  • This study was performed to investigate the effect of breakfast regularity on eating habits, nutritional and health status in adult men and women. Also, eating habites and nutritional status expressed as percentage of recommended energy intake in IB(Irregular Breakfast group) were studied. Proportions of IB in men and women was 23.7% and 31.1%, respectively. In men, IB had irregular mealtime, overeating tendency. Also, they consumed high-fat meat and alcohol more frequently than RB (Regular Breakfast group). Total energy intake showed no significant difference between which two groups. Energy intakes from dinner and alcohol were higher in IB than in RB. Nutrient and food intakes were lower in IB than in RB. Percent body fat of IB was higher than that of RB. Weight, triglyceride and prevalence of fatty liver were higher in IB than in RB. In women, IB had irregular mealtime, and overeating tendency. Also, they had more frequent eating out and alcohol consumption. Total energy intake was lower in IB than in RB. In men, nutrient and food intakes were lower in IB than in RB. But health status showed no significant differences between two groups. In men, energy intakes from alchol and dinner were higher in +RDA group(percentage to recommended energy > 125%) than in other groups of IB. But energy intake from carbohydrate was lower in +RDA group. -RDA group (percentage to recommended energy < 75%) had Ca and vitamin A intake less than RDA. In women, +RDA group had overeating tendency. Also, they had more frequent eating out, high-fat meat, and alcohol consumption than other groups of IB. Energy intakes from dinner, snack and fat were higher in +RDA group. But -RDA group had protein and vitamin A intake less than RDA. From our study, it seemed that breakfast irregularity led to undesirable eating habits and had relation with increase of percent body fat. Breakfast regularity seemed to be very important to maintain a nutritional balance.

  • Relationship between lipid intake and obesity has been well-addressed but recent findings indicated that the type of lipid or composition of lipid in the diet also contributes to body fat accumulation and consequential health outcome. The purpose of this study was to investigate the status of nutrition intake including fatty acids, lipids and lipid soluble nutrients between the obese and lean college students and to analyze the relationship between the intake of certain fatty acids and body fat accumulation. Anthropometric elements including body weight, height, body fat and composition were measured, and dietary recall was conducted on a total of 114 college students. Data showed that total calorie intake and total lipid intake were not significantly different between the obese and lean subjects, in both male and female students. However, male obese subjects ate more amount of plant lipids and palmitic acids (C16:0) from their diet (p<0.05), while female obese subjects consumed more linoleic acids (18:2) and linolenic acids (C18:3) compared to normal subjects (p<0.01). Correlation analysis revealed that the consumption of palmitoleic acid (C16:1) and lipid soluble vitamin D were negatively (p<0.05) correlated with body fat accumulation in all subjects and these findings were supported by simple linear regression analyses for those variables. These results implicate that rather than only considering the amount of lipids, suggesting a proper type of lipids or lipid metabolites can be considered in nutrition counseling or education.

  • This study examined the nutrient intake of Korean adults by considering the lunch type, categorized as home meals (HM), eating out (EO), and institutional meals (IM). Data was obtained from the 2019 Korea National Health and Nutrition Examination Survey (KNHANES). Totally, 3,786 adults (1,643 men, and 2,143 women) aged between 19-64 years were included in the study. Subjects with daily energy intake of less than 500 kcal or over 5,000 kcal, and those who skipped lunch, were excluded. The percentage of subjects in the HM, EO, and IM were 31.9, 53.6, and 14.4%, respectively. The daily energy intakes of the HM, EO, and IM groups were determined to be 2,185, 2,360, and 2,339 kcal, respectively, in men, and 1,622, 1,731, and 1,741 kcal, respectively, in women. Among the three groups, men in the EO group had more intake of fat, saturated fat, cholesterol, sodium, and riboflavin, and less dietary fiber, and whereas women consumed more fat and less dietary fiber and potassium. In the IM group, the men consumed more dietary fiber, potassium, and thiamine, whereas consumption of carbohydrate, unsaturated fatty acid, sodium, potassium, and thiamine was more in women. Energy contributions of carbohydrate, protein, and fat were all within the AMDR (acceptable macronutrient distribution ranges) for all lunch types, except for the percent of energy provided from saturated fat in EO (7.4% in men, and 8.2% in women). Our results indicate that the dietary habit of frequently eating out increases the fat intake, thereby resulting in increased health risks for adults. Thus, implementation of a nutritional education program to encourage balanced dietary habits is required to improve the nutritional status of individuals eating out.

