Changes in Respiratory and Quality Characteristics of 'Tsugaru' Apple by Storage Temperature (저장온도에 따른 '쓰가루' 사과의 호흡 및 품질특성 변화)

  • The research was conducted to measure the effect of temperature on respiratory and quality characteristics of 'Tsugaru' apple(Malus domestica Borkh) during storage at 4$^{\circ}$C, 10$^{\circ}$C and 20$^{\circ}$C. Respiration rate of the apple just after harvest was 7.57 mL CO$_2$/kg/h at 20$^{\circ}$C. It was decreased rapidly and was 2.86 mL CO$_2$/kg/h after storage for 45 days at 20$^{\circ}$C. The apples showed the highest ethylene production rate at 10$^{\circ}$C and 20$^{\circ}$C after 14 days, and at 4$^{\circ}$C after 28 days during storage. Weight of the apple was reduced by 2.9% after 120 days at 4$^{\circ}$C and by 6.1% after 45 days at 20$^{\circ}$C. Color difference of peel and pH increased with the temperatures but titratable acidity and flesh firmness showed the reverse trends during storage. According to the subjective quality test, it could be suggested that the shelf-life of the apple is 86 days at 4$^{\circ}$C, 65 days at 10$^{\circ}$C and 37 days at 20$^{\circ}$C, respectively.

  • Repeatabilities and Correlations among Average Daily Gain, Backfat Thickness and Lean Percent in Swine The repeatability, correlation and rank correlation coefficients among average daily gain, backfat thickness and lean percent were estimated on the basis of records tested from August 1999 to February 2000 with 695 pigs of Duroc, Landrace and Yorkshire boars and gilts tested at 2nd Korea Swine Test Station located in Ha-dong, Kyeongnam Province. The effect of the sex, breed and month of measured were estimated by the least square method. The repeatabilities were estimated from the component of variance among repeated measurements of the trait for the same animal. The results obtained are summarized as follow ; 1. The means of the major economic traits studied were 142.1 days, 173.7 days and 182.5 days for age at 1st, 2nd and 3rd measure, 57.9%, 56.2% and 55.2% for lean percent at 1st, 2nd and 3rd measure, 1.33cm, 1.61cm and 1.63cm for backfat thickness at 1st, 2nd and 3rd measure, 946.6g, 879.2g and 879.4g for average daily gain at 1st, 2nd and 3rd measure, respectively. 2. The correlation coefficients between the backfat thicknesses measured at 1st and 2nd, at 2nd and 3rd, at 1st and 3rd were 0.424, 0.700 and 1.424, respectively. The correlation coefficients between the lean percent measured at 1st and 2nd, at 2nd and 3rd, at 1st and 3rd were 0.493, 0.619 and 0.471, respectively. The correlation coefficients between the average daily gain measured at 1st and 2nd, at 2nd and 3rd, at 1st and 3rd were 0.716, 0.861 and 0.601, respectively. 3. The rank correlation coefficients between backfat thickness measured at 1st and 2nd, at 2nd and 3rd, at 1st and 3rd were 0.438, 0.693 and 0.441, respectively. The rank correlation coefficients between lean percent measured at 1st and 2nd, at 2nd and 3rd, at 1st and 3rd were 0.508, 0.593 and 0.478, respectively. The rank correlation coefficients between average daily gain measured at 1st and 2nd, at 2nd and 3rd, at 1st and 3rd were 0.704, 0.834 and 0.571, respectively. 4. The estimated repeatabilities of the traits studied were 0.428 for the lean percent, 0.374 for the backfat thickness and 0.673 for the average daily gain, respectively.

Empirical Comparisons of Disparity Measures for Partial Association Models in Three Dimensional Contingency Tables

  • This work is concerned with comparison of the recently developed disparity measures for the partial association model in three dimensional categorical data. Data are generated by using simulation on each term in the log-linear model equation based on the partial association model, which is a proposed method in this paper. This alternative Monte Carlo methods are explored to study the behavior of disparity measures such as the power divergence statistic I(λ), the Pearson chi-square statistic X$^2$, the likelihood ratio statistic G$^2$, the blended weight chi-square statistic BWCS(λ), the blended weight Hellinger distance statistic BWHD(λ), and the negative exponential disparity statistic NED(λ) for moderate sample sizes. We find that the power divergence statistic I(2/3) and the blended weight Hellinger distance family BWHD(1/9) are the best tests with respect to size and power.

