감자전분 함량이 라면의 물성에 미치는 영향 (Effect of Potato Starch Content on Physical Properties of Ramyon)

  • The physical properties of ramyon made of potato starch at various levels (12, 14 16%) were investigated to find out the effect of potato starch on ramyon quality. The higher starch content in dough, the higher water content after steaming and the lower moisture content after deep frying. As the starch content increased, the magnitudes of extrusion work of cooked ramyon and capillary viscosity of ramyon soup increased but the starting temperature of gelatinization decreased. There was a good correlation ($R^2$=0.99) between extrusion work and capillary viscosity. Firmness and chewiness values measured by texture analyser decreased with increase in starch content while tenderness and overall texture preference evaluated by sensory analysis increased.

  • For the purpose of improving the qualities of popcorn, potato, frozen hotdog and steamed egg, the effects of food height(0mm: HO, 5mm: H5, 10mm, 15mm: H15) for microwave cooking on physicochemical properties were investigated. In popcorn, weight loss was decreased as height increased while volume of popcorn was increased, which indicated that popcorn was poped very well as height increased. H10 showed the highest taste score in sensory evaluation. In potato, degree of gelatinization was increased as hight increased. H10 showed the highest overall acceptance score. In frozen hotdog, hardness of hotdog was decreased as hight increased and H15 showed the lowest hardness score (408.8g). In steamed egg, H5 showed the highest temperature and H10 showed the highest overall acceptance score. Physicochemical properties of food were changed by heating height of microwave heating.

연근 전분의 이화학적 특성 (Physicochemical Properties of Lotus root (Nelunbo nucifera G.) Starch)

  • Physicochcmical properties of the Lotus root starch wert investigated. The shape of starch granules was elliptical with the average size of $20{\sim}35{\mu}$. Starch showed B-type X-ray pattern. The content of amylose was 22.1%. The blue value for starch and amylose were 0.280 and 0.692, respectively. The alkali number was 4.74. By X-ray diffraction examination, gelatinization began at $55^{\circ}C{\sim}60^{\circ}C$ and almost completed at $65^{\circ}C{\sim}70^{\circ}C$.

  • 동진벼(일반계)와 삼강벼(다수계) 전분의 특성을 이해하기 위하여 가열 및 알칼리 호화액에 대한 리올로지 특성을 회전점도계로 비교 검토하였다. 가열 호화액의 리올로지 특성값은 품종간의 차이가 크지 않았으며, 활성화 에너지는 동진벼 전분이 6.73 및 삼강벼 전분이 6.35 Kcal/mol 이었다. 알칼리 호화액의 리올로지 특성값은 뚜렸한 차이를 나타내었으며, 삼강벼 전분의 항복응력 및 점조도지수 값이 동진벼 전분보다 컸다. 가열 호화액은 알칼리 호화액보다 의가소성, 항복응력 및 점조도지수 값이 큰 결과를 보였다.

  • The purpose of this study was to investigate the rheological and thermal properties of yam starch. Yam starch had a hydrodynamic volume with the intrinsic viscosity,[$\eta$], of 0.29dl/g deionized water. The values of the intrinsic viscosity of yam starch, determined to pH 2-11, varied between 0.07 to 0.18 dl/g. The highest intrinsic viscosity was obtained at pH 7. At salt concentrations 0-0.2 M NaCl, the intrinsic viscosity of yam starch was decreased up to 0.05 M NaCl concentration then increased to 0.07 M NaCl concentration and remained constant to reach 0.2 M NaCl concentration. The overlap parameter, calculated with the intrinsic vicosity data, was 3.45 g/dl in deionized water. The thermal properties of yam starch were investigated by Differential Scanning Calorimetry. Three endotherms were observed both pH solution and salt concentation. In the presence of pH 9, the onset temperature of gelatinization peak was the lowest temperature of 50.$32^{\circ}C$ and the enthalpy ($\Delta$H) was increased in this solution. The effect of salt on the thermal properties of yam starch was determined at salt concetration of 0-0.2 M NaCl. The enthalpy significantly decreased to salt concentration 0.07 M NaCl and the lowest onset temperature of this concentration was 52.$90^{\circ}C$.

