Trans Fatty Acid Content of Processed Foods in Korean Diet (한국인 상용 가공 식품의 trans 지방산 함량)

  • This study was designed to determine total lipid and trans fatty acids(tFAs) content of 157 food items commonly consumed in the Korean diet and to prepare the database for the estimation of tFAs intake in Koreans. Total lipid and tFAs content was determined by Bligh and Dyer method and attenuated total reflection infrared spectroscopy, respectively. The content of tFAs in margarines ranged from 0.8% to 25.2%, depending on the manufacturers. In bakery products, cakes contained higher levels of tFAs(0.8~16.9%) than hamburgers(0.8~8.4%) and doughnuts(4.9~10%). The distribution of tFAs in crackers and cookies was wide(0.8~25%), whereas meat and fish products contained 0% to 8.9% of tFAs. Fried chickens had 0% to 14.6% of tFAs and French fries had 5.2% to 18.8% of tFAs. In noodles, nuts, chocolates and fermented fish sauces, tfAs were not detected.

Eicosapentaenoic Acid Production of Allteromonas putrefacients KS-90 Isolated from Fish Intestines (생선 내장에서 분리한 Alteromonas putrefaciens KS-90에 대한 Eicosapentaenoic Acid 생산)

  • Marine baceteria of fish interstines were screened for high eicosapentaenoic acid(EPA) productivity. An isolated bacteria, KS-90, identified and designated as Allteromonus putrefaciens KS-90. A. putrefaciens KS-90 was found to be a rich source of EPA production and it was observed on incuibation at 4~12.5$^{\circ}C$ and pH 7.0. The production of EPA reached 18mg/g of dry cell weight when A. putrefaciens KS-90 was grown in the medium containing 1.0% pepton, 0.5% yeast extract, 0.025% meat extract and 2.0% glucose in 1/2 concentration of an artificial seawater, pH for 48 hr at $25^{\circ}C$. This value accounted for 24.7% of the total fatty acid in the extractable lipids.

Effect of Water Extract from Fugu xanthopterus on the Hyperuricemia in Alcohol-treated Rats (복어추출물이 Alcohol성 고요산혈증에 미치는 영향)

  • The present study was undertaken to investigate the effect of the water extract of the puffer fish Fugu xanthopterus(FXH) on the alcohol induced hyperuricemia. The normal group and the FXH treated group showed no sigbificant changes in the levels of blood uric acid but, the blood uric acid significantly decreased in the FXh treated rats with 100mg/kg for two weeks compared to the ethanol treated group. There were no significant changes in the activities of uricase, adenosine deaminase, guanine deaminase, and purine uncleoside phosphorylase, among all the test group. But the activitis of liver xanthine oxidase were recovered to the normal level in ethanol +FXH treated group comparing to the ethanol treated group. Furthermore, ethanol+FXH treated rats showed the similar pattern in the levels of blood uric acid and urinary allantoin with normal group. These results indicate that the decreased blood uric acid by the FXH treatment of the alcohol induced hyperuricemia rats may result from decreased activity of hepatic xanthine oxidase.

  • Before Jin (秦) period, Oriental (Eastern) culture was established in Korea different from China. Bulgogi (babecued beef, 貊炙) and legume fermented soy were transmitted into China. Afterward, alcohol drink, rice cake and cookie, shic-hae (lactic acid fermented fish products), Kimchi (fermented vegetable) were introduced and modified for Korea. Buddhism was transmitted to Korea through China, but selective animal was used as food. Later period of Koryo Dynasty, meat-eating become common due to mongorian influence and distilled spirits was introduced by mongorian. During Chosun Dynasty, table setting of spoon and chopstick was established, due to Confucian influence, dog eating, raw fish and raw meat eating became popular and nutrition for elderly was developed, whereas tea culture declined. In recent period (under the Japanese rule) Chinese introduced chinese noodle, chinese cuisine, chinese pancake and sun-dried salt. many chinese cultivated chinese vegetables.

  • The authors carried our experiment based on Pseudociaena manchurica and Cololabis saira about what the fish muscle protein changed after being stocked. It resulted in the below and followed much improvement in medium of making polyacrylamide gel: After salting the Pseudosciaena manchurica and Coloabis saira, there after refrigerating and freezing of order it could be concluded by disc-electrophoresis that analystic pattern was most being in number by refrigerating at Pseudosciaena manchurica, the second by salting and freezing. As it were: refrigerating is most suitable for saving protein.

