우육(牛肉) 조리법(調理法)의 역사적(歷史的) 고찰(考察) -V. $\{ulcorner}$산적(算炙, 散炙)${\lrcorner}$- (Historical Study of Beef Cooking -V. $\{ulcorner}Roasted Skewered{\lrcorner}$-)

  • The purpose of this study is to survey various recips of the roasted skewered beef (Sanjuk) with twenty three classical cookbooks written before 1943 in Korea. The recipes of the roasted skewered beef are found thirty times in the records, which can be classified into six groups such as the palm-type skewered beef (Sulhamyukjuk), little finger-type skewered beef, mixed skewered beef, juice skewered beef, little finger-type skewered internal organs, and wide-cut skewered internal organs. The palm-type skewered beef and the mixed skewered beef most frequently appeared in the records. The 'Sulhamyukjuk' in the 17th century were inherited while changing its name to 'Sanjuk' in the late 18th century, which is the origin of 'Bulkoki'. There were two types of the roasted skewered beef, the palm-type and the little finger-type; and the palm type preceded the little finger-type. They were used with no change until the 19th century. Actually the roasted skewered beef existed even in the 16th century, but were put down in the early 17th century. In the cooking of 'Sulhamyukjuk' the process of dipping shortly into cold water in the midst of roast seems to absolutely disappeared. Some recipes of the roasted skewered beef were lost, but most have been inherited in the similar way with simplification including little use of internal organs. The main ingredients consisted of parts of cattle such as fresh meat, intestines, heart, liver, omasum, tripe, head, sweet bread, and lung with various vegetables and mushroom. And the main seasonings were mixtures of oil, soy sauce, sesame seed powder, scallion stalk, pepper, sesame seed oil, and salt. And sometimes wine, vinegar, ginger, garlic, and sugar were added.

갓김치 숙성중 당, 유기산, 유리아미노산 및 핵산관련 물질 함량의 변화 (Changes in the Contents of Sugar, Organic Acid, Free Amino Acid and Nucleic Acid-Related Compounds during Fermentation of Leaf Mustard-Kimchi)

  • Changes in the contents of sugar, organic acid, free amino acid and uncleic acid-related compounds of leaf mustard-Kimchi during fermentation at 5~7$^{\circ}C$ were investigated. The leaf mustard-Kimchi was formulated with 4kg leaf mustard, 120g garlic, 80g ginger, 540ml salted anchovies, 1kg green onion, 200g red pepper powder, 200g ground red pepper, 60g whole sesame and 600ml glutinous rice paste. Changes in pH and acidity were relatively slow. Major free sugars were glucose(0.13%) and maltose(0.42%), and residual sugars(0.03-0.04%) were also detected after 32 days of fermentation. Major free amino acids containing more than 26.5mg% were proline, glutamic acid, alanine and histidine. Contents of total free amino acids increased from 244.8 to 397.2mg% by 24 days of fermentation. Of non-volatile organic acid, lactic acid was the most abundant(119.3mg%), and its content increased markedly after 10 days of fermentation. Other organic acids(below 53.1mg%) observed were malic, oxalic and citric acid. Contents of nucleic acid-related compounds were high in the order of hypoxanthine(22.8mg%), IMP(8.3mg%) and GMP(6.9mg%). Hypoxanthine content increased by 10 days(27.3mg%) and decreased thereafter, while the others decreased gradually during the overall period of fermentation.

청갓과 청갓김치의 핵산관련물질의 동정 및 함량에 관한 연구 (Studies on Identification and Composition of Nucleosides from Mustard Leaf and Mustard Leaf Kimchi)

