An experiment was performed to evaluate different methods for preserving shrimp by-products and to determine their chemical composition. In the first experiment three ratios of shrimp by-product (SBP) to molasses (6:1, 4:1 and 3:1, wet weight), and to cassava root meal (3:1, 2:1 and 1:1, wet weight of shrimp by-product and air-dry weight of cassava root meal) were investigated. The pH of the SBP ensiled with molasses at a ratio of 3:1, and with cassava root meal at a ratio of 1:1, decreased during the first week to below 4.5 and remained low up to day 56 of ensiling, whereas the pH of the mixtures with higher ratios of SBP remained above 7.0, and the material deteriorated rapidly. The dry matter decreased initially in all treatments but then increased slightly from day 28 in the treatment where shrimp by-product was ensiled with cassava root meal at a ratio of 1:1. The crude protein (CP) and ammonia-N $(NH_3-N)$ contents of the preserved shrimp by-product material ensiled with molasses at a ratio of 3:1 increased significantly one week after ensiling. The CP content then remained constant, while the $NH_3-N$ concentration continued to increase up to 56 days after ensiling. When SBP was ensiled with cassava root meal at a ratio of 1:1 the CP content of the silage increased significantly up to 21 days after ensiling and then decreased back to the original level after 56 days, whereas $NH_3-N$ increased markedly up to 14 days and then remained fairly constant up to 56 days. However, the $NH_3-N$ content was significantly higher when SBP was ensiled with cassava root meal than with molasses. A balance experiment was carried out, arranged as a double Latin-square and including 6 F1 (Large White ${\times}$ Mong Cai) castrates fed randomly one of three diets based on cassava root meal, rice bran, and fish meal (FM) or shrimp by-product ensiled with molasses (SBEMO) or with cassava root meal (SBECA) as the main protein source. Apparent organic matter and CP digestibilities were significantly (p<0.001) higher for the fish meal diet than for the two shrimp by-product diets, although CP digestibility in SBEMO and SBECA was similar (p>0.05). N-retention was significantly higher for the fish meal diet than for the SBEMO diet, which in turn was significantly higher than for the SBECA diet (p<0.01). It can be concluded that shrimp by-product can be preserved by ensiling with molasses at a ratio of 3:1 or with cassava root meal at a ratio of 1:1. Nutrient digestibility and N-retention of diets based on these shrimp by-product silages were lower than for similar diets based on fish meal, probably due to their high chitin content and inferior amino acid balance.

