아마인 및 아마인유의 유지자원으로서의 특성 (Characterization of flaxseed and flaxseed oil as edible oil resources)

  • 황색 아마인과 갈색 아마인의 일반성분 분석과 아미노산 조성, 지방산 조성, 토코페롤 함량, 총 폴리페놀 함량 및 전자 공여능을 측정하여 각 유지들의 특성을 비교하였다. 일반성분의 경우 수분과 탄수화물은 37% 정도를 차지하고 있으며 조지방은 35%내외로 대두의 20%보다는 높은 함량을 나타내었다. 아마노산 조성은 황색과 갈색 아마인의 차이는 없었으며 주요 구성 아미노산은 glutamine, glycine, arginine 등이었고, 지방산 조성의 경우는 두 아마인의 지방산 조성에 차이가 있으며 황색과 갈색 아마인의 linolenic acid와 oleic acid의 함량은 각각 56.60, 31.38 과 18.24, 39.16으로 나타나 갈색 아마인이 황색 아마인보단 산화 안정성이 우수할 것으로 생각된다. ${\gamma}$-토코페롤의 경우는 황색 아마인이 20.59 mg/100 g으로 갈색 아마인보단 높았지만 들깨의 30.10 mg/100 g에는 미치지 못했다. 총 폴리페놀은 황색 및 갈색 아마인이 각각 10.78, 29.88 mg/100 g으로 갈색 아마인이 높은 함량을 나타냈으며, 전자 공여능 또한 2,500 mg%의 농도에서 갈색 아마인이 77.81%으로 가장 좋은 활성을 나타냈다. 따라서, 황색 아마인과 비교하여 갈색 아마인이 유지의 산화안정성 및 저장성이 우수할 것으로 생각되며, 기존 참기름 및 들기름과 비교하여서도 영양학적인 측면과 산업적인 가치가 높다고 할 수 있다.

Effects of perilla oil on plasma concentrations of cardioprotective (n-3) fatty acids and lipid profiles in mice

  • The aim of this study was to examine the effects of perilla oil as well as several vegetable oils, including flaxseed oil, canola oil, and rice bran oil on plasma levels of cardioprotective (n-3) polyunsaturated fatty acids in mice by feeding each vegetable oil for a period of eight weeks. Concentrations of docosapentaenoic acid (DHA) and eicosapentaenoic acid (EPA), fish-based (n-3) polyunsaturated fatty acids, showed an increase in the plasma of mice fed perilla and flaxseed oils compared to those of mice in the control group (P < 0.05), whereas rice bran and canola oils did not alter plasma DPA and EPA concentrations. Arachidonic acid concentration was increased by feeding rice bran oil (P < 0.05), but not canola, flaxseed, or perilla oil. In addition, oleic acid, linoleic acid, and docosahexaenoic acid concentrations were altered by feeding dietary rice bran, canola, perilla, and flaxseed oils. Findings of this study showed that perilla oil, similar to flaxseed oil, is cardioprotective and could be used as an alternative to fish oil or even flaxseed oil in animal models.

Fatty Acid Composition and Sensory Characteristics of Eggs Obtained from Hens Fed Flaxseed Oil, Dried Whitebait and/or Fructo-oligosaccharide

  • This study was conducted to assess the effects of flaxseed oil and dried whitebait as a source of ${\omega}$-3 fatty acids (${\omega}$-3 FA), which could be used to produce eggs enriched with ${\omega}$-3 FA, and of fructo-oligosaccharide (FOS) as a source of prebiotics on performance of hens (commercial Hy-Line Brown laying hens), and FA composition, internal quality, and sensory characteristics of the eggs. Dietary FOS increased egg weight. The amounts of ${\alpha}$-linolenic (ALA), eicosapentaenoic (EPA) and docosahexaenoic acids (DHA) in the eggs from the hens fed the flaxseed oil alone or flaxseed oil+dried whitebait diets were higher than those of the control. Hedonic scores for off-flavor, fishy flavor, buttery taste and overall acceptability of the eggs from the hens fed the diet containing flaxseed oil+dried whitebait were lower (p<0.05) than those of the control. Overall acceptability of the eggs from the hens fed the diet containing soybean oil+dried whitebait was lower (p<0.05) than that of the control. However, all the sensory attributes of the eggs from the hens fed the diet containing flaxseed oil, dried whitebait and FOS were not significantly different from those of the control. These results confirmed that flaxseed oil increases the ALA content in the eggs and a combination of flaxseed oil and dried whitebait increases EPA and DHA in the eggs. Of significance was that addition of FOS to the flaxseed oil+dried whitebait diet improves the sensory characteristics of the eggs enriched with ${\omega}$-3 FA.

