부산지역 생선횟집을 중심으로 생선 매운탕 조리실태 조사 (Reports and Statistics on Korean Spicy Fish Soup Cooking in Busan)

  • 본 연구에서는 부산지역의 생선횟집을 중심으로 생선 매운탕의 조리 실태를 조사하여 표준조리법 개발에 기초자료로 활용하고자 하였다. 1. 재료로 사용되는 어류는 조피볼락과 넙치가 공통으로 사용되며, 그 외 어종들을 사용하는 것으로 나타났다. 2. 야채류는 무, 대파, 고추, 양파, 조미 및 향신료는 고춧가루, 마늘, 소금, 후추가 공통으로 사용되고 있는 것으로 나타났으며, 기타 재료들이 부가적으로 사용되는 것으로 나타났다. 3. 생선 매운탕에 사용되는 물은 생수와 어류를 삶은 물을 이용하고 있으며, 기타 야채를 삶은물을 이용하는 곳도 있는 것으로 나타났다. 4. 3-4인분 기준의 생선 매운탕에 사용되는 생선의 양은 조피볼락 1.5-1마리와 넙치 0.5-1 마리에 해당되는 머리와 뼈를 이용하는 것으로 나타났다. 5. 생선 매운탕의 조리방법은 물 끓인 다음 재료를 이용하며, 양념장은 양산품을 바로 이용하는 것으로 나타났으며, 조리기구는 대부분 뚝배기를 이용하는 것으로 나타났다.

중등교사가 인식하는 유능한 교사의 자질 (The Qualities of an Effective Teacher Recognized by Secondary Teachers)

  • This study examined the qualities of an effective teacher needed to accomplish educational reform successfully and prepare for a rapidly changing knowledge-based society. To achieve the purpose of the study, the following specific questions were looked into; (1) knowledge, skills, attitude of an effective teacher. (2) a proposal for staff development programs to improve the effectiveness of teachers. (3) a proposal to support teachers' efforts to improve their effectiveness. (4) the factors inhibiting the improvement of teachers' effectiveness. In this study, 'in-depth interview' was used for data collection because the study deals with the "subjective consciousness" of teachers, and qualitative research methods are useful to such a case. The research was done on teachers from secondary schools in Pusan City. According to the teachers interviewed, an effective teacher needed in the new age has such knowledge, skills, and attitude as; (1) knowledge in their major, general culture and common sense, psychology of educational counselling, social science, and knowledge and information related to curriculum. (2) effective instruction skills, skills to guide student behavior, skills related to administrative clerical work, using the computers, extra curriculum activities, educational evaluation, using teaching materials, developing educational programs, and good communication skills. (3) attitude relevant to willingness to understand and converse with students at their cognitive level, positive expectations and concern toward students, democratic problem solving, continuous self-study and development, thoroughgoing mission and professionalism, will for educational reform and innovation, neat appearance and refined language, and successful interpersonal relationships. The teachers also said that the current staff development system, as a program to provide necessary qualities for teachers, has improved in the last 3 years through diverse curriculum and systematic programs. However, due to the problematic promotion system, the staff development program has turned into just a 'point collecting' game from the role of in-service training program; teachers take training courses as the means just collecting points for promotion purpose. Factors inhibiting the improvement of teachers are (1) overload of formal paperwork over emphasizing outcome, (2) mannerism of teachers not perceiving their lack of professionalism, (3) the general attitude in the teaching profession resisting change and reform, (4) supervisory activities lacking rigid regulation, (5) research just as the means of point-collection only for promotion, and (6) staff development programs lacking efficiency. These factors, interacting each other, inhibited the improvement of teachers.

항해안전을 위한 AIS와 ECDIS 기반의 문자통신시스템 개발에 관한 연구 (A Study on the Development of Text Communication System based on AIS and ECDIS for Safe Navigation)

  • 해상에서 발생하는 선박 간 음성통신의 문제점을 보완하기 위한 방법으로, 언어적 오류와 VHF 사용제한 및 잡음 등에 영향을 받지 않는 텍스트 기반의 통신시스템을 AIS의 통신기능과 ECDIS의 화면전시 및 입력기능을 연계하는 방법에 착안하여 설계하였다. 개발된 문자통신시스템은 메시지를 이용해 정확한 의사전달이 가능하며, 사용자 편의성 향상을 위한 다양한 UI들을 소프트웨어를 통해 구현하였다. 하드웨어의 추가적인 설치와 개조 없이 구현되고, Message Banner Interface를 이용해 통신문장을 키보드 입력 없이 선택만으로 송신할 수 있으며, 자체 메시지 코딩과 디코딩을 통해 처리속도를 향상시키는 장점을 가진다. 문자통신시스템의 실선적용은 사용자의 언어적 한계와 인식오류를 감소시킬 수 있고, 다양한 VHF 음성통신의 문제를 해결할 수 있는 가장 실용적인 대안으로 판단된다. 또한 해상교통량이 많은 수역에서의 VHF 통신량 감소와 텍스트 기반의 정확한 의사전달과 협력동작 요청으로 선박 간 충돌사고 예방에 도움이 될 것이다.

