High Temperature of Food and Beverage Intake Increases the Risk of Oesophageal Cancer in Xinjiang, China

  • Background: The north-western region of China has a high incidence of oesophageal cancer. This study aimed to investigate whether the intake of food and beverage at high temperature is associated with the risk of oesophageal cancer among adults residing in this remote part of China. Materials and Methods: A case-control study was undertaken in Urumqi and Shihezi, Xinjiang Uyghur Autonomous Region of China, between 2008 and 2009. Participants were 359 incident oesophageal cancer patients and 380 hospital-based controls. Information on temperature of food and beverage intake was obtained by face-to-face interview. Logistic regression analyses were performed to ascertain the association between intake temperature and the risk of oesophageal cancer. Results: The oesophageal cancer patients consumed foods and beverages at higher temperatures than controls, p<0.001. High temperature of tea, water and food intake appeared to increase the risk of oesophageal cancer by more than two-fold, with adjusted odds ratio (95% confidence intervals) of 2.86 (1.73-4.72), 2.82 (1.78-4.47) and 2.26 (1.49-3.45), respectively. Conclusions: Intake of food and beverage at high temperature was positively associated with the incidence of oesophageal cancer in north-western China.

Egg consumption is associated with a lower risk of type 2 diabetes in middle-aged and older men

  • BACKGROUND/OBJECTIVES: This prospective study examined gender-specific associations between egg intake and the risk of developing type 2 diabetes using data from a large-scale cohort study. SUBJECTS/METHODS: A total of 7,002 Korean adults (40-69 years) without type 2 diabetes at baseline were analyzed. Dietary intake was evaluated by a food frequency questionnaire administered at baseline (2001-2002) and the second follow-up examination (2005-2006). Type 2 diabetes was diagnosed as a fasting glucose concentration ${\geq}126mg/dL$ or current use of glucose-lowering medications or insulin injection. Multivariate Cox proportional hazard models were used to calculate hazard ratios (HRs) with 95% confidence intervals (CIs) for incident type 2 diabetes according to egg consumption or cholesterol intake. RESULTS: During a 14-year follow up period, 857 subjects developed type 2 diabetes. In men, frequent egg intake (2- < 4 servings/week) was associated with a 40% lower risk of developing type 2 diabetes than infrequent egg intake (0- < 1 serving/week) (HR = 0.60, 95% CI: 0.37-0.97), whereas no association between egg intake and incidence of type 2 diabetes was observed in women (HR = 0.61, 95% CI: 0.27-1.37). There was no association between cholesterol intake and risk of incident type 2 diabetes in either men or women. CONCLUSIONS: Egg consumption was inversely related to the risk of incident type 2 diabetes in men, but not in women, suggesting gender differences in the relationship between diet and disease risk.

Noodle consumption is positively associated with incident hypertension in middle-aged and older Korean women

  • BACKGROUND/OBJECTIVES: This study examined the association between refined grain consumption by subtype and the incidence of hypertension from the Korean Genome and Epidemiology Study data. SUBJECTS/METHODS: In total, 5,018 participants (2,439 men and 2,579 women) from 40 to 69 years without hypertension were recruited at the beginning (2001-2002). Blood pressure and antihypertensive medication use were assessed biennially for the incidence of hypertension during the 8-year follow-up period (2009-2010). Hypertension was diagnosed as systolic blood pressure ${\geq}140mmHg$ or diastolic blood pressure ${\geq}90mmHg$ or antihypertensive medication use. Dietary intake including refined grains was assessed by a food frequency questionnaire at baseline and the follow-up (2005-2006). A multivariate Cox proportional hazard model was used to examine hazard ratios (HRs) and 95% confidence intervals (CIs) for incident hypertension according to refined-grain consumption. RESULTS: A total of 1,377 cases of hypertension (710 men and 667 women) were newly ascertained. Frequent noodle consumers (${\geq}5servings/week$) among the women had a 2.3-fold higher risk of hypertension than infrequent noodle consumers after adjustment for potential confounders (HR = 2.31, 95% CI = 1.33-4.01, P for trend = 0.0001). However, no significant association was found among the men. The intake of other refined grain products such as white rice and breads was not associated with the incidence of hypertension. CONCLUSION: Frequent noodle consumption was positively associated with a risk of incident hypertension in South Korean women.

