLC (0.69) in the serum taken at slaughter. Correlation coefficients between carcass weight and triglyceride, between loin eye are and testosterone and between marbling score and creatinine or glucose were 0.51, -0.91 and -0.58, respectively.

Effects of Feeding Period of Organic Selenuim Supplementation on Meat Quality of Hanwoo Steers (유기 셀레늄 강화 버섯 폐배지 급여기간이 쇠고기육질에 미치는 영향)

  • Current study was conducted to investigate the effect of organic selenium supplementation originated from mushroom culture medium on meat quality of Hanwoo sleets. The result showed that organic selenium supplementation of 0.9 ppm (DM based ratio) for 2 (T1), 4 (T2) and 6 (T3) months had no effect on moisture content in longissimus muscle, with 63 to $66\%$ compared to non-supplemented control group Similarly, intramuscular fat content ranged from 11.7 to $16.4\%$ did not differ between the treatment groups (p>0.05). T3 group showed the highest protein content with $20.8\%$ while T2 group had the lowest content with $19.2\%$ The data indicated that organic selenium supplementation to the experimental concentration had indictable effect on proximate composition The treatments similarly had no influence on physical and biological characteristics of longissimus muscle, where cooking loss and shear force ranged from 20 to $21\%$ and from 3.6 to 4.4kg, respectively. On the other hand, muscle pH at 24 h postmortem showed 5.52, 5.57, 5.50, 5.50 for control, T1, T2 and T3, respectively, indicating that the longer feeding period resulted in the lower ultimate un A similar trend was observed from water-holding capacity (63.8, 64.4 and $64.2\%$ for T1, T2 and T3, respectively) which was significantly higher than con01 group of $59.5\%$ For sensory evaluation, juiciness did not differ between the treatment groups, but n and n (5.30 and 5.28, respectively) showed significantly tender mat Particularly, T2 group received significantly higher flavor score among the treatment groups including controls. The data indicated that organic selenium supplementation to the experimental concentration had no effect on beef quality, but the treatment effect on anti-oxidation function is remained for further studies.

A Study on the Body Type of Hanwoo(Korean Cattle) Steer by Using Principal Components Analysis (주성분 분석을 이용한 거세한우의 체형분류에 관한 연구)

  • Data were consisted of the ten body measurements (withers height, rump height, body length, chest depth, chest width, rump width, rump length, thurls width, hipbone width and chest girth) of 642 steers (Korean cattle), which was entered in the National Beef Quality Contest hosted by the Korea Animal Improvement Association from 1997 to 2001. A principal components analysis was used to classify the body types of the steers, and estimate the correlations between carcass traits and principal components for the body measurements of the first, second, third and fourth period, respectively. The first principal component of body measurements at the first, second, third and fourth period accounted for 76.0%, 83.0%, 72.7% and 57.4% of the total variance, respectively. The sum of first, second and third principal component at each period accounted for 86.69%, 90.49%, 84.62% and 77.26% of the total variance, respectively. At each period, all the first principal component of the body measurements were positive and it generally showed large framed body shape. The size of body was influenced mostly by chest depth(0.328${\sim}$0.339) and rump length(0.325${\sim}$0.341). The second, third and fourth principal component at the each period were various. There were positive correlations between principal components index of each period and carcass traits such as carcass weight(0.539${\sim}$0.755), average daily gain(0.256${\sim}$0.564), backfat thickness(0.227${\sim}$0.280), and eye muscle area(0.187${\sim}$0.344). The correlation with yield grade index(-0.246${\sim}$-0.110), however, was negative. The correlation with marbling score(0.066${\sim}$0.099) was low or statistically insignificant. According to principal component indexes of the second, third, and fourth components, the correlations with the carcass traits were various. There were no large differences between the correlations of the single body measurement trait with the carcass traits and the correlations of the first principal component indexes with the carcass traits.

Studies on Selenium-fortified Functional Hanwoo-Beef by Utilizing Spent Mushroom Composts I. Studies on the Manufacture of Fermented Feeds by Using Spent Mushroom Composts and Fortification of Organic Selenium (버섯폐배지를 이용한 셀레늄강화 기능성 한우고기 생산에 관한 연구 I. 버섯폐배지 이용 발효사료제조와 유기셀레늄 강화에 관한 연구)