국내산 밀의 제빵 적성에 관한 연구 (Bread-Making Properties of Domestic Wheats Cultivars)

  • 1997년에 수화된 탑동, 은파, 고분, 우리, 올그루, 금강밀의 6종의 국내산 밀과 표준밀로서 DNS(Dark Northern Spring)의 제빵 적성에 대하여 평가하였다. 회분함량은 DNS가 0.54%인 반면 금강밀을 비롯한 국내산 밀의 회분함량은 고분밀을 제외하고 그보다 낮았으며 단백질함량은 DNS가 11.68%였고, 금강밀이 13.85%, 은파밀 12.53%, 고분밀 12.32%로 표준밀보다 높은 단백질함량을 보였다. Farinograph에 의한 Valorimeter value는 금강, 고분, 은파밀이 표준밀 DNS보다 좋은 결과였으며 Extensograph에서는 저항도가 45, 90, 135분에서 각시간 별로 증가하였으며, 탑동밀과 고분밀이 DNS보다 저항도가 컸다. 전분이 호화될 때의 점도 변화를 나타내는 Amylograph에서는 우리밀과 올그루 밀을 제외한 4종의 국내산 밀의 호화온도가 DNS와 같거나 낮아 제빵용으로 적합하였다. 식빵의 외관 특성에서 올그루밀이 표준밀과 다른 국내산 밀에 비해 낮은 점수로 유의적인 차이를 보였고 금강밀은 껍질의 색과 질에서 다른 시료에 비해 높은 값을 나타내 외관 특성이 가장 우수하였다. 식빵의 내부 특성에서는 식빵 단면의 기공, 색상, 향, 맛에서 올그루밀이 낮은 값으로 다른 시료와 유의적인 차이를 보였고 색상에서 고분, 금강밀이 다른 시료와 유의적인 차이를 보였다.

Faba bean 가루 및 녹말의 열역학적 특성과 물리화학적 특성 (Thermal and physiochemical properties of faba bean (Vicia faba L.) flour and starch)

  • 시중에 분쇄된 상태로 판매되는 CFBF와 faba bean 원물을 직접 분쇄하여 제조한 FBF, 그리고 분쇄한 faba bean 가루에서 알칼리 추출법으로 추출한 FBS의 물리화학적 특성을 확인하였다. FBS의 녹말 입자는 타원형에 표면에 갈라짐이 있으며 CFBF와 FBF는 일정하지 않은 크기의 입자를 보였다. FBS는 상대적으로 낮은 용해도와 겉보기 점도를 보여주었다. CFBF와 FBF는 호화 특성을 나타내지 못한 반면 FBS는 비교적 낮은 trough와 높은 setback값의 호화 특성을 보여주어 차이를 나타냈다. FBS의 호화 엔탈피는 12.9 J/g으로 CFBF와 FBF 보다 높은 값을 나타내었다. 상대결정화도에서도 역시 FSB가 CFBF와 FBF와 비교하여 상대적으로 높은 값을 나타내었다. CFBF와 FBF는 여러 실험들의 결과에서 서로 크게 차이 나지 않고 비슷한 경향의 특성을 확인하였으나 FBS는 CFBF, FBF와는 크게 다른 물리화학적 특징들을 보였다. 이는 서로 다른 단백질 함량 때문이라 판단된다. FBS는 녹말 추출을 위하여 NaOH 용액을 이용하여 단백질을 제거하여 단백질 함량이 CFBF, FBF와 비교했을 때 상당히 낮고 단백질을 제거하기 위한 공정 중 녹말의 변화가 있으며 CFBF와 FBF의 단백질은 녹말과 수분의 반응에 관여하여 물리화학적 특성에 영향을 끼쳤다고 판단되었다. 한국에서는 faba bean 가루와 녹말을 다양하게 사용하고 있지 않은데 이 연구의 결과는 식품산업에 faba bean을 적용하기 위한 기초자료로 사용될 수 있을 것이다.

쌀 품종에 따른 증편의 조직특성에 관한 연구 (A Study on Texture of Jeung-pyun According the Kinds of Rice)