  • The survey was carried out to obtain some fundmental data to improve the dietary life and to establish the nutritonal education and policy on inhabitants limed in isle area near by demilitarized zone in Korea. For this, 33 families in the area of Kyodong island located at Kanghwa-Gun, Kyungki province were randomly selected. Trained surveyors visited each house to survey the food and nutritional status in summer during 3 days in August, 1987. The results are summarized as follows ; The number of foods they were taking totalled 17 categories and 134 kinds of which 104 kinds were vegetable foods. The average amount of food intake was 1465.3g per person per day, animal food occupied 9.6% only. The intake amount of fruit among vegetable foods, and fishes, shells, milk and eggs among animal foods was lower than the national average. Each proportion of carbohydrates fat and protein to the total energy intake was 70.4%, 9.7% and 19.9%. The foods they used to take a lot were rice, potatoes. cucumbers, cabbage KIMCHIE and YULMOO KIMCHIE in order of their intake amount. The energy intake was 3064 Kcal which is higher than nutritional requirements, and the energy ratio of cereals to the total energy in take is 76%. If the amount of fat intake is fixed to 20% of total energy intake, the amount of fat intake is 68g, but the actual amount of fat intake was only 33g. With an increase of total energy intake, supply of calcium and vitamin A should be increased much more.

  • The purpose of this study was to compare nutrient intakes and blood lipids according to the obesity index of middle aged men. Subjects were assigned to one of the following groups based on percentage of body fat (%Fat),; normal weight (10-20% fat), overweight (20-25% fat) and obesity (over 25% fat). Nutrient intakes were evaluated based on questionnaires and 24 hour recall method and blood lipids were analyzed by blood analyzer. The results were as follows: 1) Nutrient intakes were that carbohydrate intake rate in obesity group was lower than normal group and lipids intake rate in obesity group was higher than normal group. The intake of riboflavin and folic acid were differ normal and obesity group (p < 0.05), and normal group ingested under recommended intake. 2) Total-cholesterol, LDL-cholesterol and blood pressure in obesity group were higher than normal group but the differences were not significant. The attack rate of coronary heart disease and blood glucose in obesity group is higher than normal group (p < 0.05). 3) The correlation of anthropometric measurements, blood lipid, blood glucose and blood pressure had significant results. Soft lean mass was associated BMI (p < 0.01), TC (p < 0.05), HDL (p < 0.05), LDL (p < 0.05) and SBP (p < 0.05). TG was associated TC (p < 0.05), HDL (p < 0.01), VLDL (p < 0.001) and Risk (p < 0.01). TC was associated LDL (p < 0.01) and Risk (p < 0.01). Blood glucose was associated TC (p < 0.05), LDL (p < 0.05), SBP (p < 0.05) and DBP (p < 0.05). These results suggest that reduction of body weight for the attack risk of obesity group in coronary heart disease.

  • The aim of this study was to measure and compare nutrient intake, anthropometric measurements and serum indices by percent body fat as one of the index of obesity degree in female college students. Additionally we attempted to investigate percentile distribution of fat free mass index (FFMI) and fat mass index (FMI) for developing reference values for these two parameters. The subjects were 91 female college students who were classified to 4 groups according to the percentile of percent body fat (Group1: 25 th < percentile of percent body fat, Group 2 : 25 th ${\le}$ percentile of percent body fat < 50 th, Group 3 : 50 th ${\le}$ percentile of percent body fat < 75 th, Group 4 : percentile of percent body fat ${\ge}$ 75 th). The mean percent body fat and body mass index were 28.2%, $20.5 kg/m^2$ respectively. The mean energy intake was 1707 kcal(81% of KDRIs) and vitamin C, folate, Ca and Zn intake were 73.9%, 54.7%, 79.6%, 97.5% of KDRIs respectively. Most nutrient intake (energy, carbohydrate, cholesterol, fatty acid, Ca, Fe) of G4 was lower than that of G1, G2 and G3. Serum HDL-cholesterol concentration was significantly lower in G4 than G1, G2, G3 and it tended to increase as percent body fat decreased. LDL/HDL, A1 of G4 were significantly the highest among the 4 groups and increased as percent body fat increased. The mean fat free mass index and fat mass index were $14.5 kg/m^2$, $6.0 kg/m^2$ respectively. The criteria of sarcopenic obesity which has been defined as under 25 th percentile of FFMI and below 75 th percentile of FMI were shown $12.8 kg/m^2$, $8.2 kg/m^2$ respectively in this study. In conclusion, we should continue to more systematically research on the studies of new obesity measurement which includes FFMI and FMI as one of the variables. And the public education for weight control that emphasizes both the understanding of body composition and the importance of nutrition balance is also required.

