Varietal Difference of Oil Content and Omega Fatty Acid omposi tion in Korea Local Perilla (들깨 지방수집종의 기름함량 및 오메가 지방산 조성 차이)

  • This study was conducted to obtain basic information for breeding materials on the oil quality improvement of perilla seeds. Oil contents and omega(${\omega}$)fatty acid compositions of seeds were investigated to 317 varieties of domestic perillas. Oil contents of 317 perilla varieties ranged from 35.6 to 55.3 with 44.5% of varietal mean. The major omega fatty acids contained in the oil were oleic acid(${\omega}$-9) 15.2%, linoleic acid(${\omega}$-36) 13.9% and linolenic acid(${\omega}$-3) 63.1% in the mean value. Varietal variation of $\omega$-9, 6 and 3 fatty acids ranged of 9.5~21.4%, 9.1~20.4% and 50.6~70.5% respectively. Unsaturated fatty acid were averaged 92.2% of seed oil in fatty acid composition. The ratios of ${\omega}$-6 to ${\omega}$-3 ranged of 0.13~0.34%(0.22% in mean value). The highest linolenic acid variety was Yecheonjong being 70.5%. The lowest variety in rations of ${\omega}$-6 to ${\omega}$-3 was Goseongjong being 0.13%. Oil content showed positive correlation with stearic acid and linolenic acid, while the negative correlation with oil content and linoleic acid. On the other hand, A significant negative correlation were showed between lionolenic acid and the ratios ${\omega}$-6 / ${\omega}$-3 fatty acid, saturated fatty acid. Saturated fatty acid was highly correlated with unsaturated fatty acid negatively being r=-0.723$^{**}$

Fatty Acid Profiles of Supraspinatus, Longissimus lumborum and Semitendinosus Muscles and Serum in Kacang Goats Supplemented with Inorganic Selenium and Iodine

  • Fat and fatty acids in muscle and adipose tissues are among the major factors influencing meat quality particularly nutritional value and palatability. The present study was carried out to examine the effects of supplementing inorganic selenium (Se), iodine (I) and a combination of both on fatty acid compositions in serum, and supraspinatus (SS), longissimus lumborum (LL), and semitendinosus (ST) muscles in goats. Twenty-four, 7 to 8 months old, Kacang male goats with a mean live weight of $22.00{\pm}1.17kg$ were individually and randomly assigned into four groups of six animals each for 100 d of feeding prior to slaughter. The animals were offered the same concentrate (basal) diet as 1% of body weight with ad libitum amount of fresh guinea grass. The four groups were as follows: T1 (control) - basal diet without supplementation; T2 - basal diet with 0.6 mg Se/kg DM; T3 - basal diet with 0.6 mg I/kg DM; T4 - basal diet with combination of 0.6 mg Se/kg DM and 0.6 mg I/kg DM. The major fatty acids (FAs) detected in the serum were palmitic (C16:0), stearic (C18:0), oleic (C18:1n9) and linoleic (C18:2n-6), while the major FAs in the selected muscles were C16:0, C18:0 and C18:1n9 acids. The main polyunsaturated fatty acids (PUFA) detected in muscles and serum were (CI8:2n-6), linolenic acid (C18:3n-3), and arachidonic acid (C20:4n-6). No significant differences (p>0.05) were observed in the concentration of total saturated fatty acids (SFA) among the four groups. PUFA concentrations in the goats supplemented with Se (T2) were significantly higher (p<0.05) than the goats of the control group (T1). The PUFA: SFA ratio was significantly higher in the animals supplemented with dietary Se (T2) than those of control ones (T1). It is concluded that dietary supplementation of inorganic Se increased the unsaturated fatty acids in muscle. The supplementation of iodine with or without Se had negligible effects on muscle fatty acid content of Kacang crossbred male goats.

Effect of Citrus Byproduct on Quality and Fatty Acid Composition of Chicken Eggs (감귤부산물의 급여가 계란의 품질 및 지방산 조성에 미치는 영향)

  • In this study, the effects of feeding citrus by-products on the quality and fatty acid compositions of chicken eggs were investigated. Two samples of chicken eggs were used for this study: T0 (eggs of chickens that were not fed citrus byproducts) and T1 (eggs of chickens that were fed 4% citrus byproducts). There was no statistically meaningful difference between T0 and T1 in terms of various properties, such as chemical composition, cholesterol content, minerals, vitamins, pigments, and total structural amino acid. The caloric content of the egg yolk was higher in T1 than in T0, and total free amino acid of egg albumin and egg yolk was higher in T1 than in T0 (p<0.05). There was a not significant difference in SFA:UFA ratio between T0 and T1, but the linolenic acid content was higher in T1 than in T0 (p<0.05). The results of this study show that citrus by-products can be used for feed for laying hens by adding them to general feed.