동자개(Pseudobagrus fulvidraco)의 생식소 퇴화에 미치는 수온과 광주기의 영향 (Effect of Water Temperatures and Photoperiods on Gondal Degeneracy in Banded Catfish Pseudobagrus fulvidraco)

  • To investigate the role of temperatures and photoperiods as environmental cues regulating reproductive rhythm in Pseudobagrus fulvidraco, rearing experiments were conducted using sveral rearing regimes conbined with photoperiods and water temperatures during gonadal degeneration periods. Gonadosomatic index (GSI) in control was $8.16{\pm}1.50%$, while in other experiment GSI levels in female were lower than that in the control. In case of experimental precinct of 9 light (L) and 15 L, GSI levels were decreased. But GSI level with $20^{\circ}C$ was no diffrence after 40 and 60 days. GSI level in male of control was $0.35{\pm}0.05%$. GSI under 9 L and $25^{\circ}C$ was similar to that in control, whereas its level in other experiments was lower than that in control. Testosterone (T) of female was $3.68{\pm}0.22$ ng/mL at experimental precinct. In case of 9 L and 15 L, concentration of T were lower than experimental precinct in all of water temperature. Estradiol-$17{\beta}$ ($E_2$) and $7{\alpha}$, $20{\beta}$-dihydroxy-4-pregnen-3-one ($17{\alpha}20{\beta}OHP$) levels of female were $0.42{\pm}0.02$ and $0.83{\pm}0.01$ ng/mL at experimental precinct. $E_2$ levels of 9 and 15 L were higher than experimental precinct and $17{\alpha}20{\beta}OHP$ levels of 9 and 15 L were higher than experimental precinct. In case of T and 11-ketotestosterone levels were $0.69{\pm}0.11$ and $.62{\pm}0.03$ ng/mL in male. During the period of gonadal degeneration, gonadal maturation did not occur in any of the experimental regimes. However, comparatively high levels of $E_2$ observed at low temperature regimes ($20^{\circ}C$) regardless of photoperiods.

NOVEC가스 소화설비용 노즐 형상 설계에 대한 수치해석 (Numerical Analysis on Development of Nozzle Shape for NOVEC Gas Extinguishing System)

  • 청정소화약제는 지구오존층 보호를 위해 발효된 몬트리올 의정서에 따라 할론 1211 및 할론 1310을 대체할 수 있는 약제를 말한다. 국 내외적으로는 청정소화약의 시스템 표준화와 성능평가가 수행되고 있다. 본 논문은 일반적인 청정소화약제 시스템을 바탕으로 다양한 노즐의 형상에 대한 모델링 및 수치해석을 수행하여 최적의 노즐 형상을 제안하였다. Type A와 B의 2가지 형상에 대한 노즐의 3차원 모델링을 통해 노즐의 분출속도가 개선될 수 있도록 하였다. 2가지 형상의 노즐에 대하여 유동해석을 실시하였으며 노즐의 홀 직경을 다르게 하여 가스속도 및 압력분포를 측정하였다. 측정결과 노즐 홀 수 및 직경에 따라 노즐출구에서 분출속도가 달라지는 것을 확인 할 수 있었으며 노즐 홀 직경에 관계없이 유량은 압력이 증가함에 따라 증가하는 경향을 나타내었다. 실험을 통해 얻어진 결과를 바탕으로 노즐 직경이 5 mm인 경우의 K-factor값이 $101.8l/min{\cdot}bar^{-0.5}$임을 확인하였으며, 최종적으로 노즐 홀 5 mm인 12개의 홀이 2층 구조로 되어 있는 형상의 노즐을 제안하였다.

수산가공품의 biogenic amine 함량 변화 (Biogenic Amine Contents in Fish Products)