  • Kimchi is the Korean traditional food which is fermented properly from salted Korean cabbage of raddish with other various supplements. Kimchi therefore can be the major sources for various kinds of nutrients and other biological substances. The fermentation process accompanies with complicated reaction mechanism which bacteria, fungi and yeast are involved and they produced aroma, taste and bioactive components. To identify nucleoside, this study was conducted with freeze-dried mustard leaf, mustard leaf kimchi and fermented mustard leaf kimchi. Hexane, CH$_2$Cl$_2$, EtOAc and BuOH was used in order to extract their components. The isolated compounds I and II from mustard leaf and mustard leaf kimchi were identified as adenosine and uracil using UV, $^{1}H$-NMR, $^{13}C$-NMR and LC-MS, respectively. Compound I, II and nucleosides are the first report of its occurrence from mustard leaf and their kimchi, the standardized ratios of ingredients for kimchi were 10 of anchovy juice, 8 of red pepper powder, 3 of garlic, 1.5 of ginger, 6 of paste of glutinous rice. The nucleoside of mustard leaf and their kimchi was determined and compared. The order of nucleosides contents of mustard leaf was uridine>cytosine>uracil>adenine>guanosine>guanin, that of fresh mustard leaf kimchi was uridine>uracil>cytosine>guanine>adenosine>adenin>guanosine and that of fermented mustard leaf kimchi (5days at 15$^{\circ}C$) was guanine>adenine>adenosine>guanosine. The differences of nucleoside contents from those were due to various supplements and fermentation process.

  • This thesis aims to provide an analytical basis for existing or new prescriptions based on the theory for properties and tastes of Korean oriental herbal medicines. To this end, prescriptions presented in the Various Changes in the Dominations of the Six Energies and their Relations with the Diseases of Plain Questions were analyzed based on the theory for properties and tastes of Korean oriental herbal medicines in Yellow Emperor's Canon of Internal Medicine. This thesis focused on symptoms and prescriptions based on the theory for properties and tastes of Korean oriental herbal medicines, which were described in tire Various Changes in tire Dominations of tire Six Energies and their Relations with the Diseases of Plain Questions with regard to the year when Taeeum is affecting the earth energy and the dampness energy is partially over-abundant. Those symptoms and prescriptions originate from the theory of the five elements and six climates. The symptoms were analyzed from the perspective of physiology. The prescriptions were first analyzed based on the theory for properties and tastes of Korean oriental herbal medicines in Yellow Emperor's Canon of Internal Medicine. Then, a mix formula of oriental medicines pursuant to those prescriptions was studied. Lastly, established prescriptions, which were in conformity with the above prescriptions, were selected. From the physiological point of view, symptoms with regard to the year when Taeeum is affecting the earth energy and the dampness energy is partially over-abundant can be, based on the theory of the five elements and six climates, diagnosed as the symptoms from impaired kidney due to excessive dampness energy. Established prescriptions pursuant to prescriptions based on the theory for properties and tastes of Korean oriental herbal medicines can be broken down into the following: Poria powder with five herbs (Oryeongsan); Divine black bird decoction (Jinmootang); Tetrandra and astragalus decoction (Banggihoanggitang); Licorice, dried ginger, poria and bighead atractylodes decoction (Gamgangryeongchooltang); Spleen-reinforcing powder (Shilbeesan). Therefore, symptoms of six kinds of weather presented in the Various Changes in the Dominations of tire Six Energies and their Relations with tire Diseases of Plain Questions can be analyzed from the physiological point of view. As a result, in addition to the methodology that analyzes existing prescriptions within the boundary of the theory for properties and tastes of Korean oriental herbal medicines in Yellow Emperor's Canon of Internal Medicine, it is expected that a theoretical basis for new prescriptions can be provided by analyzing established prescriptions based on prescriptions from the theory for properties and tastes of Korean oriental herbal medicines.

부재료의 첨가에 따른 절임배추의 숙성 중 Chlorophyll 및 그 유도체의 함량변화 (Changes in the Conrent of Chlorophylls and Their Derivatives in Brined Korean Cabbages Added with Ingredients during Sorage)

  • 각종 부재료를 각각으로 첨가한 절임배추를 제조하여 5$^{\circ}C$와 15$^{\circ}C$에서 13일간 저 장하면서 pH, 산도 및 아스코르브산의 함량변화를 측정하고 chlorophyll분해 및 그 유도체 의 생성과의 증가는 온도가 높을수록 뚜렷하여 온도와의 관련성이 높은 것으로 나타났고, 첨가한 부재료의 영향을 보면 마늘, 고춧가루 및 젓갈은 pH의 저하나 산도의 증가를 촉진 하였고, 파와 생강은 큰 영향없이 나타났다. 5$^{\circ}C$ 및 15$^{\circ}C$의 발효기간 중 아스코로브산의 잔 존량은 대체적으로 갓을 첨가한 절임배추가 가장 낮게 나타났다. Chlorophyll의 분해는 발효 기간 중 대체로 아스코르브산의 함량이 높았던 갓을 첨가한 절임배추에서 낮은 경향을 보였 으나 발효기간중 아스코르브산의 잔종량이 전반적으로 높았던 마늘을 첨가한 절임배추에서 chlorophyll의 분해가 심하였고, pheophytin과 pheophorbide 생성량이 크게 증가하는 것으로 나타났는데 이는 산도의 증가와 pH의 감소가 가장 크게 나타난 것과 일치되었다. 따라서 발효중의 chlorophyll의 분해는 아스코르브산 함량변화와도 연관이 있을뿐만 아니라역시 산 의 생성에 의한 pH의 감소와 관련성이 있었다.

