Nutritional Risk and its Related Factors Evaluated by the Mini Nutritional Assessment for the Elderly who are Meal Service Participants (간이 영양상태 평가법에 의한 급식서비스 이용 노인의 영양 위험도와 관련 요인)

  • This study is designed to assess the prevalence at risk of malnutrition according to the Mini Nutritional Assessment (MNA) and evaluate the factors influencing on the nutritional risk of the elderly. Three hundred and nine elderly (110 men and 199 women: mean age =74.1) who participated in meal service in the Chung-buk province were investigated. Mean MNA total score was 21.9 and women had significantly lower MNA scores than men (respectively, 21.5 and 22.8). In the mean time mean MNA-SF (Short Form) score was 10.7, respectively 10.6 for the women and 11.0 for the men, with the difference being statistically significant. The MNA classified 33% of the elderly as well-nourished, 61.7% as at risk of malnutrition and 5.3% as overt malnourished. However, MNA-SF categorized the examinees 40.2% as good and 59.8% at nutritional risk. Those who identified as malnourished elderly had significantly lower mean BMI, mid-arm and calf circumference, poorer functional abilities (ADL, IADL) , lower MAR and food habits scores, and higher number of nutrient $\leq$ 75% of RDA than those with at risk of malnutrition and well nourished. Also socioeconomic status such as educational level, self-rated economic status, poverty level, and marital status significantly influenced nutritional status. Similar effect was observed in self-rated nutritional status and health status, dental status, appetite change according to MNA score. Stepwise multiple regression analysis indicated that weight loss was the most predictive item in the total MNA and MNA-SF score. It was found that items such as mobility, living status (home vs institution) , mode of feeding, and pressure sores were inappropriate for assessment of the elderly who are able to participate meal service program. Also, some modifications of items in MNA are needed in order to apply to Korean elderly. Even though the MNA seems to be an useful tool to screen those old people at risk of malnourished, a lot of work is still to be done with this assessment tool to secure its reliability.

An immunohistochemical study of endocrine cells in the alimentary tract and pancreas of the toad, Bufo bufo gargarizans Cantor (두꺼비(Bufo bufo gargarizans cantor)에서 위장췌내분비세포의 면역조직화학적 연구)

  • The regional distribution and relative frequencies of endocrine cells were studied immunohistochemically (PAP methods) in the alimentary tract and pancreas of the toad, Bufo bufo gargarizans Cantor using specific antisera against bovine Sp-1/chromogranin (BCG), serotonin, bombesin, gastrin, substance P (SP), somatostatin, insulin, glucagon, pancreatic polypeptide (PP), vasoactive intestinal polypeptide (VIP) and secretin. Nine kinds of endocrine cells were identified in this study. Spherical or spindleshaped immunoreactive (IR) cells were located in the gastric glands of stomach regions, in the basal portion of the epithelium of intestinal tract or esophagus, and in the exocrine or pancreatic islets with variable frequencies. In the alimentary tract, BCG-IR cells were found in the fundus and pylorus with rare and a few frequencies, respectively. Serotonin-IR cells were demonstrated in the whole alimentary tract including the esophagus. Bombesin- and SP-IR cells were restricted to the stomach regions and gastrin-IR cells were restricted to the pylorus. Somatostatin-IR cells were detected throughout the whole alimentary tract except for the large intestine, However, insulin-, glucagon-, PP-, VIP- and secretin-IR cells were not detected in the alimentary tract. In the pancreas of toad, the distribution and relative frequency of endocrine cells were similar to those of other mammals. Insulin-IR cells were located in the central portion of the pancreatic islets and interspaces of exocrine portions, and glucagon-, somatostatin- and PP-IR cells were detected in the marginal regions of the pancreatic islets and interspaces of exocrine. However, other IR cells were not found in the pancreas. In conclusion, the regional distribution and relative frequency of the endocrine cells in the alimentary tract and pancreas of the toad were similar to other anuran species but some differences which might be caused by feeding habits and species specification were also observed.

Environmental factors affecting neustonic zooplankton in the southwestern area of Korea in summer (여름 남해 서부 해역에 출현하는 수표성 동물플랑크톤에 미치는 환경요인)

  • This study was conducted in the southwestern area of Korea using a neuston net in September (14 stations) 2017 to understand the environmental factors affecting neustonic zooplankton. Temperature, salinity, chlorophyll a concentration, suspended solids, and microplastics were included as environmental factors. Based on the density of the copepods, the study area was divided into three regions: the Seomjin River water influence area, the frontal mixing area, and the warm water affected area (Jeju warm current and Tsushima warm current). In the latter two areas, the major species were Pontella chierchiae, Canthocalanus pauper, and Oncaea spp. Also, neustonic zooplankton showed a significant relationship between the density of phytoplankton and microplastics in the frontal mixing area, and temperature and suspended solids in the warm water affected area, respectively (p<0.05). This indicates that microplastics can affect the offshore zooplankton community.

