This study identified the formula of the antioxidant substance separated from the ethyl acetate and the butanol extract and tested the antioxidant properties with the electron donating ability(EDA). Each phase with the fractionated methanol extract from mulberry leaf was screened in advance for the antioxidant substance with EDA. As the result, activity appeared in the ethyl acetate and butanol phase and the antioxidant component was separated. As the consequence, 2 components from the ethyl acetate phase and 1 from the butanol phase were separated, among which the structures of the components from ethyl acetate were determined by wogonin and linarin, whereas the structure of the component from the butanol phase was determined by pectolinarin. In the screening of antioxidant activity by the scavenging effect of the DPPH radical, the wogonin and linarin components from ethyl acetate phase showed more powerful antioxidant property than the component from butanol. The results from this study indicate that the chemical compound separated from the ethyl acetate extract has more powerful antioxidant property than the one separated from the butanol extract. The components separated from the ethyl acetate extract were wogonin and linarin, which are flavonoids, whereas the component from butanol was pectolinarin. Therefore, this study suggested that the feasibility of mulberry leaf as a functional food additive and its value as a natural antioxidant is very high.
The principal objective of this study was to evaluate the quality characteristics of dried noodles when different concentrations of Lotus root powder were added to the wheat flour. The cooking quality, mechanical textural properties, and viscosity were measured, and a sensory evaluation was conducted with the prepared noodles. The gelatinization points of the composite Lotus root powder-wheat flours were shown to have increased and the viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity values of those samples were reduced, as the Lotus root powder content was increased as measured via amylography. As increasing amounts of Lotus root powder were added, the L and b values were reduced, and the color values, weight, and volume of the cooked noodles increased, as did the turbidity of the soup. With regard to the textural characteristics, the Lotus root powder additive increased hardness and reduced adhesiveness, cohesiveness, and springiness. Overall, the noodles prepared with 15% Lotus root powder were preferred more than the other noodles, according to the results of our sensory evaluation.
monosodium L-glutamate (MSG), composed of 88% L-glutamic acid (GLU) and 12% Na, is considered as Generally Recognized as Safe. GLU is accounting for 15% of the total amino acid content in our body. Daily GLU intake is large 3.5-10.6 g from food and 1.3 g from food additive. The daily formed GLU in the body, via degradation of the total protein, is 48-50 g (70 kg of male) and the maintained GLU in the body is total bound GLU (1.4-2.0 kg) and free GLU (10 g). About 88% GLU are consumed at digestive tract, and only 12% GLU enter the blood stream. GLU is generally known to precursors of N-acetyl glutamate and glutamine, substrates for protein synthesis, a neurotransmitter (GABA), and the active site of the enzyme. In addition to protein synthesis, GLU has these key functions within the body, thus this amino acid is critical for healthy body maintenance and function.
The aim of this study was to determine the production of folate, short chain fatty acids (SCFAs), and antimicrobial activity exhibited by Lactobacillus plantarum G72 for potential dietary application in pregnant women. L. plantarum G72 has been reported to possess characteristic activities and functionality including β-galactosidase activity and antioxidant activities. L. plantarum G72 showed antibacterial activity against pathogenic bacteria (Listeria monocytogenes ATCC 15313, Salmonella typhimurium P99, Escherichia coli ATCC 25922, and Staphylococcus aureus KCCM 11335) using a modified method, and formation of the largest inhibition zone was observed against S. aureus KCCM 11335 (12.0-17.0 mm). The adherence of four food-borne pathogenic bacteria to HT-29 cells was inhibited by L. plantarum G72 (0.13 to 0.92 log CFU/ml). The most considerable inhibition of adherence to HT-29 cells was observed by using L. plantarum G72 against S. typhimurim P99. Additionally, folate production by L. plantarum G72 was 50.1 ng/ml, and L. plantarum G72 produced relatively more lactic acid (11,176.73 mg/kg) than acetic, propionic, or butyric acids. Therefore, the results of this study suggest that L. plantarum G72 may serve as a multifunctional food additive in the health industry.