  • This investigation studied the relationship between Body Mass Index(BMI) and dietary intake, levels of serum lipid, lipoprotein(a) and plasminogen activator inhibitor-1(PAI-1) of 28.449 Korean adults(16.937 men, 11.542 women) from 1995 to 1999. The dietary assessment was conducted using 24-hour dietary records and food frequency questionnaires. During this five year study, the BMI normal-weight group, as a percentage of the annual test population, decreased from 68.0% to 60.2%, while the BMI overweight and obese groups collectively increased from 25.0% to 29.7%. The levels of serum total cholesterol (TC), LDL-cholesterol(LDL-C), Triacylglycerol(TG) and PAI-1 increased as the values of BMI increased, while the levels of HDL-cholesterol(HDL-C) and lipoprotein(a)(men only) appeared to decrease as values of BMI increased. The levels of daily energy intake also increased as values of BMI increased in both men and women. The obese group had significantly higher levels of carbohydrate, protein, fat(men only), and cholesterol intake than those of the normal-weight, underweight, and overweight groups. In men, BMI positively correlated with the levels of macronutrients and cholesterol intake(p<0.001), % energy of protein, fat, and alcohol intake(p<0.001), and the levels of serum TC, LDL-C, TG and PAI-1(p<0.001), while BMI negatively correlated with % energy of carbohydrate intake, and the levels of Lp(a) and HDL-C(p<0.001). In women, BMI negatively correlated with level of cholesterol(p<0.01), fat(p<0.001), alcohol intake(p<0.05),% energy of fat (p<0.001), % energy of alcohol intake and level of and HDL-C(p<0.001). Subjects who had serum TC, LDL-C, HDL-C, and TG levels greater than the standard reference values(TC>240mg/㎗, LDL-C>130mg/㎗, HDL-C>35, TG>200mg/㎗) exhibited a higher intake of the three macronutrients, iron, calcium, meat, milk and fatty foods than those subjects who had serum lipid concentrations less-than-or-equal-to the standard reference values. Overall, there was positive correlation between the high risk factors of vascular disease variables, dietary intake, and BMI. Prevalence of hypertension and high blood sugar were increased as BMI increased, but the prevalence of hypertension is decreased as the year goes by. These findings showed that dietary intake, level of serum lipids and other vascular disease risk factors increased as BIM increased. Therefore, middle or upper class Korean adults who have high BMI should improve their eating habits. This involve reducing alcohol, animal fat, high carbohydrate foods, and overall food intake, and balancing intake in order to lower vascular disease risk factors, including obesity.

  • Obesity is caused by imbalance of energy intake and expense. If energy intake is more than its expenditure, body does fat accumulation and affects body weight. It can be fetal disease although obesity is not disease in itself. Central regulatary system is affected by many neurotransmitters regulating .food intake in brain. Hypothalamus was known as one of food intake regulation in CNS. In order to investigate gene expression difference in hypothalamus by different nutrient, we used C57/BL6 control mouse and db-/db- mouse. They divided each of two group with mouse, and fed control diet and high-fat diet for 4 weeks. Each of control and high-fat diet contained 11.7% and 59.7% fat, respectively. Then we performed microarray assay with them. We compared among changed genes in hypothalamus region. In the results, we observed that increased genes were more than decreased genes. Although hypothalamus size of db-/db- mouse is smaller than that of C57/BL6, more genes were affected in db-/db- mouse. In this study, many genes are affected by nutrient in hypothalamus region.

  • The present paper resents information on the dietary intake and biochemical status of elderly who are living in different types of residence. On hundred and sixty five women(age 65-80 years old) were divided into three groups ; those who are living alone (LA) , living with family (LF) , and living in institutions (LI) within the same general community. Nutrient intake, body fat content, and biochemical measurements in blood and urine were examined statistically and potential environment-related influence are discussed. Elderly women living alone had significantly lower intake of nutrients than elderly women were not living alone LF group showed significantly higher fat consumption than LA and LI groups. Body fat content, plasma albumin and calcium levels in elderly women who lived with other people were significantly higher than those in elderly women living alone, but fat weights and lean body mass between groups were not different. None of the plasma lipid fractions were significantly different among the three groups except LDL-cholesterol (LDL-C) concentration. In the LI group, LDL-C was lower than that of LF and LA groups. From the above results, serious nutritional deficiency has been shown in elderly women that live alone. Therefore, nutritional education and social help should be carried out to improve these situations for elderly people.

  • The nutritional status is America has been monitored by National Monitoring System since 1960's, mainly conducted by United States Department of Agriculture. The data from these programs were computerized and distributed to researchers. Researchers have manipulated and recalculated the data to produce meaningful results. Korean nutritional status has been investigated by National Nutrition Survey ever year, including food consumption, biochemical measurements and demographic variables. The Korean Nutritional Survey has not been organized and integrated as much as the nutritional survey in the United States and its results have been presented no more than as a report. Its raw data should be distributed to researchers and researchers could use the data to get more information. The purpose of this study is to compare the measurement of food consumption in Korean and America using Korean Nutrition Survey and Continuing Survey of Food Intake by Individuals(CSFII), respectively, and to compare the consumption of fat and foods with a high fat content. The fat consumption in the Unite States has been decreased from more than 40% of total energy intake to 35%, while Koreas have consumed more fat according to the economic growth. However, the fat consumption in Korea was still much lower than that in the United States. Korean should pay attention to saturated fat consumption(animal fat), especially rich middle aged men, since they ate meat as much as much as men in the United States according to a recent study. In America availability of food with a low fat content(e.g. low-fat milk) and new recipes along with nutritional education has decreased fat consumption, especially animal fat, any more. Also, each consumption of polyunsaturated fat and saturated fat should be measured since the ratio of them are more important for preventing heart disease and some cancers.