  • Main objectives of this study were to increase digestibilities of indigestible ingredients in spent mushroom composts (SMC) consisted of sawdust mainly as well as to fortify conversion of inorganic Se present in SMC to organic Se via fermentable microbial actions. Experimental feeds were designed to contain the increasing level of selenium (0.06ppm, 0.54ppm, 1.26ppm and 1.86ppm) in combination with SMCs of Se-enriched and non-Se mushrooms. Feeds were also fermented using commercial microbial feed additives (Sambae, Ltd., Korea) comprised Saccharomyces, Bacillus, Aspergillus, Streptococcus and Actinomycetes before feeding trial for Hanwoo (Korean native cattle). Those were fermented for 0, 12, 24, and 48 hrs. Initial pH was linearly increased as Se concentration increases or the proportion of SMC of Se-enriched mushroom increased (p<0.0001). pH values of fermented feeds (0.54ppm, 1.26ppm and 1.86ppm) containing SMC of Se-enriched mushroom were not different since 12 hrs of fermentation time and their pH was significantly lowered compared to control group. The increasing level of Se concentration in fermented feeds showed significant differences in organic and inorganic Se contents and proportion of organic Se among treatments. As a SMC proportion of Se-enriched mushrooms in the fermented feed was increased, organic Se proportion was significantly decreased (p<0.0001). The control treatment (0.06ppm) comprising the non-Se SMC only was estimated of the organic Se to be 100% and the treatment groups containing the increasing level of Se were estimated of organic Se to be approximately 70%.

Prediction of genomic breeding values of carcass traits using whole genome SNP data in Hanwoo (Korean cattle) (한우에 있어서 유전체 육종가 추정)

  • Genomic breeding value (GEBV) has recently become available in the beef cattle industry. Genomic selection methods are exceptionally valuable for selecting traits, such as marbling, that are difficult to measure until later in life. One method to utilize information from sparse marker panels is the Bayesian model selection method with RJMCMC. The accuracy of prediction varies between a multiple SNP model with RJMCMC (0.47 to 0.73) and a least squares method (0.11 to 0.41) when using SNP information, while the accuracy of prediction increases in the multiple SNP (0.56 to 0.90) and least square methods (0.21 to 0.63) when including a polygenic effect. In the multiple SNP model with RJMCMC model selection method, the accuracy ($r^2$) of GEBV for marbling predicted based only on SNP effects was 0.47, while the $r^2$ of GEBV predicted by SNP plus polygenic effect was 0.56. The accuracies of GEBV predicted using only SNP information were 0.62, 0.68 and 0.73 for CWT, EMA and BF, respectively. However, when polygenic effects were included, the accuracies of GEBV were increased to 0.89, 0.90 and 0.89 for CWT, EMA and BF, respectively. Our data demonstrate that SNP information alone is missing genetic variation information that contributes to phenotypes for carcass traits, and that polygenic effects compensate genetic variation that whole genome SNP data do not explain. Overall, the multiple SNP model with the RJMCMC model selection method provides a better prediction of GEBV than does the least squares method (single marker regression).

Effect of Scoria, Quartz Porphyry and Oak Charcoal Powder Feeding on the Meat Quantity and Quality of Fattening Cross Bred Hanwoo Bulls (점토광물 급여가 한우교잡우의 산육능력 및 육질에 미치는 영향)

  • This study was conducted to investigate the effects of Scoria, Quartz porphyry and Oak charcoal powder feeding by 1% level of concentrate on the fattening cross bred bulls(5/8 Korean Native Cattle, 2/8 Charolais, 1/8 Brahman germ plasma) Feeding trial was conducted with 4 treatment groups which were T1(Full feeding of concentrate and roughage for 12 months), T2(T1 and Scoria addition), T3(T1 and Quartz porphyry addition) and T4(Oak charcoal addition) for 360 days, consisting of 32 heads whose initially weights were about 299.7kg. The results obtained are summarized as follows; 1. During the over-all period, average daily gains by T3, T4, T2 and T1 were 1.024, 0.987, 0.977kg and 0.964, respectively, without a significant difference by treatments. 2. Concentrate intakes per body weight and TDN intakes required per unit of kilogram gain were lower in addition agent groups than in control, and in all the treatments feed efficiency was higher at early stage for 360 fattening day than at end stage. 3. Carcass weight, dressing percent, back-fat thickness and loin eye muscle area by treatments were 330.9 to 348.4kg(average 340.3kg), 55.2~56.2(average 55.8%), 0.41~0.55(average 0.46cm)and 76.0~80.9$\textrm{cm}^2$(average 77.6$\textrm{cm}^2$), respectively, and were improved in addition agent groups than in control. 4. Meat quality grade is higher in addition agent groups than in control, and heads of 1st grade by treatments was 3, 2, 1 and none in T4, T2, T3 and T1, respectively. 5. Incidence heads of diseases by treatment were not apparently different, but diseases of digestive system was decreased in addition agent groups than in control. 6. The nitrate nitrogen content of fattening bull dung which collected in rectum were 0.082~0.089% (average 0.084%), and the content in addition agent groups was smaller than in controll. 7. Income was higher in order of T4, T3, T2, and T1 and incomes of treatment groups were grater than that of control group by 21.4 to 33.5 percent. According to the above results it may be concluded that fattening bulls may be required to feed no more than 1% of Scoria, Quartz porphyry and Oak charcoal powder based on the concentrate feeding level during the fattening period(12 to 24 month of age) to produce high quality meat and increase income.

