코로나19 (COVID-19) 팬데믹에 대응하여 요구되는 여성호르몬이 강화된 캐나다산 식이 보충제의 동향 (Trends in Canadian Dietary Supplements Enhanced with Female Hormones Required in Response to the COVID-19 Pandemic)

  • As one of the post-COVID-19 response strategies, representative processed products derived from the natural plant material flaxseed and a dietary supplement fortified with female hormones (estrogens) were developed in Canada, an eco-friendly country was introduced. These products were: 1) flaxseed oil to help maintain cognitive and immune function, 2) Lignan50, a substance with effects similar to estrogen, a female hormone, 3) XanFlax, a thickener for confectionery/baking and egg substitute, 4) MediFlax, a constipation reliever, 5) SesaFlax, which has a fragrance similar to sesame, 6) Linusorb, which is effective for its pharmaceutical anti-inflammatory/anti-oxidation and anti-aging properties, and 7) LinuLyte, a water/electrolyte supplement containing high dietary fiber. It is expected that these dietary products will help maintain and promote health as part of a response to the COVID-19 pandemic.

An Approach to Manufacture of Fresh Chicken Sausages Incorporated with Black Cumin and Flaxseed Oil in Water Gelled Emulsion

  • In order to investigate the use of oil in water gelled emulsion (GE) prepared with healthier oil combinations as beef fat replacer in the fresh chicken sausage formulations, four batches of fresh sausages were produced. The first batch was control (C) sample formulated with %100 beef fat, other batches were codded as GE50, GE75, and GE100 respective to the percentage of beef fat replaced with GE. The addition of GE to sausage formulation resulted in an increment in moisture and protein contents while a decrement was observed in fat content (p<0.05). pH, cooking yield and water holding capacity values of GE added samples were found lower than C (p<0.05). GE addition caused lower CIE L* values in samples, however, this trend was not observed in CIE a* and CIE b* values. Initially, the lowest peroxide and the highest TBARS values were recorded in GE100 samples on the 0th d (p<0.05). Peroxide and TBARS values were in the limits. The texture of samples was softened while total saturated fatty acid content reduced up to 52.61% with the incorporation of GE (p<0.05). Taken together, our results showed that GEs can be used as fat replacers in meat product formulations without causing undesirable quality changes.

Effect of immune-enhancing enteral nutrition formula enriched with plant-derived n-3 fatty acids on natural killer cell activity in rehabilitation patients

  • BACKGROUND/OBJECTIVES: Enteral nutrition formulas with immune-enhancing nutrients, such as n-3 fatty acids, may manage patients' nutritional status and pathophysiological processes. The aim of our study was to investigate natural killer (NK) cell activity alterations and related cytokine changes resulting from feeding with soybean oil-containing enteral nutrition formula (control group) and plant-derived n-3 fatty acid-enriched enteral nutrition formula. SUBJECTS/METHODS: Subjects participated for 14 consecutive days and consumed enteral formula containing canola and flaxseed oil (n3EN, test group) in nonsurgical patients hospitalized for rehabilitation. Blood samples were collected on the first day and 14 days after the consumption of each formula daily, and anthropometric parameters were collected. Hematology and biochemical values were analyzed, and NK cell activities and serum cytokine concentration were measured. A total of sixty subjects were included in the analysis, excluding dropouts. RESULTS: No significant differences were found in biochemical parameters. The n3EN group's NK cell activities at effector:tumor cell ratios of 10:1, 5:1, 2.5:1 and 0.625:1 were significantly higher than those of the control group after two weeks (P < 0.05). However, there were no statistically significant differences in serum cytokine interleukin (IL)-12, $interferon-{\gamma}$, $IL-1{\beta}$, IL-6 and tumor necrosis $factor-{\alpha}$ values between the two groups. CONCLUSIONS: In conclusion, this study elucidates the beneficial effects of plant-derived n-3 fatty acid supplementation in enteral formula on NK cell activity.