The Study of Infant Feeding in Weaning Period (서울 지역 어린이의 이유 실태 조사)

  • This retrospective study was conducted to investigate the growth of children and their care person's weaning behaviors and its relation between the growth and care person's attitude and behaviors about weaning. 272 subjects who had child under 2 years old at that time were randomly selected and answered the special questionnaire. Results were as follows: Using to Kaup index, 13.4% of children were estimated undernutrition, 60.6% were normal and 26.0% were estimated overnutrition. 97.6% of respondant (children's mother) were recognized the need of weaning and the first prurpose of weaning was supplement of nutrients, and the next one was to set up normal food habits. 39.1% of subjects were used normal adult foods as weaning food. 60.9% of subjects were proepared special foods (making at home or buying commercial weaning food). The socioeconomic status was major factor to influence mother's behaviors about weaning. Vegetable and meat gruel was the most commen weaning food and the next one was fruits puree and rice with soup. The correlationship were found between Kaup index and the score of mother's weaning behaviors, between momer's eductional level and the score of weanig behaviors. 96% of subjects wanted nutritional education about weaning. They wanted to know about desirable weaning process and correct informations of commercial weaning foods mid the convenient cooking methods. According to the difference of socioeconomic status subjects were wanted different eductional methods. Upper socioeconomic group wanted special books about weaning and lower class wanted to be educted through the mass media especially television programs.

Immunohistochemical study of the somatostatin-immunoreactive cells in the gastrointestinal tract of the native korean goat during postnatal periods (생후 발생단계에 따른 한국재래산양 위장관에 있어서 somatostatin 면역반응세포에 대한 면역조직화학적 연구)

  • The regional distribution and relative frequency of somatostatin-immunoreactive cells in the gastrointestinal tract were studied during the postnatal development(1 day old, 1 month old, 6-month-old and adult) of the Korean native goat by immunohistochemical methods. Somatostatin-immunoreactive cells were found in the entire gastrointestinal tract and were most predominant in the fundic gland region except for the pyloric gland region of the 1 day old. The number of these cells was observed to decrease along the gastrointestinal tract and to decrease according to the increase with age in all postnatal stages. In this study, immunoreactive cells revealed the differences of regional distribution and the relative frequency in the gastrointestinal tract during postnatal development. These results suggest that although the functional significance of fetal endocrine cells remains unknown, this was caused by changing of feeding habits and physiological conditions during different ages.

  • The purpose of this study was to investigate the perceptions of an unbalanced diet by elementary school students using a qualitative approach to nutrition counseling. To achieve the purpose of this study, client-centered counseling was performed over one semester with four volunteer children in the fifth grade who admitted eating an unbalanced diet. Their perceptions of an unbalanced diet were examined while focusing on cause. The contents of the counseling sessions were recorded and their eating habits observed. The proposed perceptions of the clients of an unbalanced diet were as follows: regarding the causes of an unbalanced diet, there may have been a certain negative event or memory related to food as well as an individual disease or history of disease; regarding the meaning of an unbalanced diet, the clients had two kinds of time concepts (formal one and informal one) and defined the meaning of an unbalanced diet as a matter of being able to eat proper amounts of food within an inter-meal time; and regarding the results of an unbalanced diet, they based their results on the approval of their parents and teachers. Feeding at school was used as the background of this study, which examined the meanings and results of an unbalanced diet, and there existed a correlation between the meanings and the results.

A STUDY ON THE INFLUENCE OF INFANT FORMULAS ON PLAQUE pH (유아용 조제 분유가 치태 pH에 미치는 영향에 관한 연구)

