This study was carried out to get the basic data on the efficient processing method of food wastes for utilizing as the resources of swine feeds composition, mineral and toxic elements of food waste were estimated in relation to the steps of processing and fermentation with MS (Miraculous soil-bacteria) microorganism complex. The chemical composition of food wastes was largely varied according to disposing sites, collection time and season. Offensive odor was reduced by anaerobic fermentation with MS microorganism complex. Food wastes fermented with MS microorganism complex have high contents in crude protein (24.1% D.M) and crude fat (12.9% D.M). Mineral composition was to be relatively well balanced compared to other plant or animal feed resources. Particularly the content of sodium was slightly higher than that of grains or agricultural byproducts. In food wastes fermented with MS microorganism complex, heavy metals such as Hg, As or F were not detected. Pb or Cd were detected in small quantities but their levels were below the dose s-permitted feeding standard of permitted dose in feeding standard. These results indicated that food wastes could be efficiently used for the resources of swine feeds through proper processing and fermentation.

The fermentative conversion of food wastes into feed was investigated by seeding of mixed inoculum YM (Youngjin Environmental co.), and thermotolerant yeast Kl. marxianus. For 6 days' fermentaion, the fermentation method of 2 days' aerobic followed by 4 days' anaerobic was better for the production of organic acids and increasing total microbial population than 6 days' continuous aerobic or anaerobic fermentation. By seeding YM, the total microbial count increased about 100 times of the control group. In addition, Kl. marxianus seeding together with YM increased total viable cell count, but did not increase yeast count significantly.
The treatment characteristics of leachate produced from pretreatment facilities like composting and feeding were investigated in a mesophilic anaerobic treatment. Experiments were performed in two phase which were acidification and methane fermentation. The acidification step was optimized for OLR from 1 to $4.5kg\;COD/kg\;VS{\cdot}day$ without adding NaOH. As experiment dates became longer, the solubilization ratio of particles increased up to 30% over 70 days. TVA was generated up to maximum 9,970mg HAc/L at OLR of $2kg\;COD/kg\;VS{\cdot}day$. But TVA was generated to minimum 6,519mg HAc/L at OLR of $4.5kg\;COD/kg\;VS{\cdot}day$. The acidification ratio was analyzed from 10.9% to 3.8% at OLR of $2kg\;COD/kg\;VS{\cdot}day$ and $4.5kg\;COD/kg\;VS{\cdot}day$ respectively. After 55 days, salt contents in the acid fermenter were accumulated and stabilized at the concentration of 3,150mg/L. Sodium ion($Na^+$) concentration was stabilized at 1,300mg/L. At methane fermentation step, biogas was generated up to 750ml and 937.5ml at the feeding volume of 20ml and 25ml respectively for acid fermented liquid during 25 days. About 80% of total biogas was generated during early 15 days and 95% were generated during 18 days respectively. After 25 days of the BMP test, acetic acid was removed approximately 97% and 98%, in case of those two experimental conditions.
The essential oil free needles, which were left after distillation of essential oil from various coniferous needles, were fermented with food waste organics in order to use as compost and roughage. Microorganisms for the fermentation were selected from domestic sources such as swine compost, bark compost, and kimchi, etc, and consisted of aerothermophilic bacteria and actinomycetes. The weight reduction ratio of food waste organics treated with the microorganisms was 90% after 30 days treatment, and the fermentation temperature was kept at approximately $45^{\circ}C$. The compost process was really slow due to chemical compounds derived from needles, and it finally took 60 days for complete compost. When 10% of needle compost was mixed with soil for radish growth, the growth indicators such as leaf length and root weight were increased compared with control, while root weight, root width, and root length were inhibited on the addition of 20% needle compost. The nutrient value and digestibility ratio of various essential oil free needles as roughage for ruminant animals were evaluated. The ratio of crude protein for essential oil free needles from Korean pine(Pinus koraiensis) was 10.02%, which was higher than those of rice straw(5.48%) and corn(9.00%). The digestibility ratios of essential oil free needles from Sawara cypress(Chamaecwaris pislfera), Korean pine(Pinus koraiensis), and Japanese Red Pine(Pinus densiflora) was 53%, 34%, 34%, respectively, indicating that those essential oil free needles were considered as excellent roughage.
