Analysis of Sclerotia and Sporophores of Pleurotus tuber-regium Fr. an edible mushroom in Nigeria

  • Chemical analysis of both sclerotia and the fruits of Pleurotus tuber-regium showed higher values for such elements as calcium(Ca), iron(Fe), zine(Zn) in the fruits than in the sclerotia. On the contrary magnessium(Mg) was found to be higher in sclerotia than in the fruits. protein and carbohydrate were also found to be more in the fruits. There was no significant difference between the chemical values of old(1 year) and fresh sclerotia. Oil palm fruit fibre substrate produced sporophores with higher values for the minerals, protein and carbohydrate than those on riversand substrate.

Respiratory Characteristics and Quality Attributes of Mature-Green Mume (Prunus mume Sieb. et Zucc) Fruits as Influenced by MAP Conditions (포장조건에 따른 청매실의 호흡생리 및 선도유지 특성)

  • The respiratory characteristics and quality attributes of mature green mume fruits as influenced by modified atmosphere packaging(MAP) conditions during storage at 25oC for 8 days were investigated. The quality attributes of mume fruits were evaluated in terms of fresh weight loss, physiological injury and yellowing. The packaging materials used for MAP were low density polyethylene(LDPE) films with various different thicknesses. Yellowing and fresh weight loss of mume fruits were noticeably reduced by the packaging treatments with LDPE A and B. The physiological injury of the fruits during storage was found to be more severe in LDPE C than others. For LDPE A and B, the oxygen and carbon dioxide contents within the packages of Mume fruits maintained at the levels of 2~3% and 7~8%, respectively. With respect to visual quality, MAP prolonged the shelf life of the fruits much longer compared with the unsealed control. From the experimental results, it is suggested that the LDPE films with the gas trans mission rates of about 2,100 O2 ml/m2.day.atm and 6,700 CO2 ml/m2.day.atm would be proper for MAP of mature green mume fruits during storage at ambient temperature.

Isolation and Identification of Postharvest Spoilage Fungi from Mulberry Fruit in Korea

  • BACKGROUND: Spoilage fungi can reduce the shelf life of fresh fruits and cause economic losses by lowering quality. Especially, mulberry fruits have high sensitivity to fungal attack due to their high water content (> 70%) and soft texture. In addition, the surface of these fruits is prone to damage during harvesting and postharvest handling. However, any study on postharvest spoilage fungi in mulberry fruit has not been reported in Korea. This study aimed to examine the spoilage fungi occurring in mulberry fruits during storage after harvest. METHODS AND RESULTS: In this study, we isolated postharvest spoilage fungi from mulberry fruits stored in refrigerator (fresh fruits) and deep-freezer (frozen fruits) and identified them. In the phylogenetic analysis based on comparisons of the ITS rDNA sequences, the 18 spoilage fungi isolated from mulberry fruits and the 25 reference sequences were largely divided into seven groups that were subsequently verified by high bootstrap analysis of 73 to 100. Alternaria spp. including A. alternate and A. tenuissima, were the most frequently isolated fungi among the spoilage isolates: its occurrence was the highest among the 18 isolates (38.9%). CONCLUSION: The findings of this study will be helpful for increasing the shelf life of mulberry fruits through the application of appropriate control measures against infection by spoilage fungi during storage.

Development of Predictive Models of Listeria monocytogenes in Fresh-Cut Fruits and Vegetables (신선편의 냉장·냉동 과채류에서 Listeria monocytogenes의 예측모델 개발)

  • Processing fresh produce into fresh-cut products increases the risk of bacterial growth and contamination by breaking the exterior barrier of produce. Our objective in this study was to develop predictive models of Listeria monocytogenes in the fresh-cut salad, fresh-cut pineapple, and frozen mango. Predictive growth and survival models were developed to predict the change of L. monocytogenes populations in the fresh-cut salad (4, 10, 12, 13, 17, 25, and 36℃), fresh-cut pineapple (4, 10, 17, 25, 30, and 36℃), and frozen mango (-2, -10 and -18℃) as a function of temperature. The growth of L. monocytogenes in fresh-cut salad and pineapple was observed at above 13℃ and 10℃, respectively. The growth of L. monocytogenes in pineapple was faster than in salad. The delta value of L. monocytogenes in frozen mango increased as the storage temperature decreased. The results indicate that L. monocytogenes behave differently according to the physicochemical properties of fresh-cut fruits and vegetables. Since L. monocytogenes grow and survive well in refrigerated and frozen conditions, management programs and preventive controls for the processing of fresh-cut produce should be effectively implemented to enhance the safety of fresh-cut fruits and vegetables at retail markets.

  • In response to the continuous changes in current consumer demands and market trends for postharvest produces, the functional application for agricultural packaging is becoming increasely significant. This paper focuses on the overview of important changes in physical and chemical status related to postharvest physiology and applications of the functional packaging materials for maintaining the freshness of fruits after harvest. During postharvest treatment and storage periods, fresh fruits undergoes the ripening process in quality attributes of the fruit such as major changes of texture, color, and flavor. Major fruit packaging technologies are concerned with correct gas permeable film and functions of ethylene removal, antimicrobial, and antifogging substances to keep the effective freshness. Application guidelines for the functional packaging in fresh produces were studied.

  • From the fresh unripe fruits of Paeonia moutan Sim. (Paeoniaceae), paeoniflorin and its acyl congeners, benzoylpaeoniflorin and benzoyloxypaeoniflorin, along with ${\beta}-sitosterol$ and methyl gallate were isolated. All compounds were identified on the basis of spectral data and chemical reactions. However, paeonol was not detected from this plant parts. These results suggested that the chemical components of the unripe fruits were virtually similar to those of root barks.

  • Schisandra chinensis is a fruit which is called Omija in South Korea. The Korean word Omija means "five flavors" (sweet, spicy, sour, bitter, and salty). The aim of his study was to investigate the correlation between growth characteristics and lignans (gomisin A, gomisin N, schisandrin) contents of Schisandra chinensis. The method for determining lignans was validated by measuring the linearity, limit of detection (LOD), limit of quantification (LOQ), precision and accuracy using UPLC-UV. Growth characteristics of S. chinensis such as number of fruits per fruit bunch, length of fruit bunch, width of fruit bunch, fresh weight of fruit bunch, length of fruit, width of fruit, fresh weight of fruit, fresh weight of 30 fruits, and sugar contents of fruit were measured. From the results of correlation analysis, it was found that the contents of lignans showed a significantly negative correlation with fresh weight and sugar contents of fruit. These results will be used to study for quality control of S. chinensis fruit.

Microbiological quality of fresh cut fruits in Korea (국내 신선편이 과일의 미생물 품질 평가)

  • This study was performed to evaluate the microbiological quality of fresh cut fruits in Korea. Forty freshly cut fruit samples were assessed for aerobic mesophilic count (AM), aerobic psychrophilic count (AP), total coliform, generic Escherichia coli, yeast and mold (YM), Bacillus cereus, Staphylococcus aureus, Salmonella spp., and E. coli O157:H7. The average value for AM, AP, and YM was 4.51, 5.35, and 4.31 log CFU/g, respectively. The average of the total coliform was 2.42 log CFU/g, and E. coli was not detected in all samples. For foodborne pathogen bacteria, B. cereus and S. aureus were detected in 2.5 and 7.5% samples, respectively, and Salmonella spp. and E. coli O157:H7 were not detected in all samples. Among the samples, pear generally had the highest contamination level. Therefore, to assure the safety of fresh cut fruits, low temperature and thorough hygiene management should be implemented.