The Influence of Risk Perception upon Consumer"s Attitude and Purchase Behavior - Focusing on Melamine-Contained Food- (위험 지각이 소비자 태도 및 식품 구매 행동에 미치는 영향 - 멜라민 함유 식품군을 중심으로-)

  • The shock of melamine-contained food has been known with the incident of hospitalization or death of infants at the age of 11-month old in China. The purpose of this study was to examine consumers' risk perception, attitude and purchase behavior of melamine-contained food which recently came to the fore as a social issue, focusing on the relationship between consumers' attitude and purchase behavior based on physical risk, social risk, psychological risk, financial risk, consumers' attitude and purchase behavior. Study findings are as follows. First, the four factors of risk perception of melamine-contained food were significantly different by consumers. Consumers regarded social risk as most significant and it was followed by financial risk and psychological risk. And they regarded physical risk as most insignificant. Second, as for the difference of risk perception by demographic features, such factors as gender, age, marital status and schooling had no statistically significant influence. Third, the potential risk of melamine-contained food had a negative influence upon consumers' attitude and purchase behavior. In addition, consumers' attitude and purchase behavior were decided by perceived risks. This finding implies that consumers' attitude can accompany with negative or positive behavior and consumers' behavior can be related to social, financial and physical risks. Because the risk perception of melamine-contained food can cause consumers' distrust about all kinds of food in general, domestic manufacturers of milk product-contained confectionery and food can be harmed. In order to overcome this problem and make consumers purchase all the milk products and milk-contained food without fear, governmental agencies must reestablish systems with which the safety of imported raw materials and its processing can be insured and manufactures must improve the quality of products in a diverse and discriminative manner. This study seems to be meaningful in that it examined consumers' risk perception of melamine-contained food, a current social issue, and then looked into the influence of risk perception upon consumers" attitude and behavior, thus presenting the strategy of reestablishing the system of relationship between consumers and business entities in a desirable manner.

Molecular detection and genotype analysis of Kudoa septempunctata from food poisoning outbreaks in Korea

  • Concerns about foodborne illnesses caused by Kudoa septempunctata are steadily growing, but reports of K. septempunctata in clinical and food specimens related to food poisoning in Korea are limited. This study aimed to genetically identify K. septempunctata in patients with acute diarrhea and in clinical and food samples related to food poisoning caused by sashimi consumption. Both real-time and nested polymerase chain reaction assays were performed to detect K. septempunctata 18S and 28S rDNA genes in the stools of 348 patients with acute diarrhea, 11 samples (6 stool and 5 rectal swab samples) from patients with food poisoning, and 2 raw Paralichthys olivaceus samples collected from a restaurant where a food poisoning incident occurred. K. septempunctata was identified in 5 clinical specimens (4 stools and 1 rectal swab) and 1 P. olivaceus sashimi sample. All detected K. septempunctata were of genotype ST3. This is the first study to identify K. septempunctata in both patients and food samples with epidemiological relevance in Korea, providing evidence that it is a pathogen that causes food poisoning. Also, this is the first study to confirm the presence of K. septempunctata genes in rectal swabs. Despite continuing suspected occurrences of Kudoa foodborne outbreaks, the rate of identification of K. septempunctata is very low. One reason for this is the limitation in obtaining stool and vomit samples for the diagnosis of Kudoa infection. We strongly suggest the inclusion of rectal swabs among the diagnostic specimens for Kudoa food poisoning.