In this study, by-products of rice bran, rice hull, bean curd dregs and food waste were fermented with different ratios of 26, 26, 34 and 14% respectively and the experimental diets were prepared mixing it with various ratios of commercial diets (fermented feed commercial feed : A 80 : 20, B 70 : 30, C 60 : 40, D 50:50). In Experiment I, feed intake, nutrients digestibilities and nitrogen retention were investigated and body weight gain in Experiment 1. For chemical composition of experimental diets, crude protein contents were 13.73, 13.78, 14.45 and 15.14% in A, B, C and D respectively and the contents of crude fat and crude fiber were highest in A as 8.66 and 27.82% respectively. 2. Dry hurler intakes were significantly higher (P<0.05) in A(362.06g/d) and C(358.49g/d) than B and D. Intakes of crude protein and crude fat were not significantly different (P>0.05) among treatments however those of crude fiber and crude ash were significantly higher (P>0.05) in A(101.47g/d). 3. Dry matter digestibilities in the range of 53.38∼68.81% in all treatments have shown the highest value in C of 60% fermented feed plus 40% commercial diet but the lowest in A of 80% of fermented feed plus 20% commercial diet (P<0.05). 59.85% of digestibility of crude protein in A was also lowest among all treatments (p<0.05), 4. 8.47g/d of nitrogen intake in C was recorded highest (P<0.05) however the highest nitrogen retention was marked in B of 50% fermented feed plus 50% of commercial diet due mainly to lower excretion of nitrogen through feces. 5. The data of live weight gain in Experiment II has not been shown as a result since the proper daily gain of body weight was achieved only in D as 88.89g/d and the goats in other treatments have shown frequent diarrhea. However, neglecting the animals with diarrhea, higher amounts of concentrates in the diets (C and D) showed the tendency of higher weight gain. 6. In this study, feeding 60% fermented feed manufactured with domestic agricultural by-products of rice bran, rice hull, bean curd dregs and food waste to Korean native goats have shown satisfactory results of intake and digestibility and it indicates that utilization of domestic agricultural by-products in goats could be improved by the process of fermentation. However it's effects on body weight gain and nitrogen retention were below than expected. Different sources of feedstuff for fermentation may result in different performances of animals. However, to draw overall conclusion from this study, 50∼60% of fermented feed can be recommended in the case of mixing with concentrates.
Fermented compost made from medicinal herb wastes (MHWC) as an environment-friendly manure resource was applied to determine physiological activities of Rubus coreanus Miquel (Bokbunja). MHWC, poultry manure compost (PMC), and MHWC+PMC (1:1, w/w) were applied to 2 year-old Bokbunja plant at levels of 0, 20, 40 Mg/ha, respectively. Physiological activities of Bokbunja were investigated at 15, 20 and 25 days after flowering (DAF). Content of total phenolics in fruit was high in order of 25 > 20 > 15 DAF, showing highest value in fruit treated with MHWC at 40 Mg/ha. The flavonoid level showed same pattern to total phenolics. Electron donation abilities at fruits at 15 and 20 DAF were higher than at 25 DAF. Nitrite scavenging ability (NSA) was increased on in order of pH 1.2 > 4.2 > 6.0. NSA in fruit at 15 and 20 DAF was higher than at 25 DAF. Tyrosinase inhibition ability at fruits treated with MHWC showed the highest value among all composts. Xanthine oxidase inhibition ability in fruit treated with MHWC at 25 DAF was the highest. In conclusion, physiological activities of Rubus coreanus Miquel (Bokbunja) were improved in MHWC group.

