도토리묵가루를 첨가한 도토리떡(像實餠)의 품질특성에 관한 연구 (A Study on the Quality Properties of Dotoridduck added with Acorn Jelly Powder)

  • The objective of this study was to evaluate the quality characteristics of Dotoridduck (acorn rice cake) prepared by the addition of acorn jelly powder(0%, l0%, 20%, 30%, 40%). In the results of sensory evaluation for Dotoridduck, the L value decreased and a and b values increased as the addition of acorn jelly powder increased. The hardness and chewiness were evaluated better as the amount of acorn jelly powder decreased. The bitterness increased as the amount of acorn jelly powder increased. Dotoridduck with 10% and 20% acorn jelly powder showed the highest acceptance. In the mechanical evaluation, control samples with 0% acorn jelly powder showed higher scores in the hardness, cohesiveness, gumminess, and chewiness than the ones with acorn jel]y powder, however, the ones with 40% acorn jelly powder were the highest in the adhesiveness and springiness. The fracturability was higher in the samples with 10% acorn jelly powder.

차생엽을 첨가한 인절미의 저장중 노화에 미치는 영향 (Effects on retrogradation of Injeulmi(Korean glutinous rice cake) added with the macerated tea leaves during storage)

  • 차생엽을 첨가한 인절미 제조시험 결과 텍스쳐에서 경도, 탄성, 응집성, 씹힘성, 검성은 첨가량이 증가할수록 대체로 감소하여 차생엽에 의한 인절미의 치밀하고 쫄깃한 조직감이 약 간 부드럽게 변하였다. 관능검사 결과 색깔은 5% 첨가구가 엷은 녹색을 띠며, 5% 유의수준에서 가장 양호하였으며, 향은 10% 첨가구가 5% 유의수준에서 가장 좋았고, 조직감은 첨가구별 유의차는 없었으며 전체적인 관능품질은 5%와 10% 첨가구가 무첨가구와 15% 첨가구에 비하여 1% 유의수준에서 좋게 평가되었다. 저장기간중 인절미의 경도 변화는 차생엽 10% 첨가구가 무첨가구에 비하여 낮은 증가율을 보여 주었으며, Avrami 지수와 노화속도 상수를 구한 결과 무첨가구가 각각 1.062와 15.3인데 비하여 10% 첨가구는 0.989와 41.6으로 차생엽 첨가에 의하여 노화가 지연되는 것으로 나타났다.

  • 된장에 찹쌀가루, 쇠고기, 파, 마늘, 깨소금 등을 혼합하여 볕에 말렸다가 찐 후 다시 말려 항아리에서 저장하면서 먹을 때는 참기름을 골고루 발라서 석쇠에 구워먹는 장떡은 단백질이 풍부한 고유음식이다. 본 연구에서는 찹쌀가루의 첨가량을 달리하고 쇠고기의 첨가유무에 따라 각기 장떡을 제조하여 저장기간에 따른 일반성분의 변화에 대해 알아보았는데 장떡의 수분 함량은 찹쌀가루의 함량이 증가할수록 감소하며 저장기간 중 15일에서 급격한 감소를 보이다가 30, 45일가지는 비교적 적은 감소를 보이고 60일에는 거의 변동이 없거나 보관중에 공기중의 습기를 다시 흡수하여 약간 증가하는 것으로 나타났다. 저장기간에 따른 조단백, 조지방, 환원당, 조섬유, 조회분 함량은 변화가 거의 없어 유의적인 차이를 갖지 못했다. 이상의 결과로 보아 장떡은 저장기간인 60일이 되어도 일반성분에 별다른 변화가 없어 저장식품으로 알맞은 조건을 가지고 있다고 생각된다. 따라서 앞으로는 고유저장음식인 장떡의 제조시 영양배합의 우수함과 기호를 충족시킬 수 있도록 여러 종류의 장떡에 대한 다양한 연구가 지속되어야 한다고 사료된다.

고추장의 맛성분(成分)에 관(關)한 연구(硏究) - (제(第)1보(報)) 전(全)아미노산(酸) 함양(含量)과 질소성분(窒素成分) - (Approach to the Taste Components of Kochuzang (Red Pepper Paste) - Part 1 : Content of Amino Acids and other Nitrogen Compounds -)

