  • The consumption of bread as the principal food is increasing. The taste of bread depends on the components of raw materials. Though the knowledge about the raw materials of bread is important for the development of new products and the cost accounting, it is difficult to find the study on the role of raw materials in making bread. Therefore, the purpose of this study is to integrate the existing theoretical study on bread. Then, it will provide the basic knowledge on the raw materials in making bread in order to develop the technique of making bread.

Recognition, Preference and Improvement Requirement of Traditional Korean Food of Elementary School Students in Seoul (한국전통음식의 계승·발전을 위한 초등학생의 인지도, 기호도와 개선 요구도)

  • This study focused the recognition and preference of Korean traditional food of elementary school students, in order to make effective educational materials about Korean traditional foods for the elementary school students. According to the responses of 356 elementary school students participating in this research, they understood the concept of traditional Korean food and recognized positively, but did not have much interest. However, the more they liked Korean food, the higher their interest in Korean traditional foods and the higher utilization rates of Korean traditional foods. Most elementary school students enjoyed Korean traditional food occasionally, especially soup, jjigae, tang and jeongol. Elementary school students suggested that complicated recipes should be improved for the succession of Korean traditional foods and that the class for cooking traditional foods in schools should be expanded.

A Study on the Perception, Importance and Satisfaction with Local Traditional Food among University students - Focused on Kyungsan City - (대학생의 향토음식에 대한 인식 및 중요도, 만족도에 관한 연구 - 경산시를 중심으로 -)

  • This study was to investigate the undergraduates in Gyeongsan city, an area heavily populated with students, on their awareness of and their satisfaction with the local traditional food to suggest an effective marketing direction to town restaurants and to provide them with useful information to activate their business. The samples were taken by the convenience sampling method and the measurement was done by 5 points-Likert. The result was as follows. The students recognized that cleanliness(4.69 points), food texture(4,57 points), the freshness of food materials(4,56 points) and food price(4.20 points) were important. However, they considered the legitimacy of local traditional foods(3.59 points), the supplementary explanation of food(3.58 points) and the quantity of food(3.34 points) as less important. On the level of satisfaction with the food, they were highly satisfied with food taste(3.55 points), food flavor(3.47 points) and quantity(3.39 points), while showing relatively low satisfaction with food creativity(2.94 points), food originality(2.75 points) and the explanation of food(2.61 points). The result of IPA indicated that the food texture, food cleanliness, the freshness of food materials, food flavor, food taste and food nutrients were thought to be important among customers, to be kept well by the restaurants and to be shown as the items to be maintained further. The customers took other items like menu price and the creativity of menu to be important, but their satisfaction with these items were low due to lack of practice. Therefore, those items should be managed intensively.

Outbreak Pattern Forecasting of Food-borne Disease in Group Food Services in Korea (미래 집단급식 식중독 발생 양상 예측)

  • This study was undertaken to analyze the hygienic problems of group food services and to predict the outbreak patterns of future food-borne diseases. A delphi survey with 20 experts identified the main causes of food-borne outbreaks in group food services as improper hygienic management of raw food materials, washing of worker's hands, dividing the spaces and unsanitary retail storage. Vibrio parahaemolyticus, Escherichia coli (EPEC), non-typhoid Salmonella serotypes, Staphylococcus aureus, Escherichia coli (ETEC), norovirus, and the hepatitis A virus all have potential to cause outbreaks of food-borne disease. We analyzed the daily food use and the possibility of food-borne outbreaks in school food services for fruits, milk, fish, pork, eggs, and meat as raw food materials, and bibimbab, soybean sprouts muchim, spinach namul, cucumber sengchae, jabchae, and pork bulgogi as prepared food items. Frozen (${\leq}\;-20^{\circ}C$) and refrigerated ($0{\sim}10^{\circ}C$) processed foods are popular items in group food services. Their storage, heating, and chemical sanitization methods are potential sources of food disease outbreaks. Our results can be applied to a well-organized hygiene control system and can be used to develop menus for preventing food-borne outbreaks.

Analysis of the Effects of an Educational Program regarding Food Safety for Children (아동의 식품 안전 교육 프로그램에 대한 효과 분석)

  • The purpose of this study was to examine the effects of an educational program regarding food safety for children. The data were collected from the results of a self-administered questionnaire that was given to 510 6th grade elementary school students in the Youngnam region who had undergone a food safety education program. The results of this study were as follows. First, the educational need for food safety was high in each food safety category, with the educational need for prevention against foodborne illness being the highest of the 10 categories. On the basis of the study results, educational materials were developed which targeted personal hygiene, food labeling, food purchase, food washing, food storage, cooking, foodborne illness prevention, food additives, endocrine disruptors, and illegal foods. Additionally, about 37% of the respondents aswered that they preferred the food safety education to be conducted at home. Second, the food safety education significantly improved the levels of knowledge and behavior of children toward food safety. These results imply that food safety education that addresses the concerns of children and their parents' is needed to improve the level of knowledge and behavior toward food safety.

