둥굴레, 어성초, 구기자 혼합 음료의 배합비 최적화 및 항산화 효과 (Optimization of Production and Antioxidant Effects of Beverage Prepared using Hot-water Extracts of Polygonatum odoratum, Houttuynia cordata, and Lycium chinensis)

  • 본 연구에서는 당류 등 별도의 첨가물질을 전혀 사용하지 않고 오직 둥굴레, 어성초 및 구기자로부터 추출한 열수추출액만을 혼합하여 기호도가 높으면서도 혈당 및 지질대사 개선 효능을 가진 건강음료를 제조하는 연구의 일환으로, 관능평가와 반응표면분석에 의하여 이들 재료의 혼합비율을 최적화하고 최적 비율로 혼합 제조한 음료의 항산화능을 조사하였다. 그 결과, 음료 제조 시 열수추출액들의 최적 혼합비율은 둥굴레 열수추출액의 첨가비율 2.15%, 어성초 열수추출액의 첨가비율 1.74%, 구기자 열수추출액의 첨가비율 0.19%인 것으로 예측되었다. 제조한 음료의 항산화능을 알아보고자 조사한 총 폴리페놀, 전자공여능 및 환원력은 각각 3.42 mg/mL, 23.78% 및 0.26이었다.

남해안 지역 음식점의 서비스품질과 충성도의 관계에 영향을 미치는 매개변수의 효과 평가 (Measuring the Effects of Mediating Variables on the Relationship between Restaurant Sonics Quality and Loyalty In Namhaean Area)

  • The purpose of this study was to measure the mediating effects of sacrifice, value and satisfaction on the relationship between restaurant service quality and loyalty. A total of 273 questionnaires were completed. Structural equation model was used to measure the causal effects of service quality, perceived sacrifice, value, satisfaction and loyalty. Results of the study demonstrated that the structural analysis result for the data also indicated excellent model fit. The influences of service quality and perceived sacrifice on value were statistically significant. The influences of service quality and value on satisfaction were statistically significant. The influences of value and satisfaction on loyalty were statistically significant. As expected, the service quality had a significant effect on loyalty. The results indicated that the effect of service quality on loyally was mediated by value. Moreover, the effect of service quality on loyalty w3s mediated by satisfaction.

Metaverse and the Evolution of Food and Retail Industry

  • Purpose: This study aims to examine the opportunities in the food industry in the context of non-fungible tokens (NFTs) and the metaverse. The metaverse expands offline experiences into a virtual space and provides users with the advantage of overcoming the limitations of physical space. Research design, data and methodology: With the development of various contents based on advanced technology, the metaverse is becoming popular among the MZ generation (comprising millennials and Gen Zs), who are skilled at navigating digital platforms. Moreover, the previously entertainment game focused service has expanded to the business field after COVID-19; activities on the metaverse are now making space for economic value creation. I examined the recent global trends in the context of NFTs and the metaverse as well as the existing cases in Korea. Results: Globally, gaming and performance platforms such as Roblox, Fortnite etc. are still concentrated in the entertainment industry. However, as shown by ZEPETO and ifland in Korea there are many opportunities in the retail and food industries. Conclusions: We analyzed the ecosystems of the retail and food and beverage sectors, where the metaverse will be useful in the future, and have suggested the implications of the opportunities provided by the metaverse.

전통음식에 대한 의식과 식생활행동에 관한 조사연구 - 서울 및 경기도 일부지역 주부들을 중심으로 - (The Study for Consciousness, Dietary Life Behaviors on Korean Traditional Food)

