동남아산 피시소스를 이용하여 제조한 김치의 품질 특성 (Quality Characteristics of Kimchi made with South-East Asian Fish Sauce)

  • Salt-fermented fish and fish sauce are very important materials to make Kimchi. They provide good taste and plenty of nutrition to Kimchi during fermentation. However, it is difficult to purchase Korean salt-fermented fish or fish sauce out of Korea. Therefore, to generalize Kimchi for other countries, this research carefully compared the quality differences between Kimchi made with South East Asian fish sauce, which is fairly similar to traditional Korean salt-fermented anchovy extract (Aekjeot) in terms of taste and ingredients, and that made with traditional Korean salt-fermented anchovy extract. To determine quality differences among traditional Korean Kimchies made with different sauces, Korean-made salt-fermented shrimp, salt-fermented shrimp extract, salt-fermented anchovy and salt-fermented anchovy extract were used. Of the four Kimchis, the one made with salt-fermented anchovy extract was chosen as a control sample and compared with those made with three different South-East Asian fish sauces. In the sensory evaluation for acceptance of fish sauces, characteristics of taste, texture and overall acceptance showed significant differences. In the sensory evaluation for differences, characteristics of fish odor and crunchiness showed visible differences. For umami taste, all fish sauces received higher points than Korean salt-fermented anchovy extract (control sample), although the difference was not significant. Sensory evaluation and research results show that Kimchi can become a highly likable food overseas and Kimchi can substitute easily bought South-East Asian fish sauces for Korean salt-fermented fish sauces (Jeotkal).

  • An 8-week feeding trial was conducted to determine the apparent dry matter and protein digestibility of seven different dietary protein sources by juvenile river puffer Takifugu obscurus. Eight diets containing white fish meal (WFM), brown fish meal (BFM), squid liver powder (SLP), krill meal (KM), leather meal (LM), soybean meal (SM), or fermented soybean meal (FSM) were prepared by mixing a basal diet (BD) with one of the seven test ingredients at a ratio of 7 to 3. Fish averaging $10.8{\pm}0.04g$ were fed the experimental diets in triplicate groups. The apparent dry matter digestibilities of BFM, WFM, FSM, SLP, LM, SM, and KM were 80, 78, 72, 67, 56, 55, and 54%, respectively, while the corresponding apparent protein digestibilities were 96, 96, 93, 92, 89, 88, and 86. The weight gain of fish fed BFM was significantly greater than that of fish fed SM or LM (P<0.05), while it was not significantly different from that of fish fed the BD, WFM, FSM, BFM, SLP, or KM. These results indicated that WFM, BFM, FSM, and SLP are potentially good protein sources for replacing fish meal in river puffer feed.

What is on plates for school meals: focusing on animal- vs. plant-based protein foods

  • BACKGROUND/OBJECTIVES: This study aimed to analyze the potential of school meals in South Korea as a sustainable tool to reduce carbon emissions by focusing on animal- vs. plant-based protein foods. MATERIALS/METHODS: By using a stratified proportional allocation method, 536 out of the 11,082 schools nationwide were selected including 21 kindergartens, 287 elementary-, 120 middle- and 108 high schools. A total of 2,680 meals served for 5 consecutive days (June 21-25, 2021) were collected. We analyzed the average serving amounts of protein foods (animal- vs. plant-based) per meal and then, calculated the estimated average amounts of carbon emission equivalents per meal by applying the conversion coefficients. The t-test and analysis of variance were used for statistical analyses (α = 0.05). RESULTS: The average serving amount of animal-based protein foods per meal was 12.5 g, which was approximately 3 times higher than that of plant-based ones (3.8 g) (P < 0.001); the Meat-group had the highest average amount of 17.0 g, followed by Egg-group (9.6 g), Fish-group (7.6 g), and Beans-and-Nuts-group (3.8 g) (P < 0.05). Specifically, pork (25.1 g) was ranked first, followed by poultry (19.6 g), processed meat products (18.0 g). The estimated average amount of carbon emission equivalents of animal-based protein foods per meal was 80.1 g CO2e, which was approximately 31 times higher than that of plant-based ones (2.6 g CO2e) (P < 0.001); the Meat-group had the highest average amount of 120.3 g CO2e, followed by Fish-group (44.5 g CO2e), Egg-group (25.9 g CO2e), and Beans-and-Nuts-group (2.6 g CO2e) (P < 0.05). Specifically, processed meat products (270.8 g CO2e) were ranked first, followed by pork (91.7 g CO2e), and processed fish products (86.6 g CO2e). CONCLUSIONS: The results implied that school meals with plant-based alternatives could be a sustainable tool to improve carbon footprint.

