감압 튀김 방법이 감자튀김의 품질에 미치는 영향 (Effect of Frying Methods under Reduced Pressures on the Quality of French Fries)

  • 압력별(760, 560, 360, 160 mmHg)에 따른 감자튀김의 품질변화를 호화도, 수분 지방 함량 변화, Texture 측정, 관능평가를 통해 알아보았다. 압력별(760, 560, 360, 160 mmHg)에 따라 감자튀김의 호화도는 각각 60.0, 60.0, 60.0 및 58.0%로 유의적인 차이가 없었다. 수분 함량은 네 압력 조건에서 모두 감소하는 반면, 지방 함량은 약 2.5배 이상 증가하는 경향을 나타내었다. 조직감에서는 경도(Hardness)가 5.5 N으로 160 mmHg가 가장 좋았으며, 상압인 760 mmHg가 3.3 N으로 가장 낮은 값을 나타내었다. 점착성(adhesiveness)과 탄력성(springiness)에서는 네 압력 모두 유사한 값을 나타내었지만, 부서짐성(fracturability)에서는 160 mmHg가 3.64값으로 다른 압력과 비교해 큰 차이로 높은 값을 나타내었다. 관능검사 결과에서는 색(갈색도), 맛, 바삭한 정도의 조직감에서 160 mmHg가 가장 높은 값을 나타내었으며, 전체적인 기호도는 압력이 낮을수록 높은 값을 나타내었다. 이상에서 살펴본 것과 같이 감압 상태로 감자를 튀김 조리하였을 때, 튀김의 호화 정도나 수분 지방 함량에 있어서는 일반 상압 조건 하의 튀김과 유사하면서 관능적인 측면에서 기호도가 높기 때문에 제품으로 적용할 가능성이 있다고 사료된다. 이를 위해서는 영양적인 성분 변화에 대한 연구도 더 진행되어야 하고, 경제적인 측면도 고려되어야 할 것이다.

칼집을 낸 현미의 수화 및 취반 특성 (Hydration and Cooking Properties of Brown Rice Scratched with a Knife)

  • 본 연구는 현미의 취반 시 물리적 특성을 개선하기 위하여 칼날로 일정 깊이 흠집을 낸 현미(0.07 및 0.20 mm SBR)와 일반 현미(NBR) 및 백미(NR)의 수분 흡수 특성, 취반 전 후의 무기질 함량, 취반 시 밥알의 물성 차이 및 엿기름에 의한 가수분해 정도를 측정하였다. 수침에 따른 수분함량, 부피 및 무게 증가량은 수침 210분이 지남에 따라 NBR<0.07 SBR<0.20 SBR=NR순으로 NR과 0.20 SBR이 유사한 수준을 나타내었다. 호화에 따른 쌀의 수분함량은 NR이 51.14%, 0.07 SBR이 42.53%, 0.20 SBR이 44.93%, NBR이 38.36%로 도정도 및 칼집 수준에 따라 유의성이 인정되었다(p<0.05). 호화에 따른 쌀의 경도 변화는 NR<0.20 SBR<0.07 SBR

매실(Prumus mume Sieb. et. Zucc)추출물을 이용한 제빵 적성 (Bread Properties Utilizing Extracts of Mume)

  • In order to study bread properties utilizing extracts of fume, mume bread was baked, adding 0, 0.5, 1.0. 1.5 and 2.0 brix of mume extract to wheat flour. The rheological properties, dough pH, dough volume, bread volume, bread color. bread texture and sensory evaluation were tested to examine bread properties baked adding extracts of mume. The results are as follows: The maximum viscosity measured by amylograph decreased gradually with increasing fume extract concentration, while the gelatinization temperature was going up. The development time measured by farinograph increased with use of mime extract, but stability time decreased. After the first fermentation, dough volume decreased greatly under pH 4.0, and there was same tendency in loaf volume. Lightness and redness of the crumb decreased but yellowness increased. Hardness and fracturability of mume bread were lower than control. In sensory evaluation, fume bread with 0.5 brix muse extract was evaluated as the best in taste, texture, flavor and overall acceptability.

메밀을 이용한 바켓의 특성에 관한 연구 (Study on the Characteristics of Baguettes Containing Buckwheat Flour)

  • The purpose of this study was to investigate the properties of baguettes containing buckwheat flour. Physical properties of the bread flour mixed with buckwheat flour were tested by rapid visco analyzer(RVA), farinogram, and alveogram. Water activity of baguettes were measured and their properties were tested by rheometer. As the amount of buckwheat flour increased the peak viscosity and the holding strength were decreased, but the set back value was increased. Therefore, buckwheat flour prevented the gelatinization process. As the amount of buckwheat flour increased, the consistency and water absorption were increased, but development and stability were lower than the control. The bread flour containing high amount of buckwheat flour resulted in less breakdown and low farinogram quality number. As the amount of buckwheat flour was increased, Pmax, L, G, and W values were decreased on alveogram. The water activity and the springness of all samples were decreased during the storage, but the hardness was increased, especially after two days of storage. The sensory properties of baguette containing 10% buckwheat flour had the best scores.

  • To optimize extrusion cooking condition of single screw extuder for production of puffed rice extrudate using response surface methodology (RSM), moisture content, barrel temperature and screw speed were determined from contour maps, showing relationship between dependent (hardness, expansion ratio, water absorption index, water solubility Index, degree of gelatinization) and independent variables. Optimum operational conditions for production of puffed rice extrudate with suitable quality properties were moisture content 17%, barrel temperature 1$25^{\circ}C$ and screw speed 210 rpm, respectively.

