A Study on Hazard Analysis and Critical Control Points(HACCP) in School Lunch by Analyzing Food Cooking Processes (초등학교급식 식단에 대한 조리공정별 HACCP에 관한 연구)

  • A study was conducted in order to develope HACCP model in school lunch in Korea. Results: 1. Of 22 menus 4(18%) were non heating processes (#1), 2(9%) were food handling by using hands (#2), and 16(73%) were heating processes (#3). Of 279 menus 36(12.9%) belong to process #1, 8(2.9%) to process #2, and 235(84%) to process #3. 2. The critical control points for process #1 were contamination by hands of food handlers, and unsanitary food preparation habits of food handlers. Those for process #2 were improper heating temperature, contaminations by food handlers' hands, and unsanitary food handling habits, and cross contamination by unclean utensils and equipment. 3. Management criteria for the CCPs were conditions of food storage, refrigeration, freezing, food cooking temperature, personal hygiene, washing and sanitization of utensils and equipment. 4. Monitoring criteria for CCPs were observation, temperature checking, inspection of utensils and equipment, and practice of good personal hygiene. 5. Corrective actions were refusal of unsafe products, correction of improper temperature, proper cleaning and sanitization, and proper reheating time and temperature.

Teaching differential equations based on pseudo-STEM (Pseudo-STEM에 기초한 미분방정식 교육)

  • In this paper we investigate the history of the education based on STEM which is one of the topics of teaching method of Mathematics and Science oriented to the student, Hand-on education be applying partly to college education and the case of the education of the subject "Mathematics and Science for Engineering" of Japan's college. The educational method based on STEM make the student to recognize by themselves the necessity of the mathematics in the study of the technological and engineering problem, and furthermore draw a conclusion which is the proper method to change from passive to positive the study attitude for the mathematics. But it is more or less unreasonable to apply directly to college education with not physical fusion but chemical fusion of S (science), T (technology), E (engineering) and M (mathematics). Therefore we make themselves to find T and E considered at graduation works. We propose Pseudo-STEM teaching method linking this recognition obtained through self-activity to the mathematics subject.

Science Education Experts' Perception of the Remote Laboratory Sessions Provoked by COVID-19 (COVID-19으로 인해 촉발된 원격 실험 수업에 대한 과학교육 전문가들의 인식)

  • This study investigated science education experts' perception of remote laboratory sessions (RLS) provoked by the COVID-19 pandemic. We conducted a total of 10 semi-structured interviews with experts in physics, chemistry, biology, and earth science education. As a result, science education experts primarily understood the RLS concerning pre-service teacher education and reconsidered the aim and goal of conventional laboratory education. On practices of RLS provoked by the COVID-19, they pointed out the learning loss due to deficiency of hands-on experience, decreased interactions between instructor and students, and instructors' increased burden. Meanwhile, they contemplated upon their adaptive implementation of RLS to suggest ways to improve RLS instruction and directions of post-COVID-19 science education. We recommend that RLS should be understood as a complemented version of minds-on teaching rather than a degraded version of hands-on teaching to elicit its full potentials. This study has its own significance providing an in-depth science educational perspective interpreting the RLS phenomena.

An Exploration of IT Convergence Methods for School Forests Education (초, 중등 학교 숲 활용 교육을 위한 IT 융합 방안 탐색)

  • The purpose of this study is to explore educational methods for elementary, middle and high schools using school forests via IT convergence. To this aim, we reviewed the previous literature on education using school forests to identify the problems with the existing education using school forests, and conducted interviews with experts to analyze the demands. we proposed an educational method that can utilize the school forests via IT convergence, and explored its validity through content reviews conducted by experts. The findings of this study are as follows. First, we proposed the IT convergence instruction focused on hands-on activities on top of the existing educational contents. Second, we proposed IT convergence instruction that incorporates diverse materials, physical computing tools, and programming tools. Third, we presented methods for utilizing such IT convergence instruction in connection with various elements of the 2015 Revised Curriculum as well as with various other activities such as middle school free semester activities and after-school activities. The school forest is a crucial learning space for the areas related to agriculture and biotechnology. Thus, we anticipate that the IT convergence instruction proposed in this study will lead to the re-discovery and re-evaluation of a value of school forests as an educational space that contributes to fulfilling the objective of the 2015 Revised Curriculum to nurture creative convergent talent.

