육성 및 비육전기의 조사료 급여형태가 홀스타인 거세우의 성장 발육, 사료이용성 및 도체특성에 미치는 영향 (Effects of Roughage Feeding Type during the Growing and Early-Fattening Periods on Growth Performance, Feed Efficiency and Carcass Characteristics in Holstein Steers)

  • Holstein 거세송아지 24두를 대상으로 육성 및 비육전기의 조사료 급여형태에 따라 3개 처리(T1: 농후사료+볏짚, T2: 농후사료+목건초, T3: 맥주박 TMR)를 두어 6개월령부터 23개월령까지 18개월간 사양시험 후 도체조사를 실시한 결과, 처리별 출하체중 및 일당증체량은 각각 751-802 kg(평균 782.3 kg) 및 1.064-1.159 kg(평균 1.122 kg)으로 모두 T2 > T3 > T1 순으로 높았고, T2의 일당증체량이 T1에 비해 8.9%가 개선되었다. 도체율, 등지방두께 및 등심단면적은 각각 60.6-60.9 %, 6.50-7.13mm 및 82.9-84.1cm2 이었고, 근내지방도 및 육색은 각각 3.1-3.3 및 4.0-4.1 이었으며, 쇠고기의 전단력 및 보수력은 각각 4.6-4.7 및 50.7-50.9로 이들 모두는 처리간에 유의차는 없었으나, 소득은 두당 882.8-991.7천원으로 T2 및 T3가 T1 보다 12-7% 더 높았다.이상과 같은 결과들을 종합해 볼 때 Holstein 거세우를 23개월령까지 비육할 경우, 근내지방도가 높은 쇠고기 생산이 가능하며, 육성 및 비육전기에 목건초나 맥주박위주의 TMR을 급여하면 볏짚보다 출하체중을 높여 소득을 향상시킬 것으로 판단된다.

Effect of Supplemental Levels of Barley on Growing Performance, Meat Quality and Blood Properties in Swine

  • This study was conducted to investigate effects of dietary anthocyanin fortified barley (AFB) or whole crop barley (WCB) on growing performance, meat quality and blood properties in swine at late fattening phase. Swine performance was not significantly differed (p>0.05) but average daily gain and average daily feed intake tended to increase in treatments. Meat quality parameters including pH, cooking loss, shear force and meat surface color were not influenced by the addition of barley in diet. However, DPPH content of longgissmus dorsi muscle was significantly increased in WCB10 compared to control, AFB5 and WCB5 (p<0.05). FRAP content of longgissmus dorsi muslce was higher in WCB5 than the AFB (p<0.05), thereby, a tendency in FRAP was not similar to that of DPPH. Only myristic acid (C14:0) was affected, and the lowest myristic acid was found when AFB was supplied to swine. A tendency was not determined in total protein and HDL-cholesterol content, however, control, WCB10 and AFB5 had high in total protein and showed significantly low values in HDL-cholesterol. Therefore, the results indicate that barley can be considered as an ingredient in swine diet, but further investigation is necessary.

Effect of air cleaner on stress hormones of pig and pork quality

  • The objective of this study is to investigate effect of air cleaner operated during pig breeding period on stress hormones of pigs and their pork quality. The stress hormones (cortisol, epinephrine and norepinephrine) in blood sample of pigs reared in the housing rooms with or without air cleaner have been measured according to a pig's rearing stage: 0 day (farrowing), 21st day (farrowing-weaning), 70th day (weaning-nursery), 140th day (nursery-growing), and 180th day (growing-fattening). The comparison of pork quality according to the application of an air cleaner was performed through the carcass analysis of the pigs shipped from swine house. The levels of cortisol, epinephrine, and norepinephrine in pigs reared in housing rooms with and without air cleaners were found to be within the range of normal reference values. Among pork quality evaluation items, the thickness of intermuscular fat and final carcass grade of pigs raised in housing room with air cleaner was generally superior to those of pigs raised in housing room without air cleaner (p < 0.05). Based on the results obtained from this study, it is concluded that air cleaner does not have a significant effect on reducing pig stress but contributes to improving pork quality in pig breeding.