  • To investigate the effects of growth and body composition of spotted sea bass (Lateolabrix sp.) by the supplemented dimethyl-$\beta$-propiothetin(DMPT). fish was fed the diets each containing 3 mM, 5 mM, 7 mM and 10 mM for eight weeks. The weight gain, feed efficiency and feed intake were significantly increased with dietary DMPT level. Condition factor was reduced by dietary DMPT supplementation. Crude protein content of fish after eight weeks increased with dietary DMPT level, whereas crude lipid content deceased with dietary DMPT level. Amino acid content was higher in DMPT-added group than control group. Amino acid composition was not influenced by dietary DMPT supplementation. Fatty acid content deceased with dietary DMPT level.

Effects of Dietary ${\beta}-1,3$ Glucan on Growth and Immune Responses in Juvenile Olive Flounder, Paralichthys olivaceus (치어기 넙치 사료내 ${\beta}-1,3$ 글루칸의 첨가가 성장 및 비특이적 면역반응에 미치는 영향)

  • This study was conducted to investigate the effects of dietary supplementation of ${\beta}-1,3$ glucan on growth and immune responses in juvenile olive flounder, Paralichthys olivaceus fed the white fish meal based diets for 6 weeks. Five experimental diets supplemented with ${\beta}-1,3$ glucan at 0, 0.01, 0.025, 0.05, 0.1 % (Control, $G_{0.01},\;G_{0.025},\;G_{0.05}\;and\;G_{0.1}$, respectively) of diet on a dry-matter basis. Five experimental diets were formulated to be isonitrogenous and isocaloric to contain 50.0% crude protein and 16.7 kJ available energy $g^{-1}$. Fish averaging $3.2{\pm}0.1\;g\;(mean{\pm}SD)$ were randomly distributed in each aquarium as triplicate groups of 15 fish. Weight gain (WG, %), specific growth rate (SGR, %), and feed efficiency (FE, %) of fish fed $G_{0.1}$ diet were found significantly higher than those of fish fed Control, $G_{0.01},\;G_{0.025}\;and\;G_{0.05}$ diets (P<0.05). However, there was no significant difference among the fish fed control, $G_{0.01},\;G_{0.025}$. Chemiluminescent responses (CL) of fish fed $G_{0.1}$ diet were significantly higher than those of fish fed the other diets. Serum lysozyme activities of fish fed $G_{0.05}$ and $G_{0.1}$ diets were higher than those of fish fed control, $G_{0.025}$ and $G_{0.05}$ diets. Fish fed $G_{0.1}$ diet showed a significantly lower cumulative mortality than did fish fed control diet throughout the challenge test (P<0.05). These results suggested that based on growth rate, feed efficiency, non-specific immunity and protection against microbial infections the optimum dietary ${\beta}-1,3$ gulcan could be greater than 0.05% but less than 1.0% in juvenile olive flounder, Paralichthys oilvaceus.

Characteristics of Eating Behaviors of the Long-lived Elderly People in Kyungpook Sung-Ju (경북 성주지역 장수 노인의 식행동 특성)

  • The purpose of this study was to find out the common characteristics of eating behaviors of the long-lived elderly in order to offer the basic data for establishing dietary guidelines for a long and healthy life for the general population. The subjects were three-hundred elderly people over age 85 living in Kyungpook Sung-ju who have no problems in daily living. The general characteristics, nutrition knowledge and attitudes, meal patterns, and food preferences of the subjects were surveyed by individual intervies. The levels of the nutrition knowledge of the subjects were very low(average score ; 4.3) and the correlation coefficient between their nutrition knowledge and attitude score was also low(r=0.323, p=0.000). Most of the subjects(93%) had a regular meal pattern consuming three meals a day. The major staple food was rice mixed with other grains(75%) and the number of side dishes was mostly under four(99%). A majority(73%) had no habit of overeating and 51% of the subjects were taking snacks besides regular meals. Thirty one percent of the subjects had drinking habits and 80% of the drinking subjects had over 40 years of drinking history. The most common frequencies for intakes of various food groups were ; more than once a day(95%) for vegetables ; 2∼3 times a week(74%) for green and orange color vegetables ; 2∼3 times a week(72%) for fruits ; once a day(70%) for fish, eggs and legumes ; 2∼3 times a week(49%) for milk ; 2∼3 times a week(72%) for fruits ; once a day(70%) for fish, eggs and legumes ; 2-3 times a week(49%) for milk ; 2-3 times a week(85%) for seaweeds and 2-3 times a week(81%) for foods cooked with oil. The most preferred foods by the subjects were white rice(staple foods), soybean paste soup(soups), beef and eggs(meats and eggs), yellow croaker and hair tail(fish and shellfish), yoghurt(milk and milk products), all vegetables except carrot(vegetables), and watermelon(fruits). The popular food preparation methods included mixing with seasonings and the most preferred taste was sweet. The results showed that the eating pattern of long-lived elderly was characterized by regularity, simplicity, and no overeating.