Exploring the Operating and Supporting Direction of AI Curriculum by Analyzing A High School Case Study

  • This study was conducted to explore the necessary conditions and support for stable operation of an expanded AI curriculum in education. A high school that has implemented an AI curriculum since 2020 was targeted, and students and teachers were surveyed on their perceptions of the AI curriculum, implementation and support strategies. The survey items were categorized into 1) experience with AI education, 2) implementation direction of AI education, and 3) expected effects through AI education, and the results were derived focusing on frequency analysis to identify trends. The analysis resulted in three implications. First, it was suggested that the activation of AI education. Second, the need to develop a hands-on AI curriculum and incorporate AI throughout the entire curriculum was highlighted. Third, it was emphasized that efforts to enhance the capabilities of teachers to implement AI teaching and learning, along with the expansion of physical infrastructure for hands-on education, are necessary.

  • Among the various ERP solutions, SAP R/3 solution has been chosen because SAP system follows global standard processes which include most of business solutions for various industries. The ERP education is limited by learning theory only and they are not sufficient for understanding wide scale of business processes. Real world scenarios with hands on experience approach will be the core aspect of this article. As per real world scenarios, "ChungBuk Motors. Corp." has been created and students are asked to create the organization structure and the procurement process for this virtual enterprise. As a result, students attending this class showed better understanding of overall ERP system comparing to the students attended other ERP classes. The hands-on experience with real-world scenarios proved that it is most practical and efficient solution for educating ERP system.

  • Hands-on education and training is a key part of fixing and developing technology knowledge and is an inherent part of many engineering and scientific curricula. However, access to large complex training facilities, such as nuclear reactor, could be limited by various factors, such as unavailability of those facilities in the region, high traveling costs or harmonization of the schedules of hands-on E&T with theoretical lectures and with the operational schedule of the facility. To handle the issue, several success stories have been reached with the introduction of the Internet Reactor Labs (IRL). The Internet Reactor Labs can strongly contribute to accessibility of training at research reactors and can contribute to improvements in their utilization. The paper describes the development of the Internet Reactor Lab at the VR-1 reactor of the Czech Technical University in Prague. Contrary to single-purpose IRLs, it presents various modalities of online teaching and training in experimental reactor physics and reactor operation in general as well as outreach activities that have been developed in recent years.

Changes of Microbial Load on the Hands of Food Preparers (손의 미생물 오염도의 경시적 변화 - 조리종사자를 중심으로)

  • Inadequate food handling and poor hand hygiene playa major role in the occurrence of foodborne diseases. The objective of this study was to find out if the level of microbial contamination on the hands of food preparers varies by time during their working period. This study focused on the contamination of aerobic plate count, total and fecal coliforms, Escherichia coli, Staphylococcus aureus, and Salmonella spp. Sampling from left hand and right hand of twenty food preparers was done with glove-juice method at every two hours during their work. Microbiological testing was conducted according to the Food Code of Korea. The microbiological load on the hands was changed over time. Samples taken from their hands before work and at 8 hours showed higher levels of bacteria than those taken at 2, 4, and 6 hours during work and/or after work (p < 0.05). The contamination levels of microorganisms were consistently higher in right hand than in left hand. Poor hand hygiene practices were indicated by the positive results for total and fecal coli forms, E. coli, S. aureus, and Salmonella spp. on the hands of some food preparers. This study indicates food preparers' hands can be a vehicle of pathogen during their work. The results of this study emphasize the importance of hand hygiene education and training targeting the food preparers.

Comparing Biophoton Emissions from Seven Acupuncture Points (7개 경혈부위에서의 생물광자(Biophoton) 방출량 비교)

  • We measured biophoton emissions from seven acupuncture points of eight healthy subjects. The measured points are the Yintang, the $Danch{\bar{u}}$, the Shinketsu, the left and right $R{\bar{o}}ky{\bar{u}}$ and the left and right Yaotongwue of hands. The photo multiplier tube (H-610805s, Hamamatsu, Japan) has spectral range between 300nm and 650nm. Significantly low emission rate was observed at the Shinketsu where the rate was $3.7\;{\pm}\;1.8\;cps$. On the average the highest emission was from the Yaotongxue points where the rate was $11.3\;{\pm}\;5.4$. The high correlation between the left and right hands, and the low correlation between different points are consistent with previous reports.

  • Experimentation using computer plays an important part in education and research in graph theory. The purpose of this paper is to develop the CAS techniques for the hands-on approach in graph theory specifically on the topic of constructing the spanning tree. This paper discusses the advantages of CAS as the software system for doing graph theory and introduces the software solutions integrating multimedia user interface developed by the author, which extend the functionality of the existing CAS-based graph theory software package.