Chemical Composition of Thermal Treatment Yam (Dioscorea batatas DECNE.)

  • In this study, the thermal treatment yam (Dioscorea batatas DECNE.) was analyzed for its proximate and nutritional compositions including mineral, vitamin, amino acids and fatty acids. Thermal treatment yam is mainly consisted of carbohydrate (70.3%) with small amounts of crude protein (15.8%), crude ash (5.1%) and crude fat (1.6%). It was found to be a good source of essential minerals such as K (1100.2 mg/100 g), Mg (99.4 mg/100 g), Ca (54.8 mg/100 g) and Na (44.9 mg/100 g) but Zn (4.8 mg/100 g) and Fe (0.2 mg/100g) content was low. Little amounts of vitamin E (8.3 mg/100g), vitamin C (3.5 mg/100g) and vitamin B1 (2.1 mg/100g) could be found. The amino acid analysis revealed that the yam was superior with respect to serine (1454.2 mg%), lysine (684.6 mg%) and histidine (684.6 mg%). Essential amino acids were calculated to be 2849.3 mg%. The amino acid profiles showed that thermal treatment yam is limiting in isoleucine and phenylaline. Linoleic acid was the most predominant fatty acids with the value of 47.3% followed by palmitic acid (24.7%) and oleic acid (12.7%). And the unsaturated fatty acids including oleic acid and linoleic acid were present in big quantities in thermal treatment yam.

Growth and Fatty Acid Composition of Juvenile Olive Flounder Paralichthys olivaceus Fed Diets Containing Different Levels and Ratios of Eicosapentaenoic Acid and Docosahexaenoic Acid

  • This study was carried out to investigate the influences of dietary levels, ratios and sources of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) on the growth and fatty acid compositions of juvenile olive flounder Paralichthys olivaceus. Sixteen diets containing five levels of EPA (0.5%, 1.0%, 1.5%, 2.0%, and 4.0%), five levels of DHA (0.5%, 1.0%, 1.5%, 2.0% and 4.0%), three ratios of EPA/DHA (75/25, 50/50 and 25/75), two levels of squid liver oil (5% and 10%) and a control diet containing 5% soybean oil were hand-fed to triplicate groups of fish (average weight, $9.7{\pm}0.3g$) for 8 weeks. Survival, specific growth rate, feed efficiency and protein efficiency ratio of fish were not affected by dietary EPA and DHA levels or ratios. Also, the dietary treatment had no significant effect on the lipid and protein contents of muscle and whole body of fish. A corresponding increase in the EPA and DHA contents of fish occurred with increasing EPA and DHA levels in their diets. Our results suggest that juvenile olive flounder require a dietary EPA level of approximately 0.32% in the presence of 0.74% DHA for suitable survival and growth, and that EPA and DHA levels in fish muscle can increase to as much as 32% and 53%, respectively, of the total fatty acid content.

Seed Protein Content and Fatty Acid Composition of Black Seeded Soybeans Collected From Southwestern Islands (서남해안 검정콩들의 단백질과 지방산 조성변이)

  • A total of 135 black seeded soybeans genotypes were collected in 45 island locations from January to May 2001. Seeds of 135 genotypes collected were analyzed for crude protein and fatty acid compositions. The crude protein content was averaged to be 40.75%, and was ranged from 34.70% to 44.20%. The average palmitic acid, stearic acid, oleic acid, linoleic acid and linolenic acid content were 11.41%, 3.93%, 22.75%, 53.55%, and 8.35%, and the ranges of those were 9.00% to 14.40%, 2.90% to 5.00%, 22.75% to 26.50%, 50.30% to 57.20% and 6.7% to 11.20%, respectively. Heritabilities of palmitic acid, oleic acid, linoleic acid, and crude protein were higher, but that of stearic acid and linolenic acid were relatively lower, Crude protein content was correlated positively with oleic acid content, whereas it was correlated negatively with linoleic acid, palmitic acid, stearic acid, and linolenic acid contents.

