Classification of Korean Green Tea Products Based on Chemical Components

  • The prices of domestic green tea products are relatively expensive and price differences within products of the same levels of quality are various. Also, there is no basic criteria on evaluation of green tea quality. To group 43 commercial green tea products into several parts by the principal component and cluster analyses, this work was done by use of 8 chemical constituents which were analyzed by NIR system. The principal component and cluster analyses revealed 8 groups. The first group included 16 products that had lower free amino acid and theanine contents. The second group included 5 products having higher free amino acid and theanine contents, but lower ash contents. The third group included 13 products showing medium values of 8 constituents. The IV group included 4 products having higher contents of moisture, free amino acids, and theanine. The V group included 1 product showing higher moisture but lower catechins contents. The VI group included 2 products that had higher moisture and catechins contents, but lower free amino acid and theanine contents. The VII group had higher moisture and catechins contents. The VIII group had higher ash and vitamin C contents. The free amino acid contents which were the most important in flavor evaluation of green tea quality did highly positively correlate with the contents of total nitrogen $(0.956^{**}),\;theanine\;(0.981^{**}),\;and\;caffeine\;(0.793^{**})$, but negatively with the contents of ash $(-0.884^{**})$. The catechins used as for functional ingredients did correlate with contents of caffeine(+) and vitamin C(-), respectively.

The Compents of Free Amino Acids Nucleotides and their Related Compounds in Soypaste made from Native and Improved Meju and Soypaste Product (재래식, 개량식 된장과 시판된장의 유리아미노산, 핵산과 그 관련 물질 함량)

  • The free amino acids, nucleotides and their related compounds in soypaste made from native and improved meju and soypaste product purchased from the market were investigated by amino acid autoanalzer and HPLC, respectively. The glutamic acid contents in each soypaste were great in order of improved) native ) products. The total free amino acid contents in soypaste made from improved meju showed the highest level and those of the soypaste made from native meju showed the lowest level. GMP content in those made from native and improved me was greatest among the nucleotides and their related compounds.

Analysis of Free Amino Acids and Polyphenol Compounds from Lycopene Variety of Cherry Tomatoes (방울토마토 라이코펜 품종의 유리아미노산 및 폴리페놀 화합물의 분석)

  • In order to elucidate the usefulness of Lycopene, a cherry tomato variety, as a food material, the compositions of free amino acids, amino acid metabolites and polyphenol compounds were analyzed using HPLC and LC-MS/MS method. Lycopene contained eighteen free amino acids except for L-Cys and L-Try. L-Glu was the most abundant free amino acid, followed by L-Gln and L-Asp. The percentages of L-Glu, L-Gln and L-Asp of total free amino acid were 55.5%, 15.9% and 9.9% respectively. Lycopene contained essential amino acids with the exception of tryptophan. The following amino acid metabolites were found : ${\gamma}$-aminobutyric acid(GABA), carnitine(L-Car), o-phosphoethanolamine(o-Pea), hydroxylysine(Hyl) phosphoserine (p-Ser), N-methyl-histidine(Me-His), ethanolamine($EtNH_2$). Especially, GABA known as a neurotransmitter was present at a high level(305.99 mg/100 g dry weight). We identified the following polyphenol compounds in the cherry tomatoes : caffeic acid-hexose isomer I (CH I), caffeic acid-hexose isomer II (CH II), 3-caffeoylquinic acid(3-CQA), 5-caffeoylquinic acid(5-CQA), caffeoylquinic acid isomer(CQAI), quercetin-hexose-deoxyhexose-pentose(QTS), quercetin-3-rutinoside(Q-3-R), di-caffeoylquinic acid(di-CQA), tri-caffeoylquinic acid(tri-CQA), naringenin chalcone(NGC). Large quantities of Q-3-R and NGC known as bioactive compounds were found. These results revealed that Lycopene variety contained various nutritional and bioactive compounds and would be a potent functional food material.

Changes in Flavor Components during Ripening of Fermented Sausages (발효소시지의 숙성에 따른 풍미성분의 변화)

  • Fermented sausages inoculated with starter cultures which were combined Lactobacillus curvatus and Staphylococcus carnosus(LCSC), Lactobacillus plantarum and Staphylococcus carnosus(LPSC) were manufac-tured. changes in chemical composition salinity weight loss fatty acids inosine monophosphate(IMP) and hypoxanthine (Hx) and fee amino acids during ripening of fermented sausages were investigated. Due to drying the water content was decreased while the protein and fat contents salinity and weight low were increased during ripening. No significant differences between LCSC and LPSC were found for chemical composition salinity and weight loss. During ripening unsaturated fatty acid contents was dec-reased while saturated fatty acid contents was increased. At the end of the ripening the levels of mon-oenes were slightly higher in the LPSC than in the LCSC. In both treatments IMP contents were dec-reased but no changes were observed in Hx contents during ripening. Due to ripening the increase in total and individual free amino acids were observed and contents of glutamic acid alanine leucine and lysine were greatly increased.