Evaluation of Toyocerin, a Probiotic Containing Bacillus toyoi Spores, on Health Status and Productivity of Weaned, Growing and Finishing Pigs

  • The aim of the study was to assess the efficacy of Toyocerin, a probiotic containing Bacillus toyoi spores, on the health status and productivity of pigs, during nursery, growing and finishing phases. On a commercial farrow-to-finish farm in Greece, 3 experimental groups were formed, each of 72 weaned piglets. The pigs of the first group (T1 group; negative controls) received normal feed with no antimicrobials or probiotics, the pigs of the second group (T2 group) received the same type of feed but supplemented with 1.0${\times}$10$^9$, 0.5${\times}$10$^9$ and 0.2${\times}$10$^9$ spores per kg of feed at weaning, growing and finishing stage, respectively, and the pigs of the third group (T3 group) were fed with Toyocerin at the dose of 1.0${\times}$10$^9$ spores per kg of feed during the entire fattening period (weaning, growing and finishing stages). The results have shown that, compared to the controls, Toyocerin treated pigs had reduced incidence of postweaning diarrhoea (p<0.05). Enterotoxigenic strains of Escherichia coli were detected in faecal samples of 0% to 25% of pigs of the treated groups, but in 33.5% to 50% of pigs of the non-treated group (p<0.05). Over the negative controls, a significant improvement of weight gain (4.5% and 8.3% for T2 and T3 groups, respectively), and of feed conversion ratio (6.6% and 13.0% for T2 and T3 groups, respectively) was observed. The 76.5% of the carcasses of the T3 group was classified in the top three categories of the EUROP scale (S, E and U), whilst the respective figures were 47.8% for T2 group and only 10.5% for T1 group (p<0.05).

Ruminal microbial responses in fermentation characteristics and dry matter degradability to TDN level of total mixed ration

  • An in vitro trial was conducted to examine the effects of total mixed rations (TMR) on fermentation characteristics and effective degradability (ED) by rumen microbes. Three TMR diets were growing period TMR (GR-TMR, 67% TDN), early fattening period TMR (EF-TMR, 75.4% TDN) and late fattening TMR (LF-TMR, 80% TDN). Three TMR diets (3 g of TMRs in each incubation bottles) was added to the mixed culture solution of stained rumen fluid with artificial saliva (1:1, v/v) and incubated anaerobically for 48 hours at $39^{\circ}C$. The pH in all incubation solutions tended to decrease up to 48h, but the opposite results were found in concentration of total gas production, ammonia-N and total VFA in all incubations.The total gas production (p<0.05) in LF-TMR was highest compared with those of other diets. Also, concentration of total VFA was tended to increase in LF-TMR compared with other TMR diets in all incubations. The EDDM in both EF-TMR and LF-TMR was tended to high compared with GR-TMR (p=0.100). In this in vitro trials, concentration of propionate in all incubation solution was not affected by increased concentration of TDN. The results of the present in vitro study indicate that TMR may provide more favorable condition for nutrient digestion both in the rumen.

Effects of different physical forms of concentrate on performance, carcass characteristics, and economic analysis in hanwoo steers

  • This study was performed to investigate the effects of different forms of concentrate fed to Hanwoo steers on performance, carcass characteristics, and economic performance. Forty-two Hanwoo steers (average age of $5.1{\pm}0.8mo$. with body weight of $147.05{\pm}10.85kg$) were randomly allotted into FC (animals fed flakes for entire experimental period) and GC (animals fed grounded concentrate during growing and fattening phases followed by flaked concentrate during finishing phase) groups for 758 d after reaching an age of $30.0{\pm}0.82mo$. There was no difference in body weight (BW) or ADG between the treatments until fattening (15 ~ 22 mo.) phase. However, by finishing phase (23 ~ 30 mo.), the GC group (739.24 kg BW and 0.67 kg ADG) showed greater (P < 0.05) BW and ADG than the FC group (702.93 kg BW and 0.59 kg ADG). Steers in the GC group also showed greater (P < 0.05) BW and ADG than the FC group throughout the entire experimental period (5 ~ 30 mo.). There was no significant difference in carcass weight or backfat thickness between the treatments. M. Longissimus dorsi area of the GC group ($91.00cm^2$) was greater (P < 0.05) than that of the FC group ($83.59cm^2$). Marbling score and percentage of $1^{{+}{+}}$ meat quality grade were 14.0 and 48.0% higher in the GC group compared to the FC group. There was no significant difference in physicochemical characteristics, including moisture and crude protein levels, between the treatments. Gross income per head excluding operating expenses was 59.3% greater in the GC group (1,647,512 won) compared to the FC group (1,034,343 won).