Protective effect of dietary oils containing omega-3 fatty acids against glucocorticoid-induced osteoporosis

  • Purpose: Glucocorticoids (GCs) are implicated in secondary osteoporosis, and the resulting fractures cause significant morbidity. Polyunsaturated fatty acids (PUFAs) play a vital role in bone metabolism. However, few trials have studied the impact of omega-3 PUFA-containing oils against GC-induced osteoporosis. Therefore, the present study was undertaken to determine whether supplementation with omega-3 PUFA-containing dietary oils such as fish oil, flaxseed oil or soybean oil can impede the development of GC-induced osteoporosis. Methods: The fatty acids (FAs) content of oils was determined using gas chromatography. Male rats were subdivided into 5 groups (8 rats each): normal control (balanced diet), prednisolone control (10 mg/kg prednisolone daily), soybean oil (prednisolone 10 mg/kg + soybean oil 7% w/w), flaxseed oil (prednisolone 10 mg/kg + flaxseed oil 7% w/w), and fish oil (from cod liver; prednisolone 10 mg/kg + fish oil 7% w/w). Results: The study data exhibited a significant depletion in bone mineral density (BMD) and femur mass in the prednisolone control compared to the normal control, accompanied with a marked decrease in the levels of plasma calcium and 1,25-$(OH)_2$-vitamin $D_3$, and elevated levels of C-terminal telopeptide (CTX), tumor necrosis factor-alpha (TNF-${\alpha}$) and malondialdehyde (MDA). Supplementation with fish oil, soybean oil or flaxseed oil helped to improve plasma calcium levels, and suppress oxidative stress and inflammatory markers. Additionally, bone resorption was suppressed as reflected by the decreased CTX levels. However, fish oil was more effective than the other two oils with a significant improvement in BMD and normal histological results compared to the normal control. Conclusion: This study demonstrated that supplementation with dietary oils containing omega-3 PUFAs such as fish oil, soybean oil or flaxseed oil can play a role in the prevention of bone loss and in the regulation of bone metabolism, especially fish oil which demonstrated a greater level of protection against GC-induced osteoporosis.

  • Flaxseed is outstanding for lignans and oil rich in ${\alpha}$-linolenic acid which protect against several major illnesses. Better understanding of processing and storage characteristics of flaxseed will increase options for food use. Lignans and oil are found in the hull and embryo, respectively. Comparison of pearling and impact-dehulling processes for separation of lignan and oil-rich fractions showed the impact process was less effective, but easier to scale-up. Screw-pressing embryo reduced oil yield compared to whole seed, but doubled productivity and sharply reduced frictional heating of the oil. Flaxseed hull and embryo, also whole, ground and steamed-ground samples, were stable up to 30 weeks in closed containers at $23^{\circ}C$. Steamed-ground samples in open trays at $40^{\circ}C$ deteriorated markedly (peroxide value > 100 by 22 weeks); yet, whole seed remained stable. Incorporation of 18% flaxseed embryo into yellow perch feed increased ${\alpha}$-linolenic acid to 13 to l4% of muscle and liver lipids, compared to 0.5 to 0.7% in the no-embryo control. Feed conversion ratio, weight gain, and survival were similar. These studies are helping to establish the technological base for processing and utilizing flaxseed and flaxseed fractions to improve human diets.