냉동 정어리 조미육의 가공 및 저장중의 품질안정성 (Processing Conditions and Quality Stability of Frozen Seasoned Sardine Meat during Frozen Storage)

  • 정어리를 효율적으로 이용하기 위하여 각종 조리재료 및 식품가공용 중간소재로 이용할 수 있는 정어리냉동조미육의 가공조건을 구명하고 저장 중의 품질안정성에 대하여 검토하였다. 정어리냉동조미육을 가공하기 위하여 정어리육을 채육한 다음 육에 대하여 대두유의 유화커어드 $20.6\%$, 식염 $0.5\%$, 설탕 $2.0\%$, sodium bicarbonate $0.4\%$, polyphosphosphate $0.2\%$, MSG $0.1\%$ 및 양파가루 $0.3\%$, 마늘가루 $0.1\%$, 생강가루 $0.1\%$, 대두단백질 $3.0\%$, 그리고 저장 중의 지질산화를 방지 할 목적으로 sodium erythortate를 $0.1\%$ 첨가하여 잘 혼합한 후 $-35^{\circ}C$에서 동결시켜 $-20^{\circ}C$에서 저장하는 것이 좋았다. 정어리냉동조미육의 수분함량은 $67\~70\%$, 조단백질 $14\~16\%$, 조지방 $11\~12\%$였으며, 저장 중 제품의 pH는 다소 감소하고 휘발성염기질소는 약간 증가하였으며 생균수는 거의 변화가 없었다. 동결저장 중 과산화물값, 카르보닐값 및 TBA값을 측정한 결과 sodium erythorbate를 첨가한 제품(B)는 지질산화가 효율적으로 억제되었다. 제품의 정미성분 중 IMP는 저장 중 감소하였오 hypoxanthine은 증가하였다. 제품의 유리아미노산은 histidine과 glutamic acid가 대부분을 차지하였고 저장 중 약간 증가하였다. 정어리냉동조미육의 정미성분의 주체는 양적으로 보아 유리아미노산과 핵산관련물질이었고 저장중 총량은 거의 변화가 없었다. 제품의 주요구성지방산은 18:2, 18:1, 16:0 및 18:3 등이있고 저장 중 22:6의 감소율은 제품(B)에서 현저하게 억제되었다. 저장 중 제품 모두 유리드립과 가압드립은 증가하였고 염용성질소는 감소하였다. 텍스튜어는 경도와 질김성이 다소 증가하였으며 탄성과 응집력은 거의 변화가 없었다. 색조는 L값(명도)은 감소하고 b값(황색도)은 약간 증가하였으며 그 변화폭은 표면이 더욱 컸다. 관능검사 결과 제품 모두 저장 120일 동안 품질이 안정하게 유지되었으며 제품(B)의 품질안정성이 가장 우수하였다.

냉동고등어 조미육의 가공에 관한 연구 1. 냉동고등어 조미육의 가공 및 저장중 정미성분의 변화 (Studies on the Processing of Frozen Seasoned Mackerel Meat 1. Processing of Frozen Seasoned Mackerel Meat and Changes in Its Taste Compounds during Storage)