Effects of Electron-Beam Irradiation on the Physico-chemical Properties of Hanwoo Meat (전자선 조사가 포장방법을 달리한 한우육의 이화학적 특성에 미치는 영향)

  • This study was carried out to investigate the effect of Electron Beam irradiation on physico-chemical characteristics of Hanwoo meat. A total of sir beef carcasses $(280{\sim}300\;kg)$ that were quality grade $1^+$(marbling score No. 7, meat color No. 4, maturity No. 1, texture No. 1) was purchased at the commercial slaughter house. The carcasses were transported and washed using high pressure water, and pasteurized with 50% ethyl alcohol in the laboratory. After the carcasses were deboned and trimmed, loin and round were taken out to make steak (1.5 cm thickness) or patty respectively. Samples were wrap or vacuum packaged and irradiated with 0, 3, 4.5, 6 and 7.5 kGy using electron-beam accelerator. Irradiated samples were used to measure pH, moisture, crude protein, crude fat, and meat color. There was no significant (p>0.05) difference in pH between vacuum packaged (VP) and wrap packaged (WP) treatment, and the pH was not changed by electron-beam irradiation levels. Both control and irradiated treatments of steak showed higher tendency in moisture content. In crude protein content, control was higher than irradiated treatment in steak, but there were no difference in patty. Lightness ($L^{\ast}$) of meat color has no difference between irradiated and non-irradiated treatment (p>0.05). The value of redness and Yellowness of meat was dropped by increasing irradiation (p<0.05), but there was no difference between control and 3 kGy treatment (p<0.05).

Change in Nitrogen Compounds of Fermented Fodder for Sea Cucumber during Three Step Fermentation on Sludge (고형오물을 이용한 해삼용 3단 발효사료 제조 중 질소 성분 변화)

  • This study presented a measure for turning by-products, released from land farming sites, into resources. The measure involved adding food by-products such as rice bran and nonfat soybean to the sludge, released from the eel farming sites, inoculating the lactic acid bacteria, Aspergillus oryzae, and Bacillus subtilis by step, fermenting them, and measuring the changed ingredients of the fermented fodder. The water content of the fermented fodder by the step of preparation was the first-step fermented product (14.6%) using the lactic acid bacteria, and the second and third-stage fermented product (33.0% and 34.0% respectively) using Aspergillus oryzae and Bacillus subtilis. The pH level was found to be 5.38 in the first-step fermented product due to the secretion of lactic acid caused by the lactic acid bacteria, and the pH level of the second and third-stage fermented products was 5.66 and 7.26, respectively, showing that the pH level increased. The phytic acid content was 0.126g/100g in the first-step fermented product, 0.004g/100g in the second-stage fermented product, and 0.093g/100g in the third-stage fermented product. The measurement of nitrogen content revealed that the amino nitrogen content was high with 1226.37mg% in the second-stage fermented product, and a little lower with 710.18mg% in the third-stage fermented product. The ammonium nitrogen content increased from 0.988mg/kg in the first-stage fermented product to 1.502mg/kg in the third-stage fermented product. Total nitrogen content increased to 2.78% in the first-stage fermented product, 4.08% in the second-stage fermented product, and 4.85% in the third-stage fermented product. As fermentation continued with the three microbes, the phytic acid decreased, and the protein decomposition rate increased. Also, due to the 3 step fermentation, the low-molecule nitrogen ingredient content increased, suggesting that the fodder was developed to offer high digestion and absorption.

Exploiting cDNA Microarray-Based Approach Combined with RT-PCR Analysis to Monitor the Radiation Effect: Antioxidant Gene Response of ex vivo Irradiated Human Peripheral Blood Lymphocyte

  • Although ionizing radiation (IR) has been used to treat the various human cancers, IR is cytotoxic not only to cancer cells but to the adjacent normal tissue. Since normal tissue complications are the limiting factor of cancer radiotherapy, one of the major concerns of IR therapy is to maximize the cancer cell killing and to minimize the toxic side effects on the adjacent normal tissue. As an attempt to develop a method to monitor the degree of radiation exposure to normal tissues during radiotherapy, we investigated the transcriptional responses of human peripheral blood lymphocytes (PBL) following IR using cDNA microarray chip containing 1,221 (1.2 K) known genes. Since conventional radiotherapy is delivered at about 24 h intervals at 180 to 300 cGy/day, we analyzed the transcriptional responses ex-vivo irradiated human PBL at 200 cGy for 24 h-period. We observed and report on 1) a group of genes transiently induced early after IR at 2 h, 2) of genes induced after IR at 6 h, 3) of genes induced after IR at 24 h and on 4) a group of genes whose expression patters were not changed after IR. Since Biological consequences of IR involve generation of various reactive oxygen species (ROS) and thus oxidative stress induced by the ROS is known to damage normal tissues during radiotherapy, we further tested the temporal expression profiles of genes involved in ROS modulation by RT-PCR. Specific changes of 6 antioxidant genes were identified in irradiated PBL among 9 genes tested. Our results suggest the potential of monitoring post-radiotherapy changes in temporal expression profiles of a specific set of genes as a measure of radiation effects on normal tissues. This type of approach should yield more useful information when validated in in vivo irradiated PBL from the cancer patients.

  • The Korean sounding rockets(KSR420S-1, -2) equipped with ozone detectors have b3en launched at An-heung, Chungchungnam-do, on June 4 and September 1, 1993, respectively. The ozone detector is used to measure the attenuation of solar UV radiation for various frequency bands in the stratosphere, to obtain vertical profiles of the ozone number density in the stratosphere. They confirm that the maximum ozone densities occur near 25 km, which is quite consistent with the mean value in the mid-latitude region. Our results from KSR420S-1 and -2 are compared with the other observation data from the Dobson spectrophotometer at Yonsei Univ., the LIDAR at Kyunghee Univ., the SBUV from Nimbus satellite, and the TOVS from NOAA satellite, which were performed simultaneously with the sounding rocket experiments.