The principal objective of this study was to evaluate quality characteristics of dried noodles when different concentrations of lotus leaf powder (LLP) were added to the wheat flour, thereby determining which noodle recipe was preferred. As well, when increased amounts of LLP were added, both the L and a values were reduced, whereas the b value was increased. The color values, weight and volume of the cooked noodle increased, as did the turbidity of the soup. With regard to the textural characteristics, the LLP additive increased hardness and cohesiveness, and reduced adhesiveness and springiness. Overall, according to the results of our sensory evaluation, the noodles prepared with 5% LLP were preferred over the other noodles.
Objectives: This study was performed to examine the consumption patterns of convenience food at convenience stores, dietary habits, and perception as well as knowledge of food additives among university students. Methods: Subjects were 352 university students in Cheongju, Korea, and data was collected by a self-administered questionnaire. They were divided into three groups according to the frequency of consumption of convenience food at convenience stores: 79 rare (${\leq}1$ time/month), 89 moderate (2-4 times/month) and 184 frequent (${\geq}2$ times/week). Results: More subjects from the frequent consumption group lived apart from parents (p<0.001) and possessed more pocket money (p<0.01). Frequent consumption group consumed noodles, Kimbab, and sandwich & burger significantly more often (p<0.001, respectively) than others. In addition, frequent consumption of convenience foods at convenience stores was associated with frequent breakfast skipping (p<0.05), irregular meal time (p<0.01), snacking (p<0.05), and eating late night meal (p<0.001). More from the rare consumption group had heard about food additives previously compared to the frequent consumption group (79.7% vs. 63.6%, p<0.01). Frequent consumption group showed significantly higher score than did the rare consumption group for the following questions: monosodium glutamate is harmful to your health (p<0.05), food additives are necessary for food manufacturing (p<0.005), food additives need to be labeled on products (p<0.05), there is no food additive at all if labeled as no preservatives, no coloring, and no added sugar (p<0.05). There was a significant difference in degrees of choosing products with less food additives depending on the consumption pattern. Conclusions: Our results provided a better understanding of the factors associated with frequent consumption of convenience foods at convenience stores among university students and will be useful to develop a nutrition education program for those who are more prone to consume convenience foods.

Clean labeling is emerging as an important issue in the food industry, particularly for meat products that contain many food additives. Among synthetic additives, nitrite is the most important additive in the meat processing industry and is related to the development of cured color and flavor, inhibition of oxidation, and control of microbial growth in processed meat products. As an alternative to synthetic nitrite, preconverted nitrite from natural microorganisms has been investigated, and the applications of pre-converted nitrite have been reported. Natural nitrate sources mainly include fruits and vegetables with high nitrate content. Celery juice or powder form have been used widely in various studies. Many types of commercial starter cultures have been developed. S. carnosus is used as a critical nitrate reducing microorganism and lactic acid bacteria or other Staphylococcus species also were used. Pre-converted nitrite has also been compared with synthetic nitrite and studies have been aimed at improving utilization by exploiting the strengths (positive consumer attitude and decreased residual nitrite content) and limiting the weaknesses (remained carcinogenic risk) of pre-converted nitrite. Moreover, as concerns regarding the use of synthetic nitrites increased, research was conducted to meet consumer demands for the use of natural nitrite from raw materials. In this report, we review and discuss various studies in which synthetic nitrite was replaced with natural materials and evaluate pre-converted nitrite technology as a natural curing approach from a clean label perspective in the manufacturing of processed meat products.