Nutrient Intake and Breast Cancer Risk in Korean Women : A case - control study

  • To investigate the association between breast cancer risk and nutrient intake in Korean women, a case-control study was carried out. Incident cases (n=224) were identified through cancer biopsy between february 1999 and December 2000 at two university hospitals in Seoul. Hospital-based controls (n=250) were selected from patients in the same hospitals, during the same periods. food intake was investigated with semi-quantitative food frequency questionnaire (98 items) by a trained dietitian. Subjects were asked to indicate the average intake, for a 12-month period of three years prior to the baseline phase. In this study, no apparent association was found between fat intake level and breast cancer risk. High fiber intake showed a significant inverse association only among premenopausal women. In terms of antioxidant vitamins, $\beta$-carotene and vitamin C among premenopausal women and vitamin C intake among postmenopausal women was significantly associated with a decreasing risk of breast cancer. A protective effect of high calcium consumption was observed among postmenopausal women. In conclusion, our findings support epidemiological evidence that antioxidant vitamin intake could lower the breast cancer risk in Korea.

  • To examine the relationship between the casual infection of gastric cancer and lifestyle and nutritional status we surveyed 169 persons 90 females and 79 males aged 40∼69 years from June 7 to June 14 1997 in Whachon area Kang-Won Do Korea. For this purpose we investigated Helicobacter pylori infec-tion and identified the effect of sex age, smoking alcohol consumption economic status occupation life-style and food intake on Helicobacter phlori infection. Helicobacter pylori status was evaluated using an en-zyme-linked immunosorbant assay(ELISA) for anti-Helicobacter pylori immunoglobulin G(IgG). Helicob-acter pylori infection was present in 66.3% of total subjects namely 67.7% of female and 64.4% of male and its prevalence increased with smoking low education level and low monthly income. Energy total protein calcium and vitamin C intakes in the negative Helicobacgter phlori infection group were higher than those in positive Helicobacter pylori infection group. However iron and niacin intakes were lower in the helicobacter pylori negative group than in the positive group.

  • Total and free tryptophan contents in the fore shank muscle of korean cow treated with proteolytic enzymes have been analyzed by the spectrophotometric method and the results are as follows: 1. By adding 0.01%, 0.05%, 0.1% of proteolytic enzymes, the total tryptophan and free tryptophan have incresed steadily 2. The rate of increase of the total tryptophan content was highest when 0.05% of the enzymes for the meat weight were added. 3. The change in free tryptophan incident to the addition of proteolytic enzymes was insignificant.

The Effect of Difference between Reporting Terms of Government and Media on Risk Communication in Major Food Safety Incidents (주요 식품안전사건에서 정부와 언론이 사용한 보도용어의 차이가 리스크 커뮤니케이션에 미치는 영향)

  • In the present study, we collected the information of the 18 major food safety incidents and conducted a delphi survey with 10 experts to analyze the effect of difference between terms used in reporting of the major food safety incidents on risk communication. In the result of the analysis of information from the major food safety incidents, discord of terms used from government, local government, media and consumer groups had a tremendous effect on the socioeconomic losses and caused the expansion of the incidents. The survey with 10 experts showed that there was a high correlation between the difference in ripple effect of reporting terms and the difference in reporting terms. A correlation coefficient was 0.865. Therefore, ripple effect of incidents was significantly affected by reporting terms and we concluded that standardization of term is necessary in reporting of the food safety incidents. These results can be used as a basic material for successful risk communication among the government, enterprises and consumers.

Dietary Phytochemical Index and the Risk of Breast Cancer: A Case Control Study in a Population of Iranian Women

  • In this study we assessed the dietary phytochemical index in relation to the risk of breast cancer in women. This case-control study was conducted on 100 incident breast cancer cases and 175 healthy controls. Data regarding socio-demographic factors, medical history, medications, and anthropometric measurements were collected. Dietary data were obtained using a validated food frequency questionnaire and a energy-adjusted dietary phytochemical index (PI) was calculated. The odds ratios of breast cancer were assessed across energyadjusted PI quartile categories. The mean age of participants was $46.2{\pm}8.9$ and $45.9{\pm}9.4$ years in cases and controls, respectively. The mean PI across quartile categories was $13.9{\pm}2.6$, $21.1{\pm}1.8$, $26.7{\pm}2.1$, $41.6{\pm}10.2$ in the first, second, third and fourth quartiles, respectively. After adjustment for all potential confounders, the risk of breast cancer in the forth quartile of dietary PI was significantly decreased (OR=0.08, 95%CI=0.01-0.84). Higher intake of phytochemical-rich foods is associated with lower risk of breast cancer.