A Study of the New Body Surface Area Calculation for Twenties Women (20대 여성을 위한 새로운 체표면적 산출식에 관한 연구)

  • The purpose of this is providing a simple, relatively errorless body surface area calculation. Subjects were 10 married women and 10 singles women whose age was 20 to 29 years old. The Gypsum method has applied for the sampling of body surface. The Weight method has been used to measure body surface by means of transferring gypsum shape on uniform plane polypropylene films. In this study, compare analyzed errors between the traditional formulas for measuring body surface area and measuring data in this experiment. More than all, it has been to induce a regression equation for measuring body surface area, which is so simple to calculate with less errors, with variable factors as weight and height. The results of this experiment as follows : 1. In the traditional formulas, weight formula was shown high average error : Niya\`s height formula. which was modified K value as 0.62 in the height formula (S = KH) is shown lower average error than Lassabliere\`s Height formula. 2. In the weight-height formula (S=K √WH), it was shown high average error according to the increasing of K value. Kawanami\`s formula, which 5.378 as K value, was shown low average error both the singles and the married women. 3. Dubois weight-heingt formula (S=W/sup a/·H/sub b/·K) was shown low average error than the weight, height, weight-height (S=K√WH) formula. 4. The regression equations with variable factors as weight and height are 156.74W + 86.05H - 660.25 (Single women) and 136.02W + 90.57H - 6241.32 (Married women) the average error and absolute average error to the singles are 0.09%, 0.94% and resoectively -0.13%, 1.16% for the married women.

Antioxidant Activities of Hot Water and Ethanol Extracts from Portulacae Herba (마치현 열수 및 에탄올 추출물의 항산화 활성)

  • Objectives : This study aims to provide basic data about Portulacae Herba (PH) extracts as natural antioxidants by considering diverse antioxidant activities of PH depending on solvents. Methods : The samples of PH were pulverized, and A hot water and a 70% EtOH were stir-extracted for two hours three times repeatedly in a water bath with a temperature of 95 degrees and at room temperature respectively to measure 7 kinds of antioxidant activities. Results : There were significant differences in total phenol content, because the total phenol content of the 70% EtOH extract was higher than the hot water extract's, and the total flavonoid content of the 70% EtOH extract($4.40{\mu}g/mg$) was nearly 3.8 times higher than the hot water extract's($1.16{\mu}g/mg$). DPPH and ABTS radical scavenging activities were 70% EtOH extract showed a little higher activity than the hot water extract, and at a concentration of $500{\mu}g/mg$, the highest scavenging activity was found in the 70% EtOH extract, not in the control group. Hydroxyl radical and $Fe^{2+}$ chelatingactivities were slightly higher in hot water extract than in 70% EtOH extract, and increased in a dose-dependent manner. Nitrite scavenging activities increased dose-dependently in the hot water and the 70% EtOH extract, regardless of the pH level, and scavenging activity of the 70% EtOH extract was higher at pH 1.2 than at pH 3.0. Conclusions : In conclusion, it is thought that PH hot water and 70% EtOH extract have antioxidant activities, and can be used as natural antioxidants in future.

The electrochemical properties of PVD-grown WC-( $Ti_{1-x}$A $I_{x}$)N multiplayer films in a 3.5% NaCl solution

  • WC-( $Ti_{1-x}$ A $l_{x}$) N coatings of constant changing Al concentration were deposited on S45C substrates by high-ionization sputtered PVD method. The Al concentration could be controlled by using evaporation source for Al and fixing the evaporation rate of the metals (i.e, WC- $Ti_{0.86}$A $l_{0.14}$N, WC- $Ti_{0.72}$A $l_{0.28}$N, and WC- $Ti_{0.58}$A $l_{0.42}$N). The corrosion behavior of WC-( $Ti_{1-x}$ A $l_{x}$)N coatings in a deaerated 3.5% NaCl solution was investigated by electrochemical corrosion tests and surface analyses. The measured galvanic corrosion currents between coating and substrate indicated that WC- $Ti_{0.72}$A $l_{0.28}$N coating showed the best resistance of the coating tested. The results of potentiodynamic polarization tests showed that the WC- $Ti_{0.72}$A $l_{0.28}$N coating deposited with 32W/c $m^2$ of Al target revealed higher corrosion resistance. This indicated that the WC- $Ti_{0.72}$A $l_{0.28}$N coating is effective in improving corrosion resistance. In EIS, the WC- $Ti_{0.72}$A $l_{0.28}$N coating showed one time constant loop and increased a polarization resistance of coating ( $R_{coat}$) relative to other samples. Compositional variations of WC-( $Ti_{1-x}$ A $l_{x}$)N coatings were analyzed by EDS and XRD analysis was performed to evaluate the crystal structure and compounds formation behavior. Surface morphologies of the films were observed using SEM and AFM. Scratch test was performed to measure film adhesion strength.strength. adhesion strength.strength.