Investigation of blood biomarkers related to meat quality and quantity in Hanwoo steers

  • Objective: This study was conducted to investigate the correlation between blood components and carcass traits, and to find the biomarkers related to meat quality and quantity in Hanwoo steers. Methods: One hundred twenty-six Hanwoo steers (8 to 9 months of age, body weight of $185.6{\pm}24.38kg$) were used to find the correlation between blood compositions and carcass traits. The steers were fed concentrate and rice straw (30 steers) or total mixed rations (96 steers) during the whole experimental period. Blood samples were collected from the jugular vein at the growing (8 to 12 months), fattening (13 to 23 months) and finishing phases (24 to 30 months). Steers were slaughtered at 30 to 31 months of age (body weight of $701.6{\pm}60.45kg$) and the carcass traits were evaluated. Blood metabolites and hormones were analyzed and the correlation coefficients and regression equations with carcass traits were determined. Results: Average concentrations of retinol, leptin and insulin were 1.10 IU, 30.34 ng, and 35.35 ng per mL of blood plasma, respectively. Retinol has negative correlations (p<0.01) with insulin and leptin. Blood insulin and total protein decreased with the age of steers, but retinol, aspartic acid transaminase (AST), glucose, cholesterol and triglyceride increased. In the finishing phase, significant (p<0.01) negative correlations occurred between blood retinol content and marbling score, and between blood AST content and longissimus muscle area of 13th rib, and the following regression equations were obtained: Marbling score $(1-9)=-0.009{\times}retinol(IU/100mL)+9.125$ ($R^2=0.643$), Longissimus muscle area $(cm^2)=-0.250{\times}AST(U/L)+112.498$ ($R^2=0.450$). Conclusion: It is possible to make highly marbled beef by controlling the blood retinol content during the fattening and finishing phases of Hanwoo steers. Accordingly, blood retinol and AST could be biomarkers for determining beef quality and quantity, respectively, prior to slaughter.

Nutrigenomics Approach-A Strategy for Identification of Nutrition Responsive Genes Influencing Meat Edible Quality Traits in Swine

  • In the last 20 years, meat quality, especially meat edible quality has become a more intriguing topic in the field of swine production. In this paper, we briefly review the progress of meat quality research from the aspects of genetic selection and nutritional modulation, and propose a possible approach -nutrigenomics- to explore the nutrition-responsive major genes that affect meat quality formation during the growing and fattening of pigs.

사료용 벼 위주 TMR 급여가 거세 한우의 생장 능력 및 도체 특성에 미치는 영향 (Feeding Effects of Whole Crop Rice based TMR on Growth Performance and Carcass Characteristics of Hanwoo Steers)