  • The purpose of this study was to determine content of biogenic amines (Histamine, Cadaverine, Putrescine) in the salted mackerel, canned mackerel, mackerel pike, and freeze dried mackerel pike (Guamegi) collectively, all were purchased in the market. Salted mackerel was purchased at five markets (A, B, C, D, and F market) and stored for 10 days at $4{^{\circ}C}$. At the time of purchase, salted mackerel purchased at markets A, B and C was tested for biogenic amine, yet nothing was detected. However, salt mackerel purchased at market D was tested and the histamine concentration was 0.5 mg/100g. Mackerel from market F, exhibited content levels of 0.5 mg/100g histamine and 1.6 mg/100g cadaverine. Those make certain safety during self-life but that purchased F market gradually increased biogenic amine during storage. Prepared salted mackerel of varying levels of freshness and processing methods were analyzed for biogenic amines. Salting process was performed using functional brine salt. VBN (volatile basic nitrogen) was used to establish freshness levels of salted mackerel. Analyses of mackerel muscle determined the values of freshness to be 9.2 mg/100g (good freshness), 18.2 mg/100g (bad freshness), respectively. After 40 days of storage, the content of histamine, cadaverine, putrescine in the freshness of salted mackerel was 2.0 mg/kg, 2.4 mg/kg and 0 mg/kg, respectively. The content of histamine, cadaverine, putrescine in salted mackerel of poor freshness was 71.3 mg/kg, 22.9 mg/kg and 17.8 mg/kg, respectively. It was concluded the presence of biogenic amines during the salting process of salted mackerel significantly effected freshness of materials. The presence of biogenic amines were detected in mackerel that underwent the salting process after 1 month of storage at $4{^{\circ}C}$. The levels of biogenic amines in the brine salted mackerel were higher than those found in dry, salted mackerel; however, the freshness of fish had an insignificant effect on biogenic amines. The presence of histamine was detected in small quantities in canned mackerel and mackerel pike from three companies. Alternatively, cadaverine and putrescine were not detected. Guamegi, vacuumed packed or sealed with a rope was purchased from three markets (A, B, C seafood company). Guamegi was stored and observed for 180 days at $-20{^{\circ}C}$. Histamine was detected in small quantities in all products stored at $-20{^{\circ}C}$. Levels of histamine was dependent on the types of packaging, rope packaging yielded the highest level. However, other amines were not detected.

공모선(工母船) 개척호(開拓號)의 운용(運用)에 관한 실태(實態) 분석(分析) (The Actual Conditions of the Management of the Factory Ship GAECHEOG)

  • This thesis is studied by means of operation diary of the factory ship GAECHEOG in the Sea of Okhotsk and the Sea of Bering from Jul. 1993 to Dec. 1996, We summarize these results as follows : 1. The factory ship GAECHEOG equipped trawl winch able to haul raw fish 700M/T per day and cargo winch able to unload manufactured goods 900M/T. The crews consist of 290~330 persons. 2. Factory machineries equipped surimi making plant able to process about 150M/T per day and fish meal plant able to manufacture about 70M/T per day. 3. The fishing ground from June to Nov. was the western Bering sea lying in the eastern Kamchaka peninsula and from Dec. to May, the fishing period to gather roe of a Pollack, was the Sea of Ohotsk lying in the western Kamchaka peninsula. 4. The buying catch of fish per each voyage from Dec. to May, the fishing period gathering Pollack-roe, was about 17,000~33,000M/T and from Jul. to Oct., the fishing period gathering non Pollack-roe, was about 10,000~21,000 M/T. 5. Raw fish was the most about 33,000M/T of the 2nd voyage in 1994 and was the least about 8,300M/T of the 1st voyage in 1993. Other voyages were about 13,000~18,000M/T. 6. The Pollack buying from Jul. to Nov. in the Bering sea was 5~7 fishes for one row in pan and body length about 40~50cm, and from Dec. to May in the Sea of Ohotsk was 6~8 fishes for one row in pan and body length about 37~45cm. 7. Surimi production in the 2nd voyage in 1994 was the most about 7,300 M/T, in the 1st voyage in 1993 was the least 1,900M/T and in other voyages was about 2,500~3,800M/T. The extraction rate of surimi goods for raw fish was about 17.4~26.5%. 8. Fish meal production in the 2nd voyage in 1994 was the most about 2,300 M/T, in the 1st voyage in 1993 was the least about 780M/T and in other voyages was about 1,100~1,700M/T. The extraction rate of fish meal goods for raw fish was about 7.3~10.7%. 9. Pollack-roe production was very much from Jan. to Apr. and was about 380~700M/T per each voyage. The extraction rate of Pollack-roe for raw fish was about 1.2~4.9%.

중량별 제주 넙치 산지가격의 선도가격 추정 및 시장가격 충격에 대한 동태적 영향 분석 (A Leading Price Estimation of Jeju Flounder Producer Prices by Fish Weight and a Dynamic Influence Analysis of Market Price Impulse)