The Effect of Alcohol Fermented Feedstuff Made of Byproducts on Fermentation Characteristics and Dry Matter Disappearance in the Rumen (비지박 및 맥주박을 이용한 알코올 발효사료의 반추위내 발효특성 및 건물 분해율에 미치는 영향)

  • A study was conducted to determine the effect of alcohol-fermented feedstuff formulated with byproducts on the fermentation characteristics and dry matter disappearance in the rumen. Dietary treatments were either a soybean curd-based alcohol-fermented feedstuff(AFS) and brewery grain-based alcohol-fermented feedstuff(AFB). The AFS and AFB are composed of 50% commercial beef cattle feed, 50% soybean curd dreg, 5% molasses and 0.5% yeast, and 25% commercial beef cattle feed, 25% brewery grain, 25% soybean curd dreg, 25% corn grit, 5% molasses and 0.5% yeast, respectively. The ruminally cannualted Korean cattle were utilized to investigate the change of ammonia, pH alcohol, volatile fatty acids, and DM digestibility at 0, 2, 4, 8 and 12 hr after feeding. The rumen ammonia concentrations were significantly lower in AFS and AFB with incubation time, especially at 6 hr incubation(AFS, 0.7 mg/dl; AFB, 1.5 mg/dl; control 2.5 mg/dl). Lower rumen pH was observed in AFS and AFB during the early stage of incubation, but no significant difference was found at late stage of incubation. The total VFA concentrations were not affected by diet treatments at 2 hr incubation time, but the concentration significantly decreased after that. The dry matter disappearance was significantly lower in AFS and AFB during the early stage of incubation. However, the dry matter disappearance of AFS and AFB was similar to that of control during the late stage of incubation. It is concluded that the industrial byproducts such as soybean curd dreg and brewery grain were effective materials to make an alcohol fermented feedstuffs and resulted in better fermentation characteristics in the rumen when both were applied to Hanwoo.

Effects of Extruded Linseed Supplementation on Methane Production in Holstein Steers (Extruded linseed 첨가가 홀스타인 거세우 장내발효 메탄발생량에 미치는 효과)

  • The present experiment was designed to investigate the effects of extruded linseed supplementation on methane production in Holstein steers. Four Holstein steers fitted with permanent cannulas were assigned to two dietary treatments in a duplicated $2{\times}2$ Latin square design: a control diet consisting of tall fescue straw (65%) and concentrate (35%), and a treatment diet supplemented with 3.8% extruded linseed by replacing a part of ingredients in the concentrate of the control diet. The concentrates of the control and the treatment diet were isoenergetic and isonitrogenous. Extruded linseed supplementation did not affect dry matter intake but significantly (P<0.05) increased the intake of lipid. Rumen pH was significantly (P<0.05) lower for control than for treatment. Although there was no significant difference between treatments, the concentration of total VFA in control was 21% higher than in treatment. The concentrations of acetic acid, propionic acid and butyric acid were not different between treatments. Extruded linseed supplementation significantly (P<0.05) reduced methane output(g/d) and emission factor. Methane conversion rate was lower for treatment than for control but no significant difference was found. The results of the present study showed that extruded linseed supplementation in the diet of Holstein steers could reduce methane output.

Effects of Processing Methods of Corn and their Thickness on in situ Dry Matter Degradability and in vitro Methane Production (옥수수 가공방법 및 두께가 in situ 건물 분해율과 in vitro 메탄 발생에 미치는 영향)

  • This study was conducted with two ruminally cannulated Holstein steers to examine the effect of micronized and steam flaked corn on ruminal fermentation characteristics. The in situ dry matter degradability after 48 h incubation was the highest (P<0.05) at micronized corn (2.5 mm thickness) compared with steam flaked corn treatments. The steam flacked corn (3.3 mm thickness) was degraded lower (P<0.05) than the 2.9 and 3.1 mm thickness of steam flacked corn. Effective dry matter degradability and the rate of constant were the highest (P<0.05) at micronized corn (2.5 mm thickness) compared with steam flaked corns as well. The in vitro dry matter degradability after 48 h incubation was tended to higher (P=0.088) at micronized corn (2.5 mm thickness) than steam flaked corns, whereas there is no significantly difference between steam flaked corn treatments. Total volatile fatty acid concentration was higher at steam flaked corn (2.9 mm thickness) than micronized corn (2.5 mm thickness) and steam flaked corn (3.1 and 3.3 mm thickness). The acetate : propionate ratio was the highest (P=0.008) at steam flaked corn (2.9 mm thickness) and the lowest (P=0.008) at micronized corn (2.5 mm thickness). Total gas and methane production after 48h ruminal incubation was the highest (P=0.001) at micronized corn (2.5 mm thickness) compared with steam flaked corns. According to these results, the thickness of steam flaked corn as resulted corn processing is believed to do not affect methane production. However, further study is needed to better understand the present results to verify the correlation between corn processing method and their thickness on methane production using the same thickness corns by difference processing methods.