  • 고등어를 효율적으로 이용하기 위하여 각종 조리재료 및 식품가공용중간소재(中間素材)로 이용할 수 있는 고등어냉동조미육의 가공조건을 검토하고 저장증의 정미성분의 연화에 대하여 조사하였다. 고등어냉동조미육를 가공하기 위하여 고등어육을 채육한 다음 육에 대하여 물 및 분리대두단백질로 만든 유화커어드 32.1%, 식염0.5%. 설탕 2.0%, sodium bicarbonate 0.4%, polyphosphate 0.2%, monosodium glutamate 0.2%를 양파가루 0.3%, 마늘가루 0.1%, 생강가루 0.1%, 대두단백질 3.0% 그리고 저장중의 지질산화를 방지할 목적으로 sodium erythorbate를 0.1%첨가하여 잘 혼합한 후 $-35^{\circ}C$에서 동결시켜 $-25^{\circ}C$에서 저장한 것이 좋았다. 고등어냉동조미육의 수분함량은 70.8-71.7%, 조단백질 13.8-14.7% 조지방 10.9-11.4%였다. 제품B의 총유리아미노산함량은 1625.0mg/100g으로 원료고등어와 큰 차이가 없었으며, 전제품에서 함량이 많은 유리아미노산으로는 histidine(939.3mg/100g), lysine(241.4mg/100g), glutamic acid(167.mg/100g), arginine(99.2mg/100g) 등이었다. 제조직후 모든 제품의 총핵산관련물질함량은 366.5-371.5mg/100g으로 거의 차이가 없었고 저장중 약간 감소하였으며, 감소폭은 제품(C)가 가장 컸다. 핵산관련물질은 또든 제품에서 IMP가 전체의 약 반을 차지하였다. TMAO, TMA, 총creatinine 및 betaine의 함량은 제조직후 세제품에서 함량이 거의 차이가 없었으며, 저장중의 감소폭은 세제품 모두거의 비슷하였다. 이상의 유리아미노산, 핵산관련물질, 기타 염기성분의 함량으로 미루어 볼 때 냉동고등어조미육의 맛에 주체적 역할을 하는 것은 유리아미노산이고, 핵산관련물질, 총creatinine, betaine, TMAO 및 TMA는 보조적 역할을 하리라 생각된다.

이비인후, 안, 치아 및 피부증상의 민간요법에 관한 고찰 (Study on the Herb Remedies of ENT, Eyes, Teeth and Skin Problems)