  • Generally, the culture of dietary life in a country is closely related to the heritage of racial culture, and it is very important to inherit and develop the culture of the traditional dietary life. This research is to investigate consciousness and behaviors of dietary life using a questionnaire survey for 521 housewives living in Seoul and Kyonggido. The data was analyzed with frequency, percentage, T-test, $X^2$ (Chi-square)-test, dispersion analysis, Pearson's correlation and hierarchical multiple-regression analysis. The results of the survey are summarized as follows; 1. Consciousness of Traditional Foods. They thought that traditional foods were Sinsollo, sorts of beverage, Dduk (Korean cake), Kim-chi, Hankwa (Korean cookies), and Kujolpan, and that traditional foods were proud for its various tastes. But they thought the cuisine of the traditional food is very complicated, accordingly the frequency of traditional food was decreased. Therefore they thought that its tastes was important to develop and spread traditional foods. 2. Dietary Life Behaviors for Traditional Food. They take traditional foods on big holidays and religious service days. It is their mother who taught them the traditional cooking method. Most ftequently used cooking method is boiling. They gave their children a traditional snack such as 'Dduk (Korean cake), noodles, and fried food. Frequency of taking beverage, Hankwa (Korean cookies), Juk (guel) and Dduk (Korean cake) have been decreased. 3. The Correlation of General Environment and Consciousness, Knowledge, Dietary Life Behaviors of Traditional food. The older they are, the more eager to teach traditional food cooking, to preserve the traditional table setting, to give their children traditional snack and the more traditional dietary life behaviors are.

감마선조사에 의해 영향을 받은 단체급식용 구운 어묵의 미생물학적 품질과 이화학적 변화 (Microbial Quality and Physiochemical Changes of Grilled Fish Paste in a Group-Meal Service Affected by Gamma-Irradiation)

  • In the grilled fish paste stored at $5^{\circ}C$, the total aerobic bacterial counts were effectively reduced by 2.5 kGy or more. In the samples stored at $30^{\circ}C$, the total aerobic bacterial counts of the samples irradiated at 7.5 kGy were below to the limit of detection (2 log CFU/g). The TBA values of the irradiated samples were considerably higher than those of the controls but not proportional to the irradiation dose. It is apparent that an irradiation treatment causes very little textural degradation and the sensorial quality of the sample was maintained by an irradiation at 7.5 kGy or more.

호텔 고객의 뷔페 메뉴품질 만족도에 관한 연구 (A Study on the Satisfaction of the Buffet Menu Quality of the Hotel Customers)

  • This study aims at providing useful information to establish subdivided marketing direction by deriving factors of significant extent and practicable extent of buffet users toward menu quality among super deluxe hotels in Gyeongju, and furthermore aims at presenting implications for efficient management result and sales increase of buffet in the future. The result of positive analysis is as follows. Firstly, in result of analyzing difference between importance and performance of hotel buffet in Gyungju area, importance is much higher than performance. Secondly, respondents consider that the most important menu of hotel buffet is main dish such as hot food and instant food rather than menu such as beverage, soup and salad. When it comes to attribute of menu quality, it appeared that respondents put highly significant extent on sanitariness of food, freshness of food, flavor of food, and seasonality and variety of menu. Thirdly, oriental instant food is included in the second quadrant of IPA regarding buffet menu which should be intensively managed. And three attributes such as temperature of food, time of changing food, and creativity of menu are included in the second quadrant of IPA graph by attribute of hotel buffet's menu quality. Lastly, in IPA graph by hotel, the following menus of each hotel need to be intensively managed: Oriental instant food of A hotel, Western cold food of B hotel, Oriental instant food, Western instant food, and Oriental dessert of C hotel, and Western porridge soup, Oriental instant food, and Western instant food of E hotel. The aforementioned menus should be improved.

  • This study aims to investigate the impact of character collaboration product characteristics on brand awareness and purchase intention within the food and beverage (F&B) industry, with a special focus on Generation MZ's growing interest in such products. The methodology involves a comprehensive review of existing literature on character marketing, brand awareness, and consumer purchase intention, supplemented by case studies of successful character collaborations in the F&B sector. The findings reveal that character collaborations significantly impact brand awareness and purchase intentions, particularly among younger consumers like Generation MZ. These collaborations not only rekindle nostalgia but also introduce new and exciting consumer experiences, effectively attracting a wide demographic. The success of character-themed products, from Pokémon bread to Coca-Cola's League of Legends collaboration, underscores the strategy's effectiveness in boosting brand recognition and consumer engagement. The implications of this research are manifold for the F&B industry. Firstly, it highlights the importance of leveraging popular characters to forge emotional connections with consumers. Secondly, it suggests that product development should closely align with consumer preferences and market trends to maximize appeal. Lastly, it positions character collaboration as a strategic marketing tool that not only enhances product sales but also strengthens brand loyalty and facilitates sustained brand growth.