  • This study firstly aims to estimate a leading-price of Jeju flounders with various price-classes by fish weight and secondly plans to provide policy implications of flounder purchase projects by understanding dynamic changes and interactions among flounder producer price-classes caused by price impulses in the market. This study applies an unit root test for stability of data, uses a Granger causality test to estimate the leading-price among producer prices by fish weight, employs the vector autoregressive model to analyze statistical impacts among t-1 variables used in models, and finally utilizes impulse response analyses and forecast error variance decomposition analyses to understand dynamic changes and interactions among change rates of the producer prices caused by price impulses in the market. The results of the study are as follows. Firstly, KPSS, PP, and ADF tests show that the change rate of Jeju flounder monthly producer prices by fish weight differentiated by logarithm is stable. Secondly, the Granger causality test presents that the change rate of the 1kg flounder producer price strongly leads it of 500g, 700g, and 2kg flounder producer prices respectively. Thirdly, the vector autoregressive model indicates that the change rate of the 1kg producer price in t-1 period statistically, significantly influences it of own weight in t period and also slightly affects price change rates of other weights in t period. Fourthly, the impulse response analysis indicates that impulse responses of structural shocks for the change rate of the 1kg producer price are relatively more powerful in its own weight and in other weights than shocks emanating from price change rates of other weights. Fifthly, the variance decomposition analysis points out that the change rate of the 1kg producer price is relatively more influential than it of 500g, 700g, and 2kg producer prices respectively. In conclusion, the change rate of the 1kg Jeju flounder producer price leads the change rates of other ones and Jeju purchase projects need to be targeted to the 1kg Jeju flounder producer price as the purchase project implemented in 2014.

동해 오징어(Todarodes pacificus) 채낚기어업의 어·해황정보의 유효이용 -어장형성과 수온과의 관계- (Utilization of the Information of Fishing and Sea Condition for Common Squid (Todarodes pacificus) Using Angling in the East Sea: Relationships between Fishing Ground and Sea Temperature)

  • 본 논문에서는 동해에 있어서의 오징어 채낚기어업의 조업위치선정에 필요한 해황정보인 표면수온, 중 하층수온에 주목하여 검토하였다. 표면수온으로 검토한 오징어 채낚기어업의 어장형성에 관해서는 각 어선이 조업시에 측정한 수온을 어해황속보와 대비해 보면 같은 표면수온에서도 약간 차이가 있었다. 그래서 조업위치선정에 있어서 중요한 해황정보인 조업시에 있어서의 표면수온을 사용하여 고찰한 결과 해에 따라서 해황상태가 달라도 조업척수가 가장 많은 표면수온은 대체로 $2^{\circ}C$ 범위내에 들어간다는 것을 알았다. 그러나 중 하층수온에 관해서는 선단의 각 어선이 측정하고 있지 않다는 것과 근해관측이 200해리 수역내에서만 행해졌다는 것으로부터 한정된 시기에 대해서만 검토한 결과 6월 및 7월 상순에 있어서 신나천현선단(神奈川縣船團)의 조업해역에 있어서의 50m층 수온으로 보면, 난수역과 냉수역 사이의 $10{\sim}12^{\circ}C$에서 어장이 형성되었고 그후 극전선부근의 $5{\sim}8^{\circ}C$의 해역으로 어장이 이동하는 것을 파악할 수 있었고, 연안역에서는 극전선 남쪽의 난수역의 50m층 수온이 $10{\sim}12^{\circ}C$의 해역에서 어장이 형성된다는 것을 알았다.

여수 소리도 주변해역에서 채집되는 어류의 종조성 및 군집구조 (Seasonal Fluctuation in Abundance and Species Composition of Fishes in Sorido Island of Yeosu Coast, Korea)

  • 소리도 주변해역에서 어류의 종조성을 파악하기 위하여 1999년 8월과 10월, 2000년 2월과 5월에 총 4회에 걸쳐 조사하였으며, 소형 Trawl 어망을 5톤급 어선으로 30분간 예인하였고 소리도 주변해역에 서식하고 있는 어류의 종조성은 총 9목 34과 36속 39종 1920.6개체/$1,000m^3$가 출현하였고 그 중 준치가 460.2개체/$1,000m^3$로 23.96%를 차지하여 가장 많은 개체수가 출현하였으며, 다음으로 고등어가 312.4개체/$1,000m^3$로 16.27%, 멸치가 210.9개체/$1,000m^3$로 10.98% 순으로 출현하였다. 주요 어종의 출현빈도 조사 결과, 연중 출현한 어종은 붕장어, 준치, 양태, 주둥치, 베도라치 실망둑 등으로 소리도 연안의 정착성 어종이였고, 특정 계절에만 출현한 어종은 군평선이와 얼룩통 구멍은 봄철에만 출현하였으며, 풀넙치는 여름에만 출현하였고, 돌돔, 고등어 그리고 삼치는 가을에만 출현하였다. 군집분석을 분석한 결과 종 다양도지수는 1.970~2.528, 풍부도지수는 2.747~4.729, 균등도지수는 0.669~0.759, 우점도지수는 0.455~0.576로 나타났다. 계절별 군집의 유사도는 봄철과 겨울철이 0.0043로 가장 작아 군집상이 매우 유사하였으며, 여름철과 겨울철에는 우점종과 출현종이 유사하지 않아 상대거리차가 0.10135로 군집상에 차이가 가장 컸다.