  • In order to identify the taste components of Kochuzang (red pepper paste), glutinous rice Kochuzang were prepared with addition of Saccharomyces rouxii and Torulopsis versatilis respectively. The nitrogen compounds were determined during the fermentation period at intervals and the amino acid components of 210 days aged glutinous rice Kochuzang were measured. Results are as follows; 1) The increment of amino-N and soluble-N of Kochuzang were increased remarkably during fermentation period untill 60 day but after that period, the increment was slowly changed. 2) Ammonia-N of Kochuzang was increased slowly during aging period but after that time, the amount was decreased slightly. 3) Amino-N ratio and Nitrogen solubility of 300 days aged Kochuzang were 23.71-25.38% and 54.12-56.19% respectively. 4) 17 Kinds of amino acid were identified at 210 days aged Kochuzang those were Lysine, Histidine, Arginine, Aspartic acid, Threonine, Serine, Glutamic acid, Proline, Glycine, Alanine, Valine, Methionine, Isoleucine, Leucine, Phenylalanine, Tryptophane and Tyrosine. 5) Total amino acids were 3.5-4.1% which consists of Glutamic acid, 0.95-1.05%, Aspartic acid, 0.63-0.65% and Serine, Proline, Alanine, Valine, Leucine were 0.22-0.28% respectively but Methionine, Histidine and Arginine were below 0.1%, and Tyrosine, Tryptophane and Phenylalanine existed in Kochuzang in small quantities.

  • Pseudomonas stutzeri IAM 12097이 생산(生産)하는 Exo-maltotetraohydrolase는 soluble starch, amylose, amylopectin, oyster glycogen, corn, potato, glutinous rice, green banana, arrow root 의 호화전분(糊化澱粉), maltopentaose, maltohexaose, maltoheptaose, maltooctaose를 가수분해(加水分解)하였으나, ${\alpha},{\beta},{\gamma}-cyclodextin$, sucrose, raffinose, pullulan, maltose, maltotriose, maltotetraose는 분해(分解)하지 못하였다. 소당류중(少糖類中) maltohexaose를 가장 잘 분해(分解)하였으며, 각종기질(各種基質)의 주분해산물(主分解産物)은 maltotetraose였다. pullulanase의 혼용(混用)으로 호화전분(糊化澱粉)의 분해율(分解率)은 증가(增加)되었으나 생전분(生澱粉)에 대(對)하여는 혼용효과(混用效果)를 인정(認定)할 수 없었고 생전분중(生澱粉中)에서 corn starch가 가장 잘 분해(分解)되며 raw potato starch, raw arrow root starch, raw high amylose corn starch의 분해(分解)는 미약(微弱)하였다.

밀가루와 찹쌀이 고추장 품질에 미치는 영향 (Effects of Wheat Flour and Glutinous Rice on Quality of Kochujang)

  • 전분질원으로서 밀가루와 찹쌀을 단용(A: 전량 밀가루 사용, D: 전량 찹쌀 사용) 또는 혼용(B : 밀가루 75%, 찹쌀 25%, C : 밀가루와 찹쌀을 각각 50% 사용)하여 담금한 고추장의 성분을 분석한 결과는 다음과 같다. 숙성 과정중 조단백질과 아미노태의 질소 함량 은 대체적으로 4, 3, C, D구의 순으로 높았고, ethyl alcohol은 D, C, B, A구의 순으로 높았다. pH는 A구에서 다소 높았으나 수분과 식염은 시험구간에 차이가 없었다. 90일숙성 고추장 중의 유리당은 glucose, fructose, maltose, rhamnose가 검출되었고, 이중 glucose는 양적으로 가장 많았다. 또한 glucose는 A구에서, fructose는 B구에서 각각 높았다. 숙성고추장의 알코올류로서 n-propyl, iso-butyl, iso-amyl alcohol이 검출되었으며, 이들 함량은 3.2mg% 이하로 시험구간에는 큰 차가 없었다.

전분질첨가 김치의 숙성 중 물리적 및 미생물학적 특성의 변화 (Changes in Physical and Microbial Properties of Starchy Pastes Added Kimchi during Fermentation)

  • 전분풀을 첨가하지 않은 대조군과 밀가루풀 첨가군, 찹쌀풀 첨가군의 세 시료를 1$0^{\circ}C$에서 2주간 저장하고 발효과정중 미생물 수 그리고 김치의 조직감과 김치액의 점도, 색상등의 변화를 측정한 결과는 다음과 같다. 배추조직의 견고성(hardness)은 숙성이 진행될수록 세 시료군 모두 감소하였는데 대조군값이 가장 높았고 밀가루풀 첨가군이 가장 낮았다. 펙틴질 분획 결과 발효가 진행되면서 HWSP는 밀가루풀 첨가군>찹쌀풀 첨가군>대조군의 순으로 모두 증가하였고 HCISP는 밀가루풀 첨가군>찹쌀풀 첨가군>대조군의 순으로 모두 감소하였다. 김치액의 적색도는 발효기간 동안 세 시료군 모두 감소하였으며 김치액의 점도 역시 찹쌀풀 첨가군>밀가루풀 첨가군>대조군의 순으로 모두 감소하였다. 총균수 및 젖산균수는 발효초기 세 시료모두 점차 증가하다가 pH 4.0~4.5 사이의 최적숙기인 발효 5일째 밀가루풀 첨가군에서의 균수가 가장 높게 나타났으며 5일 이후로는 세 시료군 모두에서 감소하였다. 이로부터 전분풀의 첨가는 김치의 발효를 촉진시키며 밀가루풀이 찹쌀풀보다 발효가 더 빨리 일어난다는 것을 알 수 있다.

