Mutagenicity and Immune Toxicity of Emulsion-type Sausage Cured with Plasma-treated Water

  • Cold plasma has been developed to reduce microbial contamination and to improve safety of food and medical products. In addition, the technology can be used in the manufacture of sausages without addition of nitrite. To be applied in food industry commercially, the new technology should be safe and efficient. However, toxicological test of plasma-treated food is limited. Therefore, the purpose of this study was to determine the mutagenicity and immune toxicity of the meat products cured with plasma-treated water (PTW) as a nitrite source. Emulsion sausages were prepared with no nitrite (control), sodium nitrite (SCS), and PTW (SCP). For a mutagenicity test, the Ames test was performed with the sausage samples. For immune toxicity test, 8-wk-old female Balb/c mice were given free access to the sausages in order to evaluate the tumor necrosis factor (TNF)-α level. As a result, no mutagenicity was detected in the sausages by the Ames test. The serum TNF-α values were less than 10 pg/mL in mice after feeding control and treated samples for 32 d, indicating that no inflammatory response was occurred by feeding the sausages made by PTW. Therefore, the present study opens the possibility of using plasma-treated water as a nitrite source without any toxicity.

Dietary Intakes and Food Sources of Total Sugars from Korean National Health and Nutrition Examination Survey 2001-2002 (한국인의 총당류 섭취실태와 급원식품에 대한 연구 -2001년과 2002년도 국민건강영양조사 자료를 이용하여-)

  • This study aimed to assess the total sugar intake for Korean and to identify major food sources contributing to those food components. Korean adults aged over 20 years old from the Korean National Health and Nutrition Examination Survey (KNHANES) 2001 and 2002 were selected. The data were analyzed to obtain nationally and seasonally representative information on the health and nutritional status of the Korean. Forty food groups were used in identifying food sources of total sugar and energy intake. Total sugar contents of foods in the KNHANES data sets were estimated by food code matching technique with Release 18 of the USDA National Nutrient Database for Standard Reference. Sample weighted means, standard errors, and population percentages were calculated using SAS and SUDAAN. The mean total sugar intake of the Korean was 60.3g in 2001, 40.9g in spring 2002, 45.7g in summer 2002, and 52.1g in fall 2002, which were 30-44% of intake of US people. Fresh fruit was identified as the most significant food source for total sugar intake in Korean population in all age groups and all seasons. The next major food sources following fresh fruits were candy/jelly/syrup/honey, coffee/coffee caream, vegetables, Kimchi, soft drinks, milk, fruit juice, cookie/cracker/cake, and vegetable juice/grain juice, which showed similar results through the seasons. While carbonated soft drink was the most significant food sources for total sugar or added sugar intakes for US people. The total sugar intakes were significantly higher in women, higher educational level, and residing in metropolitan area. As intake of total sugar increased, intakes of protein, fiber, calcium, phosphorus, iron, Vit A, B1, B2, C, niacin showed significantly increased, while high intakes of added sugars showed low intakes of some micronutrients in the US people. Percentages of people who consumed nutrients below EAR were less in higher total sugar intake group than in lower intake group. From these results, we can conclude that the food consumption habits including the total sugar intake of Korean people seems relatively good so far. More reliable database of total sugar and added sugar composition tables in public domain should be established in the future, and also more researches about total sugar and added sugar for Koreans should be continued.

Development of a fatty acids database using the Korea National Health and Nutrition Examination Survey data (국민건강영양조사 자료를 이용한 지방산 데이터베이스 구축)

  • Purpose: The objective of this study was to develop a fatty acid database (DB) for estimation of intake levels of fatty acids in the Korean population, using data from the Korea National Health and Nutrition Survey (KNHANES). Methods: Analytical values of fatty acids in foods were collected from food composition tables of national institutions (National Fisheries Research & Development Institute, Rural Development Administration), Japan Ministry of Education, Culture, Sports, Science and Technology, US Department of Agriculture, and journal articles that previously reported analytical fatty acid content of some Korean foods. The coverage of fatty acids was C14:0, C16:0, C18:0, C18:1, C18:2 n-6, C18:3 n-3, C20:5 n-3 (EPA), C22:6 n-3 (DHA), SFA, MUFA, and PUFA (n-3, n-6, n-9). The fatty acids DB covered a total of 5,144 food items used in the KNHANES nutrition survey. The food items were preferentially filled with analytical values of the collected data source. An analytical value for each food item was selected based on the priority criteria and the quality evaluation of data sources. Missing values were replaced with calculated or imputed values using the analytical values of similar food items from the data source. Results: A total of 1,545 analytical values, 2,589 calculated values, and 1,010 imputed values were included in the fatty acid DB. The developed fatty acid DB was applied to 2,112 food items available for 2011 KNHANES data. Mean intake levels of total fatty acids and saturated fatty acids were 40.3 g/day and 13.2 g/day, respectively. The estimation of total fatty acid intake was 84.3% (men 83.2%, women 86.0%) of daily total fat intake. Conclusion: This newly developed fatty acid DB would be helpful in determining the association of fatty acids intake and related health concerns in the Korean population.