Very little information is available in the literature on storage of fish sauce. Therefore, microbiological and chemical chracteristics during storage and quality of fish sauce were investigated and discussed to present data about the optimum storage condition. The chopped sardine meat was mixed with equal amount of water and $9\%$(w/w) of $75\%$ vital wheat gluten and then hydrolyzed by addition of commercial proteolytic enzymes such as bromelain, papaya protease, ficin and a enzyme mixture (Pacific Chem. Co.) for 4 hours at $52.5^{\circ}C$. The reaction mixture was heated for 30 min at $100^{\circ}C$ for enzyme inactivation, pasteurization and color development and then centrifuged for 20 min at 4,000 rpm. Table salt and benzoic acid were added for bacteriostatic effect and stored for 80 days at $15{\pm}1^{\circ}C$ and $30{\pm}1^{\circ}C$. The results were summarized as follows: 1. The amount of amino-nitrogen and pH of fish sauce were almost unchanged during storage. 2. Mininum concentration of salt for bacteriostatic activity was $9\%$(w/w) regardless of addition of benzoic acid. 3. the yields of amino-nitrogen were $63.1\%$ for the hydrolysate prepared without enzyme, $79.7\%$ for that with bromelain, $69.9\%$ with ficin, $74.3\%$ with papaya pretense, and $78.1\%$ with enzyme mixture, respectively. 4. The contents of amino-nitrogen were $4510.0mg\%$ on the dry basis for the product prepared by autolysis, $5483.2mg\%$ for that prepared with bromelain, $5305.7mg\%$ with ficin, $4994.1mg\%$ with papaya protease and $5582.3mg\%$ with the enzyme mixture, respectively. 5. The contents of crude protein were $51.35\%$ on the dry basis for the product prepared by autolysis and 55 to $59\%$ for prepared with commercial enzymes. 6. The hydrolysate prepared with the enzyme mixture revealed a little stronger meaty taste than any other products. 7. The level of crude protein in residues was still high ($69.5{\sim}77.2\%$ on the dry basis) and might be originated from the added vital wheat gluten.
Effects of four kinds of phosphate complex on the water holding capacity(W.H.C) and protein solubility of yellow-corvenia(Pseudosciance manchurica) and hair tail(Trichurus lepturns) meat paste were investigated. The formulations of four kinds of phosphate complex employed to this experiment were made by mixing several phosphates such as sodium polyphosphate, sodium pyro-phosphate, sodium acid pyro-phosphate, potassium pyro-phosphate, sodium tetra meta-phosphate, sodium ultra meta-phosphate and sodium hexa meta-phosphate, and monoglyceride at different mixture ratios. Among the four kinds of phosphate complex, phosphate B complex which was formulated by mixing sodium poly-phosphate 50%, sodium pyro-phosphate 20%, sodium tetra meta-phosphate 20%, sodium acid pyrophosphate 5% and sodium ultra meta-phosphate 5% was most effective on enhancing the W.H.C and protein solubility of yellow corvenia meat paste, and in case of hair tail meat paste, phosphate C complex which was formulated by mixing sodium poly-phosphate 40%, sodium pyro-phosphate 30%, potassium pyro-phosphate 15%, sodium tetra meta-phosphate 10%, and sodium hexa meta-phosphate 5% was more effective than other phosphate complex, and their optimum addition level was 0.4% respectively in weight of fish meat paste. Texture characteristics such as hardness, cohesiveness, and springiness value of Kamaboko(fish meat paste product) were evaluated as best when 0.3% of phosphate B complex was added. The optimum cooking condition of Kamaboko to get good texture was heating for 45 minutes at 85$^{\circ}C$.
Processing conditions of fish steaks and the effect of soybean protein on quality during frozen storage were investigated. Added to the fish meat were 1.0% of table salt, 0.5% of sodium bicarbonate, 0.2% of polyphosphate, 0.2% of monosodium glutamate, 2.0% of sugar, 0.2% of red pepper powder, 0.2% of white pepper powder, 0.2% of garlic powder and 0.2% of nutmeg. The mixture was minced with stone mortar and then stored at $-3^{\circ}\;to\;-5^{\circ}C$ for two days prior to frozen storage. The beneficial effects of adding soybean protein(5%) to the fish steaks were the control of color change, free drip, oxidative rancidity and in texture that exhibited the improvement of quality. The quality of frozen mackerel steaks, by sensory evaluation, was not inferior to that of hamburger on the market.

This study was conducted for the purpose of examining stable disposal of foodwaste and possibility of multilateral use of its by-product by mixing earthworm powder and by-product generated from food waste disposal for making feed for sea fish. As a result of the study, content of crude protein (25.93%, 69.72%), crude lipid (16.91%,6.39%) crude ash (15.38%, 5.30%) in by-product of food waste and earthworm powder was higher than that in fish meals manufactured in the country, and it was judged that it is available to make good feed as a source of fatty acid as it contained C18:1n9c, 1n9t and c16:0. As for stability as a raw material for feed, it was shown that the stability was high when using the product as a raw material for feed not exceeding the standard of test items, and though change of content and ingredients to mixing ratio, it was shown that mixed specimen of fertilizer (S6) was higher, showing that it has great utilization in the future. Also, as it has more content of registered ingredients than any other raw materials for feed manufactured in the country, it is possible to be used as a substitute when manufacturing feed for sea fish. Therefore, it is judged that various studies such as economic analysis and technology of possible manufacturing will be needed in the future.
The effect of duodenal infusion with feed oligo-peptide solution on portal absorption of amino acids was investigated in poultry under unanaesthetized conditions. Four peptide solutions were used in the experiment: enzymatic hydrolysates from fish meal, soybean meal, cottonseed meal and rapeseed meal proteins with average molecular weights less than 3,000 Da and 1,000 Da, respectively. Intestinal absorptions of these oligo-peptide solutions were compared by determining the concentration of free amino acid (FAA) in portal blood after the duodenal administrations of oligo-peptide solutions. Absorptive intensity and balance were used to estimate the intestinal absorption rate of amino acids. The absorptive intensities of amino acids were highest for the fish and soybean meal oligo-peptides. The ratios of amino acids absorbed in the portal blood from fish and soybean meal oligo-peptides were more similar to the composition of the infused amino acids than that observed from the cottonseed and rapeseed meal oligo-peptides. A positive correlation was found between absorption rate and proportion of PAA in the oligo-peptides. The higher absorption rate could be contributed to the higher proportion of peptide bound amino acids (PAA). The results suggest that fish and soybean meal protein are significantly more easily hydrolyzed into oligo-peptides (p<0.05) in the gastrointestinal tracts of poultry and as such can be utilized more effectively by body tissues.
Considerable attention has been given to the accuracy of HER-2 testing and the correlation between the results of different testing methods. This interest reflects the growing importance of HER-2 status in the management of patients with breast cancer. In this study the detection of HER-2 gene and centromere 17 status was evaluated using dual-colour primed in situ labelling (PRINS) in comparison with fluorescence in situ hybridization (FISH). These two methods were evaluated on a series of 27 formalin fixed paraffin embedded breast carcinoma tumours, previously tested for protein overexpression by HercepTest (grouped into Hercep 1+/0, 2+ and 3+). HER-2 gene amplification (ratio${\geq}2.2$) by PRINS was found in 3:3, 6:21 and 0:3 in IHC 3+, 2+ and 1+/0 cases, respectively. Comparing FISH and IHC (immunohistochemistry), showed the same results as for PRINS and IHC. Chromosome 17 aneusomy was found in 10 of 21 IHC 2+ cases (47.6%), of which 1 (10%) showed hypodisomy (chromosome 17 copy number per cell${\leq}1.75$), 7 (70%) showed low polysomy (chromosome 17 copy number per cell=2.26 - 3.75) and 2 (20%) showed high polysomy (chromosome 17 copy number per cell ${\geq}3.76$). The overall concordance of detection of HER-2 gene amplification by FISH and PRINS was 100% (27:27). Furthermore, both the level of HER-2 amplification and copy number of CEN17 analysis results correlated well between the two methods. In conclusion, PRINS is a reliable, reproducible technique and in our opinion can be used as an additional test to determine HER-2 status in breast tumours.