  • The composition and polymeric structure of starch are the most important factors to determine the functional properties of rice. In an effort to relate the structural characteristics and its functional properties of starch in rice, molecular structural properties of starch from 6 rice cultivars were analysed. To relate the structure and function of starch the texture of Jeung-pyun made of rice were analyzed during retrogradation. The polymeric structure of rice starch was analyzed by debranching with isoamylase after gelatinization and fractionated with Sephadex G-75 gel filteration. The size fractionated debranched starch was categorized into four groups such as Fraction I, II, III and Intermediate Fraction depending in their max, The fractions with the max higher than 620 nm were designated as Fraction I, while those in the range of 600-620 nm and 540-600 nm as the Intermediate Fraction and Fraction II, respectively. The Fractions with the max lower than 540 were described as Fraction III. The average degree of polymerization (DP) of the Fraction I was estimated to be higher than 200, and those of other fractions, i.e. the Intermediate Fraction I, Fraction II and III were 150,45 and 25, respectively. The levels of Fraction I were varied from II to 35% of total sugar. The Fraction I showed the linear relationship with the amylse contents, and the Intermediate Fraction, which might contain the mixture of short chain of amylose and debranched long chain of amylopectin, were measured to be in the range of 2.7∼8.4%. The levels of fraction II and III, both to be considered as the branches of amylopectin, were ranged 14.5∼23.6% and 39.7∼73.0%, respectively. The ratio of Fraction III to Fraction II describing the degree of branch or compactness of amylopectin was estimated to be around 4.0 for waxy varieties and around 2.0 for high amylose cultivars. With these results, it can be suggested that the degree of branch of the amylopectin may effect on amylose contents of starch or rice versa, To invertigate processing aptitude of different rice cultivars for the preparation of Jeung-pyun, its texture was analyzed by Instron, hardness, cohesiveness, elasticity, gumminess and chewiness of Jeung-pyun made of rice showed the significant relationship with the amylose content. Hardness was increased during retrogradation of product, but the relationship between hardness and amylose content due to not only difference in amylose content but also difference in structural characteristics of starch. In analysis of relationship between structure of rice starch and mechanical properties of Jeung-pyun during retrogradation elasticity did not show any relationship before retrogradation bur during retrogradation showed significant correlation. With these result, it can be suggested that the degree of branch of the amylopectin may effect on elasticity during retrogradation. However hardness, cohesiveness, gumminess and chewiness which were significant different before retrogradation, showed some correlation with structure of rice starch during retrigradation.

당근 분말을 첨가한 Sugar Snap-Cookie의 품질 특성에 관한 연구(1) - 반죽의 리올로지 특성 - (Quality Characteristics of Sugar Snap-Cookie Added to Carrot Powder (I) - Rheology Characteristics of Cookie Dough -)

  • This study involved the making of sugar snap cookies with the addition of carrot powder at two to twelve percent which furnishes modern people with much lacking and needed dietary fiber. The review of the physiochemical properties, rheology and sensory evaluation of such contents resulted in the following findings: The sedimentation value and Pelshenke value all decreased in weak flour with the addition of more carrot powder, in comparison with the control group. The water retention capacity (WRC) and alkaline water retention capacity (AWRC) all increased in weak flour with the addition of more carrot powder in comparison with the control group. As for the gelatinization properties of the test samples measured by rapid visco-analysis, the addition of more carrot powder resulted in the initial pasting temperatures increasing in the case of weak flour, yet showing no significant difference between the control group and the carrot-added groups, as well as the maximum viscosity, minimum viscosity and final viscosity all showed the tendency of decreasing. The addition of more carrot powder led to the peak times in the mixographs for weak flour all exhibiting the tendency of decreasing, which might be interpreted as gradually weaker physical properties of the dough as well as less stability in the shape of the dough in turn.

건조양파착즙박과 건조양파를 이용한 압출스낵의 물리적 특성 (Physical Properties of Extruded Snack Made of Dried Onion and Onion Pomace)

  • In order to use onion pomace produced from concentration processing of onion juice, dried onion pamace and dried onion were mixed with corn grits at levels of 10, 20, and 30% and extruded in a twin-screw extruder. The physical properties of the extruded onion snack were investigated. The expansion ratio of the extruded onion pomace snack and onion snack and onion snack decreased with onion content. The water absorption index decreased with the onion content. The lightness and the redness of the onion snack decreased and increased as the incorporation level of onion increased, respectively. Native corn grits showed crystalline peaks at 15.2$^{\circ}$, 17.3$^{\circ}$, 17.9$^{\circ}$ and 23.3$^{\circ}$. However, the onion snack did not show the crystalline peaks as native corn grits and showed small peaks at 12.9$^{\circ}$ and 19.8$^{\circ}$. The onion snack showed lower gelatinization temperature and enthalpy than raw corn grits regardless of the onion contents. The rupture strength of the onion pomace snack and onion snack increased with the onion concentration.