Effect of including n-3/n-6 fatty acid feed sources in diet on fertility and hatchability of broiler breeders and post-hatch performance and carcass parameters of progeny

  • Objective: The present trial was conducted to determine the influence of different dietary fatty acid (omega-3 and omega-6) sources on reproductive performance of female broiler breeders and growth performance and carcass traits of their progeny. Methods: Two hundred and twenty, 25 weeks old Ross-308 male (20) and female (200) broiler breeders were used in the experiment for the period of 6 weeks. All birds were randomly divided into four dietary treatments (containing 2% soybean oil, 2% sunflower oil, 2% flaxseed oil, and 2% fish oil) each with five replicates of one male and ten females. Throughout this experiment hatching performance of broiler breeders, progeny growth performance and carcass parameters were recorded. Results: The results showed that the inclusion of different fatty acid sources in female broiler breeders diet had no significant effects (p>0.05) on number of fertile eggs, post-hatch mortality, and fertility rate. The soybean oil supplemented group had significantly (p<0.05) higher late embryonic mortality compared to other three treatments. Conclusion: It was concluded that inclusion of 2% of different sources of omega-3 and omega-6 fatty acids (especially 2% flax seed oil) in broiler breeders' diet can reduce late embryonic mortality. The other reproductive characteristics of parents and growth and carcass characteristics of progeny remained unaltered by dietary sources of omega-3 and omega-6 fatty acids.

오메가-3와 -9 지방산의 혼합 급이가 계육내 오메가-3 계열 다가불포화지방산의 조성에 미치는 영향 (Omega-3 and -9 Fatty Acid Combination Effects on Broiler Chicks to Produce Chicks with High in Omega-3 Polyunsaturated Fatty Acid)

  • 본 연구는 오메가-3 다가불포화지방산의 함량을 높인 육계의 생산을 위하여 n-3 지방산과 올리브유를 혼합한 사료[CON(5% 일반지방), FXO(2.5% 아마씨유+ 2.5% 올리브유), FEO(2.45% 아마씨유+ 0.05% EPA + 2.5% 올리브유), FDO(2.45% 아마씨유+ 0.05% DHA + 2.5% 올리브유) 그리고 FHO(2.5% 어유+ 2.5% 올리브유)]를 육계에게 4주 간 급이하였다. 4주간의 사양 후 도계를 통하여 닭의 간, 가슴살 그리고 다리살을 채취하였다. 채취한 간은 간 무게/생체중의 비율, 육색 그리고 지방산의 조성 분석을 위하여 사용되었으며, 닭 가슴살과 다리살은 지방산 함량 분석을 위하여 사용되었다. FHO 사료를 급이한 육계의 간은 EPA가 유의적으로 낮았으나 DPA와 DHA는 높았다(p<0.05). 가슴 근육은 n-6 지방산인 AA와 DPA 그리고 n-3 지방산에서 FDO 처리구가 이외의 처리구 대비 유의적으로 높았으며(p>0.05), 더욱이 유의적인 차이는 나타나지 않았으나 수치적으로 EPA와 DHA 함량 역시 높았다. LNA 함량은 FEO와 FDO 사료를 급이한 닭의 다리 근육에서 유의적으로 높았으며, AA 함량 또한 FHO와 유사하였다. FHO 사료를 급이한 닭의 다리 근육은 EPA, DHA 그리고 n-3 지방산에서 유의적으로 높은 함량을 나타낸 반면에 AA의 함량과 n-6/n-3 지방산의 비율은 유의적으로 낮았다(p<0.05). 따라서 본 실험은, n-3의 다가불포화지방산의 함량을 증가시킴과 동시에 n-6/n-3 비율의 향상을 위해서는 근섬유 조성에 따라 그 접근법이 달라야 된다는 사실이 조사되었으며, 가슴과 다리 근육 내 n-3 지방산의 함량을 증가시키기 위해서는 각각 FDO와 FHO 사료의 급이가 적합할 것으로 판단된다.