쌀의 수침 시간별 제분 및 쌀가루의 특성 (Milling and Rice Flour Properties of Soaking in Water Time on Moisture Content of Rice)

  • Power consumption, mesh size, moisture content, color difference, amylogram of rice flour milled with water soaked rice were compared with that of rice using dry pin mil process. Maximum water absorbance of rice was 35% for 2.5 hr. Power consumption to mill the soaked rice was less than of dry rice by 6.9kW/100Kg. Moisture content of rice flour from the water soaked rice was 2% higher than that of rice flour from dry rice. Population of flour particle was 52.9% of 60 mesh and 32.6% of 60∼80mesh. Gelatinization temperature of rice flour from the water soaked rice was 30C lower than that of rice flour from dry rice. Maximum and minimum viscosity of rice flour from the water soaked rice after boiling were 296 cps and 158 cps, independently. Brightness and whiteness of the rice flour from the water soaked rice were increased upto 10hr soaking and decreased after 17hr soaking. Brightness and whiteness of the rice flour were 96.17 and 96.02, independently.

쌀의 수분함량별 Tempering에 따른 제분 및 쌀가루의 특성 (Milling and Rice Flour Properties of Tempering Condition on Moisture Content of Rice)

  • Power consumption, mesh size, moisture content, color difference, amylogram of rice flour milled with the water soaked rice were compared with that of rice using dry pin mill process. The rice was soaked in 23, 24, 25, 26% of water for 10hr, independently. The more rice had moisture content, the less power consumption was needed. Power consumption to mill the rice soaked in 25% of water was less than that of dry rice by 6.8kW/100Kg. Moisture content of rice flour from the rice soaked with 25% of water was 2% higher than that of rice flour from the rice soaked with 23% of, water. Population of flour particle from the rice soaked with 24-25% of water was 45.7∼46.25 of 60 mesh, 9.7∼10.4% of 80∼100 mesh and 7.7∼8.1% of 100 mesh. Gelatinization temperature of rice flour from the rice soaked with 23% and 24∼25% of water was 65.70C and 64.50C, independently. Temperature of rice flour from the rice soaked with 23% 24∼25% of water sith minimum viscosity was 85.50C and 88.4∼88.70C, independently. Brightness and whiteness of the rice flour from the rice soaked with 24∼25% of water were 95.90∼95.95 and 905.82∼95.94, independently. Brightness and whiteness of the rice flour from the soaked rice were 1.2 and 1.7 higher than that of rice flour from the dry rice, independently.

  • 혼합분과 강력분의 farinograph 수분 흡수율, 반죽형성시간, 연화도는 녹차가루 첨가량(0~5%)이 증가할수록 증가하였으며, 안정도는 혼합분은 점차 증가하였고, 강력분은 점차 감소하여 다른 경향을 보였다. 혼합분, 강력분 모두 녹차 첨가량이 증가할수록 반죽의 신장도는 감소하고, 신장 저항도는 증가하여 전체적으로 반죽이 경직되는 경향을 보였다. Amylogaph에서 혼합분과 강력분 시료 현탁액 모두 녹차가루 첨가로 호화개시온도가 상승하였고, 최고호화점도는 감소하였다. DSC에 의한 밀전분의 호화특성에서 환원성 물질인 녹차의 카테킨 성분은 밀전분의 결정질 구조의 용융을 촉진하는 것으로 나타났다.

찹쌀의 겨층 구조 및 전분의 몇가지 성질 (Bran structure and some properties of waxy rice starches)

  • 찹쌀현미의 호분층 수는 등부가 배부보다 많았고, 호분층 및 과피의 두께도 배부보다 등부 쪽이 두꺼웠으나 겨층구조는 품종마다 독특하였다. $60^{\circ}C$에서의 현미의 수분흡수속도는 다수계(한강찰벼와 백운찰벼)는 서로 비슷하였고 일반계(신선찰벼)보다 빨랐다. 고유점도는 한강찰벼가 1.92, 백운찰벼가 1.84, 신선찰벼가 1.73$dlg^{-1}$이었다. 시차주사열량기에 의한 전분의 호화온도는 백운찰벼가 가장 높았고, 한강찰벼가 가장 낮았다. 호화에 필요한 최소한의 수분함량은 한강찰벼가 38.0%, 백운찰벼가 36.3%, 신선찰벼가 37.8%이었다.

주박을 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk with Makgeolli Lees)

  • The physicochemical, mechanical properties and sensory evaluation of sulgidduk using different ratio of makgeolli lees were investigated. The pH decreased as the amount of makgeolli lees increased, but acidity increased. The soluble solids increased as the amount of makgeolli lees increased but there were no significant difference. The L value decreased and value increased the amount of makgeolli lees. The degree of gelatinization of sulgidduk containing makgeolli lees was high at day then decreased time. As the lees increased, the degree of gelatinization decreased. In all treatments (except control) degree of retrogradation increased 2 days then decreased. As the amount of makgeolli lees, hardness increased but chewiness, adhesiveness, springiness, and cohesiveness significantly decreased. Sensory evaluation results, browness was high while sweetness, moistness, softness low as the amount of makgeolli lees. In overall acceptability, MLS6 was high (4.92). In conclusion, sulgidduk 6% makgeolli lees was found to excellent, when consider dietary fiber content and acceptability.