Influence of Thermal Oscillation on Quality of Frozen Foods Stored in Domestic Refrigerator (가정용 냉장고의 제상 주기와 온도 변화가 저장 식품의 품질에 미치는 영향)

  • Effect of fluctuation range and intervals of defrosting temperature on quality of frozen foods stored in a domestic refrigerator equipped with an automatic defrost system was evaluated. As defrost system was operated, temperatures of domestic refrigerators were elevated from $-18^{\circ}C\;to\;-5^{\circ}C\;and\;-15^{\circ}C$, and fluctuation intervals were l6 hrs and 30 hrs, respectively. Quality deterioration such as protein denaturation, vitamin loss, exudate production and changes in appearance of frozen foods was minimized by reducing temperature oscillation during storage. Considerable effects of thermal oscillation on ice crystal sizes were observed for frozen beef tissue and ice cream. TTI (time temperature indicator) system also proved that the temperature control of defrost system in domestic refrigerator can improve the quality of foods during storage.

Food Materials for School Foodservices on High-quality Products, Local Products and Fresh-cut Products - Dietitian's Choice in Elementary, Middle and High Schools in Gyeong-gi Province - (학교급식 식재료로서 지역 농산물, 고품질농산물과 신선편이 채소의 이용현황과 필요에 관한 연구 - 경기지역 초.중.고등학교를 중심으로 -)

  • The use of local product foods and fresh-cut products, the dietitian's recognition, the required items and the quality for school foodservice was investigated to increase the consumption of high-quality agricultural products. Data from 578 elementary schools, 228 middle schools and 116 high schools were collected by school foodservice personnels in each regional Education Administration in Gyeong-gi province. The first criteria of buying food materials was reliability/safety for all school foodservice. The second criteria were the origin of the product and freshness/ripeness for elementary and middle schools and high school, respectively. The most important consideration for selecting a supplier was the quality of the material. The appearance/status of the food was the first factor for buying food materials. The origin and the seasonality were very important for buying farm products. Dietitians in Gyeong-gi province recognized the local products, and used them weekly. The advantages of using local products were the quick supply, freshness and safety. On the other hand, the disadvantages were the lack of information and the uncertainty of supply. Sixty eight percent of the subjects had experienced the high-quality agricultural products in school meals, but the frequency was low. The main reasons for not servicing high-quality agricultural products were the high cost and the lack of trust on the quality. Among fresh-cut products, seasonings and root vegetables were purchased most frequently, but leaf vegetables was 5.7% only. The purchase of fresh-cut products was not frequent, but usually satisfied. The advantages of fresh-cut products were the reduced workload and waste, but the reason for not using them were poor hygiene and the high price. The diverse supply system and the promotion of the local product foods would be necessary since the most food materials were purchased through suppliers. In addition, the problems related to the high cost and distrust should be resolved to expand the consumption of the high-quality agricultural products and the fresh-cut vegetables. The institutions for certifying the quality should be needed to increase the confidence of these products.

Inhibition Effect of Bacillus subtilis on 365 nm UV-LED Irradiation According to Packaging Materials (포장재 조건에 따른 365 nm UV-LED 조사의 Bacillus subtilis 생육 억제 효과)

  • The use of ultraviolet (UV) spectroscopy for foods is known to have a microbial inhibitory effect. UV-A having a longer wavelength than UV-C can be used for continuous or intermittent UV irradiation of food stored in containers or packages. Because UV-LED can be used effectively at a low price, this study reported the effect of UV-A 365 nm-LED on inhibiting Bacillus subtilis in accordance with the packaging conditions employed in daily use. The packaging materials were linear low-density polyethylene (LLD-PE), nylon/low density polyethylene (LDPE), polystyrene, and glass. When all packaging materials were treated with 365 nm UV-LED, B. subtilis was observed to remain inactive for 30-60 min. Further, compared with the control (-log 5), the survival rate of B. subtilis was -log 2.0-2.5 for nylon/LDPE and -log 2.58-3.61 for LLD-PE. These packaging materials showed an excellent inhibitory effect regardless of their thickness. Typically, a decrease in the viable cell count of more than 3 log indicates a 99.9% bactericidal effect. These results suggest that 365 nm UV-LED permeated the packaging material and inhibited bacterial growth.

Characterization of food preservation properties of PE film templated with freshness maintenance information (선도유지기능정보가 각인된 PE필름의 식품보존 특성)

  • To improve freshness maintenance function of food containers, many methods have been applied. Most of the methods utilize absorption properties of porous ceramics powders. However, this kind of methods was appeared to be a non-realistic one because of the short effective periods of the produce and reduced die life due to the ceramic powders mixed in the raw materials. Other methods, e.g., CA or MA, need more study for practical application bemuse of the high cost in process. In addition to this, different method should be applied depends on foods. In this paper, a new technology based on information templation was applied in making a food preservation film. It has been known recently that water memorizes informations and this information could be tempelated to other materials through appropriate pretest. One of the participating company developed this process to template informations to PE materials unitizing water as an information rallier. Food packaging film was made using this PE chips. Experimental results of freshness maintenance test of foods showed that it is effective. Results and disussions are reported in this paper.

  • Analyses of residual pesticides in raw materials used for dietary supplements were performed using multi-ingredients simultaneous analysis method. Pesticides such as BHC, chlorpyrifos, and quintozene were detected in 12 domestic and 7 imported samples, suggesting need for monitoring pesticides in domestic and imported raw materials and establishing residual limit of each pesticide.