  • The intention of this study is to apprehend the con. tents and methods of herb remedies that are commonly conducted when there are health-problem cases of ENT, eyes, teeth and skin. Methods of this study are divided into two stages : 1) For a period of six months from December 1994 to June 1995, some 40 persons who are believed to be well versed with herb remedies have been randomly chosen, and we made a survey on herb remedies by symptoms: and 2) we have endeavored to make their grounds evident through the studies on literatures with the focus on the basic data collected. Their results are as follows: 1) When one feels a pain in ears, such herb remedies are employed as pouring the vapor into ears, which is made by steaming Alaska pollack, or as applying or wiping with the juices of radish or the ginkgo, or' alum. Applying the radish juice is effective for sterilization and fever removal: and applying the ginkgo juice is effective for cleanliness. But, plastering alum, sesame oil or castor oil, or pouring the vapor of Alaska pollack into ears are perhaps effective but do not have any pharmacologic grounds. 2) When one bleeds at the nose, such kinds of herb remedies are applied as stimulating nose or head with cold water, pressing nose or ridge of nose, or filling up nares with mashed mugworts. In addition, they have utilized garlic or leeks. Such methods as stimulating with cold water or just pressing nose and ridge of nose is based on reasonable grounds, i.e. vasoconstriction and vascular compression ; and applying mashed garlic on the sole of foot is good for the circulation of Qui ; and the use of mugworts and leeks is based upon the pharmacological function of hemostasis. 3) When one feels a sore throat such kinds of herb remedies are employed as gargling or rinsing throat with brine, drinking hot gruel or water, or drinking the juice of mugwort, radish, ginger or Chinese quince. Gargling with brine or drinking the juice of mugwort, radish or ginger is based upon the pharmacological function of pain alleviation, fever removal, and detoxication. 4) When a boil is formed in mouth, such herb remedies are applied as spreading honey, brine or alum water, and taking gall nut, Chinese matrimony vine, lotus root, etc, for drugs. Spreading honey, brine or water that is made by infusing gallnut, Chinese matrimony vine, lotus root is based upon such functions as hematosis, astriction, antibacterial, and antiphlogistic, Alum, eggplant and licorice are said to be effective, but their pharmacological effects have no grounds. 5) When one has conjunctivitis such herb remedies are commonly applied as irrigation with brine and dropping breast milk in eyes. Moreover, such other drugs are used as plantain. shepherd's purse, and purslane, etc. The use of brine, breast milk, plantain, shepherd's purse and purslane is based upon such functions as sterilization, antiphlogistic, disinfection and pain relieving. Eriocaulon sieboldianum, bean stem, bean pod and narcissus leaves are said to be effective, but their pharmacological action have no basis. When one has a stye, such herb remedies are applied as extracting eyelashes, stimulating by a massage of middle finger, third finger or big toe, as well as sear ing with a heated bamboo comb that is fine-toothed. Other than these, plantain and nightshade's nuts are used as drugs for it. Extracting eyelashes corresponds with exclusing suppurative node and draining the stye of pus ; and the use of plantain is based upon disinfection: and nightshade's nuts are said to be effective, however, their pharmacological action has no grounds. 6) For a treatment of toothache, such herb remedies are commonly employed as rinsing mouth with brine and holding cold water or gasoline in the mouth ; and as the drugs that are believed to be effective have been Welsh onion, ginger and castor-oil, plant, etc. The use of Welsh onion is based upon pain killing, antiinflammatory actions, and the use of ginger is based upon detoxication and disinfection ; and seeds of castor-oil plants are said to be effective, but they have no pharmacological basis. 7) When one has hives, such herb remedies are commonly applied as rubbing burned straw in affected parts, exposing to its smoke, rubbing with salt, sweeping down with a broom, and spreading and drinking boiled water of trifoliate orange. The use of cassia tora seeds, walnut, aloe and radish is said to be effective. The use of cassia tor a seeds has the functions of intestinal order, anti-paralysis, etc. The use of walnut has resulted in an increase of blood by invigorating spirits ; and the use of aloe is based upon disinfection, antibiotic, anti-salt, antihistamine and detoxication action. But, the effects of radish juice and straw's smoke have no pharmacological grounds. 8) When one gets a boil, such herb remedies are commonly used as applying a plaster, paste of flour mixed with yolk, soy sauce or honey, as well as spreading pounded elm tree. Other remedies that have been said to be effective are ; heating with mugwort, brine, wild rocambole, aloe, onion, squid's bone, etc. The use of mugwort is based upon pain killing, astringent antiinflammatory and tranquility. Wild rocambole is based upon the generation and maintenance functions of cell-joining textures ; elm tree upon antiphlogistic ; aloe upon fever removal and antiphlogistic ; onion on pain killing, fever removal, antiphlogistic and tranquility ; squid's bone on astriction: and brine or vinegar on sterilization. Pine resin and gardenia seed are said to be effective, but they have no pharmacological basis. 9) When one cuts his skin, such herb remedies are commonly employed as spreading mugwort's juice or squid's bone powder, or pressing the wounds. In addition, kalopanax, onion and fine soil are employed. The use of mugwort, kalopanax and squid's bone is based upon such functions as hemostasis, sedation, pain killing, antibacterial ; and fine soil is said to be effective, but it has no pharmacological basis. 10) When one suffers from whitlow, such herb remedies are commonly utilized as heating with boiled soy sauce, spreading soybean paste, or dipping into eggs, etc. Other drugs that have been employed are onion root, brine, eggplant, potato, loach, etc. The use of onion is based upon pain killing and antiphlogistic functions ; and that of brine upon antiphlogistic function. The use of soy sauce or soybean paste, fomentation, eggplant, potato and loach is said to be effective, but it has no pharmacblogic ground. 11) For the treatment of frostbite, such herb remedies are commonly used as dipping the affected part into frozen soybean sack, using boiled water of eggplant stem, garlic caulis, onion, hot pepper, caulis. Onion is based upon antiphlogistic and tranquility actions garlic upon disintection, metabolic exacerbation, tonic and aphrodisiac actions and the use of eggplant and hot pepper is based upon help blood circulation, dissolution and excretion of waste matters in vein. 12) For the treatment of burn, such herb remedies or drugs are commonly used as cleansing with Korean gin, spreading eggs, cleansing with cold water and soap water ; and as brine, cactus, moss, soybean paste, oil, etc. The cleansing with Korean gin, cold water, soap water, brine, vinegar is based upon cleaning and sterilizing functions ; and the use of cucumber is based upon nu. trition provision, and strengthening of resisting power by adjustment of metabolism. The use of potato, cactus, moss, oil and eggs is said to be effective, but their phamacological functions are not clarified. In view of the above results, we can realize that the drugs that have been employed in herb remedies are quite diverse. However, in regard to majority of herb remedies that have been employed by symptoms, the pharmacological functions of their drugs have not been clarified, and they are merely known as effective. Furthermore, they have not been recorded in the literature as yet ; and we confirm that there have been many herb remedies that were executed without the proper knowlege of their effects. It is now our view that the results of this survey may be utilized for consulting data in regard to the use of herb remedies.