  • 본 시험은 사료용 벼 위주 TMR 사료의 급여가 가축 생산성과 도체 특성에 미치는 영향을 규명하기 위하여 수행하였다. 국립식량과학원에서 육성한 "영우" 품종을 황숙기에 수확하고 60일동안 저장하면서 사일리지 발효를 시켰다. 조단백질, ADF, NDF, IVDMD, TDN 및 RFV 함량은 각각 8.4 %, 28.0 %, 53.8 %, 72.4 %, 66.8 % 및 116이었다. 사일리지 품질에서 pH는 4.37이었고 젖산 함량은 DM에서 2.84 % 이었으며, 낙산함량(0.04 %)이 낮아 Clostridia에 의한 불량발효가 억제되었다. 총 16두의 거세한우(평균 8개월령)를 대조군(시중 판매 TMR 사료 급여군)과 WCR-TMR 급여군(사료용 벼 위주 TMR 사료 급여군)으로 나누고 30개월까지 사양시험을 수행하였다. WCR-TMR 급여군의 성장단계별 사료에는 사료용 벼 사일리지가 13~15% 정도 배합되었다. TMR 사료의 급여는 육성기(개시 ~ 14 개월), 비육 전기(15 개월 ~ 21 개월) 및 비육 후기(22 개월 ~ 30 개월)로 나누어 급여하였다. 체중에 있어서 대조군은 비육전기까지 높았지만 비육 후기 이후에는 WCR-TMR 급여군에서 유의적으로 높게 나타났다(P<0.05). 일당증체량은 WCR-TMR 급여군이 비육 후기를 제외하고 매 생육단계에서 대조군에 비해 유의적으로 높게 나타났다(0.66 vs 0.78 kg/두/일). 고기 특성에 있어서 출하체중과 도체중은 WCR-TMR 급여구에서 높게 나타났으나 등지방두께(11.75 vs 13.00 mm), 등심단면적(88.00 vs $89.88cm^2$) 및 육량지수(65.87 vs 64.30)에서는 두 그룹 간에 유의적인 차이는 없었다. 육량등급도 차이가 나타나지 않았다(A : B : C = 2 : 4 : 2). 한편 육질의 특성에서 근내 지방도(4.00 vs 4.13), 육색(4.75 vs 4.75), 지방색(3.13 vs 2.88), 조직감(1.25 vs 1.50) 및 성숙도(2.00 vs 2.00)는 두 그룹간에 유의적인 차이는 없었다(P>0.05). 육질등급에서도 두 그룹 모두 $1^{{+}{+}}:1^+:1:2:3=0:2:4:2:0$로 나타났다. 평균 출하가격은 WCR-TMR 급여군에서 높게 나타났으며 평균 두당 353,550원이 더 높았다. 이상의 결과를 종합하여 볼 때 사료용 벼 위주 TMR의 급여는 가축 생산성 측면에서 도체중과 일당증체에서 기존의 TMR 보다 우수하였다. 따라서 사료용 벼의 이용은 수입 조사료 대체와 정부의 쌀 생산 조정정책에 꼭 필요한 선택이라고 판단된다.

Effect of Floor Space Allowance on Pig Productivity across Stages of Growth: A Field-scale Analysis

  • A total of 152 pig farms were randomly selected from the five provinces in South Korea. During the experiment, the average temperature and relative humidity was $24.7^{\circ}C$ and 74% in summer and $2.4^{\circ}C$ and 53% in winter, respectively. The correlation between floor space allowance (FSA) and productivity index was analyzed, including non-productive sow days (NPD), number of weaners (NOW), survival rate (SR), appearance rate of A-grade pork (ARA), and days at a slaughter weight of 110 kg (d-SW) at different growth stages. The objectives of the present study were i) to determine the effect of FSA on the pig productivity index and ii) to suggest the minimum FSA for pigs based on scientific baseline data. For the pregnant sow, NPD could be decreased if pregnant sows were raised with a medium level (M) of FSA (3.10 to $3.67m^2/head$) while also keeping the pig house clean which improves hygiene, and operating the ventilation system properly. For the farrowing sows, the NOW tended to decrease as the FSA increased. Similarly, a high level of FSA (H) is significantly negative with weaner SR of farrowing sows (p-value = 0.017), indicating this FSA tends to depress SR. Therefore, a FSA of 2.30 to $6.40m^2/head$ (very low) could be appropriate for weaners because a limited space can provide a sense of security and protection from external interruptions. The opposite trend was observed that an increase in floor space (> $1.12m^2/head$ leads to increase the SR of growing pigs. For the fattening pigs, H level of FSA was negatively correlated with SR, but M level of FSA was positively correlated with SR, indicating that SR tended to increase with the FSA of 1.10 to $1.27m^2/head$. In contrast, ARA of male fattening pigs showed opposite results. H level of FSA (1.27 to $1.47m^2/head$) was suggested to increase productivity because ARA was most affected by H level of space allowance with positive correlation ($R^2=0.523$). The relationship between the FSA and d-SW of fattening pigs was hard to identify because of the low $R^2$ value. However, the farms that provided a relatively large floor space (1.27 to $1.54m^2/head$) during the winter period showed d-SW was significantly and negatively affected by FSA.