Rainbow trout (Oncorhynchus mykiss) were treated with ultrasonic (40kHz) and microbubble. The organic serum components, glucose were decreased compared to control at microbubble single treatment (M) and ultrasonic treatment (UL), but glucose concentrations in fish serum of all experimental groups analyzed in this study were also within the normal range. The organic serum components, cholesterol and total protein were no significant change by ultrasonic and microbubble treatment. There were no significant changes in the lysozyme activity on ultrasonic and microbubble treatment. Serum bactericidal activity decreased on ultrasonic single treatment (UL) compared to the control (P<0.05), but the numbers of bacterial colonies were significantly lower than those in the negative (PBS). The results of this study indicate that ultrasonic and microbubble treatment did not have a critical effect on the serum composition and innate immunity of O. mykiss, and that it is a way to do not significant stress on the fish body as a countermeasure against sea lice.

The chemical composition of fish feeds(mackerel, gizzard shad, shrimp and formula feed) were analyzed and compared with those of untreated and irradiated (5 kGy) feeds, and the effects of gamma irradiation (5 kGy) and butylated hydroxyanisole (BHA, 200ppm) on feeds spoilage were investigated by determination of thiobarbituric acid (TBA) value and peroxide value for 14 days at $20^{\circ}C$, $4^{\circ}C$ or $-20^{\circ}C$. Crude protein, crude lipid, crude fiber, crude ash and nitrogen free extract were not significantly changed by gamma irradiation with the dose of 5 kGy. Immediately gamma irradiation increased the initiative oxidation of feeds as expected. But BHA was found to be greatly effective in minimizing the radiation-induced peroxidation (p<0.05). The TBA value and peroxide value increased with the elapse of the storage period. The level of lipid oxidation was increased depending on the rise in storage temperature. But the additions of BHA inhibited the lipid oxidation (p<0.05).

Effects of raw material composition, feed moisture and process temperature on chemical, physical and sensory properties of extrudates produced by a single-screw extruder from the mixtures of rice flour, isolated soy protein and file fish were evaluated through response surface methodology (RSM). Nitrogen solubility index (NSI), integrity index (II), rehydration ratio (RR), density, and the external appearance were measured as indices of physicochemical and sensory properties of extrudates. RR was negatively correlated with density (R=-0.742, p<0.0l). Increased amounts of rice flour in feed mixtures resulted in increased RR. The extrudate prepared from the mixtures of ISP, rice flour and file fish showed the highest sensory score at which extrusion temperature was 13$0^{\circ}C$ or above.