  • 본 연구는 김치의 염도를 낮추고 영양과 기능성을 높이고자 꽃게를 첨가하여 제조한 김치의 이화학적 특성 및 관능평가를 실시하여 최적의 꽃게첨가김치제조 표준레시피를 확정하고자 실시하였다. 꽃게살을 10g, 30g, 50g, 70g, 90g으로 첨가량을 달리하여 김치를 제조하였고, $5^{\circ}C$에서 1일, 15일, 30일 동안 숙성시키면서 일반성분 및 유리아미노산 함량 및 숙성기간에 따른 품질특성을 비교 분석하였다. pH는 꽃게살 90g을 첨가한 경우 15일, 30일 경과 후 4.10, 4.25로 가장 높게 나타났으며 대조군 4.02, 4.13으로 나타나 꽃게 첨가량이 많음에 따라 숙성과정 중 pH변화가 적었다. 산도는 0일째에 대조군 0.5%, 꽃게첨가군 모두 0.7%였으며, 꽃게살 70g 첨가 15일 숙성김치 0.87%, 30일 숙성김치 1.00%로 가장 높게 나타났다. 염도는 대조군 1.26%, 꽃게살 70g 첨가시 1.00%, 90g첨가시 0.93%로 젓갈을 줄이고 꽃게살을 증가시킴으로써 염도는 감소하였다. 유산균수는 꽃게살을 50g 첨가한 김치가 숙성되는 동안 급격히 증가하였다. 김치숙성 중 맛에 영향을 미치는 유리아미노산함량은 대조군 372.6mg%, 꽃게를 첨가한 김치 537.5mg%로 꽃게를 첨가한 경우 높게 나타났으며, 특히 taurine, threonine, glutamic acid, glycine, alanine, phenylalanine 성분이 높게 나타났다. 관능평가 결과 꽃게육수와 꽃게살을 50g첨가하고 $5^{\circ}C$에서 15일간 보관한 김치의 색, 향, 전체적인 기호도가 높게 나타나, 결과적으로 젓갈을 줄이고 꽃게를 첨가하여 제조한 김치는 숙성되어감에 따라 감칠맛, 숙성된 맛의 기호도가 증가하고 염도는 감소하며 산도가 낮음을 알 수 있었다.

  • 젓갈에서 분리한 단백질분해균을 이용하여 속성 저식염 멸치젓의 제조조건과 저장중의 품질 안정성에 대하여 실험한 결과 저식염 멸치젓의 제조조건은 생멸치 100g에 대해 식염 1%, B. licheniformis p-5균 배양액 20m1($3.2{\times}10^{4}cells/ml$), sodium erythorbate 1%를 첨가한 후 $40^{\circ}C$, pH7.0에서 15시간 진탕배양(45strokes/min)시킨 후 저장성과 풍미를 고려하여 NaCl 3%, KCl 4%, 에탄을 4%(w/v), 마늘 및 생강가루 각각 0.5%씩 첨가하는 것이며, 저장중 휘발성 염기질소는 서서히 증가하였고, 히스타민 함량은 제조 직후 17.6mg/100g으로 위생상 안정하였다. 그리고 첨가된 Bacillus 속이 저장기간 동안 총균수의 상당량을 지배하였으며, 유리 아미노산 함량이 분석된 정미성분의 대부분을 차지하였다. 휘발성 성분중 휘발성산이 젓갈의 냄새에 기여도가 켰으며 다음으로 카르보닐 화합물, 염기의 순이었다.