Changes in Free Sugars, Organic Acids, Free Amino Acids and Minerals by Harvest Time and Parts of Acanthopanax koreanum (섬오갈피의 수확시기와 부위에 따른 유리당, 유기산, 아미노산, 무기물의 함량 변화)

  • In order to determine the optimum harvest time of Acanthopanax koreanum Nakai, free sugars, organic acids, amino acids and minerals were investigated. Ash, crude fat and crude protein of 4-age's tree of Acanthopanax koreanum were $2.98%{\sim}3.90%,\;1.93%{\sim}2.34%,\;3.52%{\sim}4.23%$, respectively. Minerals were 835.9 mg/100g of K, 971.3 mg/100g of Ca, 168.7 mg/100g of Mg, 38.8 mg/100g, of Na, 18.6 mg/100g of Fe, and 8.5 mg/100g of Cu on average, respectively. Calcium content was increased distinguishably as late as harvest time, especially in stem and root. Glucose, fructose and sucrose content of stem were $0.71{\sim}0.75%,\;0.31{\sim}0.03%,\;and\;0.16{\sim}0.21%$, respectively. Organic acid was $381.0\;mg/100g{\sim}504.9\;mg/100g$, and was mainly consisted of succinic acid, citric acid and malic acid. Twelve kinds of free amino acids were detected. Total amino acids was $33.56\;mg/100g{\sim}48.60\;mg/100g$, and it was the highest on samples harvested at September. Arginine, phenylalanine and glutamic acid were the main free amino acids of stems.

Studies on the Amino Acid Components of Korean Hazel Nut (한국산(韓國産) 개암 종실(種實)의 아미노산 조성(組成)에 관한 연구)

  • Free and total amino acids of Korean hazel nut (Corylus heterophylla Fisch. var. Japonica koidz.) were identified by amino acid autoanalyzer (Technicon PNC-1 type). The results indicate that among 16 kinds of all free amino acids contained in hazel nut, arginine was the richest, and then came glutamic acid, proline, alanine, tyrosine and valine in that order. From the total amino acids which were closely related with the nutritional valuation, arginine was in the richest amount and then came with glutamic acid, proline, leucine, aspartic acid and valine.

  • Coral damselfish (demoiselle), Chromis notatus, has been one of the most tasty sea foods in Jeju-Do, Korea, The free amino acids in tile extracts of Chromis notatus were analysed by amino acid autoanalyser. In the extracts, taurine, lysine, glycine and alanine were abundant, holding $30.3\%,\;22.7\%,\;16.0\%\;,\;11.5\%$ of total amino acid content, respectively and followed threonine, glutamic acid and serine, in order. While methionine, histidine, leucine, isoleucine, valine were poor and aspartic acid and proline were trace in content.

Quality Characteristics of Kimchi Fermented with Abalone or Sea Tangle Extracts (전복과 다시마 추출물을 첨가한 김치의 발효 특성)

  • This study evaluated the quality characteristics of fermented abalone-kimchi or sea tangle-kimchi during 28 days of storage at $4^{\circ}C$. Abalone and sea tangle were added as extracts compared to a control. We analyzed lactic acid bacteria, pH, acidity, salinity, reducing sugars, free sugars, organic acids, free amino acids, and sensory characteristics. The lactic acid bacteria levels were 4.4~5.3 log CFU/g on day 0, 6.8~7.1 log CFU/g after 7 days, and continued to rise during the fermentation period. The salinity increased slightly over time. As fermentation progressed, pH and reducing sugars, free sugars, and organic acid contents decreased. Free sugars, in particular, dramatically decreased about 70% compared to the initial day. The total free amino acid content was higher in abalone-kimchi. In terms of free amino acid contents, taurine was high in abalone-kimchi, while glutamic acid and aspartic acid content was high in sea tangle-kimchi. The sensory evaluation results show that abalone-kimchi and sea tangle-kimchi had higher scores for their savory taste and overall acceptance compared to the control.

  • The livers of the wistar strain male rats which had been mentioned in our study were analyzed by the micro-bioassay method for comparison of the levels of free branch-amino acids(valine, leucine, isoleucine) and phenylalanine, methionine, tyrosine. Rats which were fed on diet of higher protein score contained correspondingly higher level of free branch-amino acid in their liver while the levels of phenylalanine, methionine, tyrosine showed unrecognizable relationship with the protein score of the diet used.

  • Induction of symbiosis between N. muscorum and cultured tobacco cells associately cultured on nitrogen-free medium and effects of polyamines on culture condition were carried out. Analysis of amino acid composition in associate cultures showed increase in total amino acid amounts than single culture of cultured tobacco cells and methionine was markly increased in associative culture on N-free medium treated with 1 mM spermine. These results indicated that the composition of amino acids increased effectively in associative cultures by nitrogen fixation of N. muscorum.scorum.
