This study was conducted to investigate the fat content, fatty acid composition, trans fatty acid content, and acid value of twenty types of fried chickens purchased in local markets in Korea. The fat was extracted from the fried chickens and analyzed by the folch method, which revealed that the content ranged from 4.94% to 18.06%. The major fatty acids in the fried chickens were oleic acid ($29.78{\sim}67.85%$), linoleic acid ($8.42{\sim}39.54%$), and palmitic acid ($10.67{\sim}25.43%$). Twenty types of fried chickens contained less than 0.1 g of trans fatty acid per 100 g of chicken, while the fatty acid value ranged from $0.86{\sim}2.65$, which is lower than the KFDA criteria.

The results are summarized as follows 1) The total lipid contents of mung-bean sprouts are generally decreased during growing. 2) On T.L.C. gram, triglyceride contents are decreased and free fatty acids and sterol are increased with time. 3) The ratio of unsaturated fatty acids to saturated fatty acids U/S are increased by six times after 4 days of mung-bean germination. 4) The contents of palmitic acid as main fatty acid in the mangbean but oleid, linoleic acid were increased after 2 days, 4 days, 6 days. 5) Total lipids from mung-bean sprouts contained fatty acid in order of linoleic acid, oleic acid. 6) The content of essential fatty acid are rich in 4 days.

Omega-3 fatty acids, including eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are polyunsaturated fatty acids beneficial to human health. A limited number of microalgae have been used for commercial omega-3 production, which necessitates the identification of new microalgae with high omega-3 contents. We explored the fatty acid composition and EPA and DHA contents of the mixotrophic dinoflagellate Gymnodinium smaydae fed with the optimal algal prey species Heterocapsa rotundata. Cells of G. smaydae were found to be rich in omega-3 fatty acids. In particular, the DHA content of G. smaydae was 21 mg g-1 dry weight, accounting for 43% of the total fatty acid content. The percentage of DHA in the total fatty acid content of G. smaydae was the highest among the reported microalgae except for Crypthecodinium cohnii. Moreover, to determine if the prey supply interval affected the growth rate of G. smaydae and its fatty acid content, three different prey supply intervals (daily, once every 2 d, and once for 4 d) were tested. Daily prey supply yielded the highest total fatty acid and DHA contents in G. smaydae. Furthermore, we successfully produced high-density G. smaydae cultures semi-continuously for 43 d with daily prey supply. During the semi-continuous cultivation period, the highest density of G. smaydae was 57,000 cells mL-1, with an average growth rate of 0.7 d-1. Taken together, the percentage of EPA and DHA in the total fatty acid content was maintained in the range of 54.2-56.9%. The results of this study support G. smaydae as a promising microalgal candidate for commercial DHA production and demonstrate that daily supply of prey can efficiently produce high-density G. smaydae cultures for more than a month.
This study was undertaken to determine the effects of fish oil supplementation with low dose on the lipid content and fatty acid composition of breast milk. Among 18 lactating women who were exclusively breast-fed their babies, 6 were in control group and 12 were in fish lil groups. The subjects in fish oil groups were supplemented with 1.96g/d or 3.92g/d of fish oil for 2 weeks from 10 to 12 weeks of postpartum. All subjects consumed their usual diet at home. Breast milk samples were collected at the final day of experiment. By fish oil supplementation, the concentrations of triglyceride, cholesterol, free fatty acid and phospholipid as well as total lipid in breast milk tended to increase, but not significant. There was no dose-dependent response. The fatty acid composition of breast milk was not changed by fish oil supplementation. These results suggest that low dose of fish oil supplementation may increase of lipid content, but does not affect on the fatty acid composition of breast milk.
Fatty acid profiles in relation to meat quality traits and sensory palatability of grain-fed and grass-fed beef from Hanwoo, American, and Australian crossbred cattle were examined in this study. There were significant (p<0.001) differences in fat content and fatty acid compositions between grain-fed and grass-fed beef. Grain-fed Hanwoo had significantly (p<0.001) lower saturated fatty acid (SFA) proportion but higher monounsaturated fatty acid (MUFA) proportion compared to grass-fed cattle. The proportion of oleic acid in grain-fed Hanwoo was significantly (p<0.001) higher than that in grass-fed Hanwoo, Australian crossbred, or American crossbred cattle. Grain-fed Hanwoo had significantly (p<0.001) lower percentages of drip loss and cooking loss compared to other cattle. Overall palatability panel scores of grain-fed cattle were significantly (p<0.001) higher than those of grass-fed cattle. Consequently, sensory overall palatability was negatively correlated with proportions of SFA and polyunsaturated fatty acid (PUFA), but positively correlated with the proportion of MUFA. In particular, the proportion of oleic acid was strongly and positively correlated with fat content (r=0.91, p<0.001) and overall palatability (r=0.92, p<0.001). These results implied that high-concentrate grain-fed could increase intramuscular fat (IMF) content and the proportion of oleic acid, thus increasing the sensory palatability of Hanwoo beef.