Olive Oil, Flaxseed Oil 및 Perilla Oil을 급여한 Mice의 지질대사에 미치는 목초액의 영향 (Effects of Pyroligneous Liquor on Olive, Flaxseed and Perilla Oils in Lipid Metabolism of Mice)

  • Our objectives in this experiment were to study the effects of oils that are high in contents of unsaturated fatty acids (olive, flaxseed, and perilla oils) and pyroligneous liquor on plasma lipid concentrations in mice. Male ICR-mouse (n=10 per group) were fed powdered form diets containing oil and pyroligneous liquor for 60 days. The cholesterol level of the PP group ($96.71{\pm}25.75$ $mg/d{\ell}$) was lower than that of the COW group ($133.56{\pm}21.53$ $mg/d{\ell}$). Levels of triglyceride of COP, CFP, and CPP groups were $121.10{\pm}50.79$ $mg/d{\ell}$, $77.80{\pm}38.58$ $mg/d{\ell}$, and $92.40{\pm}33.04$ $mg/d{\ell}$, respectively (p<0.05). The dietary addition of olive oil increased the plasma lsevels of cholesterol and LDL-cholesterol. On the other hand, the dietary addition of flaxseed oil and pyroligneous liquor increased the plasma level of HDL-cholesterol and decreased the plasma levels of LDL-cholesterol and triglyceride compared with those of the control group. Further, the dietary addition of perilla oil decreased plasma triglyceride but increased HDL-cholesterol. The decrease in the cholesterol level was much higher in the CFP group. In conclusion, the dietary addition of long-term pyroligneous liquor effectively decreased the plasma levels of cholesterol and triglyceride and increased the plasma level of HDL-cholesterol. The additional dietary administration of flaxseed and perilla oils increased the effect of pyroligneous liquor.

아마인과 아마인유의 영양성분과 물리화학적 특성 (Studies on the Nutritional Components and Physicochemical Characteristics of Various Flax(Linum usitatissimum) Seeds and Oils)

  • 아마인의 유용성분에 대해서 알아보고 가열과정을 통한 성분변화 및 다른 종유작물과 유지의 물리화학적 성분과 비교, 평가하였다. 조지방은 37~43%, 탄수화물은 30~35%, 조단백질은 18~23%, 조회분은 3~4% 그리고 수분 함량은 0.2~6.8%의 함량을 나타내었다. 식이섬유 함량은 생아마인보다 가열 처리한 볶음 아마인에서 SDF의 함량이 증가한 것을 알 수 있었다. 하지만 상대적으로 IDF의 함량도 감소하기 때문에 TDF의 함량은 큰 차이를 보이지 않았다. 그리고 총 식이섬유 함량은 28~31%로 높은 함량을 보였다. 또한 아마인의 주요 유용성분을 살펴본 결과, 비타민은 ${\gamma}$-tocopherol(E), 아미노산은 agrginine, aspartic acid, glutamic acid가 높은 함량을 보였다. 이들은 생아마인보다 볶음 아마인에서 낮은 함량을 나타내었다. 아마인의 무기물 함량을 분석한 결과, 칼슘, 칼륨, 마그네슘, 인이 주요 구성성분이었다. 물리화학적인 특징으로 요오드가, 비누화가, 산가를 분석하였으며, 브라운 아마인유는 각각 204.1 g/100 g, 193.6 mg/g, 1.59 mg/g을 나타내었으며, 골드 아마인유는 각각 203.0 g/100 g, 189.9 mg/g, 2.35 mg/g으로 조사되었다. 아마인유의 지방산 함량에서는 전체적인 구성 비율을 볼 때 ${\alpha}$-linolenic acid(ALA, C18:3n-3)가 약 55.5~56.1% 로 가장 높은 함량을 차지하였다. 그리고 브라운보다는 골드 아마인유의 ${\alpha}$-linolenic acid의 함량이 약간 높았다. 높은 ${\alpha}$-linolenic acid 함량은 아마인유가 오메가-3 지방산이 강화된 식품 개발에 좋은 자원이 될 것으로 사료된다. 또한 다가 불포화지방산 함량이 약 71%로 함유되어 있으며, ${\alpha}$-linolenic acid 등 필수지방산의 함량이 높아 식품의 영양학적인 의의가 크며, 양질의 식용유로 사용 가능할 것이다.