Measurement of VOCs Concentrations at Jeonju Industrial Area and Emission Characteristics (전주공단지역의 주요VOCs 배출농도 측정 및 배출원별 특성 분석)

  • It will be necessary to make proper management plans to preserve the air quality in good level for the public. In order to make these plans, source information and detail emission inventories of the city and near industrial areas should be given. However, lack of the source measurements data makes us more difficult to complete the source inventory. VOC source Inventory could be utilized for the feasibility study to estimate the contribution of VOC sources presenting to the receptor such as residential area. It may give policy maker an idea how to control the air quality, and improve their social environment in the area. This study shows data that measured VOCs concentrations from the local industrial areas in Jeonju during from May 2005 to January 2006. The samples were collected from the near sources in 7 major factories in the industrial park as well as 5 general sources in near city Jeonju area to elucidate the abundances of speciated VOCs and their spacial and temporal distributions depending on source bases. Industrial sources are as follows; chemical, food, paper, wood, metal, non-metal (glass), and painting (coating) industries. The 5 general sources are sampled from tunnel, gasoline gas station, dry cleaning shop, printing (copy) shop, and road pavement working place in urban area. To understand the near source effect at receptor, samples from the 2 receptor sites (one is at center of the industrial complex and the other site is at distance residential area downwind from the center) were collected and analyzed for the comparison to source concentration. The mass contributions of the speciated VOC to total mass of VOCs measured from the different sources and ambient (2 receptors) were presented and discussed.

Studies on Production and Characteristics of Edible Red Color Pigment Produced by Mold(Monascus sp.) (홍곡곰팡이를 이용한 식용적색 색소의 제조 및 이의 성상에 관한 연구)

  • 1) Higher yield of red color was observed by the isolated strain (Monascus D-7) than the type cultures in steamed rice medium. 2) In a case of Monascus purbigerus IAM 8004, best yield of color was obtained at Lin's submerged culture medium containing 1% wheat bran, 2% starch and 3% corn meal instead of rice powder as carbon source. However, in a case of isolated strain (M. D-7), good result was shown at 1% rice bran and 2% starch as a source of carbon in Lin's medium. 3) Good yields were obtained from both strains in Nishikawa's medium which was added with 3% defatted soybean flour. 4) There were no significant differences in pigment extractability among solvents. Extracted pigment was stable in wide range of pH and heat, whereas relatively unstable in sunlight. 5) Toxicological study of extracted pigment determined $LD_{50}$ at 0.2539g/20g, when injected in mouse. When injected in to mouse in 25% ethanol solution: considering the toxicity of ethanol, the toxicity of pigment itself is believed to be none.

Role of oyster mushroom as an alternative fermentation source in the growth of white-spotted flower chafer(Protaetia brevitarsis seulensis) (사료 발효원으로 느타리버섯 종균이 흰점박이꽃무지 생육에 미치는 영향)

  • Effective microorganisms (EM), which are sources of fermentation byproducts in herbal medicine, were compared with oyster mushrooms(OM) to identify alternative larval feeds for white-spotted flower chafer (Protaetia brevitarsis seulensis). The nutritional composition of each fermented feed was analyzed. The content of crude protein, crude fat, and fiber was higher in the OM fermented feed, except for crude ash. No difference in nutritional content of larvae based on fermented feed was observed. A comparative weekly analysis of the live weights of larvae was based on the fermented feed used. The average weight was significantly higher in the feeds using EM and OM from third week of observation. The larval survival rate in the presence of fermented feed was 96.7% compared with 9.8% with non-fermented feed. The results suggest that fermented food source is essential for the growth of white-spotted flower chafer, and OM was a stable alternative to EM as a fermentation source for the survival of white-spotted flower chafer.