Recommendation of Serving Size of the Meal Service of Community Child Centers in Korea (지역아동센터 급식을 위한 적정 배식량 제안)

  • Objectives: This study was performed to set easily applicable portion sizes by sex and age for children at the Community Child Centers (CCC) in Korea. Methods: Considering the age and gender specific energy level at Target Patterns for children aged 6-18 years, which were suggested as a part of the 2010 Korean Food Guidance System (KFGS), we set three meal sizes. We reclassified the recommended daily servings of Grains, Meat fish eggs beans and Vegetables group at Target Patterns into three meal sizes, and then calculated the recommended serving per meal. Each proposed amount of food per meal was calculated based on serving size of foods commonly eaten at KFGS, which was then allocated to five meal components; rice, soup stew, protein and vegetable side-dishes and Kimchi. Each proposed amount of food per meal was applied to 173 menus' recipes from CANpro 3.0 as main ingredient's amounts. We cooked the 173 menus at the medium size and measured their weights after cooking. Results: Each recommended serving per meal was 0.75, 0.9 and 1.2 for Grains; 1.2, 1.6 and 2.4 for Meat fish eggs beans; 2, 2.4 and 2.8 for Vegetables by meal sizes. Among five meal components, the ratio of small and large to medium size was 1/5 less and 1/3 more for rice and 1/3 less and 1/3 more for soup stew, protein side-dish and Kimchi, respectively. We suggested the same amount for a vegetable side-dish to encourage vegetable intake. Proper portion sizes per meal of medium were rice 190 g, soup stew 210 g (solid ingredients 60 g), protein side-dish 100 g (meat eggs beans) and 70 g (fish), vegetable side-dish 80g and Kimchi 30 g. Conclusions: Proper portion size per meal suggested in this study may be useful at the CCC where dietitians are not available and the approach could be applicable to the other types of meal services.

Microbial community analysis of an eco-friendly recirculating aquaculture system for olive flounder (Paralichthys olivaceus) using complex microbial probiotics (복합미생물 프로바이오틱을 이용한 환경친화적 넙치 순환여과양식시스템에서의 미생물군집 분석)

  • This study was conducted to evaluate effects of dietary microbial probiotics on the growth and disease resistance of olive flounder (Paralichthys olivaceus) in a recirculating aquaculture system (RAS), and the effects of the probiotic bioaugmentation on the microbial community structure and water quality. For the analysis, 80 juvenile fish (average weight, $25.7{\pm}7.6g$; average length, $15.2{\pm}1.7cm$) were fed a basal diet containing a commercial microbial product CES-AQ1 (CES; $1{\times}10^9\;CFU/kg$ diet) in an RAS for 8 weeks. Weight gain, the specific growth rate, feed efficiency, and protein efficiency ratio of the fish fed the CES diet in the RAS were 1.5~2.5 times higher than those of fish fed the basal diet alone, or the basal diet containing oxytetracycline (OTC), yeast plus bacterium, or Bacillus subtilis in a still water system. There was no significant difference in the pathogen challenge test between fish fed the OTC diet and fish fed the CES diet in the RAS, suggesting the CES-AQ1 probiotic used in the RAS as a potential replacement for antibiotics. The RAS biofilter maintained the highest microbial diversity and appeared to harbor microbial communities with ammonium oxidation, denitrification, and fish pathogen suppression functions. Ammonia, which is hazardous to fish, was significantly decreased to < 0.5 mg/L in 19 days, indicating the effectiveness of probiotic supplementation to maintain good water quality in RAS. These results suggest that the intestinal microbial communities of fish are stabilized by a probiotic-containing diet (CES) and that bioaugmentation with probiotics may be an eco-friendly and economical supplement for aquaculture of olive flounder, promoting both good water quality and fish health in an RAS.
