Analysis of Volatile Components of the Musk of Ondatra zibethicus by Gas Chromatography-Mass Spectrometry (가스크로마토그래피-질량분석기를 이용한 서사향의 향기성분 분석)

  • Essential oils of the musk from wild muskrat (Ondatra zibethicus) were analyzed by gas chromatography/mass spectrometry. Fifty-six chemical components were separated, and 14 volatile compounds (78% of composition of total essential oil) of macrocyclic musk, mainly cyclopentadecanone, 12-hydroxy-14-methyl-oxa-cyclotetradec-6-en-2-one, cycloheptadecanone and 9-cycloheptadecen-1-one, were identified by the comparison of Wiley/NBS Library from the results of GC-MS. However, l-muscone, a compound reported by earlier workers in the musk from muskrat, was not detected using the spike test in this study. Interestingly, cyclohexadecanone, which has the same molecular weight (Mw 238) as l-muscone, was identified. In addition, it is considered that because of possessing much higher amounts of macrocyclic components compared to the original musk, muskrat has higher economic values in perfume and pharmaceutical industries.

  • Production and properties of invertase from Aspergillus niger were investigated. Inulin and sucrose were best carbon source and yeast extract was most suitable for the production of the enzyme among tested carbon and nitrogen sources. The enzyme among tested carbon and nitrogen sources. The enzyme was maximally produced by cultivating the organism at medium of pH 4.5 and temperature of 3$0^{\circ}C$ The optimum pH and temperature for the enzyme activity were pH 5.0 and temperature of 5$0^{\circ}C$, respectively. Among tested metal ions. Hg++, Cu++ and Ag+ ions Inhibited the enzyme activity drastically.

Evaluation of the Regular Selling Price and Nutrient Contents of Enteral Nutrition Foods in Korea through Internet Search (인터넷 정보조사를 통한 국내 환자용 식품의 판매가격과 영양 함량 평가)

  • The purpose of this study was to examine the relationship between the regular selling price and nutrient contents of foods used for special medical purposes in Korea. This study investigated the regular selling price and nutritional composition of 114 enteral nutrition (EN) foods on the manufacturer's internet homepage. The average price of the total products was 1,156.0 won/100 mL. The price of foods used for calorie and nutrient supplementation (CNS) was significantly higher compared to that of the other EN food types (p<0.01). With respect to the nutritional content per 100 mL of the product, EN foods for CNS had significantly higher contents of energy, protein, 5 minerals, and 7 vitamins than the other EN food types. On comparing the nutritional contents of foods according to the price, the balanced nutrition foods showed significantly higher contents of energy, carbohydrate, protein, 3 minerals, and 7 vitamins in high-priced products than in low-priced foods. Summarizing these results, foods for CNS were approximately twice as expensive as the other EN foods, and the energy, protein, mineral, and vitamin contents were also high. Balanced nutrition foods had higher nutrient contents in high-priced products, which showed the relationship between the product price and nutrient content.

Anti-adipogenic Effects of Dongchimi Nano Juice in Mouse 3T3-L1 Adipocytes

  • The anti-adipogenic effect of dongchimi nano juice prepared using a nano-filtering process was investigated by measuring leptin and glycerol levels and the expression of a peroxisome proliferator-activated $receptor-\gamma\;(PPAR\gamma)$ gene as indicators of lipid accumulation or lipolysis. Red pepper powder, seeds of red pepper, garlic, and ginger were added in the preparation of dongchimi. Dongchimi was fermented to reach the optimal fermentation period, followed by nano-filtration in the range of $0.0005\sim0.1\;{\mu}m$. The lactic acid bacteria of dongchimi nano juice were removed completely by a nano-filtering process. Treatment of dongchimi nano juice induced glycerol release in the 3T3-L1 adipocytes and decreased the mRNA expression level of $PPAR\gamma$. These results suggested that dongchimi nano juice may enhance lipolysis and modulate adipogenesis in 3T3-L1 cells.