To investigate of the content of fatty acids and cholesterol level in Raja Skates, the skate was purchesed from Yangdong Fisheries market in Kwangju, Korea. The experimental skate contained moisture 77.1%, crude protein 20.5%, crude lipid 0.68% and ash 1.72% as the general components. The fatty acids composition of skate are 28 kinds, such as 10 kinds of saturated fatty acid and 18 kinds of unsaturated fatty acid. There are 5 kinds of odd numbered fatty acid, such as C15:0, C17:0, C19:0, C25:0. Lignoceric acid shows 11% content. As an unsaturated fatty acid, getoleic acid, C22:1: selecholeic acid, C24:1:9, 12-hexadecadienic acid, C16:2: trans-linolelaidic acid, C18:2:13, 16-docosadienoic acid, C22:2: are analyzed as the particular one. The p/s ratio of skates is 1.02 and n-3/n-6 ratio of Skates is 0.82, respectively. The content of cholesterol level of Skates muscle is less than 20mg%, and liver contains 300-500 mg% and Nechang-tang contains 100mg% each.
This study aimed to provide basic information as the foundation for further studies on the assessment of velvet antler quality by investigating the changes in fatty acid, vitamin A and E, minerals and GAGs contents by development stage of antler in spotted deer (Cervus nippon). Twelve stags (aged 4 to 5 years) were divided into two groups and velvet antler harvested 40 days (FDG) and 60 days (SDG) after casting of the buttons from the previous set. Total saturated fatty acid was lower in FDG than SDG (p<0.05). Total monounsaturated fatty acid, conjugated linoleic acid (p<0.05), polyunsaturated fatty acid and ${\omega}$3 fatty acid were higher in FDG than SDG. The vitamin A content of FDG was higher than that of SDG, but the vitamin E content of FDG was lower than that of SDG (p<0.05). SDG had significantly higher calcium and phosphate content than FDG (p<0.05). The magnesium content showed a similar trend to the contents of calcium and phosphate, but there was no significant difference between SDG and FDG. Uronic acid content was higher in FDG than SDG but there was no significant difference. The contents of GAGs and sialic acid were significantly higher (p<0.05) in FDG than SDG. These results indicated that the longer stage of antler development had lower content of activating components and this lead to a decrease of antler quality.
As a preliminary experiment to investigate the effect of ozone sterelization on the ginseng powder, the changes of fatty acid composition and organic acid content and sensory properties in ginseng powder treated with ozone was investigated. Ginseng powder was treated with 0.5 ppm ozone for 24 hours and 48 hours, respectively. With increase in ozone treatment time, the content of crude lipid and increase. Contents of unsaturated fatty acid-linolenic acid, linoleic acid, and oleic acid, etc.-decreased with ozone treatment time, whereas saturated fatty acid or same number-stearic acid-increased odor, bitter taste, roasted taste and sweet taste were thiner with ozone treatment times, but pungent taste was thicker with those treatment. These changes of ordors and tastes of ginseng powder with ozone treatment were predicted by oxydation of lipids, flavor components and saponins.

The effect of fatty acid content in oily soil and conditions of washing on the removal of triglyceride have been studied. Cotton lawn was soiled with the four-component soil-tripalmitin, palmitic acid, dodecyl alcohol and dodecane-and washed in constant temperature waterbath shaker. The detergency was estimated by analysis of triglyceride labelled carbon-14 on fabrics before and after washing by means of liquid scintillation counting. It was shown that the detergency of triglyceride washed with the nonionic, nonylphenol poly (10)-ethylene oxide and soap was increased steadily with increasing temperature, whereas with the anionics Na-DBS and SLS, the detergency was rather decreased when the temperature was elevated above $40^{\circ}C$. To investigate the effects of free fatty acid content in soil on the removal of triglyceride, the fabrics were soiled altering palmitic acid content, and then washed. From the results, the detergency of triglyceride was developed with increasing free fatty acid content. With soils containing less than $30\%$ of free fatty acid, of the three detergents tested, the nonionic was by far the most effective soil removal. Soap was intermediate and the synthetic anionic was the poorest. With soil containing $45\%$ of free fatty acid, soap was the most effective soil removal. When NaOH was added to detergent solution. the detergency of triglyceride was improved without regard to detergents. The optimum alkalinity was obtained according to free fatty acid content. And the alkalinity changed to low NaOH concentration with increasing free fatty acid content. From the results mentioned above, it could be concluded that the major removal mechanisms of triglyceride containing oily soil were mesomorphic phase formation, solubilization and soap forma-tion when alkali was added in detergent solution.

This study was undertaken to analyze proximate comosition, mineral contents and fatty acid composition of pure jemsosojoo(PJ) and jemsosojoo added medicinal herb(JMH). Mositure, ash, crude protein and crude fat of pure jemsosojoo were higher than those of the JMH, but carbohydrate content was higher in the JMH. Among minerals, Ca, Mg, Fe, Zn content of the JMH were higher than those of the PJ, while P and Na were higher in the PJ and those difference were significant between the PJ and the JMH(p<0.05). U/S (unsaturaed fatty acid/saturated fatty acid) ratio was higher in the JMH than those of the PJ, the ratio o fglycolipid was 1.75 in the PJ and that of neutral lipid was 3.07 in the JMH. Octadecenoic acid, hexadecanoic acid, octadecenoic acid and hexadecenoic acid were major fatty acids in the total lipids, neutral lipids glycolipids and phospolipids of the PJ and the JMH. Especially, octadecadienoic acid and octadecatrienoic acid were higher in the JMH than those of the PJ.