참조기 추출색소를 컬럼크로마토그래피를 행하여 정제하고 UV-vis spectrophotometry를 행하여 최대 흡수파장을 검색한 결과는 모든 획분의 최대 흡수파장은 $480\;nm{\sim}420\;nm$ 사이에 공통적으로 3개의 최대흡수대역을 나타냈다. 이는 carotenoid의 일반적인 특성과 일치하였으며 파장의 대역도 유사하여 carotenoid계 색소로 추정되었다. 또한 획분 간에 파장의 대역이 큰 차이 없이 유사한 것은 구조가 비슷한 이성체이기 때문으로 추정된다. 이동상 A인 0.1 mol 암모늄아세테이트 용액 메탄올(50 : 50 v/v)과 이동상 B인 메탄올 : 메틸렌클로라이드(90 : 10 v/v)를 이용하고 처음 2분간 10%의 이동상 A로부터 시작하여 60분 동안 이동상 B로 점차 조성을 변화시켜 최종적으로 이동상 B가 되게 gradient mode 조건으로 한 이동상에서 PDA-HPLC를 이용하여 참조기 추출색소를 분석한 chromatogram은 각각 RT값이 27.54, 28.48, 29.40, 29.72. 30.06, 35.61에서 총 6개의 peak가 검출되었다. 이때의 검출파장은 약 $380{\sim}490\;nm$ 사이의 파장이었으며, RT값이 30.06와 35.61 사이에 한 개의 peak가 보였으나 그 양이 너무 적어 peak로 인식되지 않았다. 그러나 이는 UV-vis spectrophotometry를 이용한 추출색소의 최대 흡광도 대역과 거의 일치하여 색소의 조성은 총 7개의 성분인 것으로 사료된다. 본 실험의 결과 참조기 추출색소의 분석을 위한 최적파장은 450 nm인 것으로 사료된다. 이동상 B인 메탄올 : 메틸렌클로라이드(90 : 10 v/v)을 이용하여 isocratic made로 한 이동상의 조건으로 PDA-HPLC를 이용하여 참조기 추출색소를 분석한 chromatogram은 각각 RT값이 3.27, 7.69, 20.92에서 총 3개의 peak가 검출되었고, 이때의 검출파장은 약 $380{\sim}490\;nm$ 사이의 파장으로서 gradient mode로 한 이동상의 조건과 일치하였다. 또한 RT값이 3.27의 peak에서 가장 많은 색소가 검출되었다. 그러나 gradient mode로 한 이동상의 조건에서 7개의 peak가 검출되었고 isocratic mode로 한 이동상의 조건에서는 3개의 peak가 검출된 것으로 보아 정성적으로는 gradient mode로 한 이동상의 조건이 더 적합한 것으로 사료된다. 또한, PDA-HPLC를 이용한 참조기와 수조기의 색소성분을 비교한 결과, 수조기와 참조기에서 검출되는 peak중 각각의 3개의 peak는 유사한 RT값을 보였으나, 참조기 및 수조기의 각각 1개의 peak는 서로 다른 RT값을 보였으며 참조기 성분의 peak중 RT = 31.02는 수조기 성분에서는 발견되지 않아, 이 성분은 참조기 성분과 연관성이 클 것으로 사료된다.
유기인계 농약의 조리 및 가공에 의한 제거율 데이타를 총정리한 결과 식품의 수세에 의해서 평균 45%, 세제에 의한 세척에 의해 56%, 과일의 껍질 벗기기에 의해 91%, 채소의 데치기 및 삶기에 의해 51%, 곡류의 도정에 의해 76%, 가공에 의해 60%가 제거되었다. 한국인의 식품 섭취량과 잔류허용기준에 의하여 농약의 이론적 최대섭취량(TMDI)을 산정한 결과, 조사된 11가지 농약중 4가지가 1인당 1일 섭취허용량(ADI)을 초과하는 것으로 나타났다. 식품 섭취량과 잔류농약 모니터링 데이터에 의하여 추정섭취량(EDI)을 산정한 결과, 유기인계 농약의 독성을 부가적(additive effect)인 것으로 가정한 ADI 대비율은 17.2%로 나타났다. 개별 농약성분의 ADI 대비율은 diazinon 6.1%, fenthion 5.8%, fenitrotion 3.3%로 나타났고 그 이외의 농약은 매우 낮게 나타났다. EDI에 감소계수를 감안한 결과 유기인계 농약성분은 조리 및 가공에 의해 50% 이상이 제거되는 것으로 판단된다. 결론적으로 유기인계 농약 전체에 대해 한국인은 ADI의 23% 수준에서 노출되고 있으며 이러한 수준은 그 위해성이 문제되지는 않지만 체계적인 위해평가를 시도해야 할 때라고 판단된다.
