전북지역 초등학생의 길거리 음식 섭취 실태와 이에 대한 어머니의 인식도 (How Mothers Recognize Intake Status on Street Food of Elementary School Students in the Jeon Buk Region)

  • This research has been surveyed on street food and snack intake status of elementary school students in the Jeon Buk region and the recognition of mothers has been observed for the objective of providing base materials for appropriate eating habits and nutritional education. As for status on intake of street food, most students (97.3%) have shown to have eaten from the street vendors while mothers assume low frequency in their child's intake of street food. Favorite street food choices had an agreement between mother and student as ddukbokki and dakkochi. Students were more tolerant in sanitation and necessity of street food than the mothers. This research shows that there is a difference in the recognition of street food between the students and their mothers. There a need required for improvement in the system as to provide quality food and to prevent poor quality food being exposed to the students. Furthermore, practical and appropriate education must be conducted at home and at school for better choices of food and a better lifestyle. 급식종사자의 급식관리 지식수준에 따른 급식관리 중요도 및 수행도 분석 - 충북지역 지역아동센터를 중심으로 - (Analysis of Importance-Performance Related Foodservice according to the Level of Knowledge of Workers at Community Child Centers in Chungbuk Area)

  • This study investigated the current status of foodservice management and the importance and performance of foodservice management according to the level of knowledge of workers. A survey was conducted between February 2015 and March 2015 for 329 foodservice workers at Community Child Centers in Chungbuk Area. Of these respondents, the majority (78.4%) of them were females. Most of them were in their 40s (40.4%) or 50s (33.4%). If the respondent's correct answer rate of knowledge was 0~50% or 51~100%, the respondent was classified into a 'Low Group (LG, n=175)' or a 'High Group (HG, n=154)'. Among a total of 14 foodservice management questions, 6 items (personal hygiene: 1 item; food material: 2 items; and food processing: 3 items) had relatively higher performance scores for workers in HG than for workers in LG. As a result of Importance-Performance analysis, 'Use different knives and cutting boards for fish, meat, and vegetables' was a variable of high importance but low performance. It was found that improvement was most urgently needed. Results of this study can be used to derive important items for improving foodservice management and policy development for foodservice workers at Community Child Centers.

  • 메타버스 기반 다국가 유학생 커뮤니티를 이용한 음식 구매 플랫폼은 다국적 음식 기호 커뮤니티를 이용한 메타버스 구매 플랫폼이다. 본 플랫폼 이용을 통해 다국적 유학생들의 커뮤니티, 유학생 판매자 커뮤니티 구축과 메타버스 구매 플랫폼의 신산업 육성이 기대된다. 메타버스 플랫폼은 익명성을 보장하고, 시공간 제약받지 않으며 자유롭게 아바타들과 소통하여 제2의 비즈니스 커뮤니케이션을 창출할 수 있다. 또한 많은 종류의 기호식품을 소량으로 판매함으로써 희소성에 맞춤화하면서도 서비스를 제공하는데 부담감을 줄이고 유학생들이 쉽게 참여할 수 있도록 한다. 이 커뮤니티 기반 플랫폼은 새로운 비즈니스로 확대될 수 있다.

도시가계조사 자료를 이용한 소득계층별 식생활 패턴분석 (Analysis of Food Consumption Patterns by Income Levels Using Annual Report on the Family Income and Expenditure Survey)

  • Korea has not tried any food consumption survey so far except the national nutrition survey, which does not show food consumption patterns of different income stratas. The results of the family income and expenditure survey(FIES) by the national statistical office can be precious sources which show household food consumption patterns due to large, random. Samples, year-round survey period and socioeconomic background data. This study analyzed the FIES data to find out food consumption patterns including nutrient intakes and frequently consumed foods by households among different monthly income levels. Big difference was found in food consumption patterns among the quartile-income groups especially the amount of consumed foods, food expenditure, and nutrient intakes. For every food item, the higher the monthly invomr, yhr motr og goof yhry vondumrf. The monthly food expenditure of higher higher income strata was composed with higher percentage of relatively expensive foods compared to other stratas. Nutrient intake levels of lower income strata were 50-60% of the RDA, which showed the necessicity of food assistance programs for those high risk groups to complement the nutritional difficiency. 한국, 미국, 일본의 식품성분표 비교 (International Comparison of Food Composition Table)

  • This study was conducted to compare the composition table of Korean food with that of foreign food. Analysis was made for Korean food composition table($5^{th}$ revision), Korean food composition table in Appendix of Recommended Dietary Allowances for Korean(6$^{th}$ th/ edition), Standard tables of food composition in Japan($5^{th}$ revised edition) and USDA Composition of Foods - Raw, Processed, Prepared. The method of content analysis was applied for this study and such differences were pointed out as the classification of food items, food items enlisted, the content unit of food and food components presented etc. To improve Korean food composition table, new food items and components should be added and old food items be eliminated based on the change of people's food consumption pattern. Also analysis for the domestic foods consumed by local people should be accomplished rather than borrowing foreign country's data.

Food Preferences and Nutrient Density of Wedding Reception Food Consumed by the Community Residents in the Chungbuk Area

  • A survey was conducted to investigate the preferences of wedding reception food, food consumption and its nutrient density, and the factors that influence nutrient density, in order to obtain baseline data for the development of an educational program on dining out. Subjects included 105 male and female adults who attended a wedding ceremony and consumed wedding reception food in the Chungbuk area between August and September 2004 and interviewed using a questionnaire. 63.0% of the subjects responded that they over-ate at the reception. 20.5% reported that they skipped the meal before the reception. The respondents who skipped the meal had more calorie intakes (899kcal) than those who did not (800kcal). In food preferences, noodles (51.0%), watermelon (47.0%), rice cake (39.0%), sweet and sour pork (38.0%), potato noodles stir-fried with vegetables (37.0%), beef rib soup with cooked rice (37.0%), bulgogi (35.0%), braised beef ribs (35.0%), fried shrimp (32.0%) were higher percentages in order. People preferred grain, meat and fatty food to vegetables. Total calorie intake from the reception foods were 881 kcal for males, and 769kcal for females. In evaluation of nutrient density, the density of calcium, vitamin A, vitamin C and dietary fiber did not meet the standard of the recommended intake. Especially, vitamin C and dietary fiber were less than 50% of the recommended level. The main factors that influence the nutrient density were household incomes, occupations, marital status, and total fat consumed. In conclusion, an educational program should be developed and offered to improve their dietary quality.