두부를 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk by the Addition of Tofu)

  • We prepared Tofu-sulgi by adding tofu and then analyzed the final product in terms of its nutritional quality, rheological characteristics and sensory tests. While the calorie quantity of Sulgi with Tofu was relatively low compared to that of Baeksulgi, it contained the dietary fiber, calcium and iron that were not present in Baeksulgi. Since Baeksulgi holds a large amount of carbohydrates, it shows a higher weight due to its dense fiber. On the other hand, Sulgi with Tofu showed a relatively low level of tofu protein despite the increased amount of tofu protein. This demonstrated the soft characteristics of Sulgi with Tofu. Also, the results of the sensory test showed that Sulgi with Tofu exhibited a higher preference than Baeksulgi in terms of its taste, flavor and fiber content. The preparation method of Sulgi with Tofu in this study used the natural grinding of tofu without removing the moisture. Also the use of both non-glutinous and glutinous rice flour that can be obtained easily in the public market, are convenient due to their characteristics of easy storage and no property change. Therefore, the preparation method of Sulgi with Tofu is quite convenient as compared to that of traditional Dduk (Korean rice cake) including Baeksulgi. From the perspectives of nutritional content, rheological characteristics and taste preference, Sulgi with Tofu fared better than Baeksulgi. Considering the overall quality characteristics of Sulgi with Tofu, we believe that the addition of tofu could contribute positively toward the quality characteristics of Sulgi.

Quality Properties of Ginseng Chicken Porridge Prepared with Individually Gamma Irradiated Raw Materials

  • This study was to establish irradiation process for serving ginseng chicken porridge to immune-compromised patients. Raw chicken, glutinous rice, ginseng, garlic, dried jujube and carrot were used as raw materials for ginseng chicken porridge. The initial level of microorganisms contaminated in raw materials and their predominant species were determined. The level of microorganism detected in raw chicken and in ginseng were 3.4 Log CFU/g and 4.7 Log CFU/g, respectively. Major predominant microorganisms were Pseudomonas fragi in chicken, Enterobactor faecalis in carrot, and Bacillus subtilis in other materials. Chicken and carrot were excluded from irradiation treatment because ordinary thermal treatment can inactivate the microorganisms contaminated in those materials. Five kGy of gamma ray was the effective sterilizing dose required to inactivate B. subtilis in glutinous rice, garlic and jujube, and 10 kGy in ginseng. Ginseng chicken porridge was prepared with each of raw materials gamma-irradiated with the selected sterilizing doses. Control was ginseng chicken porridge prepared with non-irradiated materials. The growth of microorganisms was not observed in the chicken porridge prepared with irradiated raw materials. Sensory results showed that the score of flavor and off-flavor was slightly lower in ginseng chicken porridge prepared with irradiated raw materials than in control. This was considered to be due to the increase of TBARS values by gamma irradiation. However, there was no significant difference on overall acceptance between the porridge prepared with irradiated raw materials and control. The results showed that the individual gamma irradiation of raw materials can be applied to prepare ginseng chicken porridge as meals for the immunocompromised patients.

신선초설기의 재료배합비에 따른 관능적$\cdot$텍스쳐 특성 (Sensory and Mechanical characteristics of Shinsunchosulgi by Different Ratio of Ingredient)

  • Shinuncho(Angelica keiskei koidz)sulgi is a kind of steamed rice cake by an earthenware steamer. I made Shinuncho-sulgi samples with different amounts of Angelica keiskei koidz - powder and different types of sugars (sugar or honey). The more Angelica keiskei koidz powder it has the bitter it tastes but the lower sweetness, moistness and chewiness it has. Samples with honey have higher sweetness, moistness and chewiness but lower bitterness and after-swallowing than ones with sugar. Color is Shinsuncho-sulgi with $3\%$ of Angelica keiskei koidz - powder and honey has been judged to have the best quality. Flavor and Overall-acceptability are Shinsuncho-sulgi with $2\%$ of Amge;oca keiskei koidz - powder and honey has been judged to have the best quality. The more Angelica keiskei koidz powder it has the higher hardness but the significantly cohesiveness, springiness, gumminess, and chewiness it has. Samples with honey have higher hardness, springiness, cohesiveness, gumminess and chewiness, but lower adhesiveness, than ones with sugar. The moisture content of Shinsuncho-sulgi is $35.89\~37.08\%$. Samples with honey have higher b-value but lower L-value and a-value than ones with sugar. Based on the results of the study, the best ratio of ingredients is as follow non-glutinous flour 196g, Angelica keiskei koidz powder $2\%$ (4g), honey 35ml, salt 2g, water 20ml and $37.08\%$ of moisture content.