This study was conducted to evaluate physicochemical parameters; temperature, pH, C/N ratio, water content, organic contents and volume in a pilot-scale(capacity : $100m^3$) ultra thermophilic aerobic composting. There were three types input: municipal wasted sludge, livestock manure and slurry, and food waste produced in Jung-Eb city. Each target material was carried out by the first fermentation(organic waste + seed culture) and the second one(organic waste + seed culture + recycle compost), respectively. During composting, only with supply of air and mixing, the temperature increased $90{\sim}105^{\circ}C$ after every mixing in both periods. The changes of pH, $O_2$, $CO_2$ and $NH_3$ represented typical organic decomposition pattern by microorganisms. Also, all other physicochemical parameters of ultra thermophilic aerobic composting process showed similar or better performance than these of general aerobic composting. Heavy metal concentration of fermented compost adapted to compost fertilizer regulation standard in the heavy metal and hazardous analysis.
High salt content in food waste limit use as the potential source of compost. Since sodium chloride content should be lower than one percent to meet requirement for agricultural use of compost, we attempted use of three kinds of co-composting material for food wastes compost, which were fermented, dried, and fresh types of amendments which included pig manure, sawdust and puffed rice hull. Food wastes were composted well and stabilized after around the 40th days of composting. Little difference were found between composts amended sawdust and puffed rice hull. The result indicated that puffed rice hull could be used as a good alternative of sawdust. Because sawdust or puffed rice hull were mixed as amendments to control water contents and to dilute high NaCl content of compost material, the C/N ratios of the final products were significantly high over 40. However, NaCl contents of final products were dropped to less than percent on the fresh weight basis by mixing food wastes and the above amendments with the optimum rates.

This study investigated the effect of dried food-waste diets (FW) fermented by Aspergillus oryzae (AEW), on egg Production and egg qualify in laying hens. One hundred sixty eight laying hens, 50 week old, ISA-Brown wtrain were randomly distributed into 7 treatments with 3 relpicates of 8 birds per replicate and fed with standards laying hen diet replaced with FW and AFW at die=rent level Basal Diet, 25, 10, $75\%$, respectively. There was a significant decrease in feed intake for FW $50\%$ diet and egg Production was statistically lower in all W diet treatments(p<0.05). Water consumption was increased as the replacement increased. Egg weight, egg shell thickness and strength were similar among treatments. However, egg yolk color and Haugh unit showed distinct differences when W were added to their diets(p<0.05). No difference was observed in egg yolk cholesterol. It seems that FW diet could decrease the egg Production, but would be able to improve egg Quality. From this results, AO seemed applicable to laying hen diet as supplements.
Alaska pollock roe is mainly used for the production of salt-seasoned and fermented seafood (Myungran-jeot). Alaska pollock roes with broken egg membrane are usually discarded as a waste product. In this study, the broken roes of Alaska pollock were salt-seasoned and stuffed into cellulose casing for commercial production. The chemical and microbial changes of the broken roes of Alaska pollock stuffed into cellulose casing fermented at 5 and $25^{\circ}C$, respectively, were analyzed at different ripening periods. On 5 week fermentation, pH decreased down to 5.60 and 5.10 at 5 and $25^{\circ}C$, respectively, but the amounts of lactic acid, amino-nitrogen, and volatile basic nitrogen increased continously as ripening period increased, higher at 25 than $5^{\circ}C$. The amounts of amino-nitrogen, 620 and 780 mg/100 g, were the highest on 3 week fermentation at $5^{\circ}C$ and on 1 week at $25^{\circ}C$, respectively. The numbers of total viable cell and lactic acid bacteria, $3.1{\times}10^6$ and $3.1{\times}10^5\;CFU/g$ at $5^{\circ}C$, and $1.9{\times}10^7$ and $2.8{\times}10^6\;CFU/g$ at $25^{\circ}C$, respectively, were the highest on 2 week fermentation.