올리브 오일을 첨가한 어육 소시지의 최적화 연구 (Optimization of the Fish Sausage Added with Olive Oil)

  • The purpose of this study was to determine the optimal mixing ratio of Alaska Pollack (Theragra chalcogramma) and olive oil in the preparation of sausage. The experiment was designed according to the central composite design for estimating the response surface, which demonstrated 10 experimental points including 2 replicates for Alaska Pollack and olive oil. The physical, mechanical and sensory properties of test materials were measured. A canonical form and perturbation plot showed the influence of each ingredient on the final product mixture. Measurement results of the physical and mechanical properties showed a significant increase or decrease in the following properties: dough sweetness (p<0.05); sausage L (p<0.05), a (p<0.001), and b (p<0.01); hardness (p<0.01), chewiness (p<0.05), and gumminess (p<0.01). Also, the sensory measurements showed a significant improvement in color (p<0.05), flavor (p<0.01), taste (p<0.001), tenderness (p<0.05), chewiness (p<0.01), mositness (p<0.05), and overall quality (p<0.01). As a result, the optimum formulation by numerical and graphical methods was calculated as Alaska Pollack 35.74 g and olive oil 7 g.

열구자탕(悅口子湯)의 문헌적 고찰 (A bibliographical study of Yeolgujatang)

  • Yeolgujatang is traditional casserole with meat, fish and vegetables in special pot. Name of Yeolgujatang was in 1800s, as yeolgujatang, yeolgujatangbang, yeolguja, in 1900s, Yeolgujatang, royal feast food in Yi Dynasty was yeolgujatang, Meon-sinseolro, tangsinseolro. Yeolgujatang frame has legs and a lid, and a cylinder that can contain charcoal at the center of its rounded pot. with this charcoal, food can be cooked. Its material has changed from brazier to brassware, stainless steel, and silver. Nowdays electric sinseolro was also launched, which uses electric power instead of charcoal. Materials in yeolgujatang are beef, intestines, pork, chicken, pheasant, fish, sea bream, abalone, shrimps, vegetables, mushroom, ddock, guksu, cooked rice, seasening and garnish. Nutrition of Yeolgujatang per capita contains 221.5kal of calory, 17.3g of protein, 16.5g of fat, 6.1g of carbobydrates, 2g of fiber, 57.6mg of calcium, 208mg of phosphorus, 4.3mg of ferrum, $2177{\mu}gRE$ of vitaminA, 1.58mg of vitamin $B_1$, 0.3mg vitamin $B_2$, 6.6mg of vitaminC and 5.26mgNE of niacin. Yeolgujatang is excellent in nutrition, except for calcium and vitaminC.