The Effects of Fatty Acid Composition and Storage Conditions on the Oxidative Stability of Various Vegetable Seed Oils

  • Vegetable seed oils (VSOs) have been extracted and used not only as ingredients in food and as sources of dietary lipids, but also as sources of nutraceuticals used to overcome the various oxidative stresses that contribute to the development of diseases, including cancer and other chronic conditions. The chemical compositions and oxidative stabilities of various VSOs were therefore investigated; samples were stored for 35 d, with each oil having been tested under $O_2$ exposure, sealed from $O_2$ exposure and sealed from $O_2$ exposure while containing $O_2$ scavengers. Oxidative stability was evaluated by peroxide value (POV), p-anisidine value (p-AnV), iodine value (IV), and thiobarbituric acid (TBA) value. Perilla seed and flaxseed oil were mostly composed of linolenic acid (45.5% and 59.7%, respectively), whereas pine seed oil was mostly composed of linoleic acid (48.3%). Meanwhile, camellia seed and olive oils contained 80% oleic acid, which correlated strongly with oxidative stability. The POV, p-AnV, and TBA values were the highest under $O_2$ exposure, and the lowest in the presence of $O_2$ scavengers. These results indicate that VOS oxidative stability depends not only on storage conditions, but on unsaturated fatty acid profiles as well.

효소적 공법을 이용한 기능성 modified-butterfat의 향기성분 특성 분석 (Flavor Characteristic of Functional Modified-butterfat Synthesized by Lipase-catalyzed Interesterification)

  • 효소적 공법을 이용하여 합성한 기능성 modified-butterfat들(MF668과 MF866)의 향기성분 분석을 전자코와 SPME-GC/MS를 가지고 수행하였다. 전자코 분석결과, 기질로 사용된 ABF와 FSO, 그리고 생성물인 MF668과 MF866은 제1주성분 값의 95.16%기여율로 서로 다른 향기패턴을 갖음을 확인하였다. 신속하며 간편한 SPME-GC/MS분석결과, MF668과 MF866에서는 기질에서보다 더 다양한 aldehyde류, ketone류, acid류 등이 검출되었다. 이는 반응과정 중 생성될 수 있는 산화물로 추후 항산화제 연구가 필요함을 입증하였다.

오메가 3계열 지방산을 함유하는 사료의 급여가 육용 토종닭 계육 내 지방산 조성에 미치는 영향 탐색 (Effects of Dietary Sources Containing ω-3 Fatty Acids on the Fatty Acid Composition of Meats in Korean Native Chickens)

  • 본 실험은 부존사료자원을 토종닭에 이용하여 EPA 및 DHA와 같은 ${\omega}-3$계 다가불포화지방산을 함유하는 고품질 계육을 생산하기 위한 목적으로 실시하였다. 45일령의 재래종 암수탉을 공시하여 20일간 사양실험을 수행하였다. 일반시판사료를 사용한 대조구와 임자박 10% 첨가구(PM), 임자박 10% 및 아마종실 5% 첨가구(PM+FS), 임자박 10%, 아마종실 5% 그리고 어유 1% 첨가구(PM+FS+FO)로 나누어, 4처리 3반복 그리고 반복당 20수씩 총 240수를 공시하였다. 실험 종료 시체중, 증체량, 사료섭취량 및 사료 요구율 등 생산성과 관련된 항목에서는 처리간에 큰 차이는 관찰되지 않았다. 대조구에 비해 모든 시험구에서 산패도 수치가 약간 높게 나타났으나 처리간에 유의차는 인정되지 않았다. 계육 내의 지방산 조성을 조사한 결과에서 ${\omega}-6$계 불포화지방산의 비율은 처리간에 큰 차이가 관찰되지 않았다. 임자박, 아마종실 및 어유 첨가에 의해 ${\omega}-3$계 불포화지방산(C18:3 ${\omega}-3$, EPA, DHA)의 비율이 증가하는 경향 및 유의하게 증가하는 결과가 나타났다. 특히 EPA와 DHA는 어유를 첨가한 PM+FS+FO구에서 다른 구와 비교하여 유의하게 증가하였다. 본 연구의 결과, 임자박, 아마종실 및 어유를 일반시판사료에 적정량 혼합 급여하는 사료적 처리를 통해 재래종 닭에서 조직 내 총 ${\omega}-3$계 불포화지방산 및 DHA 함량을 증가시킬 수 있었으며, 이렇게 생산된 고부가가치 계육이 ${\omega}-3$계 불포화지방산의 좋은 공급원이 될 수 있을 것으로 사료되었다.