  • Infant formula in nursing bottle, with inappropriate feeding habits, is major factor associated with the development of nursing caries. Although each infant formula has different carbohydrate and protein composition, studies comparing cariogenic potential of many Korean-branded infant formulas are deficient. In addition, it is on the point of being difficult to evaluate the cariogenecity of milk due to development of many infant formulas. In this study, to evaluate the cariogenic potential of many infant formulas, after oral rinse with six Korean-branded infant formulas(three milk based formulas, one soy based formula and two specific formulas for infants with allergy to milk protein and with lactose intolerance) for ten adult volunteers(eight males and two females), plaque pH change was measured with In vivo/In vitro combination technique and results were as follows. 1. All six different kinds of Korean-branded commercial infant formulas dropped the plaque pH significantly(p<0.05) and at an hour after rinse, plaque pH was not recovered in most of subjects. 2. Soy based infant formula and casein-hydrolyzated infant formula containing no casein dropped the plaque pH significantly more than milk based infant formula containing casein (p<0.05). 3. In the milk protein of infant formulas, casein had more effect on buffering the pH change of the infant formula than whey protein and casein-hydrolyzated infant formula had a reduced effect of casein. 4. In infant formulas with similar protein composition, infant formula containing sucrose dropped plaque pH more than infant formula containing lactose, but there was no significant difference (p>0.05).

Utility of Korean Modified Barthel Index (K-MBI) to Predict the Length of Hospital Stay and the Discharge Destinations in People With Stroke (뇌졸중환자에서 재원기간과 퇴원장소 예측을 위한 K-MBI의 유용성)

  • The purpose of this study was to utilize the K-MBI (Korean Modified Barthel Index) and subscales of K-MBI in predicting the length of hospital stay (LOS) and the discharge destinations for stroke patients. The study population consisted of 97 stroke patients (57 men and 40 women) admitted to the Seoul National University at the Bundang Hospital. All participants were assessed by K-MBI at admission and discharge after rehabilitation therapy and the information available was investigated at admission. The data were analyzed by using the Mann-Whitney U test, the stepwise multiple regression and the logistic regression. The median LOS was 30 days (mean, 32.8 days; range, 22 to 43 days). The K-MBI score at initiation of rehabilitation therapy (p<.001), the type of stroke and living habits before a stroke were the main explanatory indicators for LOS (p<.05). Within the parameters of K-MBI measured at initiation for rehabilitation, feeding and chair/bed transfer were the explanatory factors for LOS prediction (p<.01). Confidence in the prediction of LOS was 20%. Significant predictors of discharge destination in a logistic regression model were the discharge K-MBI score, sex and hemiplegic side. Dressing in items of discharge K-MBI was the significant predictor of discharge destination. The K-MBI score was the most important factor to predict LOS and discharge destination. Knowledge of these predictors can contribute to more appropriate treatment and discharge planning.

Diet Composition of the Chub Mackerel Scomber japonicus in the Coastal Waters of the South Sea of Korea (남해에 출현하는 고등어(Scomber japonicus)의 위내용물 조성)

  • The feeding habits of Chub mackerel Scomber japonicus were investigated using 329 specimens collected from coastal waters of the South Sea of Korea. S. japonicus is mainly a piscivore, consuming small fish such as Engraulis japonicus (%RI: 81.0 %). The diet of Chub mackerel also includes small quantities of thaliaceans, euphausiids, and amphipods. We calculated the trophic level as 3.92 for S. japonicus. The dietary composition of S. japonicus did not show significant differences with size, but differed with season. As the body size of S. japonicus increased, the mean weight of prey within the stomach (mW/ST) increased (One-way ANOVA, P<0.05).

Changes in the importance and performance of low-sodium management among childcare center cooks in Yongin, South Korea, after salinometer support programs: a descriptive study

  • Objectives: This study aimed to evaluate the importance and performance of sodium reduction practices among childcare center cooks in the Yongin area before and after a 3-month salinometer support program. Methods: In total, 313 cooks employed in childcare centers in Yongin were surveyed before and after participating in a salinometer support program. The survey included questions on general information, sodium-related dietary habits, and perceived importance and performance levels of sodium reduction approaches in the purchasing, cooking, and serving areas. The centers were divided into childcare centers registered as group-feeding facilities (FS group, n = 68) and those not registered as such (non-FS group, n = 245). The differences between the two groups were analyzed. Results: The overall importance levels increased significantly after the program in both the FS-group (P < 0.001) and non-FS group (P = 0.005). The overall performance levels also increased significantly in both groups (P < 0.001 for all). Consequently, the significant difference between the importance and performance levels disappeared in both groups after the program. However, unlike the FS group, which showed no significant differences between the importance and performance levels after the program in all three areas, the non-FS group still demonstrated lower performance levels than importance levels in the purchasing (P = 0.011) and serving (P = 0.034) areas after the program. Conclusions: The use of salinometers significantly enhanced the performance and importance of low-sodium management practices among cooks in childcare centers, especially in the FS group. The continuous monitoring of salinity measurements and tailored education specialized for the FS and non-FS groups are recommended.
