Sarcocystosis in a 30 month old Hanwoo(Bos taurus oreanae)

  • Unusual yellowish-green intramuscular granulomatous lesions were found in a carcass of Hanwoo(slaughtered, 30 month old). Those were 1-3 mm in diameter, oval shaped, and paralleled with muscle fibers. Histologically, severe inflammation, eosinophilic granulomas and necrosis were observed in the muscle tissue. We also observed sarcocysts in the muscle cells. In a polymerase chain reaction, we identified 900bp length, sarcocystis specific fragment. It would be diagnosed as sarcocystosis in Hanwoo.

  • Suppuratives bronchopneumonia was found in a 3-month old domestic muskrat (Ondatra zibethicus). Dead muskrat showed hemorrhagic nasal discharge, severe hemorrhage and consolidation were observed in the lungs in necropsy. Histologically, severe polymorphic neutrophils and alveolar macrophages were infiltrated in the bronchus, bronchioles, alveoli. P. multocida and B. bronchiseptica were identified from the lungs, Klebsiella was isolated from the cecum. We demonstrated those organisms by biochemical test and confirmed P. multocida capsular type A by means of polymerase chain reaction (PCR).

A study on the risk factors associated with blood splash in slaughtered cattle (도축우의 근출혈 유발 인자에 관한 연구)

  • This study was conducted to analyse risk factors which can influence on blood splash in slaughtered cattle in D slaughterhouse located in Gyeonggi province in 2008. A total of 13,056 cattle were studied by several risk factors such as species, gender, body weight, meat grade, weather (temperature), transport distance, lairaging time, moving time, mixing cattle from different sources. As the result of analysis, the total mean of blood splash was 0.70% and the rate was highest (0.94%) in castrated Hanwoo. The heavier body weight, the higher blood splash rate. The farms which have had more than one experience of blood splash tend to have high grade in meat quality. As a weather factor, the rate in summer season was lower than in winter season. It increased as transport distance getting longer and decreased when the lairaging time was 2~5 hours. We could know many risk factors strongly related with the occurrence of blood splash from this study.

Quality Properties of Kimch by the Addition of King Oyster Mushroom(Pleurotus eryngii) during Fermentation (큰느타리버섯 첨가량에 따른 김치의 품질 특성)

  • Quality properties of Kimchi added with king oyster mushroom(Pleurotus eryngil) was evaluated during the fermentation at $5^{\circ}C$. Until 7 days, pH of Kimdhi was rapidly decreased. The titratable acidity of Kimchi was in inverse state to the pH. Kimchi added with the mushroom showed a lower pH with a higher titratable acidity than those of control. Total microbial load and lactic acid bacterial count were maximized at 18 days, thereafter slowly decreased. king oyster mushroom Kimchi added with showed an antioxidant activity. The effect was dependent fo the amount of much room, and radical scavenging activity and content of total phenolic compounds was the highest in eddition of $30\%$ king oyster mushroom.

A Study on Contents of Anti-impotence drug/drug-like compounds in Food (식품중 발기부전 치료제 및 유사물질 함량에 관한 조사연구)

  • To determine 8 anti-impotence drug/drug-like compounds such as sildenafil, vardenafil, tadalafil, homosildenafil, hydroxyhomosildenafil, aminotadalafil, pseudovardenafil and hongdenafil in foods, simultaneously, high performance liquid chromatography(HPLC) and liquid chromatography-mass spectrometry (LC/MS) were used. The HPLC/UV analysis was performed on a column of capcellpak $C_{18}$ with 0.1% sodium-1-hexansulfonate in 0.2M ammonium formate/acetonitrile as a mobile phase. Mass spectra of the compounds by LC/MS were investigated with SCAN mode(Mass range and Fragment voltage) and SIM(Selected Ion Monitoring) mode (Ion target and Fragment voltage). The results follow as; 1. The HPLC/UV analysis was detected from 5 out of 63 samples. The content of sildenafil was in the range of 32.80 ppm ${\sim}$ 60.13 ppm from 4 out of 5 samples. The contents of sildenafil, vardenafil, homosildenafil were in the range 47.14 ppm from 1 out of 5 samples. 2. The conformed result of LC/MS was equal of detected from 5 out of 63 samples in HPLC/UV analysis. An easily available, simultaneous determination of 8 standards in adulterated health related foods was established by using a combination of LC/MS methods.

Characteristics of Newly Bred Lentinula edodes Cultivar 'Jadam' for Sawdust Cultivation (표고 톱밥재배용 신품종 '자담' 육성 및 특성)

  • A new cultivar of oak mushroom Lentinula edodes 'Jadam' was bred from monokaryotic strains of 'Hwadam-18' and 'GMLE36295-22'. The optimum temperature for mycelial growth of 'Jadam' on potato dextrose agar was 22-25℃. Total cultivation period of the new cultivar, from inoculation to its first harvest, was 122-124 days, shorter to that of the control cultivar 'Hwadam'. Total yield of 'Jadam' was 623.8 g per 3 kg substrate, and is higher than that of 'Hwadam' (455.2 g). In the fruiting body of the new cultivar, the stipe was shorter and thinner than those of 'Hwadam'. A farmhouse field test showed that the period of mycelial growth and browning was shorter than that of control cultivar 'L808'. The total yield for 2 flush was 543.3 g for 'Jadam'. It was similar to the 585.3 g of the control cultivar. Therefore, the new cultivar 'Jadam' could be a substitute for 'L808' in the field of farms.

Molecular Epidemiological Analysis of Outbreaks to Pathogenic Salmonella othmarschen Using PFGE (Salmonella othmarschen에 의한 집단식중독사례의 분자역학적 분석)

  • The strains of Salmonella othmarschen and Norovirus isolated from outbreak A, the funeral ceremonies incidents in Ouri-shi of Oyeonggido in, 2007, were subjected to genotyping by using PFGE and extraction of RNA by using RT-PCR. 24 Salmonella othmarschen were isolated from 37 cases (patients 12 cases, cookers 4 cases, foods 7cases, knife, kitchen board, dish towel 4 cases, etc) and PFGE patterns showed that 22 strains isolated from the same incident were almost of the same pattern and 2 strains exhibited 50% of the pattern. Antimicrobial susceptibility patterns were such that there were 22 case susceptibility patterns and 2 case resistance patterns (strain 4: AM, CF, CIP, NA, TE TIC and strain 13: CF, CZ). Norovirus G1 (1case), Norovirus G2 (7cases), Norovirus G1,G2 (1case) were detected by using RT-PCR. The fine typing ability and reliability of PFGE and BioNumerics are helpful for establishing out the foodborne pathogens of outbreaks.

The Adaptation Process of Korean Food for Chinese (중국인들의 한국음식의 적응과정)

  • Diffusion of innovation theories have been used to explain the adaptation process of Chinese college students to Korean food. This study examined and compared Korean food adaptation among Chinese college students in Gyeonggido and Daejeon. A total of 141 Chinese college students were surveyed from August 01 to November supported by the Chinese Students Association in Gyeonggido. The results show that the adaptation process of Chinese college students to Korean food was different between Gyeonggido and Daejeon. Chinese college students did not have many opportunities to learn about Korean food and search information about Korean food. The adaptation process of Chinese college students to Korean food was different by residential type and period. The adaptation process of Chinese college students in Gyeonggido to Korean food was composed of three factors: interest-reinvention-adoption, awareness, and evaluation-trial-adoption. Three factors of the adaptation process of Chinese college students in Daejeon to Korean food were awareness-evaluationtrial, adoption-reinvention-trial, and interest.