유기농 녹차잎을 이용한 녹차음료의 개발 (Development of Green Tea Beverage with Organic Tea Leaves)

  • 본 연구는 유기농 녹차 음료를 개발하기 위해 유기농 다엽의 카테킨류 함량을 비롯한 물리화학적 특성을 분석하였다. 다엽은 일체의 화학비료와 농약을 사용하지 않고 유기농 기법으로 재배한 시료를 사용하였고 채취시기가 다른 4월, 5월, 6월차와 반발효차를 수매하여 실험에 사용하였다. HPLC를 이용하여 다엽의 카테킨류 함량을 정량 정성 분석하였으며 녹차추출물의 색도와 pH를 측정하였다. 0.5%의 4월, 5월, 6월, 반발효차의 카테킨류는 각각 66.24, 29.19, 57.11, 5.27 ${\mu}g/mL$을 함유하고 있었으며, 카테킨류 중에서 EGCg의 함량이 가장 높았으나 EGC는 검출되지 않았다. 유기농 녹차 음료의 생산을 위해 카테킨류의 함량, 다엽의 가격, 수확량을 고려하여 6월차를 선택하였다. 6월차를 0.05, 0.1, 0.2, 0.5%로 추출하여 카테킨류를 정량한 결과, 0.1, 0.2, 0.5%는 0.05%에 비해 각각 1.50, 11.78, 41.09배 증가하였다. 6월차는 농도가 증가할수록 밝기가 증가하였고, 가장 밝고 녹색과 황색의 색이 짙었다. 반발효차의 pH는 5.83이었으며 나머지는 6.33-6.38의 범위를 가졌다. 6월차의 기호도 및 관능평가를 실시한 결과, 색상 기호도는 0.1%, 향기호도와 전체적인 기호도는 0.2% 추출물이 가장 우수한 평가를 받았고 단맛, 신맛, 떫은 맛의 정도를 평가한 결과 0.2%가 음용하기에 가장 적절하리라 사료된다. 또한 음료 제작 후, 저장 기간에 따른 녹차의 색 변화를 줄이기 위해 저장성 실험 결과 탄산수소나트륨을 0.03%를 첨가할 필요가 있다.

  • The Influences of the Ecotourism Motive, on the Attitude, Resource Interpretation and Satisfaction of Tourist Ecotourism has been recently introduced to maintain the relation of mutual dependence between the tourism and the natural environment. However it is adversely used and creates the destruction of ecosystem. It is Important that the ecotourism is a tourism which tourists can experience and enjoy themselves on site rather than a tourism which they only see and hear, understand. It is assumed that a method should be found to maximize toursist' satisfaction and that the presentation of interpretation of the tourism resource may satisfy the tourist's satisfaction. The results offer the suggestion points as follows. 1. By providing the interpretation of tourism resource as well as the recreational object, the ecotourism can be activated with a sound recognition of nature and the reservation of environment, and furthermore, the development policy may be based on not only the area of ecotourism but also all of the tour area. 2. By providing the interpretation service of tourism resource for tourists, the satisfaction can be maximized by the high cognition of tourist. 3. By providing the information about the tourism destination and resource, it will contribute to the side of education, it will contribute the preservation of resource and the reservation of environment.   • Recently, Cruise travel Industry becomes a major market in the SIT tour. this perspective, the primary purpose of this study was to investigate relationship between influencing factors of the Selection Attributes of Cruise Tour. This research aims to provide information to establish customer-oriented marketing strategies in developing by cruise tour. The current study examined related literature finding out the number of the factors to meet future users preference and expectations. Based on examined factors, the study investigated the same dimensions in Korea future cruise industry. The data collected outgoing tourists of travel service company. The Survey instrument consisted of asking respondents a number of questions regarding their intention, preferences, and expectations toward future cruise travel. The result of study showed that a certain number of factors were statistically significant on the future users cruise travel intention. It shows that there was significant difference related to the using purpose and the usage attitude. It can be conducted from the results that respondents expected a certain number of factors when the cruise travel launched in korea.