Consumer′s Recognition and Using State about Food-Nutrition Labeling System among Twenties (식품영양표시 제도에 대한 소비자 인식 및 이용실태-20대 남녀를 중심으로 -)

  • This study was accomplished to investigate the recognition and the using practices about food-nutrition labeling system of 20's consumers. Two hundred and fifty-four man and women were examined using the questionnaire. The results were as follows. 1. The degree of recognition of subjects about food-nutrition labeling system was low (43.3%) and the using practices were even lower (18.1%). 2. The items considered as important were in the order of shelf life, manufactured date and cost. 3. The confidence score to the food-nutrition labeling system of consumers was 3.2 and was higher in the females compared to males. 4. The preferred method of food-nutrition labeling was in the order of picture and graphic type method, table type method and descriptive type method. 5. The expected effects of the current food-nutrition labeling system were easy to select foods for the prevention of the adult diseases and diet therapy. From these results, we might propose the conclusion as follows: Food-nutrition labeling system might be a good source of nutrition information and the consumers'demand for disease-prevention and dietary purpose. Therefore, the agencies concerned should make an every effort for the successful implementation of food-nutrition labeling system.

Market Segmentation and Satisfaction according to the Motives of Food Festival Attendants - Focusing on the Case of Seoul Food Festival - (푸드 페스티발 참가자의 동기에 따른 시장세분화 및 만족의 차이 - 서울푸드페스티발을 중심으로 -)

  • The motives of festival attendance have been used as a valuable marketing tool for promotion and understanding segment characteristics. This study attempted to segment the food festival market based on delineated motives and find the difference of characteristics and satisfaction among the segments. The study also explored the influence of motivation factors on satisfaction. The results are as follows : (1) Derived factors of the motivation of food festival attendance were 'food', 'information', 'education', 'cultural events', and 'experience'. (2) A cluster analysis identified two segments for five motivation factors. Two segments named 'utilitarian motivation group' and 'hedonic motivation group' were found to be different according to age, occupation, income, company, information source. (3) Two groups show the difference on satisfaction about festival programs. Utilitarian motivation group was more satisfied with 'holiday food performance' and 'food performance', whereas hedonic motivation group presented more satisfaction with 'cocktail show'. (4) Three(cultural events, food and information) out of five motivation factors had significant influence on satisfaction.

Polymethoxylated Flavone Extracts from Citrus Peels for Use in the Functional Food and Nutraceutical Industry

  • Polymethoxylated flavones (PMFs) extracted from Citrus sinensis 'Jincheng' peel were characterized by chromatographic and spectroscopic techniques. Seven individual PMF were identified. 3, 3', 4', 5, 6, 7-hexamethoxyflavone (HEX), nobiletin (NOB), heptamethoxyflavone (HEP), 5-demethylnobiletin (DN), and tangeretin (TAN) were characterized through electrospray ionization mass spectrometry (ESI-MS) in positive mode of protonated molecular ions $[M+H]^+$, the diagnostic fragment ions, together with the UV-Vis spectra and high performance liquid chromatography (HPLC) elution order from literature data. Sinensetin (SIN) and tetramethyl-O-scutellarein (SCU) were isolated and identified through their MS, $^1H$ nuclear magnetic resonance (NMR) and UV-Vis spectral studies. The levels of PMFs in peels from different cultivars of citrus fruits grown in China were determined for the first time. The results showed that C. aurantium 'Bitter orange' peel was the most promising variety for HEP. C. sinensis peel was a good source for SIN and SCU.

Review of Food Therapy and Development of Diet Therapy Program for Diabetes Mellitus in 「Sikryochanyo」 (「식료찬요」 속 소갈(消渴) 식치방(食治方) 고찰과 이를 활용한 당뇨질환 예방 식단 개발)

  • Century-old nutrition and health concepts can be revived and applied in the modern age in the forms of newly developed menus, recipes, and lifestyle education. Current medical nutrition therapy concepts were first described in the Chosun Dynasty (1392-1897) in Korea based on the philosophy that food and medicine originate from the same source, which is known as 'food as medicine'. Recognizing the importance of culture, tradition, local diet, and lifestyle on health and medical nutrition therapy, we tried to rediscover traditional Korean approaches towards food consumption and nutrition through systematic review of the literature and developed contemporary menus accordingly. The medical nutrition therapy prescriptions described in 'Shikryochanyo' (1460) by the Chosun Dynasty's royal physician Soonyi Jeao cover 45 different diseases. In this project, we developed contemporary menus for those disease models that are most prevalent in modern society. Menus developed with foods that are readily available today were evaluated for their nutritional content and adequacy using a computer-aided nutritional analysis program (CAN pro 3.0, developed by the Korean Nutrition Society for comparison with RDA for Koreans). Therefore, century-old nutrition and health concepts can be revived and applied in modern society as newly developed menus recipes and lifestyle education.