경남지방의 향토요리에 관한 연구 -탕류를 중심으로- (A Study on 'Tang', Traditional Soup Originated in Kyoung-Nam Province)

  • Currentry, the originality of traditional soups in Kyoung-Nam province is vanishing by the inflex of processed and instant food, food industrial development. Especially, such factors as the influence of alien cooked, the develoment of transportation, the movement of population have made it hard to preserve the traditionnal food preparations. The purpose of this thesis was to seek out the various kinds of Kyoung-Nam province soups preparation. To do this, about 60 kinds of soups recipe were reviewed and charactered into several categories. The findings of the study are as follows. 1) Soup is made by fish or shellfish, freshwater fish. Meat and fowls is rarely used in Kyoung-Nam province (coastal region). 2) Soups of inland area is made by most vegetables and these soup were always harmonized with soybean powder or perilla powder. 3) Various soup season with the mag-jang, mul-jang sauce, hab-ja-jang sauce. 4) These soups were in general to make much red pepper and much salt.

명태 건조과정에서 일어나는 수분과 수분활성도 변화가 명태건조품의 물성에 미치는 영향 (Drying of Alaska Pollack in Controlled Conditions to Identify Major Factors for Textural Properties of Hwangtae)

  • 명태의 건조경향은 초기의 평형상태가 뚜렷하지 않은 과정을 제외하면, 일반적인 식품건조형태를 따르는 것으로 보인다. 따라서 시간이 지날수록 건조속도는 어육과 외기의 수분농도차이가 줄어듦에 따른 결과뿐만 아니라, 표면 건조에 의한 고화현상에 의해 수분이동이 억제됨에 따라 느려지게 된다. 명태의 부위별 건조속도는 잘 알려진 바와 같이 머리 부분이 몸통부분보다 빨랐다. 건조가 진행될수록 어육표면과 중심부의 수분함량과 그에 따른 수분활성도의 차이는 증가함으로써 어육내부의 수분이동이 잘 일어나지 않아 전체적인 건조속도의 저하를 나타내었다. 주어진 외기의 건조조건(온도, 습도, 풍속)에서 초기의 높은 건조속도에 의한 어육 표면응고로 인해 건조개시 수 시간 이내에 어피(피부)와 어피 바로밑부분의 어육과 어체 내부 어육의 수분함량 차이가 급격히 일어나는 것을 알 수 있었다. 황태 제조과정의 전단계인 건조과정에서 건조가 시작된 뒤 주기적으로 수분활성도의 차이가 급격히 일어나는 시간(지점)은 황태 특유의 조직감을 형성하기 위해 건조과정에서 조직의 고화를 방지함으로써 일정한 건조속도를 유지하기 위해 주기적으로 수분을 공급해 주어야 하는 시점임을 제시해 준다.

어류 알의 Protease Inhibitor 활성 분포 (Distribution of Protease Inhibitors from Fish Eggs as Seafood Processing Byproducts)

  • To identify and examine the distribution of proteolytic inhibitory activity in crude extracts from fish eggs, and to determine the applicability of these protease inhibitors as anti-degradation agents in surimi-based products and fish meat, we compared the inhibitory activities of various extracts from fish eggs to those of commercial proteases, such as trypsin and papain. We used the optimal conditions for the screening of trypsin activity: 30 ug/uL of 0.1% trypsin and 0.6 mM Na-benzoyl-L-arginine-p-nitroanilide (BAPNA) with a pH of 8.0 at $40^{\circ}C$ for 60 min. The activities of papain and four commercial proteases were investigated after mixing with 100 ug/uL enzymes and 0.3% casein with a pH of 8.0 at $40^{\circ}C$ for 60 min. We performed a screening assay to detect the inhibitory activity (%) of crude extracts from eight species of fish eggs against the target proteases trypsin and papain. The assay revealed a wide distribution of trypsin and papain inhibitors in fish eggs. The specific inhibitory activities (11.6.28.6 U/mg) of crude extracts from fish eggs against trypsin and BAPNA substrate were higher than that (0.64 U/mg) of egg whites, used as a commercial inhibitor. The inhibitory activities of crude extracts from fish eggs against trypsin, and of egg whites against casein substrate (1.94.4.51 U/mg), were higher than those of papain (0.24.1.57 U/mg) and commercial protease (0.04.0.32 U/mg). The extracts from fish eggs were rich in protease inhibitors that exhibited strong inhibitory activity against trypsin, a serine protease, and papain, a cysteine protease.