Analysis of Fatty Acyl Groups of Diacyl Galactolipid Molecular Species by HPLC/ESI-MS with In-source Fragmentation

  • The structures of molecular species of galactolipids, such as monogalactosyl diacylglycerol (MGDG) and digalactosyl diacylglycerol (DGDG), isolated from wheat flour have been investigated using negative-ion electrospray ionization (ESI) mass spectrometry interfaced with high performance liquid chromatography (HPLC). According to the result of HPLC analysis, MGDG and DGDG were found to consist of mixtures of five and four molecular species, respectively. The galactolipids have been also analyzed to determine their fatty acid compositions, using HPLC/ESI-MS combined with in-source (or cone voltage) fragmentation. HPLC/ ESI-MS is very useful for one-step analysis of mixtures of galactolipids with a small sample quantity. Especially, the carboxylate anions produced in in-source fragmentations of the negative-ion of each component separated by HPLC provide valuable information on the composition of its fatty acyl chains.

Influence of Different Dietary Fats and Fat Unsaturation on Plasma Lipid Composition in Healthy Young Women (사람에서 식이지방의 불포화지방산과 불포화도가 혈장 지질조성에 미치는 영향)

  • Twenty college women were led experimental diet which composed ot basal diet plus different kinds of dietary rats at 27% Cal. Equal amount of 13.5g of corn oil, perilla oil or fish oil was supplied for 2 weeks as a source of n6 linoleic acid(LA). n3 $\alpha$-linolenic acid (LL). or n3 EPA + DHA. respectively. Plasma total Chol level was reduced by perilla and fish oils, significantly only by fish oil. Plasma Chol level was rather increased by corn oil(P<0.05), but was decreased by double amount of corn oil supplement. Therefore, hypocholesterolemic effect of fatty acids was in the order of n3 EPA+DHA>n3 LL>n6 LA and influenced by the degree of fat unsaturation. Plasma TG level was also significantly decreased by n3 EPA+ DHA and increased by n6 LA. Hypotriglyceridemic effect of fatty acids was also in the order of n3 EPA + DHA> n3 LL>n6 LA and influenced by the unsaturation. However, the reduction of plasma TG was more influenced by the fatty acid structure rather than the fat unsaturation. There were no significant effects on lipoprotein pattern 3nd chemical compositions of lipoprotein by different dietary PUFAs. but fish oil diet significantly increased the relative proportion of HDL-Chol. In conclusion. cholesterol- lowering effect of dietary PUFAS seemed to be a function of total fat unsaturation but hypotriglyceridemic effect seemed to be more linked to the ratty acid structure rather than the degree of unsaturation. The hypolipidemic effect of n3 PUFAs was significant so that fish oil or perilla oil may have important nutritional applications in the prevention and treatment of atherosclerotic disease.

Proximate Analysis, Mineral and Fatty Acid Composition of Domestic and Glyphosate- Tolerant HS2906 Soybean (국내산 및 제초제 내성 콩(HS2906)의 일반성분, 무기질 및 지방산 조성)

  • Proximate analysis, mineral and fatty acid composition of three conventional domestic soybean cultivars and two imported ones including glyphosate-tolerant HS2906 were evaluated by AOAC method, ICP-AES and gas chromatography. There were several differences in the proximate analysis among three conventional domestic soybean cultivars ; higher crude fat in the cultivar Hwanggumkong, higher crude protein in Pungsankong, and higher carbohydrate and crude ash in Duyukong. The ranges of contents of proximate components of domestic cultivars were similar to the data previously reported. There were no significant differences in proximate analysis between conventional soybean WS82 and glyphosate-tolerant HS2906 ; 23.55-23.90% of crude fat, 34.22-35.55% of crude protein, 6.25-6.45% of crude ash, and 25.35-26.47% of carbohydrate. The mineral and fatty acid compositions of HS2906 were similar to those of conventional soybeans previously reported.

Characterization of Actinomyces Isolated from Freshwater Sponges in Lake Baikal (바이칼의 담수 스폰지에서 분리한 방선균의 특성 연구)

  • Five strains of Actinomyces were isolated from freshwater sponges, Baikalospongia and Lubomirskia, in Lake Baikal. By 16S rRNA sequencing, isolates were identified as Streptomyces griseoplanus, S. halstedii, S. violascens, S. flavovirens, and S. microflavus. Isolates had different characteristics of growth temperature, carbon utilization, enzyme activity, and cellular fatty acid composition. Optimum growth conditions of isolates were $30-37^{\circ}C$, pH 8-9, and 0-1.5% salt concentrations. Major fatty acid compositions were anteiso-$C_{15:0}$, iso-$C_{15:0}$, and iso-$C_{16:0}$. Strain ATS-BA-19 had DNase and chitinase activities and strain ATS-BA-16 had cellulase and protease activities. Colonies of strain ATS-BA-15 and ATS-BA-19 made inhibition zone of Pseudomonas aeruginosa.