Effects of Replacing Pork Back Fat with Canola and Flaxseed Oils on Physicochemical Properties of Emulsion Sausages from Spent Layer Meat

  • The objective of this study was to investigate the effects of canola and flaxseed oils on the physicochemical properties and sensory quality of emulsion-type sausage made from spent layer meat. Three types of sausage were manufactured with different fat sources: 20% pork back fat (CON), 20% canola oil (CA) and 20% flaxseed oil (FL). The pH value of the CA was significantly higher than the others (p<0.05). The highest water holding capacity was also presented for CA; in other words, CA demonstrated a significantly lower water loss value among the treatments (p<0.05). CA had the highest lightness value (p<0.05). However, FL showed the highest yellowness value (p<0.05) because of its own high-density yellow color. The texture profile of the treatments manufactured with vegetable oils showed higher values than for the CON (p<0.05); furthermore, CA had the highest texture profile values (p<0.05) among the treatments. The replacement of pork back fat with canola and flaxseed oils in sausages significantly increased the omega-3 fatty acid content (p<0.05) over 15 to 86 times, respectively. All emulsion sausages containing vegetable oil exhibited significantly lower values for saturated fatty acid content and the omega-6 to omega-3 ratios compared to CON (p<0.05). The results show that using canola or flaxseed oils as a pork fat replacer has a high potential to produce healthier products, and notably, the use of canola oil produced characteristics of great emulsion stability and sensory quality.

볶음조건과 저온압착이 아마씨유(Linum usitatissimum L.)의 지방산 조성 및 휘발성 성분에 미치는 영향 (Effect of Roasting Condition and Cold-pressed Flaxseed (Linum usitatissimum L.) oil on Fatty Acid Composition and Volatile Compound)

  • 본 연구는 불포화지방산 중 α-리놀렌산이 풍부한 아마씨에서 볶음조건과 저온압착법으로 착유된 아마씨유의 화학적 변화에 미치는 영향을 조사하고자 하였다. 볶지 않은 아마씨와 볶은 아마씨(150℃와 200℃에서 10분과 20분)를 가정용 저온압착기를 사용하여 저온압착으로 착유하여 착유수율, 총 페놀 함량, 지방산 조성 및 휘발성 성분을 분석하였다. 착유수율은 볶지 않은 아마씨에서보다 볶은 아마씨에서 높게 나타났다. 총 페놀 함량은 150℃에서 20분 동안 볶아서 착유한 경우 다른 착유군보다 유의적으로 높은 반면, 200℃에서 착유한 경우는 볶지 않은 생 아마씨유보다 낮았다. 지방산의 조성은 볶음조건에 의해서 차이를 보이지 않았다. 휘발성 성분은 총 함량과 지방산패의 지표로 알려진 aldehyde, ketone, furan은 볶음온도와 시간이 증가됨에 따라서 증가되었고, Maillard 반응에 영향을 주는 pyrazine도 200℃에서 볶아서 착유한 아마씨유에서 증가하였다. 결과적으로 가정용 저온압착기로 착유된 아마씨유는 볶지 않은 아마씨보다는 150℃에서 20분 동안 볶은 후 저온압착으로 착유하는 방법이 안전한 추출과정으로 제안된다.

Rubber seed oil and flaxseed oil supplementation on serum fatty acid profile, oxidation stability of serum and milk, and immune function of dairy cows

  • Objective: This study was designed to investigate the effect of diet supplementation with rubber seed oil and flaxseed oil on serum fatty acids profile, oxidation stability of serum and milk, and immune function of dairy cows. Methods: Forty-eight mid-lactation Holstein dairy cows were randomly assigned to one of four treatments for 8 wk, including basal diet (CON) or the basal diet supplemented with 4% rubber seed oil (RO), 4% flaxseed oil (FO) or 2% rubber seed oil plus 2% flaxseed oil (RFO) on a dry matter basis. Results: Compared with CON, all the oil groups increased the levels of trans-11 C18:1 (vaccenic acid), cis-9, trans-11 C18:2 (conjugated linoleic acid, CLA) and C18:3 (${\alpha}$-linolenic acid, ALA) in serum. Both the activity of glutathione peroxidase and catalase in serum and milk in oil groups were decreased, which were negatively correlated with the levels of cis-9, trans-11 CLA and ALA. The concentrations of proinflammatory factors (tumor necrosis factor ${\alpha}$ and interferon ${\gamma}$) in serum of oil groups were lower than that from the CON cows. Conclusion: These results indicate that diet supplementation with RO or FO could alter serum fatty acid profile and enhance the immune function of dairy cows. However, the negative effect on milk oxidation stability should be considered when feeding these n-3 polyunsaturated fatty acid-enriched oils in dairy production.