Gelatinized Carbohydrates in the Diet of Catla catla Fingerlings: Effect of Levels and Sources on Nutrient Utilization, Body Composition and Tissue Enzyme Activities

  • A Feeding trial was conducted to study the effects of three different sources and two levels of dietary gelatinized carbohydrate (GC) on nutrient utilization, growth, tissue composition and tissue enzyme activities of fingerlings of Catla catla (15.1-15.3 g). Six isocaloric (17.1-17.5 kJ/g) semi-purified diets were prepared either with rice, corn or tapioca at 40 or 50% GC each. The crude protein (CP) level used in the diet was 35% and 25% for 40% and 50% GC level, respectively to study the protein sparing effect of GC. The degree of gelatinization was higher for corn and tapioca than rice under similar cooking conditions. After a 60-d feeding trial, dry matter, carbohydrate, protein and lipid digestibility were higher in tapioca fed groups at both the levels of GC. However, the highest specific growth rate (SGR) and protein efficiency ratio (PER) were observed in the corn fed groups at 50% GC level indicating better utilization of nutrients from gelatinized corn. Feed conversion ratio (FCR) was almost similar in corn and tapioca fed groups between two levels of GC but in rice fed groups, FCR was lower in 40% GC than 50% GC level. The results indicated higher protein-sparing effect in corn and tapioca fed groups than rice fed groups. The order of gelatinized carbohydrate utilization in Catla catla fingerlings at 50% GC level was corn>tapioca>rice. At 40% GC level, corn and tapioca were comparable and more efficiently utilized than rice. In the corn fed groups, 50% GC was comparable with 40% GC level, whereas in rice and tapioca fed groups the 40% GC was better in terms of nutrient utilization. Liver glycogen content and hepatosomatic index were significantly (p<0.05) higher in those groups fed high GC (50%) irrespective of carbohydrate sources. Higher intestinal amylase and glucose-6-phosphate dehydrogenase activities were observed in higher GC fed groups than the lower GC groups. No mortality was found in any groups at any levels of GC.

혈합육어 Trypsin의 효소적 성질에 대한 반응속도론적 해석 (Kinetic Analyses for Enzymatic Properties of Trypsins Purified from Dark-Fleshed Fish)

  • 멸치, 고등어, 황다랭이 및 날개다랭이의 혈합육어에서 정제된 trypsin을 시료로 하여 각각의 BAPNA기질에 대한 반응속도와 그 관련 성질들을 분석 검토하였다. 4종의 혈합육어에서 정제된 trypsin의 Km'와 $k_{cat}$는 멸치 trypsin이 각각 $49.3{\mu}M$$90.9min^{-1}$, 고등어 trypsin A는 $53.7{\mu}M$$61.2min^{-1}$, 고등어 trypsin B는 $96.5{\mu}M$ $76.6min^{-1}$, 황다랭이 trypsin은 $62.8{\mu}M$$46.4min^{-1}$, 그리고 날개다랭이 trypsin은 $98.3{\mu}M$$47.68min^{-1}$ 이었다. TLCK에 대한 $K_i$, 값은 멸치 trypsin이$20.90{\mu}M$, 고등어 trypsin A가 $2.86{\mu}M$, 고등어 trypsin B가 $3.90{\mu}M$, 황다랭이 trypsin이 $0.96{\mu}M$, 그리고 날개다랭이 trypsin이 $1.82{\mu}M$이었으며, 황다랭이의 trypsin이 TLCK에 대하여 가장 예민하게 반응하였다. 이들 trypsin의 효소 활성과 촉매효율은 연근해 온 대산 혈합육어인 멸치와 고등어 trypsin이 열대해역에서 온대해역에 걸쳐 널리 회유하는 혈합육어인 황다랭이와 날개다랭이의 trypsin에 비하여 높은 특징을 보였다.
